1 Notes on the documentation

1.1 Application

This document contains the most important information for the installation and commissioning of the machine by qualified personnel, as well as the information required for day-to-day operation by the operator
Keep the operation manual and all referenced documents in a safe and accessible place.
Store the operation manual in a suitable container protected from humidity and dirt deposits.
If you sell the machine, pass on the installation and operation manual.

2.2 Basic safety instructions

2.2.1 Product safety
The machine conforms to state-of-the-art technology and the recognised safety regulations. Nonetheless, hazards may occur.
Operate the machine only in compliance with the operation manual. All modifications and alterations to the product are reserved for persons authorised by HOBAR

Product description
‒ Make sure the machine is correctly stored (see frost damage section 2.3). ‒ Make sure the machine does not overflow when being filled. Do not damage the connection cable while unpacking.
Have the machine connected to the power supply by qualified personnel.
Have all modifications to the machine carried out by qualified personnel.
Do not operate the machine without supervision.
Avoid chemical burns, sensitisation of the skin, poisoning:

Hygiene regulations must be observed and/or demonstrated in accordance with the national provisions.
2.2.4 Additional hazards
Potential hazards caused by operating resources to be used can be found in the enclosed safety datasheets. Work­places must be marked accordingly.

Avoid frost damage:
Temperatures below 0°C lead to functional damage.
Before storing below 0°C, empty residual water in hoses, tank and boiler
Prior to restart, store the machine at room temperature (min. 15°C) for 24h.

3 Product description

3.1 Intended purpose

The machine is an item of technical equipment intended solely for commercial dishwashing.
The machine is designed solely for cleaning crockery (porcelain, glass, ceramic, temperature-resistant plastics or stainless steel or similar) from the food industry.

4 Controls

ON/OFF key Pressing this key switches the machine on.
Holding the key for 3 seconds activates the automatic drain and self-clean­ing programme and switches off the machine. After switch of

5.1 Special safety instructions

WARNING!
Risk of electric shock, fire hazard
Frost damage can lead to water flowing over live components and thus to injuries from electric shock or fire.
Make sure the machine is correctly stored (see frost damage section 2.3).
CAUTION!
Risk of being crushed or knocked
When being lifted or transported, the machine can overturn or fall and cause injury.
Observe the instructions on the packaging for storage, lifting or transporting.

Installing the machine in a potentially explosive location can cause explosion and serious injury from ejected parts.
Do not install machine in a potentially explosive location.
NOTICE!
Temperatures below 0°C during transport/storage cause function impairments.
Prior to installation, store the machine at room temperature (min. 15°C) for 24h.

5.2 Transporting to the installation location

If possible, transport the machine in its packaging and on the pallet.
Use suitable transport means (elevating truck, crane etc.).
If using a forklift, shim the machine with wooden trusses.

Removing the packaging
CAUTION!
Risk of electric shock, fire hazard
When the machine is unpacked, the connection cable can become damaged and cause injury from electric shock or fire.
Do not damage the connection cable while unpacking the machine.
Remove packaging materials and accessories from the machine.
Inspect the machine for possible transport damage.

5.4 Installing the machine

WARNING!
Risk of being crushed or knocked
The machine may tip over when set up in a freestanding position.
The machine must be secured against tipping over when set up in a freestanding position.
Wall clearance is not required.
Align machine by turning the adjusting feet according to the spirit level.
Distribute the machine weight equally onto all feet.
NOTICE!
Property damage
Vapour may escape from the dishwasher door and lead to property damage.
Adjacent furniture has to be protected to prevent swelling.

5.5 Connecting to the power supply

WARNING!
Risk of electric shock
Failure to connect properly to the power supply can cause mortal danger from electric shock.
Have the machine connected to the power supply only by qualified personnel.
Take cable measurement DGUV V3.
NOTE: To guarantee the electrical safety of the machine, it must be connected to a protective earthing equipment conductor installed as specified. In addition, the machine must be connected on site to the
equipotential bonding connection. The connecting screw ( ) provided for this purpose is located next to
the cable inlet.
These fundamental safety requirements and the professional design of the on-site installation must be verified by a qualified electrician.
Hobart does not accept any liability for damage caused by improper installation! Any applicable local installation instructions must be observed!
The mains cable must be connected via a cut-out device (main switch or accessible plug device).
Modification to an alternative power supply is possible as per the variants on the circuit diagram. Connection dia­grams are located adjacent to the connection terminals.

