degree of care when using any electrical appliance and adhere to the following precautions:
IMPORTANT SAFEGUARDS
READ ALL INSTRUCTIONS
• Remove and safely discard any packing
materials and promotional labels before
using the oven for the first time.
• To eliminate a choking hazard for young
children, remove and safely discard the
protective cover fitted to the power plug
of this appliance.
• Do not place the oven near the edge of a
bench or table during operation. Ensure
the surface is level, clean and free of
water, flour, etc.
• Always operate the oven on a stable,
heat resistant surface. Do not use on a
cloth-covered surface, near curtains or
other flammable materials.
• A fire may occur if the oven is covered or
touches flammable material, including
curtains, draperies, walls, and the like,
when in operation.
• Do not place the oven on or near a hot
gas or electric burner, or where it could
touch another heated oven.
• Do not let the power cord hang over
the edge of a table or counter, or touch
hot surfaces.
• To protect against electric shock do not
immerse the oven, power cord or power
plug in water or any other liquid.
• When operating the oven, keep a
minimum distance of 4” (10cm) of space
on both sides of the appliance. This
will allow for adequate air circulation
and help prevent the possibility of wall
discoloration due to radiated heat.
• Do not touch hot surfaces. Appliance
surfaces, including the door and outer
surface of the oven are hot during and
after operation. To prevent burns or
personal injury, always use protective
hot pads or insulated oven mitts, or use
handles and knobs where available,
when inserting, removing or handling
items from the oven. Alternatively, allow
the oven to cool down before handling.
• Extreme caution must be used when
removing pans, dishes and accessories
such as the included broil rack and
baking pan, that contain hot oil or other
hot liquids.
• The glass of the oven door has been
specially treated to make it stronger,
more durable and safer than ordinary
glass, however it is not unbreakable.
If struck extremely hard, it may break
or weaken, and could at a later time,
shatter into many small pieces without
apparent cause.
• Do not leave the door standing open for
extended periods of time when the oven
is turned ON.
• The top of the oven is very hot during
and after operation. Do not store
any item on top of the oven when in
operation. The only exceptions are
described on Page 45 - one layer of
ceramic plates for warming, and the any
accessory provided by Breville for use in
the ribbed section on top of the oven. If
the ribbed section is used as a warming
tray during operation, protective hot
pads or insulated oven mitts should
be used when removing heated items.
Alternatively, allow the oven to cool
down before handling.
• Do not place cardboard, plastic, paper, or
other flammable materials in the oven.

• Caution should be exercised when
cooking foods with high oil content
such as pine nuts and walnuts. Broiling
these foods; cooking them for extended
periods of time or at high temperatures
may create a fire risk.
• In the event that any foods catch fire
in the oven, keep the oven door closed.
Turn the oven off and unplug from the
power outlet. Wait until the fire goes out
before opening the oven door.
• Caution should be exercised when using
pans and dishes constructed of materials
other than metal. If using ceramic or
glass pans or dishes it is important that
they are oven safe to prevent cracking.
• Caution should be exercised when using
lids in the oven, as pressure build up
in a covered pan or dish may cause hot
ingredients to expel or the dish to crack.
• Oversized foods and metal utensils must
not be inserted in the oven as they may
create fire or risk of electric shock.
• Metal utensils such as knives should not
be inserted in the oven to remove food
residue from the quartz tube elements.
This can damage the elements as well as
lead to electrocution.
• It is recommended to use only the
accessories supplied with this oven.
When broiling, the broil rack must be
inserted into the supplied baking pan.
• The use of any accessory attachments
not recommended by Breville may
cause injuries.
• Do not use the toast function for
purposes other than toasting foods.
• Do not place hands inside the oven
during operation.
• This appliance is for household use only.
• Do not use the appliance for anything
other than its intended purpose as
described in this booklet. Do not use
outdoors. Do not use in moving vehicles
or boats.
• Do not attempt to operate the oven by
any method other than those described
in this booklet.
• Do not leave the appliance unattended
when in use.
• Close supervision is necessary when the
appliance is used by or near children.
• This appliance is not intended for use
by persons (including children) with
reduced physical, sensory or mental
capabilities or lack of experience and
knowledge, unless they have been given
supervision or instruction concerning
use of the appliance by a person
responsible for their safety.
• To turn OFF the oven, press the
START/CANCEL button on the control
panel. The oven is OFF when the button
surround illumination is OFF and LCD
is blue.
• To disconnect from the wall outlet, first
turn OFF the oven, and then remove the
power plug from the wall outlet.
• When the oven is not in use or when left
unattended, disconnect the oven from
the wall outlet.
• Before attempting to move the oven,
or before assembling or disassembling
parts, cleaning or storing, turn OFF the
oven, allow to cool, and disconnect from
the wall outlet.
• Strictly follow the Care and Cleaning
instructions on Page 47. Do not clean
with metal scouring pads. Pieces can
break off the pad and touch electrical
parts, creating a risk of electric shock.
• Regularly clean the crumb tray to
discard crumbs. Ensure to turn OFF the
oven, remove the power plug from the
wall outlet and allow the oven to cool
before pulling the crumb tray out.
• Always ensure the crumb tray is
thoroughly dried after cleaning. Ensure
to re-insert the crumb tray before
operating the oven.

• Do not store any materials other than
the supplied accessories in the oven
when not in use.
• This appliance is equipped with a
power cord having a grounding wire
with a grounding plug. The appliance
must be grounded using a 3-hole
properly grounded outlet. In the event
of an electrical short circuit, grounding
reduces the risk of electrical shock.
• If the power outlet is a standard
2-prong wall outlet, it is your personal
responsibility and obligation to have
it replaced with a properly grounded
3-prong wall outlet.
• Do not, under any circumstances, cut or
remove the third (ground) prong from
the power cord or use an adapter.
• Consult a qualified electrician if
the grounding instructions are not
completely understood, or if doubt
exists as to whether the appliance is
properly grounded.
• The installation of a residual current
device (safety switch) is recommended
to provide additional safety protection
when using electrical appliances. It
is advisable that a safety switch with
a rated residual operation current
not exceeding 30mA be installed in
the electrical circuit supplying the

This Quick Start Guide is designed for first time use.
For safety and more information, refer to rest of the Instruction Booklet.
PREPARING THE OVEN
(A ONE-TIME PROCESS)
In order to remove any protective
substances on the heating elements, it is
necessary to run the oven empty for 15
minutes. Ensure the area is well ventilated
as the oven may emit vapors. These are safe
and not detrimental to the performance of
the oven.
1. Place the oven on a flat, dry surface.
Ensure there is 4” (10cm) of clear space
on both sides of the appliance, there are
no items on top, and the crumb tray has
been inserted.
2. Unwind the power cord and insert the
power plug into a power outlet.
3. The oven alert will sound and the LCD
screen will illuminate.
4. Turn the FUNCTION dial until the
indicator reaches the PIZZA function.
The figure on the LCD screen indicates
the preset temperature of ‘425°F’. The
preset FROZEN FOODS setting will also
be displayed.

5. Press the START/CANCEL button
to activate. The button surround will
illuminate red, the oven alert will
sound and the LCD screen will
illuminate orange.
6. The LCD screen will indicate a blinking
‘PREHEATING’. Once the oven has
reached the set temperature, the
temperature alert will sound.
7. The timer will be displayed and
automatically begin to count down in
one minute increments.
8. At the end of the cooking cycle, the oven
alert will sound three times.
The START/CANCEL button surround
will no longer illuminate red and LCD
screen will illuminate blue.
9. The oven is now ready to use.
NOTE

OPERATING YOUR BREVILLE
COMPACT SMART OVEN™
The Breville Compact Smart Oven™ features
Element IQ™ - a cooking technology that
adjusts the power of the heating elements
to cook food more evenly and quickly. Each
of the oven’s functions are preset with our
recommended settings, however we suggest
experimenting with these depending on the
recipe, amount of food and your personal
taste. Your customized setting will remain in
the memory of the oven until changed or the
oven is unplugged from the power outlet.
1. Insert the wire rack into the
recommended rack height position.
These are conveniently printed on
the right hand side of the oven door’s
glass window. The wire rack should
be positioned with the spokes facing
upwards.
2. Turn the FUNCTION dial until the
indicator reaches the desired setting.
3. To change the cooking temperature
or time, press the center of the
TEMP/TIME dial until the LCD screen
displays the corresponding temperature
or time screen. Turn the dial to the left
to reduce the temperature/time or to the
right to increase the temperature/time.
NOTE
The TEMP/TIME dial also functions as
the Darkness and Slice selection control
on the TOAST and BAGEL functions.
Center the food on the wire rack - either
placing directly on the rack or positioned
on the Breville baking pan and broil rack
(see Page 27 of the Instruction Book for
recommended cookware types and sizes).
NOTE
Some functions feature a preheating
cycle. When the START/CANCEL
button is pressed, the LCD screen will
indicate a blinking ‘PREHEATING’.
Only place food inside the oven once
the LCD screen no longer blinks
‘PREHEATING’ and the temperature
alert has sounded.
4. Close the oven door.
5. Press the START/CANCEL button
to activate. The button surround will
illuminate red, the oven alert will sound
and the LCD screen will illuminate
orange.
6. The timer will be displayed and begin to
count down. The cooking temperature
and time can be adjusted during the
cooking cycle.
7. At the end of the cooking cycle,
the oven alert will sound three times.
The START/CANCEL button surround
will no longer illuminate red and LCD
screen will illuminate blue.
NOTE
The cooking cycle can be stopped
at any time by pressing the
START/CANCEL button. This will
cancel the cycle and the button
surround illumination will go out.

