20 Quart MIXER

GENERAL

The 20 quart mixer has an electric motor, belt drive, and a #12 attachment hub. A 20 quart bowl, B-Flat beater, and D wire whip are shipped as standard equipment. A 0 - 15 minute timer is optional.
Available attachments and accessories include the following: 9" vegetable slicer, VS9 dicer attachment, power dicer attachment, meat chopper attachment, and splash cover. With the use of special agitators, an optional 12 quart bowl may be used on the 20 quart mixer.

INSTALLATION

UNPACKING
Immediately after unpacking the mixer, check for possible shipping damage. If the mixer is found to be damaged, save the packaging material and contact the carrier within 15 days of delivery.
Prior to installation, test the electrical service to assure that it agrees with the specifications on the machine data plate.
LOCATION
Remove shipping bolts that attach the four legs to the base-frame of the carton. A plastic boot is provided for the bottom of each leg; a plastic plug is provided for the top of each leg.
Assemble boots and plugs to the four legs. Place the mixer on a suitable sturdy level surface. There should be adequate space around the mixer
for the user to operate the controls and install and remove bowls. Holes are provided in the bottom of the legs to permanently secure the mixer to the countertop,
although this is not necessary in normal installations. If you decide to attach the mixer permanently, use the holes in the bottoms of the legs (where the shipping bolts were removed), drill through the plastic boots, and use suitable fasteners (not provided).

GROUNDING PLUG WHICH MUST BE CONNECTED TO A PROPERLY GROUNDED RECEPTACLE. IF THE RECEPTACLE IS NOT THE PROPER GROUNDING TYPE, CONTACT AN ELECTRICIAN. DO NOT REMOVE THE GROUNDING PRONG FROM THE PLUG.

TIR — The slowest speed, for heavy mixtures, bread dough, or incorporating ingredients.
Speed 1 (Low) — For light dough, heavy batters, or potatoes. Speed 2 (Medium) — For cake batters or some whipping operations. Speed 3 (High) — For light work, such as whipping cream, beating eggs, or mixing thin batters.
NOTE: Before completing a mixing job, always return to STIR speed to be ready to begin the next job.

OWL LIFT HANDLE (Fig. 1) is used to raise and lower the bowl. To raise the bowl, rotate the handle
downward; rotating the handle upward lowers the bowl.

MIXING
This section explains operation of the mixer and how to install bowls, agitators, and attachments.
Bowl
New mixer bowls and agitators (beaters, whips, and dough arms) should be thoroughly washed with hot water and a mild soap solution, rinsed with either a mild soda or vinegar solution, and thoroughly rinsed with clear water B
EFORE being put into service. This cleaning procedure should also be followed
for bowls and agitators before whipping egg whites or whole eggs. The bowl must be installed before the agitator. To install the bowl, fully lower the bowl support (Fig. 1).
Position the bowl so the ball on the back of the bowl fits in the bowl retainer slot on the bowl support and the alignment pins (Fig. 1) on the front of the bowl support fit in the holes on the side brackets of the bowl. Lock the bowl in place by rotating the bowl clamps (Fig. 1) over the side brackets of the bowl.
Agitator
To install an agitator (Fig. 1), the bowl must be installed and fully lowered. Place the agitator in the bowl, push it up on the agitator shaft, and turn it clockwise to seat the shaft pin in the slot of the agitator shank.
To Raise the Bowl While Mixing
Before adding ingredients, make sure the mixer is in S is mixing the product (when required by recipe): Load the ingredients. To begin mixing, hold the S

Attachments
Available attachments and accessories include the following: 9" vegetable slicer, VS9 dicer attachment, power dicer attachment, meat chopper attachment, and splash cover.
To install an attachment, loosen the thumb screw on the attachment hub (Fig. 1) and remove the plug. Insert the attachment into the attachment hub making certain that the square shank of the attachment is in the square driver of the mixer. Secure the attachment by tightening the thumb screw.
NOTE: The attachment hub operates at a wide range of speeds (revolutions per minute). The high speed of the attachment hub makes the Speed Drive attachment unnecessary. Therefore, the Speed Drive Attachment MUST NOT BE USED on L20 mixers.
Start the mixer and move the gear shift lever to the desired speed to operate the attachment. TIR. If material in the cylinder stalls the
mixer, stop the mixer at once. DO NOT attempt to restart the mixer — remove the adjusting ring, knife, plate, and worm and clear the obstruction. THIS ATTACHMENT MUST NOT BE USED TO CHOP BREAD CRUMBS.
The bowl scraper attachment is not available on L20 mixers.

CLEANING WARNING: UNPLUG MACHINE POWER CORD BEFORE BEGINNING ANY CLEANING
PROCEDURE. The mixer should be thoroughly cleaned daily. Bowls and agitators should be removed from the mixer and cleaned in a sink. DO NOT use a hose to clean the mixer — it should be washed with a clean damp cloth. Clean the Bowl Guard by wiping with a cloth or sponge and warm soapy water.

MAINTENANCE

PROCEDURE.
LUBRICATION
Bowl Clamps (Fig. 1) should be lubricated twice a year.
Motor
The motor has sealed ball bearings which require no lubrication maintenance.
Bowl Lift Slideways
The bowl lift slideways (Fig. 1) should be lubricated once each month. Apply a light coat of a "Food Grade" grease to both sides of the slideways.
