We at Breville are very safety conscious. We design and manufacture consumer products with
the safety of you, our valued customer, foremost in mind. In addition, we ask that you exercise a
degree of care when using any electrical appliance and adhere to the following precautions:
IMPORTANT SAFEGUARDS
READ ALL INSTRUCTIONS
• Remove and safely discard any packing
materials and promotional labels before
using the oven for the fi rst time.
• To eliminate a choking hazard for young
children, remove and safely discard the
protective cover fi tted to the power plug
of this appliance.
• Do not place the oven near the edge of a
bench or table during operation. Ensure
the surface is level, clean and free of
water, fl our, etc.
• Always operate the oven on a stable, heat
resistant surface. Do not use on a clothcovered surface, near curtains or other
fl ammable materials.
• A fi re may occur if the oven is covered or
touches fl ammable material, including
curtains, draperies, walls, and the like,
when in operation.
• Do not place the oven on or near a hot
gas or electric burner, or where it could
touch another heated oven.
• Do not let the power cord hang over
the edge of a table or counter, or touch
hot surfaces.
• To protect against electric shock do not
immerse the oven, power cord or power
plug in water or any other liquid.
• When operating the oven, keep a
minimum distance of 4” (10cm) of space
on both sides of the appliance. This
will allow for adequate air circulation
and help prevent the possibility of wall
discoloration due to radiated heat.
• Do not touch hot surfaces. Appliance
surfaces, including the door and outer
surface of the oven are hot during and
after operation. To prevent burns or
personal injury, always use protective
hot pads or insulated oven mitts, or use
handles and knobs where available, when
inserting, removing or handling items
from the oven. Alternatively, allow the
oven to cool down before handling.
• Extreme caution must be used when
removing pans, dishes and accessories
such as the included baking pan, contain
hot oil or other hot liquids.
• The glass of the oven door has been
specially treated to make it stronger,
more durable and safer than ordinary
glass, however it is not unbreakable. If
struck extremely hard, it may break or
weaken, and could at a later time, shatter
into many small pieces without apparent
cause.
• Do not leave the door standing open for
extended periods of time when the oven
is turned ON.
• The top of the oven is very hot during
and after operation. Do not store any item
on top of the oven when in operation.
The only exceptions are described on
Page 47 - one layer of ceramic plates for
warming, and the any accessory provided
by Breville for use in the ribbed section
on top of the oven. If the ribbed section is
used as a warming tray during operation,
protective hot pads or insulated oven
mitts should be used when removing
heated items. Alternatively, allow the
oven to cool down before handling.
• The oven is very hot during and after
operation. Do not allow electrical power
cords other than the one supplied with
the oven to come in contact with the
oven.
• Do not place cardboard, plastic, paper, or
other fl ammable materials in the oven.

