IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety pre­cautions should always be followed to reduce the risk of fire, electrical shock and/or personal injury .
1) Read all instructions.
2) Close supervision is necessary when any appliance is used by or near children.
3) To protect against fire, electric shock and/or personal injury , do not place cord, plugs, or
appliance in water or any other liquid.
4) Turn the stand mixer off and unplug it from the outlet when not in use, before cleaning and before installing or removing attachments.
5) Do not operate any appliance with a damaged cord or plug or after the appliance malfunctions, or has been damaged in any manner. Return
appliance to an authorized DeLonghi service
center for examination, repair or adjustment.
6) To disconnect, remove stand mixer plug from wall outlet. Always hold plug, but never pull the cord.
7) Do not use outdoors.
8) Do not let stand mixer cord hang over edge or counter, or touch hot surfaces.
9) Do not use appliance for other than intended use.
10)Keep fingers away from moving parts and fitted attachments.

Read the section pertaining to your specific accessory for additional important safeguards.
BEFORE YOUR FIRST USE
Carefully unpack your accessory and remove all packaging material. For accessories with blades, remove the plastic blade covers from the blade assembly. Use caution when removing the plastic covers, the blades are extremely sharp. These covers should be discarded as they are to protect the blades during manufacture and shipment. Remove any labels or stickers from the accessory. To remove any dust that may have accumulated during packaging, clean your accessory thoroughly before using for the first time. Read the section pertaining to your specific accessory for detailed “Care and Cleaning” instructions.
CAUTION: Be sure to switch “off” and unplug the stand mixer before cleaning the body and its
attachments. To protect against electrical shock, do
not immerse cord, plug or unit in water or liquid. After each use, always make sure plug is first removed from wall outlet.
NOTE: Before using any of the attachments, plug the stand mixer into a 120V/60Hz AC only outlet, and then switch it “on” according to the directions in your stand mixer instruction manual.
MINI FOOD PROCESSOR AND CHOPPER (Model A938)
IMPORTANT SAFEGUARDS
For Your Mini Food Processor and Chopper
1) Never fit the base and blade unit to your machine without the container fitted.
2) Never unscrew the container while the mini food processor and chopper is fitted to your machine.
3) Do not touch the sharp blades. Keep the blade unit away from children.
4) Only use the container and the blade unit with the base supplied.
5) Never blend hot liquids.
6) Never remove the unit until the blades have completely stopped rotating.
7) Never operate the unit for longer than 2 minutes.
8) Switch “off” as soon as you have reached the right consistency. Spices take less than 1 second to process.

Operating Your Mini Food Processor and Chopper
Use the mini food processor and chopper to process foods such as spices, herbs, nuts, baby food, cooked fruit, bread and coffee beans.
1) Put your ingredients into the container (3). Do not fill above the maximum level.
2) Be sure the rubber seal fits tightly in place on the blade unit (2).
3) Turn the blade unit upside down. Lower it into the container with the blades facing downward.
4) Screw the base (1) onto the container until it fits tightly .
5) Remove the high-speed outlet cover from the stand mixer . Figure 1.
6) Screw the mini food processor and chopper onto outlet 3.
7) Switch the stand mixer “on” to maximum speed.
Suggestions For Your Mini Food Processor and Chopper:
1) Herbs are best processed when clean and dry .
2) Always add a little liquid when blending cooked ingredients to make baby food.

Care and Cleaning for Your Mini Food Processor and Chopper
1) Switch the stand mixer “off” and remove the mini food processor and chopper from the unit.
2) Containers, Lid and Base: Wash by hand in warm water with mild detergent, and then rinse and dry thoroughly . Alternatively, you can place the
container in the top rack of your dishwasher .
3) Blade Unit: Remove and wash the rubber seal by hand in warm water with mild detergent, and then rinse and dry thoroughly . Brush the blades clean under hot running water. Use caution when handling the blades, they are very sharp.

Operating Your Potato Peeler
1) Fit the rotating plate (2) inside the bowl (3).
2) Add cold water to just cover the plate.

3) Put your potatoes or carrots into the bowl. Use no more than:
1/2 lb. (Model A934)
1 lb. (Model A952)
4) Snap the cover (1) on and then raise the mixer head.
5) Fit the bowl to the stand mixer by turning it
counterclockwise. Figure 1.
6) Lower the mixer head, and insert the metal pin into the plastic hole. Figure 2. If the mixer head will not shut, raise it, and then switch “on” and “off” to reposition the metal pin. Figure 3.

7) Switch the stand mixer to speed 2-3.
8) Af ter peeling is complete, rinse the veget ables in cold water.
Suggestions for Your Potato Peeler:
1) Use evenly sized vegetables
2) Cut large vegetables into pieces.
3) New potatoes peel faster than old potatoes.
4) Do not over-peel: the most nutrients lie just under the skin.

Care and Cleaning for Your Potato Peeler
1) Switch the stand mixer “off” and remove the potato peeler from the unit.
2) Remove the bowl by turning it clockwise.
3) Rinse the parts by hand in cold water immediately . Do not place in your dishwasher.
Then leave to dry .