OVEN FUNCTIONS
TOAST FUNCTION: Evenly toasts bread so
it’s crisp and crunchy on the outside, while
soft and moist on the inside.

NOTE
During the toasting cycle,
condensation may form on the oven
door and steam may be emitted. This
is normal - caused by the moisture
content of the bread. Freshly baked
and frozen breads generally produce
more condensation and steam.
BAGEL FUNCTION: Crisps the insides of
your cut bagel while only lightly toasting
the outside.

NOTE
The upside of the bagel must always
face upwards towards the top heating
elements - so the top side becomes
crisp while the crust is only lightly

frozen meals including lasagna and pies.

There are two Broiling temperature
settings: ‘HI’ and ‘LOW’. This
determines how quickly the tops of
your food brown - depending on the
food, quantity and your personal taste.
NOTE
When Broiling, the Breville Broil
rack must be inserted into the
Breville baking pan. When assembled
together, the Broil rack is designed to
drain grease and fats away from meats
for healthier cooking. The baking
pan collects these pan drippings and
helps prevent spattering. Depending
on the food being Broiled, it may be
necessary to turn food over half way
through the cooking time to achieve
even cooking and browning.

2. Remove the crumb tray, wire rack, broil
rack, and baking pan from the polyfoam
packaging. Wash them in warm soapy
water with a soft sponge, rinse and dry
thoroughly. Insert the crumb tray into
the oven.
3. Wipe the interior of the oven with a soft
damp sponge. Dry thoroughly.
4. Place the oven on a flat, dry surface.
Ensure there is a minimum distance of
4” (10cm) of space on both sides of the
appliance. Ensure there are no items on
top of the oven.
5. Unwind the power cord completely and
insert the power plug into a grounded
power outlet.
6. The oven alert will sound twice and the
LCD screen will illuminate.
NOTE
In order to remove any protective

It is normal to notice the following occur
during the cooking cycle:
• It is normal that during the broil
function, the bottom set of elements
turn off while the top set is heating at
full power.
• It is normal that the ends of each heating
element will glow more brightly than the
middle of the element.
• It is normal that the elements are
heating even if they are not lighting up.
This cooking technology allows foods to
cook more evenly and quickly, significantly
reducing cooking times. The oven’s preset
cooking temperatures and times, as well as
the cooking temperature and time directions
on pre-packaged foods, may need to be
changed depending on the recipe, the
amount of food and your personal taste.

We recommend experimenting with the
temperature and time settings to produce
the desired results.
The cooking temperature and time can be
adjusted before or during the cooking cycle.
Pressing the center of the TEMP/TIME
dial changes the display on the LCD screen
from TEMPERATURE to TIME and vice
versa; while rotating the dial increases or
decreases the TEMPERATURE or TIME.
NOTE
The TEMP/TIME dial also functions as
the Darkness and Slice selection control
on the TOAST and BAGEL functions.
a) To change the cooking temperature,
press the center of the TEMP/TIME
dial until the LCD screen displays the
temperature screen.
• Turn the dial to the left to reduce the
temperature, or to the right to increase
the temperature.
• The cooking time can be adjusted in
one minute increments up to 1 hour, and
in 5 minute increments between 1 and
2 hours.
A NOTE ON RACK HEIGHT POSITIONS
Cooking results are significantly affected
by the position of the wire rack as this
determines how close the food is to the
heating elements. We highly recommend
following the rack height position for each
function as printed on the right hand side
of the oven door’s glass window. However,
these are a guide only. Certain foods may
require a different rack height position
depending on the recipe, the amount and
size of the food and your personal taste.
• The cooking temperature can be
adjusted in 10°F increments, from
120°F to a maximum of 450°F (or in
the Celsius mode, 5°C increments, from
50°C to a maximum 230°C).
b) To change the cooking time, press the
center of the TEMP/TIME dial until the
LCD screen displays the time screen.
• Turn the dial to the left to reduce the
cooking time, or to the right to increase
the cooking time.

NOTE
When using metal foil to cover
accessories, pans, and dishes, it is
recommended that the wire rack be
in the middle or bottom rack height
position. This is to minimize the risk
of the metal foil coming into contact
with the top heating elements.
For optimum cooking results:
• The wire rack should always be inserted
into the rack height position with the
spokes facing upwards.
• Food should be positioned on the center
of the wire rack, Broil rack or baking tray
to let maximum airflow reach the food.
To re-activate the oven out of STANDBY
mode, press the START/CANCEL button on
the control panel, or turn any dial. The LCD
screen will re-illuminate. Press the
START/CANCEL button to activate the
oven.
The oven is ON (preheating and cooking)
when the oven alert sounds, the button
surround is illuminated red and the LCD
screen illuminates orange. The oven is
OFF when the START/CANCEL button is
pressed a second time, the button surround
no longer illuminates red, and the LCD
screen illuminates blue.
A NOTE ON OPTIONAL SETTINGS
Temperature Conversion Button
The temperature reading on the oven is
preset to Fahrenheit. Pressing the
TEMPERATURE CONVERSION
button allows the Fahrenheit temperature
reading to be converted to Celsius. The
corresponding ‘F˚’ or ‘C˚’ symbol is
displayed on the LCD screen.
The
button may be selected when using the
BAKE, ROAST, BROIL, PIZZA, COOKIE
and REHEAT functions.
TEMPERATURE CONVERSION
A NOTE ON STANDBY MODE
When the oven is plugged into a power
outlet, the oven alert will sound twice
and the LCD screen will illuminate for 10
minutes before entering STANDBY mode.
When in STANDBY mode, the LCD screen
will cease to illuminate, however the word
‘STANDBY’ will be visible.

Frozen Foods Button
FROZEN FOODS button adds the

TOAST FUNCTION

The TOAST function browns and crisps
the outside of your bread while keeping the
inside soft and moist. This function is also
ideal for English muffins and frozen waffles.
1. Insert the wire rack into the middle
rack height position. The wire rack
should be positioned with the spokes
facing upwards.
2. If toasting 1-2 slices, center the slices
on the wire rack. If toasting 3-4 slices,
evenly space them with 1-2 slices at the
front of the wire rack and 1-2 slices at the
back of the rack.
3. Close the oven door.
4. Turn the FUNCTION dial until the
indicator reaches the TOAST function.
The left figure on the LCD screen
indicates the preset browning or
‘Darkness’ setting ‘4’, while the right
figure on the LCD screen indicates the
preset number of slices ‘2’.
5. The browning setting and number of
slices can be adjusted before or during
the toasting cycle.
a) To change the browning setting,

When using the TOAST function for the

For example, raisin toast, white lighttextured breads or thinly sliced bread may
require a lighter setting, whilst heavier
textured rye, whole wheat or fresh breads
may require a darker setting.

b) To change the number of slices,
press the center of the TEMP/TIME
(Darkness/Slices) dial until the LCD
screen displays a flashing ‘SLICES’.

number of slices range from ‘1’ to ‘4’.
NOTE
Your customized TOAST browning
setting and number of slices will
remain in the memory of the oven until
you change them or unplug the oven
from the power outlet. When the oven

the TOAST function will automatically
return to the preset browning setting

6. Press the START/CANCEL button

7. The timer will be displayed and begin to
count down. The time can be adjusted
during the toasting cycle by turning the
TEMP/TIME dial.
NOTE (continued)
During the toasting cycle,
condensation may form on the oven
door and steam may be emitted. This
is normal. Condensation and steam
occur as a result of the moisture
content of the bread. Freshly baked
and frozen breads generally produce
more condensation.
8. At the end of the toasting cycle,
the oven alert will sound three times.
The START/CANCEL button surround
will no longer illuminate red and LCD
screen will illuminate blue.
IMPORTANT
The outer surface of the oven,
including the oven door, is hot during

BAGEL FUNCTION

The BAGEL function crisps the insides of
your cut bagel while only lightly toasting the
outside. This function is also ideal for toasting
thick sliced speciality breads which require
one side to be toasted more than the other.
NOTE
If you like your bagel halves equally
crisp on both the top and bottom,
we recommend using the TOAST
function to toast your cut bagel.
1. Insert the wire rack into the top
rack height position. The wire rack
should be positioned with the spokes
facing upwards.
2. Slice each bagel into two equal halves
3. If toasting 1-2 bagel halves, center the
halves on the wire rack. If toasting 3-4
halves, evenly space them with 1-2
halves at the front of the wire rack and
1-2 halves at the back of the rack.
NOTE
For bagels, change the rack to
the middle rack height position,
cut the bagel in half, lengthways.
The upside(cutside) of the bagel
must always face upwards towards
the top heating elements - so the
topside(cutside) becomes crisp while
the crust is only lightly toasted.
4. Close the oven door.
5. Turn the FUNCTION dial until the
indicator reaches the BAGEL function.

