MIXER CAPACITY CHART
The Mixer Capacity Chart, page 2, has the same values as the M802 80 Quart Mixer except that the quantity for Raised Donut Dough, 65% AR, is 100 lbs. of total dough at 3rd speed instead of 60 lbs. NOTE: Total dough means the total weight of all ingredients including flour, non-fat dry milk, water, yeast, salt, sugar, and shortening (if present).
AR = weight of water weight of flour x 100%
If the AR of the batch is less than 65%, divide the actual AR by 65% to find the maximum capacity. For example, if the actual AR = 55%, divide 55% by 65% to get an 85% reduction of the capacity. This will reduce the maximum batch size of 100 lbs. to 85 lbs. of total dough. Use of colder water than 70°F or ice requires a further reduction in batch size. Refer to the notes on the Capacity Chart, page 2, and the Use and Applications Handbook originally shipped with the mixer.
Our recommendation is to mix only one 50 lb. bag of premix ingredients with the appropriate amount of water in any one batch. The batch with 75 lb. of Total Dough will consistently mix without exceeding the maximum capacity of the machine.