• Due to the high temperatures of the oven,
Breville does not recommend placing the
oven in enclosed areas. Placing the oven
in an enclosed area, such as a cabinet
or wall recess may cause overheating of
the appliance, surface damage and wall
discoloration due to radiated heat and
steam from around the oven door.
• Caution should be exercised when
cooking foods with high oil content such
as pine nuts and walnuts. Broiling these
foods; cooking them for extended periods
of time or at high temperatures may
create a fi re risk.
• In the event that any foods catch fi re in
the oven, keep the oven door closed. Turn
the oven off and unplug from the power
outlet. Wait until the fi re goes out before
opening the oven door.
• Caution should be exercised when using
pans and dishes constructed of materials
other than metal. If using ceramic or
glass pans or dishes it is important that
they are oven safe to prevent cracking.
• Caution should be exercised when using
lids in the oven, as pressure build up
in a covered pan or dish may cause hot
ingredients to expel or the dish to crack.
• Oversized foods and metal utensils must
not be inserted in the oven as they may
create fi re or risk of electric shock.
• Metal utensils such as knives should not
be inserted in the oven to remove food
residue from the quartz tube elements.
This can damage the elements as well as
lead to electrocution.
• It is recommended to use only the
accessories supplied with this oven.
• The use of any accessory attachments not
recommended by Breville may
cause injuries.
• Do not use the toast function for
purposes other than toasting foods.
• Do not place hands inside the oven
during operation.
• Do not use the oven for other than
intended use.
• This appliance is for household use only.
• Do not use the appliance for anything
other than its intended purpose as
described in this booklet. Do not use
outdoors. Do not use in moving vehicles
or boats.
• Do not attempt to operate the oven by
any method other than those described in
this booklet.
• Do not leave the appliance unattended
when in use.
• Do not cover crumb tray or any part of
the oven with metal foil. This will cause
overheating of the oven.
• Close supervision is necessary when the
appliance is used by or near children.
• This appliance is not intended for use
by persons (including children) with
reduced physical, sensory or mental
capabilities or lack of experience and
knowledge, unless they have been given
supervision or instruction concerning use
of the appliance by a person responsible
for their safety.
• To turn the oven ON and OFF, press the
START/CANCEL button on the control
panel. The oven is OFF when the button
surround illumination is OFF.
• To disconnect from the wall outlet, fi rst
turn OFF the oven, and then remove the
power plug from the wall outlet.
• When the oven is not in use or when left
unattended, disconnect the oven from the
wall outlet.
• Before attempting to move the oven,
or before assembling or disassembling
parts, cleaning or storing, turn OFF the
oven, allow to cool, and disconnect from
the wall outlet.
• Strictly follow the Care and Cleaning
instructions on page 49. Do not clean
with metal scouring pads. Pieces can
break off the pad and touch electrical
parts, creating a risk of electric shock.

• Regularly clean the crumb tray to discard
crumbs. Ensure to turn OFF the oven,
remove the power plug from the wall
outlet and allow the oven to cool before
pulling the crumb tray out.
• Always ensure the crumb tray is
thoroughly dried after cleaning. Ensure to
re-insert the crumb tray before operating
the oven.
• Do not store any materials other than the
supplied accessories in the oven when
not in use.
• This appliance is equipped with a power
cord having a grounding wire with a
grounding plug. The appliance must
be grounded using a 3-hole properly
grounded outlet. In the event of an
electrical short circuit, grounding reduces
the risk of electrical shock.
• If the power outlet is a standard
2-prong wall outlet, it is your personal
responsibility and obligation to have
it replaced with a properly grounded
3-prong wall outlet.
• Do not, under any circumstances, cut or
remove the third (ground) prong from the
power cord or use an adapter.
• Consult a qualifi ed electrician if
the grounding instructions are not
completely understood, or if doubt exists
as to whether the appliance is properly
grounded.
• The installation of a residual current
device (safety switch) is recommended
to provide additional safety protection
when using electrical appliances. It is
advisable that a safety switch with a rated
residual operation current not exceeding
30mA be installed in the electrical
circuit supplying the appliance. See your
electrician for professional advice.
• Regularly inspect the supply cord, plug
and actual appliance for any damage. Do
not operate if damaged in anyway or after
the appliance malfunctions. Immediately
cease use of the appliance and visit

electric circuit is overloaded with other

PREPARING THE OVEN
(A ONE-TIME PROCESS)
In order to remove any protective substances
on the heating elements, it is necessary to run
the oven empty for 15 minutes. Ensure the
area is well ventilated as the oven may emit
vapors. These are normal and not detrimental
to the performance of the oven.
1. Place the oven on a fl at, dry surface.
Ensure there is 4” (10cm) of clear space
on both sides of the appliance, there are
no items on top, all packaging items
have been removed from inside the oven
and the crumb tray has been inserted.
2. Unwind the power cord and insert the
power plug into a power outlet.
3. The oven alert will sound and the LCD
screen will illuminate.
4. Turn the FUNCTION dial until the indicator
reaches the PIZZA function. The fi gure
on the LCD screen indicates the preset
temperature of ‘425°F’. The preset FROZEN
FOODS setting will also be displayed.