The BAKE function cooks food evenly
throughout. This function is ideal for baking
cakes, muffins, brownies and pastries. The
BAKE function is also ideal for cooking prepackaged frozen meals including lasagna
and pot pies.
1. Insert the wire rack into the bottom
rack height position. The wire rack
should be positioned with the spokes
facing upwards.
NOTE
We recommend using the bottom
rack height position during the BAKE
function. However this is a guide only.
The position of the rack may vary
depending on the type and size of food
being baked. Some baked goods such as
brownies or pastries may be more suited
to the middle rack height position.
2. Close the oven door.
3. Turn the FUNCTION dial until the
indicator reaches the BAKE function.
The LCD screen indicates the preset
BAKE temperature of ‘325°F’.

one minute increments up to 1 hour, and
in 5 minute increments between 1 and

The BROIL function is ideal for open
sandwiches, small cuts of meat, poultry,
fish, sausages and vegetables. Broiling can
also be used to brown the tops of casseroles
and gratins.
1. Insert the wire rack into the top
rack height position. The wire rack
should be positioned with the spokes
facing upwards.
NOTE
We recommend using the top rack
height position during the BROIL
function. However this is a guide only.
Certain foods may require the middle
rack height position depending on the
recipe, the amount and size of the food
and your personal taste.
For example, the middle rack height
position may be more appropriate
for taller foods that may touch the
heating elements, thicker foods such
as hamburger patties, marinated foods
such chicken wings, or foods that
require a gentle broil.
We recommend experimenting with
the rack height position, as well as
the temperature and time settings to
produce the desired results.
2. Insert the Breville enamel broil rack
into the enamel baking pan. Place food
on the assembled broil rack or in an
oven-proof dish, then place on the center
of the wire rack so air flows around the
sides of the food.
NOTE
When broiling, the Breville enamel

colored, non-stick pizza pan when

reflect heat and may not effectively

For a crisper crust, pizzas can be
cooked directly on the wire rack.
However care should be taken as

the cleanser to the sponge, not the oven
surface, before cleaning. Avoid touching
the quartz heating elements.

Use extreme caution when cleaning
the quartz heating elements. Allow the
oven to cool completely, then gently rub
a soft, damp sponge or cloth along the
length of the heating element. Do not
use any type of cleanser or cleaning

• This is normal. The condensation created from high
moisture content foods such as frozen breads will
run down the inside of the door and can drip onto
the bench.
• Element IQ™ accurately controls the heat inside the
oven by pulsing the power in the heating elements
in short bursts. This is normal.
• To ensure the measurements are standardized,
the oven temperatures have been calibrated in the
TOAST position (center of the middle rack with
no tray in place). Re-check the temperature in this
position, ensuring not to open the oven door for
10 minutes as heat will escape each time the door
is opened. Note that the ‘preheat’ alert sounds at
75% of the target temperature. See below for full
explanation.
• The ‘preheat’ alert sounds at 75% of the target
temperature. This provides the fastest, combined
preheating and cooking time. This is because when
the ‘preheating’ alert sounds, signaling the user to
open the oven door and insert food, there is dramatic
temperature loss inside the oven. If the alert
sounded at 100% of the target temperature, opening
the door would mean a lot of this waiting time is
“wasted”. We have calculated that by sounding the
alert at 75% of the target temperature, followed by
the oven door being opened to place food inside the
oven, that we still recover to the target temperature
up to 2 minutes faster. This is why the temperature
on the LCD screen does not match the target
temperature at the ‘preheat’ alert. In total, it takes
the oven approximately 8-10 minutes from start-up,
including opening the oven door when the ‘preheat’
alert sounds, to reach the target temperature. To
ensure the fastest heat up time, the Breville oven
uses the maximum allowable power from the outlet
(1500W for baking, 1800W for toasting).

ROASTED RED BELL PEPPER,
SPINACH AND BROCCOLI DIP
Function: BROIL AND BAKE
Yield: 4 cups
INGREDIENTS
¼ cup (60 ml) cooked spinach,
excess water removed
1 cup (250 ml) cooked bite-sized broccoli florets
1 red bell pepper
1 garlic clove, crushed
¼ cup (60 ml) freshly grated Parmesan cheese
¾ cup (180 ml) mayonnaise
¾ cup (180 ml) shredded mozzarella
METHOD
Roasting the Red Pepper
1. Slice the red bell pepper in 4 pieces.
Remove the seeds and the stem. Flatten
each piece and place skin side up onto
the Breville enamel baking pan.
2. Set the wire rack in the top rack height
position. Turn the FUNCTION dial to
BROIL, set TEMPERATURE to HI and
set the TIMER to 12 minutes. Press the
START/CANCEL button to activate.
3. Broil the pepper until the skin is blackened.
4. Remove the pepper from the oven. As it
cools, the skin will loosen from the flesh.
5. When cool enough to handle, peel away
the skin. Chop the pepper in small dices.
The Dip
1. In a medium sized bowl, fold together all
the ingredients.
2. Turn the dip into a 4-cup (1 liter)
capacity baking dish, or divide the dip
into two 2-cup (500 ml) baking dishes.
3. Position the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to 25
minutes. Press the START/CANCEL
button to activate.
4. Bake the dip until it bubbles and is
completed heated through.

5 minutes. Roast until softened.
2. In a medium bowl, beat the eggs, milk
and basil. Stir in the shredded cheese.
Add the cubed bread, onion, asparagus
and roasted peppers.
3. Turn out into a buttered 11” x 7” x 2”
(28 cm x 19 cm x 6 cm) baking dish. Set
aside for 20 minutes to allow the bread
to soak up the liquid.
4. Position the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to 40
minutes. Press the START/CANCEL
button to activate.
5. Bake until set.

1 oz (30 g) gorgonzola cheese

METHOD
1. In a medium sauté pan, melt the butter.
Add shallots and sauté one minute.
Add mushrooms and cook until the
water evaporates. Add spinach and
cook until wilted. Season with salt and
pepper. Set aside.
2. In a small sauce pan heat the cream and
gorgonzola cheese, stirring until the
cheese melts. Pour 1 tablespoon into
each ramekin. Divide the mushroom and
spinach mixture amongst the ramekins
and make a well using the back of a spoon.
Crack one egg into each ramekin. Cover
with the remaining gorgonzola cream.
3. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
to BAKE. Set the temperature to 325˚F
(162˚C) and set the TIME to 25 minutes.

activate.
4. The coddled eggs are done when the
whites are set and the yolks are still soft.
Or cook them to your own taste.

MUSHROOM QUESADILLA

METHOD
1. Heat a medium sized skillet over
medium heat. Add butter and olive oil
then add the mushrooms. Sauté for 10
minutes or until water has evaporated
and mushrooms have browned slightly.
Add garlic and cook for another minute.
Season with salt, pepper, and fresh
thyme. Set aside to cool.
2. Spread ¼ of the mushroom mixture on
half of one tortilla. Sprinkle with ¼ cup
shredded cheese over the mushrooms.
Fold the tortilla over. Repeat with
remaining tortillas.
3. Place two of the folded tortillas on an
11 inch (28 cm) round pan.
4. Set the wire rack in the center rack
height position. Turn the FUNCTION
dial to TOAST. Set the DARKNESS to
#5 and SLICES to #3. Press the

5. Remove from the oven when the tortillas

1. Brush the chicken breasts with olive oil
and season with salt and pepper. Place the
chicken breasts onto the Breville enamel
broil tray with baking pan underneath.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to ROAST. Set the TEMPERATURE
to 375˚F (192˚C) and the TIME to 20
minutes. Press the START/CANCEL

3. Roast the chicken breasts for
approximately 20 minutes, or until the
juices run clear and there are no traces
of pink.
4. Allow the chicken breasts to rest
10 minutes before slicing.
ASSEMBLING THE SANDWICH
1. Slice through the French baguette
lengthwise then cut the baguette in half.
Spread softened butter on the top parts,
and fig jam on the bottom parts of the
sliced baguette.
2. Slice the chicken breasts on the diagonal
in ¼ inch slices. Arrange the chicken
on the fig side of the bread. Layer the
onions on the chicken, and then top with
sliced Camembert cheese.
3. Place one bottom half and one top half
onto the Breville enamel baking pan. Set
the wire rack in the center rack height
position. Turn the FUNCTION dial to
TOAST. Set the DARKENSS to
#4 and SLICES to #2. Press the
START/CANCEL button to activate.
Repeat with remaining two halves.
4. Remove the sandwich from the oven and
top the cheese side with arugula. Top

Using a teaspoon, scoop out the flesh
into a medium sized bowl. Repeat with
remaining potatoes. Save the skins as
you will be re-filling them.
2. Add the butter, sour cream, buttermilk,
salt, chive and all but 1 tablespoon
(15 ml) of the crumbled bacon. Fold
in the shredded cheese, reserving 2
tablespoons (30 ml). Scoop the filling
into each “boat.” Top with remaining
bacon and shredded cheese.

