Use
The automatic Bread Plant Delta is a set of machines allowing division, loading, intermediate
proofing and moulding of the dough pieces. It has been specifically designed for bakers
making dough pieces of 100 to 650 g.
Operating principle
Once transferred into the hopper of the DVP volume divider, the dough is sucked by a
depression created by the sliding of a piston into an oscillating drum. The weight variation in
the outgoing dough pieces results from the adjustment of the drum chamber volume. The DVP
is available with accessories, like the pre-rounding device on belt (left or right dough pieces
output) or motorised flour duster. When the DVP is installed with one of the pre-rounding
devices, it must be equipped with a motorised flour duster and woven conveyor belt.
Once divided, the dough pieces are placed in the felt gutters of the Delta Auto intermediate
proofer, followed by a proofing cycle which can vary from 15 to 30 minutes according to the
strength of the dough and quality of the mixing.
Driven by the feeding belt of the Major Alpha Auto moulder, the dough piece is sheeted
between two cylinders with anti-adherent coating then curled under a heavy belt. The tilting
feeding belt, variable from horizontal to 40°, speeds up the curling process. The dough pieces
undergo a soft and progressive lengthening between two woollen felt belts, turning in opposite
direction, then are delivered on a felted tray.
Specificities of the Delta intermediate proofer
The Automatic Bread Plant Delta can be integrated, during its assembly, even in the
narrowest bakeries, thanks to the reversibility of the loading side (right or left) and with the
possibility of placing the volumetric divider in front or behind the pallet loading station.
The design of the Delta intermediate proofer, with its self-supporting bodywork, accepts
heavy loads, without risk of deformation. It also allows silent movement of the pocket trays
without any risk of blocking. The Delta is fitted with a pallet loading station, flour duster,
treated pockets - to avoid sticking and maintain a constant hygrometric level of the dough
pieces - and a retractable outfeed conveyor belt located under the moulder. The Delta
intermediate proofer also offers optional monofilament (nylon mesh) pockets.