OPERATING YOUR BREVILLE MINI
SMART OVEN™
The Breville Mini Smart Oven™ features
Element IQ™ - a cooking technology that
regulates the heating elements to cook
food more evenly and quickly. Each of
the oven’s functions are preset with our
recommended settings, however we suggest
experimenting with these depending on the
recipe, amount of food and your personal
taste. Your customized setting will remain in
the memory of the oven until changed or the
oven is unplugged from the power outlet.
1. Insert the wire rack into the
recommended rack height position.
These are conveniently printed on the
right hand side of the oven door. The
wire rack should be positioned with the
spokes facing upwards.
2. Turn the FUNCTION dial until the
indicator reaches the desired setting.
3. To change the cooking temperature
or time, press the TEMP or TIME
button until the LCD screen displays
the corresponding temperature or time
screen. Press the arrow down button to
reduce the temperature/time or press
the arrow up button to increase the
temperature/time.

Center the food on the wire rack - either

positioned on the Breville baking pan

TOAST FUNCTION: Evenly toasts bread so
it’s crisp and crunchy on the outside, while
soft and moist on the inside.

During the toasting cycle,
condensation may form on the oven
door and steam may be emitted. This
is normal - caused by the moisture
content of the bread. Freshly baked
and frozen breads generally produce

your cut bagel while only lightly toasting
the outside.

settings: ‘HI’ and ‘LOW’. This
determines how quickly the tops of

For instance, during the toasting phase,
A BIT MORE™ adds up to 30 seconds to
the TOAST cycle, while during the ROAST
cycle, A BIT MORE™ adds 10 minutes.
If the cooking cycle has fi nished, A BIT
MORE ™ acts as a start button which will
both start the cooking cycle and add time.
If the cooking cycle is still running, A BIT
MORE™ will simply add more time. This is
especially useful when nearing the end of a
cooking cycle and the food needs just that
little bit more time.
NOTE
A BIT MORE™ can be pressed when
the oven is cold (i.e. not immediately
after a cooking cycle) and the oven will
commence cooking, however, the BAKE,
ROAST, COOKIE, PIZZA functions will
not utilize the usual ‘preheating’ phase
when operated this way. If the oven is
cold, the best performance is achieved
by using the START/CANCEL button.
A BIT MORE™ is best utilized either
during the cooking cycle or
immediately after.
REHEAT FUNCTION: Ideal for reheating
leftovers without browning the top. The
Reheat function is a more gentle mode of
cooking, better suited to thorough reheating
without over cooking.

A BIT MORE™: Allows you to conveniently
and quickly add time to a cooking cycle.
A BIT MORE™ can be used both during
the cooking cycle or immediately after
the cooking cycle has fi nished. During the
cooking cycle, it will add a small amount of
time proportional to the setting in use.

material, promotional labels and tape
from both the inside and the outside of
the oven.
2. Remove the crumb tray, wire rack and
baking pan from the oven and remove
any packaging material. Wash them in
warm soapy water with a soft sponge,
rinse and dry thoroughly. Insert the
crumb tray into the oven.
3. Wipe the interior of the oven with a soft
damp sponge. Dry thoroughly.
4. Place the oven on a fl at, dry surface.
Ensure there is a minimum distance of
4” (10cm) of space on both sides of the
appliance. Ensure there are no items on
top of the oven.
NOTE
Due to the high temperatures of the
oven, Breville does not recommend