For Your Pasta Maker
1) Dough that is too dry or fed too quickly can break your pasta maker . Follow your dough recipe.
2) Only use the spanner (1) handle to push dough down the feed tube. Do not push too hard.

Assembling Y our Past a Maker
1) Optional: For easier pasta making, warm the pasta maker parts in hot water, and then dry thoroughly.
2) Fit the scroll (4) inside the body (5). Then fit a screen (3) by putting the notches over the pins. Figure 1. The screens are numbered: 1: Spaghetti 2: Macaroni 3: Rigatoni 4: T agliatelle 5: Lasagne 6: Large Macaroni
Operating Your Pasta Maker
1) Make pasta dough according to the directions on your dough recipe.
2) Remove the low-speed outlet cover by sliding the catch and then pull. Figure
2.
3) Hold the catch back and insert the pasta maker, with the feed tube facing you. Turn it from side-to-side until it locks into place.
4) Tighten the ring nut and then switch the st and mixer to speed 3.
5) Drop small pieces of the mix at a time into the feed tube (6). Figure 3. Allow the scroll to clear before continuing. You can push them down gently using the spanner handle. Do not use anything else or push too hard. Your pasta could break.

6) The first batch will come out curly; the second batch will be more straight. Note: You can
reprocess the first batch.
7) When the pasta is long enough, cut the desired length. Figure 4.

8) To change screens, remove the ring nut and switch briefly to speed 1 to eject the screen.
9) Cook macaroni and rigatoni within 4 hours.
Otherwise, they will become brittle and snap.
Care and Cleaning for Your Pasta Maker
1) Switch the stand mixer “off” and remove the pasta maker from the unit.
2) Loosen the ring nut manually or with the spanner , and then dismantle. Figure 5.
3) Use the cleaning tool (8) to remove all dough.
Note: Allow the dough to dry in the screens before
using the cleaning tool.
4) Wash parts by hand in warm water with mild detergent or place in the top rack of your
dishwasher.

HIGH-SPEED SLICER / SHREDDER (Model A998)
IMPORTANT SAFEGUARDS
For Your High-Speed Slicer / Shredder
1) Never put your fingers in the feed tube.
2) Never remove the lid until the disc has completely stopped.
3) Handle discs with care, they are extremely sharp.
4) Always operate on a low speed.
5) Avoid contact with moving parts - keep fingers out of feed tube and food outlet.
6) Never feed food by hand, always use the stomper .

Assembling Your High-Speed Slicer / Shredder
1) Put the base plate (6) onto the base unit (7).
2) Carefully push one cutting disc (5) onto the shaft (4).
3) Fit the lid (3) onto the base. If it does not fit tightly to the base plate, try again.
4) Turn the lid clockwise until it clicks into place.
5) Remove the high-speed outlet cover and fit the high-speed slicer / shredder to the outlet.
6) Plug the stand mixer in and put a bowl under the food outlet (8).

Operating Your High-Speed Slicer / Shredder
1) Put the food into the feed tube. Note: Do not cut food too small. Pack the feed tube tightly . This prevents food from slipping sideways during processing. Do not place fingers in feed tube.
2) Switch the stand mixer “on” to “min” speed (or speed 1 for cheese). Then push your food down with the stomper.

1) Switch the stand mixer “off” and remove the high­speed slicer / shredder from the unit.
2) Lid, Stomper, Cutting Discs, Base Plate: Wash by hand in warm water with mild detergent, and then rinse and dry thoroughly . Use caution when handling the cutting discs, they are very sharp.
3) Base: Wipe the inside with a damp cloth. Do not let the central hole or the underneath get wet. Dry thoroughly.
4) Note: Some foods such as carrots may discolor the plastic. To remove this, rub the plastic with a cloth dipped in vegetable oil.
FRUIT AND VEGETABLE STRAINER (Model A992: 5-Quart) (Model A930: 7-Quart)

1) Raise the mixer head on the stand mixer .
2) Fit the mixing bowl to the unit.
3) Insert your fruit and vegetable strainer bowl (3).
4) Insert the screen (fine or coarse) (2).
Operating Your Fruit and Vegetable Strainer
Coarse Screen:
1) Place the rough side up for removing fibers from cooked vegetables (Ex. rhubarb and spinach), and for pureeing fruit and vegetables
(Ex. bananas and cooked potatoes)
2) Place the smooth side up for straining cooked fruit (Ex. plums)
Fine Screen:
3) Place the rough side up for pureeing cooked fruit and vegetables (Ex. tomatoes and potatoes).
4) Place the smooth side up for flour and soft fruit (Ex. raspberries)

5) Insert the paddle (1) and turn it until it stops. Then
push into mixer head. Figure 1.
6) To remove it, turn it back in the opposite direction.
7) Lower the mixer head. The paddle blades should
bend slightly against the strainer.
8) Note: If you need to adjust
the height, see the “Adjust ing the Paddle Height” section.
9) Allow cooked food to cool.
10) Switch the stand mixer to
“min”. Clear the screen between batches.

during operation.
12) Increase the speed slowly to 1 or 2, but reduce
the speed if the ingredients start to splatter .
Adjusting the Paddle Height
1) Unplug the stand mixer and raise the mixer head.
2) Insert the paddle. Hold the paddle, and then loosen
the nut.
3) Lower the mixer head. Adjust the height by turning
the paddle. The paddle blades should bend slightly against the strainer.
4) Raise the head, hold the paddle and then tighten
the nut.