2. Peel and thinly slice the potatoes.
3. Layer one-third of the potato slices,
slightly overlapping each other. Sprinkle
the potatoes with salt and pepper and
dot with one third of the diced butter.
Repeat layering two more times.
4. Combine the chicken stock and cream and
pour over the potatoes. Cover with foil.

1. Brush ½ tablespoon (7.5 ml) of softened
butter on one of the cobs. Place the corn
onto one of the sheets of foil. Evenly
sprinkle with 1 tablespoon (15 ml) of
Parmesan Cheese all around the corn.
Lightly season with salt and pepper and
enclose in a foil packet tightly. Repeat
with remaining corns. Place all cobs onto
the Breville enamel baking tray.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION

to 425˚F (218˚C) and the TIME to

METHOD
PREPARE THE MARINADE
1. In a medium sized bowl, combine plum
sauce, hoisin sauce, soy sauce, oyster
sauce, honey, ginger, garlic, sesame oil,
cider vinegar, orange rind, hot pepper
sauce (optional). Refrigerate until ready
to use.
2. Bring a large pot of water to a boil.
Prepare the ribs by trimming visible fat.
3. Remove the white membrane from the
underside of the rack by pulling it from
one side and tearing it off. Removing
the membrane allows the marinade to
penetrate through the meat.
4. Once the water begins to boil, gently
place the ribs into the boiling water.
Turn the heat to medium/low and boil
the ribs for 25-30 minutes. This process
will draw out the fat.
5. Remove the ribs from the water using
a set of tongs, and rinse under cool
running water. Cut the ribs into single or
double-bones.
6. Reserve ½ cup of the marinade for
basting. Place the ribs into the remaining
marinade and toss to coat. Refrigerate
and marinate from 4 to 24 hours.
7. Remove the ribs from the bowl and
discard marinade. Place the ribs on the
Breville broil tray with the baking pan
underneath.
8. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to 30
minutes. Press the START/CANCEL

¾ cup (180 ml) all purpose flour
¾ cup (180 ml) whole wheat flour

¼ cup (60 ml) unsalted butter, cut into small pieces
3 tablespoons (45 ml) vegetable shortening
3 tablespoons (45 ml) ice water
ROASTED CHERRY TOMATOES
1 pint cherry tomatoes
2 tablespoons (30 ml) olive oil
¼ teaspoon (1 ml) salt
dash of pepper
CARAMELIZED ONIONS
1 large sweet onion
2 tablespoons (30 ml) olive oil
1 tablespoon (15 ml) unsalted butter
¼ cup (60 ml) water
½ teaspoon (2.5 ml) salt
1 teaspoon (5 ml) granulated sugar
2.5 oz (7 g) goat cheese
PREPARE THE PASTRY CRUST
1. In a food processor, pulse together the
whole wheat flour, all purpose flour and
salt. Add butter and shortening and
pulse the mixture until it resembles small
crumbs. This process can also be done
with two knives or with a pastry cutter.
2. Add ice water to bring the crumbs
together and form a ball. Use more water
if necessary.
3. Shape into a disk, wrap in plastic wrap
and chill for at least one hour.
ROASTING THE CHERRY TOMATOES
1. Cut cherry tomatoes in half and scoop
out seeds and water.
2. Toss in a bowl with olive oil, salt
and pepper.
3. Line an 11-inch (28 cm) round baking
sheet with parchment paper and arrange
the cherry tomatoes in a single layer.
4. Set the rack at the bottom rack height
position. Turn the FUNCTION dial to
ROAST. Set the TEMPERATURE to 350˚F
(175˚C) and the TIME to 20 minutes.
Press START/CANCEL button to activate.
5. Set the roasted cherry tomatoes aside
to cool.
CARAMELIZING THE ONIONS
1. In a small sauce pan on medium heat,
heat the olive oil and butter. Sauté the
onions for one minute.
2. Add water, salt and sugar. Cover and
bring to a boil. Turn heat down to low.
3. Continue to cook on low heat for about
15 to 20 minutes or until the onions
have softened and have taken on a
golden color. Stir often.
4. Set the caramelized onions aside to cool.
ASSEMBLING THE TART
1. On a well-floured surface, roll out the
pastry to a ¼ inch thickness. Transfer
the rolled pastry to a 9-inch square tart
pan. Press the dough onto the sides
and cut off the excess. For best results
refrigerate for half an hour.
2. Remove the tart pan from the
refrigerator, and spread an even layer of
the caramelized onions.
3. Arrange the roasted cherry tomato
halves over the onions.
4. Dot with crumbled goat cheese.
5. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 375˚F (192˚C) and the TIME to 35

¼ leek stalk, washed, thinly sliced

Salt and pepper to taste
METHOD
1. In a small bowl combine maple syrup,
mustard, lemon juice, and soy sauce.
2. Place the fresh salmon fillet on the
Breville enamel baking pan, lined with
foil. Roll the foil around the salmon.
3. Spoon the glaze on top of the salmon.
Sprinkle with sliced leek and dot with
butter. Season with salt and pepper.
4. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 400F (205C) and set the TIME to
13 minutes (approximately). Press
START/CANCEL button to activate.
5. The fish is done when it is opaque and
flakes easily with a fork.
NOTE
Citric acid, found in foods such a orange,
lemon and lime juice, may damage the
porcelain enamel finish of the baking pan
and broiling rack. When cooking foods
with high citric acid content, we strongly
recommend lining the enamel surfaces
with foil or baking paper to extend the
life of these accessories.

PREPARE THE TURKEY
1. Butterfly the turkey breast and cover
with plastic wrap. Pound the turkey
breast until about ½ inch (1.25 cm)
thick. Remove plastic wrap and lightly
season with salt and pepper. Spread the
filling leaving a 1 inch border (2.50 cm).
Starting at the long end, roll up the turkey
breast. Tie roll with butcher’s twine every
1 inch (2.50 cm) to secure the roll.
2. Place the turkey breast roast onto the
Breville broil rack with the baking tray
underneath. Rub the exterior of the roast
with 1 tablespoon (15 ml) olive oil. Season
the roast lightly with salt and pepper.
3. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to ROAST. Set the TEMPERATURE
to 375˚F (190˚C) and the TIME to
45 minutes (approximately). Press
START/CANCEL button to activate.
4. Roast the turkey until a thermometer
inserted into the thickest part of the
roast registers 155˚F (68˚C).
5. Remove the turkey breast roast from the
oven and tent with foil. Please see

MAKE THE SAUCE
1. In a saucepan, melt the butter and add
the flour. Cook for 1 minute.
2. Combine white wine, chicken stock and
reserved porcini liquid and pour the
contents into the saucepan whisking
constantly to avoid lumps. If lumps
occur strain the sauce using a fine mesh
sieve. Cook for 5 minutes uncovered on
medium to low heat or until thickened
and reduced by one third.
3. Season the sauce with salt and pepper if
necessary.
CARVING THE ROAST
1. Cut and remove the strings. Slice the
roast into ½ inch thick rounds and
arrange on a platter. Pour the sauce
over the sliced roast.

the liquid. Keep refrigerated. Strain for 3
to 8 hours. Discard liquid.
2. Shred the cucumber and sprinkle salt
over it. Let sit for 20 minutes. Squeeze
the excess water out of the cucumber.
3. Combine the strained yogurt,
cucumber, lemon juice, mint, garlic, and
shallot in a small bowl. Set aside. Season
to taste with salt and pepper.
ROASTING THE LEG OF LAMB
1. Place the leg of lamb on a working
surface and pat it dry. Roll it jelly roll
style from the longest end and secure
the lamb with butcher’s twine to ensure
even thickness. You now have a well
marinated lamb roast.
2. Season the roast with salt and pepper.
Place the lamb roast onto the broil rack
with the baking tray underneath.
3. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to ROAST. Set the TEMPERATURE
to 375˚F and the TIME to 1 hour
and 15 minutes. You will check the
internal temperature of the roast
every 20 minutes by inserting a meat
thermometer into the thickest part of the
meat (the time depends on the thickness
of the roast. See Temperature Range
on next page for more information on
doneness). Press START/CANCEL
button to activate.
4. After the roast has cooked to the desired
internal temperature, remove the roast
from the oven and tent it with foil
(see NOTE). Allow the roast to rest
20 minutes before carving into it.

