Freshness.

Fresh seafood smells of sea and salt and nothing more. It’s best to freeze it immediately for later use or cook it fresh on the same day. For lovers of fish dishes, a whole range of healthy cooking methods is now available. The best method of all is cooking with steam, as cooking seafood with pressureless steam prevents it from becoming too dry and retains its natural consistency so it tastes just the way it should. Flavour.

Both with storage and with cooking, it is important to retain the food’s very own flavour. With mushrooms for instance, any soil or leaves should be removed using only a fine mushroom brush before cleaning them with a damp cloth. Afterwards they should be cooked or prepared as quickly as possible. To give them a more intensive taste for later consumption, they can also be dried – for two hours on a baking tray at around 80°C with recirculation. Dried mushrooms can be kept in airtight containers for months on end, and even the smallest­ quantity is enough to enliven soups and stews.

Recipes.

There are two types of cooks – on the one hand there are the traditional types who prefer classic recipes from their country’s national cuisine and on the other there are the more experimental variety, the type who stuff courgette flowers with chicken and basil puree, for instance. The Vario series of cooking appliances offer a wide range of cooktops for both types of chef. These can be assembled entirely according to individual requirements and added to at any time so you can switch from a classic gas cooktop to Teppan Yaki or an induction wok. This makes Vario cooktops the ideal option for all kinds of recipes.

Smells and odours.

The smell of baking cakes is generally a welcome aroma but other odours arise during cooking which are not so pleasant. Many tips exist on this subject. In the case of cabbage for instance, adding a bouquet of parsley or a walnut into the water while cooking is recommended to reduce the odour. This holds for all types of cabbage, including Brussels sprouts, cauliflower or pak choi. But the only solution for unpleasant smells is a first-class ventilation system such as a Coanda effect ventilation hood, which you’ll find on page 97. Vitamins.

Mankind has known about the existence of vitamins for less than one hundred years and folic acid, for instance, was only discovered in 1941. It is now known that these vital ingredients become instable as a result of incorrect storage. In order to create ideal conditions for the different types of food, we’ve incorporated a variety of climate zones inside our appliances.These enable temperatures and humidity to be individually controlled in each case. To preserve vitamins when cooking food, we recommend steaming without pressure.

Cooling.

Professional chefs know that there are great differences in how food needs to be stored. Some foodstuffs require that little bit longer to mature, while others favour a particularly cool environment. Exclusive drinks are stored at cool temperatures but need to be brought up to drinking temperature with care and precision. In order to meet the highest demands, we’ve continued to develop our range of cooling appliances unabated – such as fridges with up to five different climate zones that can be controlled to the exact degree. Or specialised appliances for storing food close to the 0°C limit as used modern refrigerated warehouses. And wine climate cabinets that are virtually vibration-free.

The Classics 400 series.

The new Classics 400 series is the logical evolution of our successful IK 300 series of cooling appliances. Unlike other models, these appliances can be entirely integrated when fitted in standardised niches that are 60 centimetres deep. They were deliberately designed to match the ovens and Combi-steam ovens of the 200 series, inheriting the same innovative display module. The series­ includes an appliance that is unique worldwide – the RX 496 with five climate zones and clear ice as featured on the cover. Nothing is more versatile. An equally exceptional appliance is the RW 496 wine storage­ and temperature control cabinet with three inde­ pendently controllable climate zones. Temperatures can be adjusted to the exact degree and remain highly constant. The mode for gentle wine tempering and the low-vibration storage are also bound to set hearts racing among connoisseurs.

Classics fridge-freezer combination RX 496.

It is virtually impossible to imagine a more versatile and luxurious cooling appliance. Five climate zones, including fresh cooling close to 0°C, guarantee optimal storage conditions for all goods. Another unique feature is the manual humidity control for particularly easily spoiled foods. The RX 496 produces clear ice without chlorides and fine particles – as featured on the cover. And it can either be fully integrated or positioned as a stand-alone appliance. Its design matches the 200 series ovens.

Built-in method: Fully integrated with stainless steel control panel (also available with aluminium control panel or as a free-standing appliance in full stainless steel).

Dimensions: 90 cm wide; net volume of 465 litres.

Climate zone 1 (net volume of 315 litres): Precisely regulated temperatures from 4°C to 14°C and a continual sufficient flow of adjustable humidity.

Climate zones 2 and 3 (net volume of nine litres each): Two special containers for foods that are particularly easily spoiled with regulated indirect cooling and humidity.

Climate zone 4 (net volume of 70 litres): Fresh cooling close to 0°C with a temperature setting that is adjustable to

the precise degree in steps of 1°C. For the cooling of easily spoiled foods such as fish, meat or vegetables.

Climate zone 5 (net volume of 80 litres): A 4-star freezer compartment­ with temperatures of approx. –18°C.

Integrated ice maker: With a fixed inlet and outlet water connection. The illuminated dispenser serves chilled water and up to 1.9 kg of tasteless clear ice without air pockets. The ice is continually thawed, guaranteeing that it is always produced fresh. It also makes crushed ice. One of Gaggenau’s many innovations.

Safety glass shelf, can be partially folded away: For optimal space utilisation, these are adjustable any way you choose.

Bottle trays made from untreated beech.

At Gaggenau, wine storage is an art form in itself. Sophisticated­ technology makes for almost vibrationfree operation while providing an environment that approaches­ the ideal conditions of a cool wine cellar. Storage of the valuable bottles is in exclusive and prestigious style on solid trays that can easily be extended. These are made from aluminium and untreated beech, thereby preventing any transfer of taste or aroma. Further­ more, the beech rods are rounded. Apart from looking good, this also helps to protect the delicate wine labels.

Three fully separately-controllable and self-contained climate zones in a single appliance. The temperature can be continuously regulated in each zone between 4°C and 21°C.

Built-in method: Fully integrated with full glass doors and stainless steel ­control panel (also available with aluminium control panel or as a free-standing appliance in full stainless steel).

Tempering mode: It ensures a particularly gentle temperature change from the storage to the drinking temperature.

Three separate climate zones: The electronic control guarantees constant temperatures from 4°C to 21°C. They can be freely selected at the press of a button via the digital temperature display. Recommended settings:

Tempering from 14°C to 21°C: Ideal for bringing red wine to the appropriate drinking temperature. Also for the upright storage of decanters, open bottles or for storing the precious cigar humidor in a professional manner.

Tempering from 4°C to 10°C: This is where white wine and champagne can reach their ideal drinking temperature, which is usually lower than the storage temperature.

Storing from 12°C to 14°C: The section with the most capacity. Ideal conditions for long-term storage.

Humidity: Choose between two humidity levels.

Stainless steel interior: Uniquely beautiful design, hygienic.

Low vibration operation: Thanks to cushioned compressor suspension.

Lighting concept: In order to showcase your exquisite wines, each climate zone now has a presentation light option. Seven different lighting scenarios can be programmed. The presentation light causes no interior temperature increase. In addition,­ external lighting comes on whenever the door is opened. This enables a clear look at the bottle trays in their extended position.

Vario cooling 400 series.

The Vario cooling series is the first modular system made from fully integrated built-in appliances. Refrigerators, freezers, fridge-freezer combinations and wine cabinets can be combined in countless variations to form an ele­ gant cooling wall. For those who prefer stainless steel or aluminium doors rather than the individual furniture panels, this is available as an optional extra.The interiors of Vario cooling appliances are stainless steel throughout. Ample illumination is provided by the side light ele­ ments and ceiling spots. Vario cooling appliances also set new technical standards – they are the quietest in their class and nearly all have been awarded the energy efficiency class A+.