5.6 Connecting the water

NOTE:The machine must be operated with drinking water quality. For water with a high mineral content, we recommend a demineralisation system. In the EU, Switzerland and possibly other countries, a type EA backflow preventer must also be installed at the water connection in order to comply with the requirements of EN 61770 (e.g. HOBART part no. 04-019574-001). Applicable local installation regulations must be observed.

Machine without drain pump:
Ensure gravity drain.
For these machine types, a floor drain is mandatory as
the drain hose exits the machine at approx. 60 mm
above floor level. Otherwise, residual water may remain
in the tank and hose.
Do not kink drain hose.

not exceed a max. height of 0.65 m.

6.1 Setting the water hardness (optional)

NOTE: The softener must be set to the existing water hardness (ask at the local water works).
Set hardness range according to section 6.1.

Open Door.
Unscrew the salt reservoir lid and add approx. 1 kg of
granular (2-8 mm) regenerating salt (do not use salt tab-
lets).
Filling the salt reservoir (optional)
NOTICE!
Property damage
Accidentally filling the salt reservoir with detergent will damage the water softener.
Do not fill the salt reservoir with detergent.
Fill up the reservoir with potable water (only during commissioning).
Make sure the lid seal is free of soil deposits and salt.
Screw lid back on and tighten.
NOTICE!
Property damage
Salt residues on the tank floor cause corrosion damage.
Remove salt residues by hand.
On completion, start a wash programme to remove all traces of salt, if necessary.

6.3 Prepare chemical suction

We recommend the use of HOBART Hyline detergent and rinse aid.
NOTE: Mixing chemicals in the hose when exchanging chemicals can lead to crystallisation and damage to the hoses and dosing units. This is prevented by intermediary rinsing with water (see section 8.7 and Failure to comply with this information will invalidate the guarantee and product liability.

In the case of machines without booster pump that are connected to cold water, we recommend filling and empty­ing the water tank once according to the instructions (see section 7.3.1 and 7.6).

7.1 Special safety instructions

If the Door is opened during operation, vapour can escape and/or wash water can spurt out and cause injury.
Do not open the Door during operation, wait for the program to finish.
WARNING!
Danger of slipping
Moisture can build up around the machine and cause slipping.
Provide a floor covering that is guaranteed to be non-slip in case of moisture.

7.2 Notes for optimum wash results

The rinse result is significantly affected by the water quality. If the mineral content is high, the minerals dissolved become visible on the glasses in the form of spots and streaks during the drying process.
A HOBART trained service technician can determine the water's mineral content by measuring the electrical conductivity. V If the values are higher, we recommend the use of a HOBART HYDROLINE demineralization car­tridge or a reverse osmosis unit.
If you have any questions, please contact your authorised HOBART service partner.
We recommend the use of special HOBART glass racks. HOBART racks hold the glasses in slightly inclined positions – this improves the rinse efficiency
To avoid unpleasant smelling glasses, only chlorine-free detergent should be used for washing the glasses. Before washing new glasses the first time with a commercial glass washer, intensive basic cleaning is mandatory to

During automatic filling and heating, the ON/OFF button flashes blue and the fill symbol is illuminated.
As soon as the machine is ready for operation, the ON/OFF but­ton illuminates green and the fill symbol goes out.

7.6 Switching off the machine

Versions with stand pipe: Pull.
Close Door.
In standby mode, press the ON/OFF key for 3 seconds.
The ON/OFF key flashes blue, the drain symbol illumi­nates
When the drain process is complete, the machine switches off automatically and the key illumination goes out.
During the drain process, the machine interior is cleaned automatically. Then remove any coarse residues manually.