BUILDING THE GYROS
1. Warm the pitas or naan in the toaster
oven by enclosing them in foil. Set the
wire rack at the bottom rack height
position. Turn the FUNCTION dial to
REHEAT and set the TIME to 5 minutes.
2. Carve the rested lamb into thin slices
and pile on a serving platter.
3. Arrange the sliced onion, chopped
tomato and shredded lettuce on another
serving platter.
4. Assemble the Gyros by spreading the
tzatziki sauce on the warmed pita, then
lay a few slices of the lamb roast in the
center, top with tomato, shredded lettuce,
sliced onion and crumbled Feta cheese.
5. Roll the pita.
NOTE
To reach the desired doneness of a
roast, it is best to remove the roast
from the toaster oven when the
internal temperature is 10˚F (6˚C)
below the desired temperature
reading. The roast will continue
cooking. The term is called
“carry-over cooking.” The internal
temperature will continue to rise and
cook the interior part of the meat. It is
also extremely important to allow the
roast to rest at least 20 minutes before
carving into it. This allows the roast to
relax and hold in its juices.
NOTE
Citric acid, found in foods such a
orange, lemon and lime juice, may
damage the porcelain enamel finish
of the baking pan and broiling rack.
When cooking foods with high citric
acid content, we strongly recommend
lining the enamel surfaces with foil

PIZZA DOUGH
Yield: two 11-inch pizzas
INGREDIENTS
¾ cup + 2 tablespoons (210 ml) warm water
1 ¾ teaspoons (9 ml) dry yeast
1 teaspoon (5 ml) granulated sugar
2 cups (500 ml) all purpose flour
1 teaspoon (5 ml) salt
MAKE THE DOUGH
1. In a small bowl, dissolve the sugar in
water. Sprinkle the yeast on top of the
water and let stand for 3 minutes.
2. In a medium bowl, mix together the flour
and salt. Pour the water/yeast mixture
into the flour and mix to form a ball.
3. Transfer the dough onto a floured
working surface and knead the dough
for approximately 7 to 10 minutes or
until it is smooth and elastic.
4. Grease the bottom and sides of a
clean medium size bowl with olive oil,
approximately 1 teaspoon (5 ml). Place
the dough in the bowl and cover loosely
with plastic wrap. Allow the dough to
rise 40 minutes.
BAKE THE PIZZA
1. Set the wire rack in the center rack
height position.
2. Turn the FUNCTION dial to PIZZA and
deselect the FROZEN setting.
3. Bake the pizza for the default
TEMPERATURE and TIME. Press the
START/CANCEL button to activate.
TIP
For a crispier crust, add an extra
minute to the timer.

(15 ml) of sugar and ¼ teaspoon cinnamon.

the FROZEN setting. Bake for the default
TEMPERATURE and TIME. Remove cooked
crust from the oven and top with sliced
bananas, drizzle with melted chocolate.
If desired, serve with vanilla ice cream.
Caramelized Pear with Walnuts
Prepare dough as described on page 68.
Cut the dough in half and stretch to fit an
11-inch pizza pan. Brush melted butter
on the pizza dough and sprinkle with 1
tablespoon (15 ml) sugar. Set the wire rack
at the middle rack height position. Bake the
dough by turning the FUNCTION dial to
PIZZA and deselect the FROZEN setting.
Bake for the default TEMPERATURE and
TIME. Remove the cooked crust from the
oven and spread ½ cup mascarpone cheese
sweetened with 1 tablespoon honey. Top
with caramelized pears (sautéed slices of
pear in butter and 1 tablespoon of sugar).
Sprinkle with toasted walnuts.

We recommend using the middle rack
height position during the PIZZA
function. However this is a guide only.
The position of the rack may vary
depending on the type and size of the

to 450˚F (230˚C) and the TIME for 20

3. Roast the chicken wings for 20
minutes or until crispy. Turn the wings
once using a set of tongs. Reset the timer
for another 20 minutes and crisp the
other side of the wings (ensure wings are
no longer pink inside).
4. In a medium sized bowl mix
together the spicy sauce. Add the crispy
wings and toss to coat.
For a variation, toss the wings with your favorite
barbecue sauce instead of the spicy sauce.

METHOD
1. In a medium-sized bowl, combine the dry
ingredients, except for the cranberries.
Using a pastry cutter or food processor,
cut the butter into the dry ingredients
until they resemble coarse crumbs.
2. Add the orange zest and the dried
cranberries.
3. Add the buttermilk and gently stir
the ingredients until combined. Evenly
space out 6 portions of the dough onto a
cookie sheet.
4. Brush the mounds with cream or egg
wash. Sprinkle the tops with granulated
or turbinado sugar.

INGREDIENTS
A galette is simple to make. Just roll out the
dough, place the filling in the center, and
fold in the edges. It’s as simple as that!
INGREDIENTS FOR THE PASTRY
1 ¼ cup (300 ml) all-purpose flour
2 tbsp (30 ml) granulated sugar
½ cup (125 ml) unsalted butter, cut in
1-inch (2.5-cm) pieces
4 oz (110 g) cream cheese, cut in
2 ½ pounds (1.1 kg) baking apples
(approximately 6 apples)
½ cup (120 ml) brown sugar
½ teaspoon (2.5 ml) cinnamon
3 tablespoons (45 ml) cornstarch
pinch salt
STREUSEL TOPPING (OPTIONAL)
¼ cup (60 ml) flour
2 tablespoons (30 ml) granulated sugar
¼ teaspoon (1 ml) cinnamon
2 tablespoons (30 ml) butter
pinch of salt
TO MAKE THE PASTRY
1. Place flour, sugar, butter, cream cheese
and lemon zest in a food processor and
pulse until mixture resembles coarse
crumbs. This process can also be done
using a pastry cutter.
2. Add lemon juice to bring the crumbs
together and form a ball. Use cold water
if you require more liquid to bring the
dough to a ball.

3. Shape into a disk, wrap in plastic
wrap and chill for at least one hour.
STREUSEL CRUMBLE (OPTIONAL)
1. In a small bowl, mix together the flour,
sugar, cinnamon, and salt. Cut in the
butter by hand or use a pastry cutter.
Ensure this mixture is crumbly.
2. Cover with plastic wrap and keep
refrigerated until ready to use.
PREPARE THE APPLES
1. Peel and core the apples. Slice them in
half and then into ¼ inch slices. Toss
them in a bowl with sugar, cinnamon,
corn starch and salt.
ASSEMBLE THE GALETTE
1. Dust a working surface and rolling
pin with flour. If necessary, allow the
dough to sit at room temperature for 10
minutes until it is soft enough to roll.
2. Roll the dough into a 16-inch (40 cm)
circle. Slip an 11-inch (28 cm) round
baking pan underneath the dough;
centered. Arrange the apple mixture
onto the center of the rolled pastry (with
the pan underneath). Carefully lift and
fold over the edges towards the center,
allowing it to pleat. The dough is not
intended to reach the center; therefore,
exposing the apples in the middle.
3. Sprinkle the exposed apples with
the reserved streusel topping (optional).
4. Brush the edges of the pastry
with cream or milk and sprinkle with 1
tablespoon (30 ml) of granulated sugar.
5. Set the wire rack at the bottom
rack height position. Turn the
FUNCTION dial to BAKE. Set the
temperature to 400˚F (205˚C)
and the TIME to 20 minutes.
Press START/CANCEL button
to activate.
6. Bake the Apple Galette until the
time has elapsed. Turn the heat down
to 350˚F (175˚C) and bake for an
additional 40 minutes or until the crust
is golden.
7. Allow to cool before serving.
Serve wedges of the Apple Galette with a
scoop of French Vanilla Ice Cream.
L cup (80 ml) granulated sugar
¾ cup (180 ml) brown sugar
¾ cup (180 ml) unsalted butter, softened
1 egg
1 teaspoon (5 ml) pure vanilla extract
2 oz (60g) bittersweet chocolate, melted
1¾ cups (420 ml) all purpose flour
¾ teaspoon (7 ml) baking soda
2 teaspoons (10 ml) cornstarch
¾ teaspoon (7 ml) salt
1 cup (250 ml) milk chocolate chips
METHOD
1. In a large bowl, cream together the
granulated sugar, brown sugar and
unsalted butter. Beat in the egg.
2. Add vanilla and melted chocolate and
mix until combined. In a medium bowl,
sift together the flour, baking soda,
cornstarch and salt.
3. Add the dry ingredients and chocolate
chips to the creamed butter mixture.
Using a wooden spoon or rubber spatula,
mix the ingredients until combined.
4. Drop by tablespoons onto a baking
sheet, spacing the cookies about 2
inches apart.
5. Set the wire rack in the center rack height
position. Turn the FUNCTION dial to
COOKIE. Set the temperature to 350˚F
(175˚C) and the TIME to 11 minutes.
Press the START/CANCEL to activate.
6. Allow cookies to cool on the baking sheet
for 1 minute then remove with a spatula
and transfer to a cooling rack.
NOTE
For crispier cookies, bake an
addition minute.
TIP
Using a medium-sized ice cream
scoop portion the cookie dough onto
a parchment paper lined cookie sheet
and freeze until firm. Once firm, place
the cookie dough balls in a re-sealable
plastic freezer bag. Freeze until ready
to use. When having those cookie
cravings, evenly space apart 6 of the
cookie dough balls onto a cookie sheet
and bake using the COOKIE function
and activate the FROZEN button. Bake
for the default time.
1 cup (250 ml) flour
2 tablespoons (30 ml) powdered sugar
½ cup (175 ml) cold unsalted butter
¼ teaspoon (1 ml) salt
¼ cup (60 ml) hazelnuts
2 eggs
¾ cup (180 ml) granulated sugar