BEFORE FIRST USE
It is normal to notice the following occur
during the cooking cycle:
• It is normal that during the broil
function, the bottom set of elements
turn off while the top set is heating at
full power.
• It is normal that the ends of each heating
element will glow more brightly than the
middle of the element.
• It is normal that the elements are
heating even if they are not lighting up.
This cooking technology allows foods to
cook more evenly and quickly, signifi cantly
reducing cooking times. The oven’s preset
cooking temperatures and times, as well as
the cooking temperature and time directions
on pre-packaged foods, may need to be
changed depending on the recipe, the
amount of food and your personal taste.
We recommend experimenting with the
temperature and time settings to produce
the desired results.
The cooking temperature and time can be
adjusted before or during the cooking cycle.
Pressing the TEMP or TIME buttons
changes the display on the LCD screen.
a) To change the cooking temperature,
press the TEMP button until the LCD
screen displays the temperature screen.
• Press the down arrow to reduce the
temperature, or press the up arrow
to increase the temperature. A single
push of the up or down button will
adjust the time or temperature in
single increments. To adjust the time
or temperature rapidly, push and hold
either the up or down arrow. The time or
temperature will begin to adjust rapidly
for as long as the button is pressed.
• The cooking temperature can be
adjusted in 10°F increments, from
120°F to a maximum of 450°F (or in
the Celsius mode, 5°C increments, from
50°C to a maximum 230°C).
b) To change the cooking time, press the
TIME button until the LCD screen
displays the time screen.
• Press the down arrow to reduce the
cooking time, or press the up arrow to
increase the cooking time.

A NOTE ON RACK HEIGHT POSITIONS
Cooking results are signifi cantly affected
by the position of the wire rack as this
determines how close the food is to the
heating elements. We highly recommend
following the rack height position for each
function as printed on the right hand side
of the oven door. However, these are a guide
only. Certain foods may require a different
rack height position depending on the
recipe, the amount and size of the food and
your personal taste.
When using metal foil to cover
accessories, pans, and dishes, it is
recommended that the wire rack be
in the middle or bottom rack height
position. This is to minimize the risk
of the metal foil coming into contact
with the top heating elements.
For optimum cooking results:
• The wire rack should always be inserted
into the rack height position with the
spokes facing upwards.
A NOTE ON STANDBY MODE
When the oven is plugged into a power
outlet, the oven alert will sound twice and
the LCD screen will illuminate blue for 10
minutes before entering STANDBY mode.
When in STANDBY mode, the LCD screen
will cease to illuminate, however three dash
marks will be visible.
To re-activate the oven out of STANDBY
mode, press the START/CANCEL button
on the control panel, turn the function dial
or press any button. The LCD screen will
re-illuminate. Press the START/CANCEL
button to activate the oven.
The oven is ON (preheating and cooking)
when the oven alert sounds, the

Ensure the oven is turned OFF by pressing
the START/CANCEL button on the control
panel. The oven is OFF when the button
surround illumination is no longer red and
the LCD is illuminated blue. Remove the
power plug from the power outlet. Allow the
oven and all accessories to cool completely
before disassembling and cleaning.
NOTE
Do not use abrasive cleansers, metal
scouring pads or metal utensils on any
of the interior or exterior surfaces of
the oven, including the crumb tray.
Do not use abrasive cleansers, metal

Cleaning the outer body and door
1. Wipe the outer body with a soft, damp

cleaner or mild detergent and a soft,

cleanser or mild spray solution may be
used to avoid build-up of stains. Apply
the cleanser to the sponge, not the oven
surface, before cleaning. Avoid touching
the quartz heating elements.

Use extreme caution when cleaning
the quartz heating elements. Allow the
oven to cool completely, then gently
rub a soft, damp sponge or cloth along
the length of the heating element.
Do not use any type of cleanser or

lemon and lime juice, may damage
the porcelain enamel fi nish of the
baking pan. When cooking foods with
high citric acid content, we strongly
recommend lining the enamel surface
with foil or baking paper to extend the
life of these accessories.
• Caution should be exercised when using
metal foil to cover accessories, pans,
and dishes. Be sure that the metal foil
is fi tted securely as close contact with
the oven’s heating elements can cause
overheating and risk of fi re.
• When using metal foil to cover

position. This is to minimize the risk of

• Some large pizzas may brown unevenly in compact
ovens. Open the oven door half way through the
cooking time and turn the pizza 90 degrees for more
even browning.

