1.1 About these operating instructions
Purpose
These operating instructions are intended to provide everyone who uses the combi oven with an over‐
view of the operating panel and how to use it, and to enable them to perform essential tasks using the
software.

Safety information in the customer documentation
Safety information relating to the combi oven appears only in the installation manual and the user
manual.
The installation manual contains the safety information for the tasks covered by the manual and which
are performed when moving, setting up and installing the appliance and when putting the appliance
into service and removing the appliance from service.
The user manual contains the safety information for the tasks covered by the manual and which are
performed during cooking, cleaning and servicing work.
The safety information contained in the user manual and installation manual must always be consid‐
ered to be part of the operating instructions. The safety information contained in the user manual and
installation manual must always be observed when performing tasks that go beyond merely operating
the software.
Parts of the customer documentation that must be read without fail
The contents of these operating instructions are confined to describing how to operate the user inter‐
face. Each set of instructions always ends with starting a process such as cooking or cleaning, for
which warning notices must be heeded. The instructions for performing the actual process are given in
the installation manual or the user manual.
To guarantee safety, all people who work with the combi oven must have read and understood the
following parts of the customer documentation before starting any work:

depending on the activity to be performed, the chapter 'For your safety' in the installation manual or
in the user manual
■
the sections in the installation manual or in the user manual that describe the activity to be carried
out
If you do not follow the safety information in the installation manual and the user manual, you risk po‐
tentially fatal injury and property damage.

2.1 How the control panel works
Principle of operation
Your combi oven is operated using a membrane keypad. This means that all the combi oven functions
can be selected either directly using a button on the membrane keypad or via icons presented in the
control-panel display.
After selecting a function, the user is guided through processes by means of function indicators. The
user may still make changes to the workflow if required.
The progress of a process is indicated on the display by a time indication and/or temperature data.
The end of a process is signalled by corresponding function indicators and a signal tone.
Software startup
After you switch on your combi oven at the user interface, the appliance runs a self-test. Once the
software is ready for operation, the cooking temperature and cooking time appear on the display.
The following operating modes are available:

What do I need in order to cook?
In order to cook with your combi oven you need a suitable cooking profile for your product. A new
cooking profile can be entered using the main selection. Alternatively, you can select and run a suita‐
ble cooking profile via the '
Cookbook' menu, which contains ready-to-use cooking profiles.
Before starting a cooking operation, you must always be familiar with the rules and hazard warnings in
the user manual that relate to working safely with the appliance, and you must follow the instructions
given there.

You can enter up to 20 cooking steps.
Result:
You have now finished entering your multi-step cooking
program, which is held in the temporary memory.

To be reminded to perform an action at the end of a cooking step, such as adding liquid, you can in‐
clude a beep signal in the cooking profile.
After the beep sounds, you can then open the oven door and perform the required action. When you
re-close the appliance door, the cooking profile continues with the next cooking step.

Check that the following requirements have been met:

6.3 Recording a cooking program
Purpose
When recording a cooking program, you can save any changes made to the cooking program, temper‐
ature and timings in up to 20 cooking steps in the temporary memory. During the recording process,
all the changes you make at the control panel during cooking are recorded, except for manual steam‐
ing and any cooking steps lasting less than one minute. You can press the 'Start/Stop' button during
the cooking workflow without your cooking steps being lost or overwritten.
To permanently save the cooking program you have created, you can transfer it to the cookbook as a
cooking profile when you have finished recording it.

Purpose
You are able to specify whether you wish the Expert default values or the last-used values to appear
in the display for the cooking time and oven temperature when selecting a cooking program.