1) Switch the stand mixer “off” before removing the
paddle. Wash bowl, paddle and screen by hand with warm water and mild detergent, and then rinse and dry thoroughly .

JUICE EXTRACTOR (Model A935)
IMPORTANT SAFEGUARDS
For Your Juice Extractor
1) Never put your fingers in the feed tube. Use the stomper.
2) Fit the clip over the lid before switching “on” the stand mixer.
3) Do not remove the lid until the filter has stopped.
4) Do not touch moving parts.
5) If pulp stops coming out, switch the unit “off” and unclog the bowl.

Dismantling Your Juice Extractor
1) Undo the clip (1 1) and remove the lid. (3)
2) Using the top of the stomper (1), unscrew the grater plate (5) by turning it clockwise.

Assembling Your Juice Extractor
1) Position the bowl onto the stand mixer by aligning
the tabs with the grooves in the base (10).
2) Insert the strainer by aligning the
tabs.
3) Using the top of the stomper, screw
the grater plate on counterclock­wise.
4) Fit the lid, and then swing the clip up
and click it shut.
5) Slide the pulp shield (4) on. Re-
move the high-speed outlet cover. Attach the juice extractor , and turn it until it locks into place. Figure 1.
6) Place a container under the spout.
Preparing Food for Your Juice Extractor
1) Remove pits (Ex. plums, peaches and cherries)
2) Remove tough skins (Ex. melons, pineapples, cucumbers and potatoes.)
3) Soft-skinned and other food just need washing (Ex. apples, grapes, pears, strawberries, cab­bage, carrots, celery, lettuce, parsley, etc.)
4) Cut the food to fit the feed tube.
5) Slide the pulp shield on. Remove the high-speed outlet cover.
6) Switch the stand mixer to speed 1 and push the food down with the stomper.
Care and Cleaning for Your Juice Extractor
1) Dismantle before cleaning according to the directions under “Dismantle the Juice Extractor”.
2) Do not wash any parts in your dishwasher. Wash parts by hand with mild detergent and warm water, and then rinse and dry thoroughly.

3) Some foods (Ex. carrots) may discolor the plastic. Rub the plastic with a cloth dipped in vegetable oil to help remove the discoloration.
4) Never immerse base in water.

Use the citrus juicer to squeeze juice from citrus fruits (Ex. oranges, lemons, limes, etc.)

Operating Your Citrus Juicer
1) Remove the citrus juicer outlet cover. Use the end tip of the juicing cone to unscrew the outlet plug.

4) Insert the juicing cone by turning it until it drops.
5) Cut the fruit in half, Then switch the stand mixer “on” to speed 4 and press the fruit onto the cone.
6) The connector may tighten during operation. To loosen it, refit the bowl and then turn it counter­clockwise. Refit the outlet cover after use.

1) Wash part s by hand with mild detergent and warm water , and then rinse and dry thoroughly.

1) Never feed food by hand. Always use the stomper.
2) Do not use fingers to scrape food from screen while appliance is operating. This increases the risk of personal injury .

Assembling Your Food Grinder
1) Fit the scroll (5) inside the grinder body (6). Then
carefully fit the blade (4), with the cutting side on the outermost part. Figure 1. Be sure that the blade is fitted properly , otherwise it could damage the grinder .
2) Fit a grinder screen (3) and put the notch over the
pin using the spanner (1). Figure 2.
3) Note: Use the fine screen for raw meat, fish,
small nuts or cooked meat. Use the medium and coarse screens for raw meat, fish, nuts, veg­etables, hard cheese and peeled or dried fruit.
4) Loosely fit the ring nut (2).

Operating Your Food Grinder
1) Pull the catch and remove the low-speed outlet cover from the stand mixer . Figure 3.
2) Hold the catch back and insert the grinder. Turn it from side-to­side until it locks into place.
3) Tighten the ring nut manually.
4) Fit the tray (7) and put the dish / cover (10) under the grinder to catch the food.
5) Note: Thaw frozen food thoroughly before minc­ing. Cut meat into 1-inch strips.
6) Switch the stand mixer to speed 4. Using the stomper (8), gently push the food through, one piece at a time. Do not push too hard, you could damage the grinder.

Operating Your Sausage Adapter
1) Note: If you are using skin, soak it in cold water for 30 minutes first.
2) Pull the catch and remove the low-speed outlet cover.
3) Hold the catch back and insert the grinder body . Turn it back and forth until it locks into place.