7.7 Executing daily cleaning

NOTICE!
Property damage
The use of unsuitable agents can cause corrosion or damage to the surfaces.
Do not use any chlorine-containing, acidic or metal-containing additives to clean the machine.
Do not use metal sponges.
Open the door, remove strainer and standpipe if fitted. Rinse under
running water. Make sure that food debris does not enter pump
intake!
Clean machine interior.
Replace strainer and stand pipe if necessary

Leave the door open for ventilation.

7.8 Executing weekly cleaning

Remove and clean all rinse arms on the base and ceiling
of the wash chamber. T
(A) between the arms and remove both arms. The
knurled nut should remain firmly attached to the slotted
screw axle (B) in the thinner rinse arm (C). If necessary,
hand-tighten the knurled nut on the slotted screw axle.
Caution: Do not lose the white Teflon disc (D)!
Also clean the arm base and axle on the base and ceiling.
Replace all parts.
7.9
After reaching a predefined number of rinse cycles, the notice "HY" is shown on the display and the ON/OFF key flashes red/green. This indicates that an automatic hygienic clean of the machine interior should be carried out.

Settings
Before end of operation, remove the rack and place 2 HOBART hygiene tabs in the machine interior (1 tab for
model 404).
Tap the programme selection key.
Select hygiene programme "HY".
Close Door.
Press the ON/OFF key
While the hygiene programme is running (duration approx. 10 minutes), the ON/OFF key illuminates blue.

Finally, the machine drains and switches off automatically. The key illumination goes out.
If necessary, hygiene cleaning should be carried out before the pre-set number of wash cycles is reached. With regular use, the machine interior will remain free of soil and dirt deposits.

10 Troubleshooting guide

10.1 Poor wash result

Fault type Possible cause Remedy
Wash ware not clean. Wash arm stiff (must rotate easily by
hand).
Wash arm nozzles are clogged (vis­ual check).
Rinse nozzles clogged (usually by lime deposit).
Detergent concentration is too low or too high.
Strainer soiled. Remove, empty and clean strainer. Wrong programme selected for
heavily soiled wash ware.
Wash ware does not dry properly. Rinse aid dosing too low. Increase dosage.
Wash ware still greasy. Detergent concentration too low:
Rack is not suitable for type of dishes (sloping).
Wash ware remains in the machine too long at the end of wash cycle.
Streaks and spots on wash ware. Rinse aid concentration too high
(stripe or bubble formation).
Remove wash arms and clean them thoroughly. Also check water outlet from machine to wash arm is clear.
Remove wash arm, remove cleaning plugs and rinse wash arm thoroughly until all soiling is removed. Replace cleaning plugs.
Remove rinse arms and descale them in separate container. Check site softening system for func­tion.
Check detergent concentration set­ting.
Select programme with longer wash cycle.

Every local water works holds data on the composition of the water they supply and will provide these on request. Reference values: Ideal calcium value: 0 – 3°d (total hardness). Ideal mineral content value: for glasses, max. conductivity 100 µS/cm, for dishes, still viable to max. 400 µS/cm.
Use appropriate racks to create a sloping position which allows water to drain away from cavities.
Increase rinse aid dosing.
Do not use salt tablets.

10.2 Other faults

Glasses are totally or partially cloudy.
Glass/dish breakage.
Surface of glasses is rough and porous, this is called glass corrosion.
Use of unsuitable dish or glass racks. Use suitable racks.
Use new glasses, this is not caused by a malfunction on the machine.

11 Maintenance

In order to maintain the warranty, as well as a permanently safe, efficient, and trouble-free operation of the machine(s), the required maintenance must be carried out by authorized service technicians. We therefore recom­mend the conclusion of an inspection and maintenance contract, which guarantees qualified support by specially trained service technicians according to a time schedule based on the operating conditions.
Genuine spare parts must be used for repairs and wearing part replacements. Wearing parts include dosing hoses, rinse arm bearings, etc. In Germany and Safety and must be inspected by a qualified electrician in accordance with the intervals specified by the Insti­tute for Work and Health of the German Social Accident Insurance [DGUV V3 (BGV A3)].