PREPARE THE CRUST
1. Toast the hazelnuts by placing them in
a single layer on the Breville enamel
baking pan. Set the wire rack at the
bottom rack height position. Turn the
FUNCTION dial to BAKE. Set the
TEMPERATUE to 350˚F (175˚C) and the
TIME to 5 minutes. Press the
START/CANCEL button to activate.
Toast the hazelnuts until golden.
Allow to cool.
2. Place flour, powdered sugar, salt,
butter and toasted hazelnuts in a food
processor and pulse until the hazelnuts
resemble breadcrumbs. Press the
mixture into an 11” x 7” x 2”
(28 cm x 19 cm x 6 cm) baking pan.
3. Keep the FUNCTION dial on
BAKE. Set the TEMPERATURE to
350˚F (175˚C) and the TIME to 15
minutes. Press the START/CANCEL
button to activate. Bake the crust until
set and takes on a light golden color. Set
on wire rack to cool.
PREPARE THE LEMON CUSTARD
1. In a small bowl, beat together eggs,
sugar, lemon juice and lemon zest.
Then add flour and baking powder.
2. Spread a thin layer of the raspberry
preserves onto the cooled crust.
Gently pour the lemon custard over
the preserves.
3. Keep the FUNCTION dial on BAKE. Set
the TEMPERATURE to 350˚F (175˚C)
and the TIME to 25 minutes. Press the
START/CANCEL button to activate.
Bake until the custard is set, trying not
to over bake.
4. Allow to cool before cutting into
squares. Dust with powdered sugar.

INGREDIENTS
1½ cups (375 ml) graham wafer crumbs
3 tablespoons (45 ml) melted butter
24 oz (750 g) cream cheese, room temperature
1 cup (250 ml) sour cream
¾ cup (180 ml) granulated sugar
2 teaspoons (10 ml) pure vanilla extract
3 eggs, separated
METHOD
1. Grease the bottom and sides of a 9
inch round spring form pan with butter.
Combine cookie crumbs and melted
butter and press on the bottom and a
third up the sides of the pan.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to 7
minutes. Press the START/CANCEL
button to activate.
3. Remove the cheesecake from the
oven and allow to cool completely.
CREAM CHEESE FILLING
1. Separate the egg yolks from the
egg whites.
2. Using a food processor or stand mixer
cream the cheese first, and then add the
sugar. Scrape sides of bowl and blades or
beaters and add egg yolks one at a time.
Scrape again to ensure a smooth texture
is achieved without overbeating. Add
vanilla and sour cream. Mix to combine.
3. In a separate bowl, beat the egg whites
until stiff peaks form. Gently fold in
one third the egg whites into the cream
cheese to lighten the mixture. Add the
rest of the egg whites, folding gently
taking care not to deflate the bubbles.
Turn the mixture into the cooled spring
form pan.
4. Set the wire rack at the bottom rack height
position. Turn the FUNCTION dial to
BAKE. Set the TEMPERATURE to 325˚F
(162˚C) and the TIME to 55 minutes.
Press the START/CANCEL button to
activate. Bake until the cheesecake is set
but still wobbly in the center.
5. Remove the cheesecake from the oven and
allow to completely cool on a wire rack
before refrigerating for a least 6 hours.
6. For a simple topping, combine 1 cup
of each: strawberries, blueberries and
raspberries, ¼ cup granulated sugar and
1 tablespoon lemon juice in a medium
bowl. Toss to coat and let sit 10 minutes.
7. Slice the cheesecake using a knife dipped
in hot water, and top with 3 tablespoons,
or more, of the fresh berries.

• Retirez et disposez de tout
matériel d’emballage ou étiquettes
promotionnelles avant d’utiliser le four
pour la première fois.
• Afin de protéger les jeunes enfants
contre les risques de suffocation,
retirez et jetez l’enveloppe protectrice
recouvrant la fiche de l’appareil.
• Ne placez pas le four sur le bord
d’un comptoir ou d’une table durant
l’utilisation. Assurez-vous que la surface
est de niveau, propre et exempte d’eau,
de farine, etc.
• Utilisez toujours le four sur une surface
stable et résistant à la chaleur. Ne
l’utilisez pas sur une surface recouverte
d’une nappe, près des rideaux ou de tout
autre matériel inflammable.
• Des risques d’incendie peuvent survenir
si le four est recouvert ou touche à
du matériel inflammable comme les
rideaux, les draperies, les murs ou autres,
durant l’utilisation.
• Ne placez pas le four sur ou près d’un
élément électrique ou au gaz, ou à
proximité d’un autre four chaud.
• Pour vous protéger contre les chocs
électriques, n’immergez pas le four, le
cordon d’alimentation ou la fiche dans
l’eau ou tout autre liquide.
• Ne laissez pas le cordon d’alimentation
pendre d’une table ou d’un comptoir ou
toucher à des surfaces chaudes.
• Lorsque vous utilisez le four, laissez
un espace d’au moins 4” (10 cm) de
chaque côté. Ceci permettra à l’air de
circuler normalement et préviendra la
décoloration possible du mur due à la
chaleur radiante.
• Ne touchez pas aux surfaces chaudes de
l’appareil, y compris la porte et le boîtier
qui sont très chauds durant et après
l’utilisation. Afin de prévenir les risques
de brûlures ou blessures corporelles,
servez-vous toujours de poignées
isolantes ou de gants de cuisine et
utilisez les poignées ou boutons du four
pour y manipuler les aliments dans ou
hors du four. Vous pouvez également
laisser refroidir le four au préalable.
• Soyez extrêmement prudent lorsque
vous retirez du four les plats, casseroles
ou accessoires comme le grilloir ou le
plateau de cuisson qui peuvent contenir
de l’huile ou tout autre liquide très chaud.
• La vitre de la porte du four a été
spécialement traitée pour la rendre plus
résistante, durable et sécuritaire qu’une
vitre ordinaire. Cependant, elle n’est
pas incassable. Si elle reçoit un coup
dur, elle pourrait se briser ou s’affaiblir,
et éventuellement briser en éclats sans
cause apparente.
• Ne laissez pas la porte du four ouverte
pour une période de temps prolongée
quand le four fonctionne.
• Le dessus du four devient extrêmement
chaud durant et après l’utilisation.
N’y déposez aucun objet, sauf les
accessoires décrits à la page 119 - des
plats en céramique placés en une seule
rangée pour être réchauffés ou tout
autre accessoire fourni par Breville qui
peuvent être déposés sur la section
nervurée du dessus du four. Si vous

cuisine pour manipuler les plats chauds.
Ou laissez refroidir le four au préalable.
• Ne déposez aucun objet en carton, en
plastique ou en papier, ou autre matériel
inflammable sur le four.
• Soyez extrêmement prudent lorsque vous
faites cuire des aliments à forte teneur
en huile. Un risque de feu peut survenir
si vous faites griller ces aliments ou les
faites cuire pour une période prolongée
ou à température élevée.
• Si des aliments prennent feu dans le
four, gardez la porte du four fermée.
Éteignez-le et débranchez-le. Attendez
que le feu s’éteigne avant de rouvrir la
porte du four.
• Soyez extrêmement prudent lorsque
vous utilisez des casseroles ou des plats
qui ne sont pas métallisés, comme la
céramique ou le verre. Assurez-vous
qu’ils résistent à la chaleur pour éviter
qu’ils ne craquellent.
• Soyez très prudent lorsque vous couvrez
un plat ou une casserole dans le four, car
la pression accumulée sous le couvercle
peut faire jaillir les ingrédients ou
craqueler le plat.
• Ne mettez pas d’aliments trop gros ou
d’ustensiles métallisés dans le four, car
ils peuvent causer des risques d’incendie
ou d’électrocution.
• N’utilisez pas d’ustensiles métallisés
comme des couteaux pour nettoyer la
nourriture accumulée sur les éléments
au quartz, car ceux-ci pourraient en être
endommagés et causer une électrocution.
• Nous vous recommandons d’utiliser
uniquement les accessoires fournis avec
ce four. Lorsque vous utilisez le grilloir,
celui-ci doit être inséré dans le plateau
de cuisson.
• L’utilisation d’accessoires non fournis
par Breville peut causer des blessures.
• La fonction TOAST (Griller) doit être
utilisée uniquement pour faire griller
les aliments.
• Me mettez pas les mains à l’intérieur du
four durant l’utilisation.
• Cet appareil est conçu pour usage
domestique seulement.
• Servez-vous de l’appareil uniquement
dans le cadre recommandé dans ce
livret d’instructions. Ne l’utilisez pas
à l’extérieur, dans un véhicule en

START/CANCEL du panneau de
commandes. Le four est éteint quand le
contour du bouton n’est plus illuminé et
que l’écran ACL est illuminé en bleu.
• Éteignez le four avant de le débrancher
de la prise murale.
• Débranchez toujours le four lorsqu’il
n’est pas en usage ou qu’il est laissé
sans surveillance.
• Éteignez le four avant de le déplacer,
l’assembler, le démonter, le nettoyer
ou le ranger. Laissez-le refroidir et
débranchez-le.