• This is normal. The condensation created from high
moisture content foods will run down the inside of
the door and can drip onto the counter.
• To ensure the measurements are standardized, the
oven temperatures have been calibrated in the TOAST
position (center of the middle rack with no tray in
place). Re-check the temperature in this position,
ensuring not to open the oven door for 10 minutes as
heat will escape each time the door is opened.
• The LCD screen will display ‘E01’ when there is a
non-resettable issue with the appliance. Should this
occur, immediately remove the power cord from the
wall outlet and call the Breville Customer Service
Center (1-866-BREVILLE).
• The LCD screen will display ‘E02’ when there is a
non-resettable issue with the appliance. Should this
occur, immediately remove the power cord from the
wall outlet and call the Breville Customer Service

METHOD
1.
In a small bowl, combine olive oil, salt,
cayenne (optional), dried basil, garlic
powder and paprika. Set aside.
2. Using scissors, cut around the outer
edge of one pita, dividing the pita into
two rounds. Expose the inside of the pita.
Dip a pastry brush into the seasoned oil
and brush evenly on the inside of the
pita. Cut into 8 triangles and arrange
them oiled side up in a single layer onto
a cookie sheet.

¼ cup cooked spinach,
excess water removed

1 red bell pepper
1 garlic clove, crushed
¼ cup freshly grated Parmesan cheese
¾ cup mayonnaise
¾ cup shredded mozzarella
METHOD
Roasting the Red Pepper
1. Slice the red bell pepper in 4 pieces.
Remove the seeds and the stem. Flatten
each piece and place skin side up onto
the Breville enamel baking pan.
2. Set the wire rack in the top rack height
position. Turn the FUNCTION dial to
BROIL, set TEMPERATURE to HI and
set the TIMER to 12 minutes. Press the
START/CANCEL button to activate.
3. Broil the pepper until the skin is blackened.
4. Remove the pepper from the oven. As it
cools, the skin will loosen from the fl esh.
5. When cool enough to handle, peel away
the skin. Chop the pepper into small
dice.
The Dip
1. In a medium sized bowl, fold together all
the ingredients.
2. Turn the dip into a 4-cup (1 liter)
capacity baking dish, or divide the dip
into two 2-cup (500 ml) baking dishes.
3. Position the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to

Four 14oz potatoes, washed
1 tablespoon butter

3 tablespoons sour cream

1 cup shredded cheddar cheese
5 rashers of bacon
BAKE THE POTATOES
1.
Set the wire rack at the bottom rack
height position. Prick potatoes all over
with a fork. Place the potatoes on the
wire rack.
2. Turn the FUNCTION dial to BAKE.
Set the TEMPERATURE to 450˚F
(230˚C) and the TIME to 1 hour. Press
START/CANCEL button to activate.
Bake until a sharp knife inserted in the
center comes out easily.
CRISPING THE BACON
1.
In a single layer, line the bacon rashers on
the bottom of the Breville roasting tray.
2. Keep the FUNCTION dial on BAKE. Set
the TEMPERATURE to 400˚F (205˚C)
and the TIME for 8 minutes. Press the
START/CANCEL button to activate.
3. Cook the bacon until crispy. Crumble
and set aside.
ASSEMBLING THE TWICE
BAKED POTATOES
1.
Slice ¼ inch off the top of one potato.
Using a teaspoon, scoop out the fl esh
into a medium sized bowl. Repeat with
remaining potatoes. Save the skins as
you will be re-fi lling them.
2. Add the butter, sour cream, buttermilk,
salt, chives and all but 1 tablespoon
of the crumbled bacon. Fold in
the shredded cheese, reserving 2
tablespoons. Scoop the fi lling into each
“boat.” Top with remaining bacon and
shredded cheese.
3. Place the potatoes onto the baking tray.
4. Position the wire rack at the bottom rack

