•Avoid roasting roast meat in the grill pan to prevent spitting.
•Pour boiling water into a bain-marie before cooking, but do not overfill.

• When using the grill, place the food on the wire shelf beneath or on a spit and then use the grill tray below to catch the juices.
• Cooking in the oven is done with the door closed. However, the door must be ajar when using the |
feature at highest temperature. |
If using the spit do not exceed 220 ºC (the temperature suggested throughout this guide) and keep the door closed.
U S I N G T H E O V E N
Roasting joints
•Allow all joints to sit at room temperature for at least 1 hour before roasting. Remove any excess fat to prevent smoke and smells.
•Wherever possible use earthenware rather than glass dishes (less spitting) big enough to contain the joint easily.
•Do not sprinkle with salt before cooking as this dries the meat out.
•Add a few tbsp of warm water to the roasting dish to prevent the juices burning.
•After removing from the oven, wrap the joint in kitchen foil and leave to recover for 10 to 15 mins. The meat will be more succulent and tender and the meat a uniform colour.
•Grilling meat: Drizzle with a thin layer of oil. Avoid pricking red meat and use a spatula or tongs to turn over.
•Prick poultry skin under the wings so the juices can run out without spitting.
Baking cakes
•Choosing your cake tin:
Avoid bright shiny tins:
•They require longer cooking times.
•The oven has to be pre-heated. Use non-stick tins for flans, pies and quiches. These give crisper golden pastry on the base.
•Tip:
Even if your tins are non-stick, use baking parchment to protect them. It makes it easier to turn flans etc. out. Use it too to line enamelled tins to protect the coating from fruit acids.Always add yeast last and avoid contact with salt, which will destroy the yeast's properties.
When you use the fan feature we recommend that you reduce cooking temperatures by 30-50ºC compared with a conventional oven and extend the cooking time by 5 to 10 minutes.
Cooking vegetables
•When preparing a dish topped with layered potatoes, precook the sliced potatoes in water or milk.
•To peel peppers, place them under a hot grill turning frequently until the skin bubbles. Pop into a plastic bag for a few minutes and the skin will peel away easily.
•When stuffing tomatoes, slice off one end and scoop out the pulp and pips. Salt the inside and leave to drain on a grid before stuffing.
•Drain cooked leeks and chicory thoroughly before coating with a sauce (ham or béchamel) otherwise the cooking liquid will water down the sauce.
•Mix grated cheese with breadcrumbs for a topping that is brown and crispy.
• When cooking times are long, turn the oven off 5 to 10 minutes before the end and use the residual heat to finish the dish.

• Several dishes (similar or different) can be cooked at the same time without any contamination of smell or taste, provided they require the same temperature. The dishes cooked can require different lengths of cooking. The cooking times shown in the table for each dish should be extended by 10 to 20 minutes.

•Ne cuisez pas les viandes dans la lèche-frite : risque d’éclaboussures.
•Un bain marie doit toujours débuter avec de l’eau bouillante : ne pas trop remplir le plat.
•GRIL à puissance variable : faîtes varier la puissance du mini vers le maxi (voir notice).
•En fonction GRIL, placez le mets à griller sur la grille ou le tourne-broche; la lèche frite sur le gradin du bas pour recevoir le jus.
•Les cuissons se font porte fermée ; toutefois en température maximum, la porte doit être entrouverte.
En Gril utilisant le tourne-broche ne pas dépasser 220°C (Température préconisée dans ce guide) et griller porte fermée.
CONSEILS D’UTILISATION DU FOUR
Cuisson des viandes
•Avant d’être mises au four, toutes les viandes doivent rester au moins 1 heure à température ambiante. Supprimez la barde sur les viandes rouges pour éviter fumées et odeurs.
•Choississez un plat de préférence en terre (moins de projections que le verre) bien adapté à la taille de la viande à rôtir.
•Salez en fin de cuisson pour éviter de faire sortir le sang et déssécher la viande.
•Ajoutez quelques cuillerées d’eau chaude dans le plat pour éviter la carbonisation du jus.
•Temps de cuisson

•En fin de cuisson, il est indispensable de laisser reposer les viandes, emballées dans du papier aluminium(10 à 15 min). Cette attente favorise la détente des fibres, l’uniformisation de la couleur, les viandes garderont leur moelleux.
•Pour les grillades : enduire d’une fine couche d’huile. Les grillades de viandes rouges ne se piquent pas ; utilisez plutôt une spatule pour les retourner.
•Piquez la peau des volailles sous les ailes pour que la graisse puisse s’écouler sans éclabousser.
Cuisson des pâtisseries
• Choix des moules :
Evitez les moules clairs et brillants :
•Ils rallongent le temps de cuisson.
•Ils nécessitent de préchauffer le
four.
Préférez les moules en tôle anti-adhésive pour les tartes, les quiches... Ils donnent une pâte croustillante et dorée dessous.
• Astuces :
N’hésitez pas à protéger l’intérieur des moules ou le fond du plat émaillé d’une feuille de papier sulfurisé : il protège des taches acides et facilite le démoulage. Ajoutez toujours la levure en fin de préparation et ne la mettez pas en contact avec le sel : elle perdrait de ses propriétés.
Chaque fois que vous sélectionnez un mode de cuisson utilisant l’hélice de brassage d’air, il est recommandé de diminuer de 30°C à 50°C la température par rapport à un mode de cuisson traditionnel.
Les temps sont alors prolongés de 5 à 10 minutes
Cuisson des légumes
•Quand on fait un gratin de pommes de terre, il est conseillé de précuire les pommes de terre en rondelles dans du lait ou du lait + crème.
•Pour peler aisément les poivrons : faîtes les griller sous le gril bien rouge en les retournant : lorsque la peau boursoufle, enveloppez-les dans un sac plastique quelques minutes, ensuite la peau se retirera facilement.
•Pour faire des tomates farcies : après avoir découpé un chapeau, retirez les grains, salez l’intérieur et retournez les sur un grille pour qu’elles s’égouttent avant de les farcir.
•Les endives (au jambon et à la béchamel) doivent être longuement égouttées : sinon l’eau de cuisson va rendre la sauce liquide et sans saveur.
•Quand on couvre un gratin de chapelure, il faut la mélanger au gruyère, elle absorbe les graisses et rend le gratin croustillant.
• Si la cuisson est longue, arrêtez le four 5 à 10 minutes avant la fin du temps et profitez de la chaleur résiduelle pour terminer la cuisson.

EFFECTUEZ UN PRECHAUFFAGE AVANT D’ENFOURNER LES PLATS
• Il est possible de cuire simultanément plusieurs plats (de même nature ou différents) sans que le goût ni l’odeur ne se transmettent de l’un à l’autre, à condition de choisir des cuissons se faisant à la même température. Les plats ne s’enfournent ou ne se défournent pas nécessairement en même temps. Les temps de cuisson du tableau indiqué pour un seul plat doivent être prolongé de 10 à 20 minutes environ.