• Suivez attentivement les consignes
d’entretien et de nettoyage décrites à
la page 121. Ne nettoyez pas l’appareil
avec des tampons à récurer métalliques
qui, en se brisant, pourraient laisser
tomber des particules sur les éléments
chauffants et causer des risques de
chocs électriques.
• Nettoyez régulièrement le plateau
ramasse-miettes. Pour ce faire, éteignez
le four, débranchez-le et laissez-le
refroidir avant de retirer le plateau.
• Assurez-vous de bien assécher le plateau
ramasse-miettes après le nettoyage et de
l’insérer dans le four avant l’utilisation.
• Ne rangez aucun accessoire dans le four
autre que ceux fournis avec l’appareil,
quand ce dernier n’est pas en usage.
• Cet appareil est doté d’un cordon
d’alimentation et d’une fiche munis
d’une mise à la terre. Il doit être branché
dans une prise murale à trois ouvertures
avec mise à la terre. Les risques de chocs
électriques seront ainsi réduits en cas de
court-circuit.
• Si la prise murale n’a que deux ouvertures,
il est impératif que vous la remplaciez par
une prise à trois ouvertures.
• Vous ne devez en aucune circonstance
enlever la troisième broche (mise à
la terre) du cordon d’alimentation ou
utiliser un adaptateur.
• Consultez un électricien qualifié si
vous ne comprenez pas les instructions
de mise à la terre ou doutez que
l’installation soit adéquate.
• L’installation d’un dispositif de courant
résiduel (interrupteur de sécurité) est
recommandée pour assurer une sécurité
supplémentaire lors de l’utilisation
d’un appareil électrique. Il est utile
qu’un interrupteur de sécurité à courant
résiduel de fonctionnement nominal
d’au plus 30 mA soit installé sur le
circuit électrique qui alimente l’appareil.

conseils professionnels.
• Vérifiez régulièrement le cordon
d’alimentation,la fiche et l’appareil
lui-même. En cas de dommages ou de
défectuosité, cessez immédiatement
l’usage de l’appareil et communiquez
avec un center de service à la clientèle
de Breville au 1-866-BREVILLE pour le
faire examiner, réparer ou ajuster.

RECOMMANDATIONS SUR LE
CORDON D’ALIMENTATION
Votre appareil Breville est muni d’un cordon
d’alimentation court très sécuritaire qui
réduit les risques de blessures corporelles
ou dommages pouvant être causés par le
fait de tirer, trébucher ou s’enchevêtrer
dans le cordon. Ne laissez pas les enfants
utiliser ou être à proximité de l’appareil sans
surveillance. Si vous utilisez une corde de
rallonge: (1) sa capacité électrique doit être
équivalente ou supérieure à la puissance en
watts de l’appareil; (2) la corde ne doit pas
pendre d’un comptoir ou d’une table où de

Ce guide de démarrage rapide est conçu pour la première utilisation de l’appareil. Pour des

PROCÉDURE D’AMORÇAGE
(À PHASE UNIQUE)
Afin d’éliminer les substances recouvrant les
éléments chauffants, il est essentiel de faire
fonctionner le four à vide durant 15 minutes.
Assurez-vous qu’il y a une bonne circulation
d’air autour du four, car de la vapeur pourrait
s’en émaner. Cela est normal et n’altérera
aucunement le bon fonctionnement du four.
1. Placez le four sur une surface plane et
sèche, en laissant un espace de 4’’ de
chaque côté du four. Assurez-vous que
le dessus est dégagé et que le ramassemiettes est bien inséré.
2. Déroulez le cordon d’alimentation et
branchez l’appareil.
3. Le signal sonore se fera entendre et
l’écran ACL s’illuminera.
4. Tournez le cadran de FONCTIONS
vers la droite jusqu’à ce que la fonction
PIZZA apparaisse. Les chiffres
apparaissant sur l’écran ACL indiquent
la température préréglée de ‘220°C’.
Le préréglage FROZEN FOODS sera
aussi affiché.
5. Enfoncez le bouton START/CANCEL.
Le contour s’illuminera en rouge, le
signal sonore se fera entendre et l’écran
ACL s’illuminera en orange.
6. La fonction PREHEATING
(Préchauffage) clignotera sur l’écran
ACL. Une fois la température atteinte, le
signal sonore se fera entendre.
7. La minuterie s’affichera et le compte à
rebours débutera par intervalles d’une
minute.
8. À la fin du cycle de cuisson, le signal
sonore se fera entendre, Le bouton
START/CANCEL s’éteindra et l’écran

Le Smart OvenMC Compact de Breville est
muni d’un Élément IQ
cuisson exclusive qui ajuste la puissance
des éléments chauffants afin d’obtenir
une cuisson uniforme et plus rapide.
Chaque fonction est préréglée selon
nos recommandations. Cependant, nous
vous suggérons d’en faire l’essai selon la
recette utilisée, la quantité d’ingrédients
et vos goûts personnels. Vos réglages
personnalisés resteront en mémoire dans le
four jusqu’à ce qu’ils soient changés ou que
le four soit débranché.
1. Insérez la grille à la position
recommandée. Ces positions sont
imprimées sur la droite de la porte en
verre du four. La grille doit être placée
avec les rayons vers le haut.
2. Tournez le cadran de FONCTIONS
jusqu’à la fonction désirée.
3. Pour changer la température ou le temps
de cuisson, enfoncez le centre du cadran
TEMP/TIME jusqu’à ce que l’écran
ACL affiche la température ou le temps
correspondant. Tournez le cadran vers
la gauche pour réduire la température/
temps ou vers la droite pour les
augmenter.
NOTE
Le cadran TEMP/TIME fonctionne aussi
comme sélecteur de coloration et du
nombre de tranches pour les fonctions
TOAST et BAGEL.

temps de cuisson peuvent être modifiés
durant le cycle de cuisson.
7. À la fin du cycle de cuisson, le signal
sonore se fera entendre trois fois. Le
contour du bouton START/CANCEL
ne sera plus illuminé en rouge et l’écran
ACL s’illuminera en bleu.
NOTE
Le cycle de cuisson peut être
interrompu en tout temps en
enfonçant le bouton START/CANCEL.
Ceci arrêtera la cuisson et le contour
du bouton s’éteindra.
Placez les aliments au centre de la
grille - ou sur le grilloir inséré dans le

Il y a deux réglages de température
pour dorer: ‘HI’ et ‘LOW’ (élevée et
basse). Cela détermine la rapidité
du grillage en fonction des aliments,

NOTE
Pour faire dorer les aliments, la grille
en émail de Breville doit être insérée
dans le plateau de cuisson. Ces deux
pièces mises ensemble permettent le
drainage des gras de cuisson, pour
une cuisine santé. Le plateau de
cuisson récupère les gras et prévient
les éclaboussures. Selon les aliments
à dorer, il pourrait être utile de les
retourner à mi-cuisson pour obtenir

PRÉPARATION INITIALE DU FOUR
1. Retirez et disposez de tout matériel
d’emballage, étiquettes promotionnelles
ou collants.
2. Retirez le plateau ramasse-miettes, la
grille, le grilloir et le plateau de cuisson
de l’emlallage en mousse polyuréthane.
Lavez-les à l’eau chaude savonneuse
avec une éponge douce, rincez et
asséchez bien. Réinsérez le plateau
ramasse-miettes.
3. Essuyez l’intérieur du four avec
une éponge humide et asséchez
correctement.
4. Placez le four sur une surface plane et
sèche. Assurez-vous qu’il y a un espace
d’au moins 4” (10 cm) de chaque côté de
l’appareil et ne laissez rien sur le dessus
du four.
5. Déroulez complètement le cordon
d’alimentation et branchez-le dans une
prise murale avec mise à la terre.
6. Le signal sonore se fera entendre à deux
reprises et l’écran ACL s’illuminera.

Cette technologie permet de cuire les
aliments uniformément et plus rapidement,
en réduisant de façon significative le
temps de cuisson. Il se peut que vous ayez
à modifier la température et le temps de
cuisson préréglés, ou la température et le
temps de cuisson suggérés sur l’emballage
des aliments, dépendamment de la recette,
de la quantité d’aliments ou de vos goûts
personnels.
Nous vous conseillons de faire quelques
essais sur la température et le temps
de cuisson afin d’obtenir les résultats
escomptés.
La température et le temps de cuisson
peuvent être ajustés avant ou pendant le
cycle de cuisson.

