CLEANING

WARNING: SLICER KNIFE IS SHARP. EXERCISE EXTREME CAUTION WHEN WORKING NEAR THE KNIFE.

AND TURN THE INDEX KNOB FULLY CLOCKWISE BEFORE CLEANING.

All Slicer Surfaces

Wash all surfaces of the machine with a cloth and mild detergent.

DO NOT wash any slicer components in a dishwasher.

DO NOT clean any parts of the slicer with steel pads.

Rinse with cloth and clean water. Sanitize.

Excessive amounts of sanitizer and use of products not formulated for stainless steel or aluminum may void your Hobart warranty.

Chlorinated sanitizer not to exceed 200 ppm.

Push lift lever to rear to clean area underneath slicer.

Pull lift lever back to return slicer to normal position.

Carriage Tray

Turn Index Knob fully closed.

Pull Carriage Tray to Home position.

For midday cleaning

Unscrew knob on Carriage Tray.

Tilt Carriage to the right. Clean area.

For thorough cleaning

Remove Carriage Tray.

Wash in a sink, rinse with clean water and sanitize.

Top Knife Cover & Deflector

Remove top knife cover by rotating latch knob and lifting off.

Remove the deflector (rotate outward, away from the blade).

Wash in a sink, rinse and sanitize.

Knife

Turn Index Knob fully closed.

Wash, rinse and sanitize both sides of the knife by wiping outward from the center.

Replace all components.

Ring Guard

Clean inside ring guard

Work a moistened paper towel between the ring guard and knife.

Insert the towel at the base of the ring guard.

Manually rotate the knife to wipe ring guard and edge of gauge plate.

Use Arby’s cleaning brush as shown in the video.

Cleaning Sharpener

Remove sharpener

Push lock lever to left.

Lift sharpener off.

Wash in a sink, rinse and sanitize.

Do not soak or put in dishwasher.

No tools required. No adjustments necessary on sharpening stones.

KNIFE SHARPENING

WARNING: UNPLUG POWER CORD.

Sharpen only when quality of slice does not provide a minimum of 12 slices per 3 oz. portion.

Turn Index Knob fully closed.

Remove top knife cover by rotating latch knob and lifting off.

Thoroughly clean knife area.

Plug in the slicer power cord.

Unscrew knob on Carriage Tray.

Tilt Carriage Tray to the right.

Start slicer by pulling the Start/Pause Knob with your right hand until the slicer starts; continue to hold it out (do not release it).

Use left hand to pull sharpener handle fully toward operator for 5 seconds. Slowly release the sharpener handle.

Release the Start/Pause Knob.

Push Knob to turn slicer OFF.

Wipe slicer thoroughly to remove any grinding particles.

Replace components.

LUBRICATION

WARNING: UNPLUG POWER CORD.

Use only Lubriplate FMO-200-AW food-safe lubricant, supplied.

Pull out telescoping tube on oil bottle.

Monthly Maintenance:

Squirt 5 drops in the wick hole on the carriage transport.

• On cleaned sharpener, squirt 1 drop