En pressant le centre du cadran TEMP/
TIME, l’écran ACL affichera la température
ou le temps de cuisson, et vice versa. En le
tournant, vous augmenterez ou réduirez la
TEMPÉRATURE ou le TEMPS de cuisson.
NOTE
Le cadran TEMP/TIME sert aussi à
contrôler la coloration et le nombre de
tranches pour les fonctions TOAST et
BAGEL.
a) Pour modifier la température de cuisson,
pressez le centre du cadran TEMPS/
TIME jusqu’à ce que la température
apparaisse à l’écran ACL.
• Tournez le cadran vers la gauche pour
réduire la température ou vers la droite
pour l’augmenter.
• Le temps de cuisson peut être ajusté par
tranches d’une minute jusqu’à une durée
d’une heure, puis par tranches de 5
minutes entre une heure et deux heures.
UNE NOTE SUR LA POSITION
DE LA GRILL
Une bonne cuisson dépend grandement de
la distance entre la grille et les éléments
chauffants. Nous vous recommandons
fortement de suivre les indications
apparaissant sur la droite de la porte vitrée
concernant la position de la grille pour
chaque fonction. Il est à noter que ces
directives sont à titre informatif seulement.
Certains aliments peuvent nécessiter une
position de grille différente selon la recette,
la quantité et la grosseur des aliments ou
vos goûts personnels.
• La température de cuisson peut être
ajustée par tranches de 10°F, de 120°F à
450°F maximum, ou par tranches de 5°C,
de 50°C à 230°C maximum).
b) Pour modifier le temps de cuisson,
pressez le centre du cadran TEMP/
TIME jusqu’à ce que le temps apparaisse
à l’écran ACL.
• Tournez le cadran vers la gauche pour
réduire le temps de cuisson ou vers la
droite pour l’augmenter.

NOTE
Si vous couvrez de papier aluminium
les accessoires, plats et casseroles, il est
conseillé de placer la grille à la position
centrale ou inférieure. Cela empêchera
le papier aluminium de toucher aux
éléments chauffants supérieurs.
Pour des résultats optimaux:
• Insérez la grille en plaçant les rayons
vers le haut.
Le four est activé (préchauffage et cuisson)
quand le voyant sonore se fait entendre et
que le contour lumineux orange s’illumine. Il
est éteint quand le bouton START/CANCEL
a été enfoncé une deuxième fois, que le
contour lumineux disparaît et que l’écran
ACL s’illumine en bleu.

La température du four est préréglée en
degrés Fahrenheit. Pour convertir les
degrés Fahrenheit en Celsius, il suffit
d’enfoncer le bouton
de TEMPÉRATURE. Les symboles
correspondants ‘˚F’ et ‘˚C’ apparaîtront
sur l’écran ACL.

UNE NOTE SUR LE MODE
VEILLE (STANDBY)
Quand le four est branché, le signal sonore
se fait entendre à deux reprises et l’écran
ACL s’illumine pendant 10 minutes avant
d’entrer en mode veille. L’écran ACL
s’éteindra alors et le mot ‘STANDBY’
apparaîtra.
Pour désactiver le mode STANDBY veille,
pressez le bouton START/CANCEL ou
tournez un des cadrans. L’écran ACL
s’illuminera à nouveau. Enfoncez le bouton
START/CANCEL pour réactiver le four.

pain ou les bagels, ou pour cuire la pizza
congelée ou la pâte à biscuits congelée.

sélectionné pour les fonctions TOAST,

par défaut pour la fonction PIZZA.

FONCTION TOAST (GRILLER)
Éléments chauffants
Les éléments supérieurs et inférieurs
s’allument et s’éteignent par intermittence
afin de garder une température constante.
Position de la grille

(Aliments congelés).
La fonction TOAST permet de griller le
pain et le rendre croustillant à l’extérieur et
tendre à l’intérieur. Cette fonction est idéale
pour cuire les muffins anglais et les gaufres
congelées.
1. Insérer la grille à la position centrale, en
plaçant les rayons vers le haut.
2. Si vous grillez 1-2 tranches, placez-les
au centre de la grille. Pour 3-4 tranches,
placez-les à égale distance entre elles sur
deux rangées.
5. Le réglage de coloration et le nombre de
tranches peuvent être ajustés avant ou
pendant le cycle de cuisson.
a) Pour modifier le réglage de coloration,
pressez le centre du bouton TEMP/
TIME jusqu’à ce que l’écran ACL affiche
en clignotant ‘DARKNESS’ (Coloration).
Tourner le cadran vers la gauche pour
réduire le degré de coloration ou vers la
droite pour l’augmenter.
NOTE
Les réglages de coloration
s’échelonnent de ‘1’ (très pâle) à ‘7’
(très foncée).
3. Fermez la porte du four.
4. Tournez le cadran de FONCTION
jusqu’à ce que la fonction TOAST
(Griller) apparaisse sur l’écran ACL.
Le chiffre de gauche indique le degré de
coloration (DARKNESS) préréglé ‘4’, et
le chiffre de droite indique le nombre de
tranches préréglé ‘2’.

Lorsque vous utilisez la fonction TOAST
(Griller) pour la première fois, nous vous
recommandons le préréglage ‘4’ afin que
vous puissiez ajuster la coloration à votre
goût, eu égard à la sorte de pain, son
épaisseur ou sa fraîcheur.
Par exemple, le pain aux raisins, le pain
blanc léger ou le pain tranché mince
peuvent nécessiter un réglage plus pâle,
tandis que le pain de seigle, le pain de blé
entier ou le pain frais nécessiteront un
réglage plus foncé..

b) Pour modifier le nombre de tranches,
pressez le centre du cadran TEMP/
TIME jusqu’à ce que l’écran ACL affiche
en clignotant ‘SLICES’ (Tranches).
Tournez le cadran vers la gauche pour
réduire le nombre de tranches, ou vers la
droite pour l’augmenter. Le nombre
de tranches varie de ‘1’ à ‘4’.
NOTE
Le four mémorisera votre sélection de
coloration et le nombre de tranches
jusqu’à ce que vous la changiez ou
que vous débranchiez le four. Lorsque
le four sera rebranché, la fonction
TOAST retournera automatiquement
aux réglages par défaut de coloration
‘4’ et du nombre de tranches ‘2’.
6. Pour activer ce réglage, enfoncez le
bouton START/CANCEL. Le contour
s’illuminera en rouge, le signal sonore se
fera entendre et l’écran ACL l’illuminera
en orange.
7. Le temps de cuisson s’affichera et le
compte à rebours débutera. Vous pouvez
ajuster le temps de cuisson durant le
cycle de grillage en tournant le cadran
TEMP/TIME.
NOTE
MC
L’Élément IQ
le temps de grillage selon la chaleur
ambiante du four. Par exemple, si le
four est déjà chaud après un cycle de
grillage, le temps requis pour le second
cycle sera moins long.
Durant le cycle de grillage, de la
condensation peut apparaître sur
la porte du four. Cela est normal. La
condensation et la vapeur sont causées
par l’humidité contenue dans le pain,
particulièrement le pain frais et le pain
congelé qui en produisent plus.
8. À la fin du cycle de grillage, le signal
sonore se fera entendre trois fois, le
contour lumineux du bouton
START/CANCEL s’éteindra et l’écran
ACL s’illuminera en bleu.

IMPORTANT
Le boîtier, incluant la porte du
four, est très chaud durant et après
l’utilisation. Servez-vous toujours
de poignées isolantes ou de gants de
cuisne pour déposer les aliments dans
le four, les retirer ou les manipuler.

en tout temps en enfonçant le bouton
START/CANCEL. Le four est éteint quand

Avec la fonction BAGEL, vous obtiendrez
un bagel coupé croustillant à l’intérieur et
légèrement grillé à l’extérieur. Cette fonction
est idéale pour griller les crumpets ou les
tranches épaisses de pain gourmet qui
requièrent une coloration plus foncée d’un
côté que de l’autre.
NOTE
Si vous aimez les bagels coupés
croustillants de chaque côté, il est
préférable d’utiliser la fonction
TOAST (Griller).
1. Insérez la grille dans la position centrale
en plaçant les rayons vers le haut.
2. Séparez les bagels en deux.
NOTE
L’intérieur (côté coupé) du bagel
doit toujours faire face aux éléments
chauffants supérieurs pour qu’il
soit croustillant et que la croûte soit
légèrement grillée.
3. Si vous grillez 1-2 moitiés de bagel,
placez-les au centre de la grille. Pour 3-4
moitiés, placez-les à égale distance entre
elles sur deux rangées.
4. Fermez la porte du four.
5. Tournez le cadran de FONCTIONS
jusqu’à la fonction BAGEL. Le chiffre de
gauche sur l’écran ACL indique le degré
de coloration (‘DARKNESS’) préréglé
‘4’ tandis que celui de droite indique le
nombre de moitiés de bagel préréglé ‘2’.