METHOD
PREPARE THE MARINADE
1.
In a medium sized bowl, combine plum
sauce, hoisin sauce, soy sauce, oyster
sauce, honey, ginger, garlic, sesame oil,
cider vinegar, orange rind, hot pepper
sauce (optional). Refrigerate until ready
to use.
2. Bring a large pot of water to a boil.
Prepare the ribs by trimming visible fat.
3. Remove the white membrane from the
underside of the rack by pulling it from
one side and tearing it off. Removing
the membrane allows the marinade to
penetrate through the meat.
4. Once the water begins to boil, gently
place the ribs into the boiling water.
Turn the heat to medium/low and boil
the ribs for 25-30 minutes. This process
will draw out the fat.
5. Remove the ribs from the water using
a set of tongs, and rinse under cool
running water. Cut the ribs into single or
double-bones.
6. Reserve ½ cup of the marinade for
basting. Place the ribs into the remaining
marinade and toss to coat. Refrigerate
and marinate from 4 to 24 hours.
7. Remove the ribs from the bowl and
discard marinade. Place the ribs on the
Breville broil tray with the baking pan
underneath.
8. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to
30 minutes. Press the START/CANCEL
button to activate.
9. Ten minutes before the ribs are done,
baste with remaining marinade.

3 tablespoons olive oil, divided
6 ounces crimini mushrooms, sliced

fresh sage
2 shallots, fi nely diced
¼ cup chopped fresh parsley
1 ½ cups fresh crust-less breadcrumbs (not dry)
PREPARE THE STUFFING
1.
Soak porcini mushrooms in hot water
for 30 minutes to soften. Squeeze the
porcini mushrooms, chop and set aside.
Strain the liquid through a paper fi lter
(a coffee fi lter). Set aside.
2. Heat 1 tablespoon olive oil in a medium
sized skillet. Fry the pancetta until crispy
(approximately 2 minutes). Drain on paper
towels and chop. Set aside.
3. In the same skillet add 1 tablespoon
olive oil and sauté the crimini
mushrooms and shallots until lightly
browned and liquid has evaporated.
Add fresh herbs. Set aside.
4. In a medium sized bowl, combine
the porcini, pancetta, crimini and
breadcrumbs. Set aside.

PREPARE THE TURKEY
1.
Butterfl y the turkey breast and cover
with plastic wrap. Pound the turkey
breast until about ½ inch (1.25 cm)
thick. Remove plastic wrap and lightly
season with salt and pepper. Spread the
fi lling leaving a 1 inch border (2.50 cm).
Starting at the long end, roll up the turkey
breast. Tie roll with butcher’s twine every
1 inch (2.50 cm) to secure the roll.
2. Place the turkey breast roast onto the
Breville broil rack with the baking tray
underneath. Rub the exterior of the roast
with 1 tablespoon olive oil. Season the
roast lightly with salt and pepper.
3. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to ROAST. Set the TEMPERATURE
to 375˚F (190˚C) and the TIME to
45 minutes (approximately). Press
START/CANCEL button to activate.
4. Roast the turkey until a thermometer
inserted into the thickest part of the
roast registers 155˚F (68˚C).
5. Remove the turkey breast roast from the
oven and tent with foil.
MAKE THE SAUCE
1.
In a saucepan, melt the butter and add
the fl our. Cook for 1 minute.
2. Combine white wine, chicken stock and
reserved porcini liquid and pour the
contents into the saucepan whisking
constantly to avoid lumps. If lumps
occur strain the sauce using a fi ne mesh
sieve. Cook for 5 minutes uncovered on
medium to low heat or until thickened
and reduced by one third.
3. Season the sauce with salt and pepper if
necessary.
CARVING THE ROAST
1.
Cut and remove the strings. Slice the
roast into ½ inch thick rounds and
arrange on a platter. Pour the sauce
over the sliced roast.
2. To reach the desired doneness of a
roast, it is best to remove the roast
from the toaster oven when the internal
temperature is 10˚F (6˚C) below the
desired temperature reading. The roast
will continue cooking. The term is
called “carry-over cooking.” The internal
temperature will continue to rise and
cook the interior part of the meat. It is
also extremely important to allow the
roast to rest at least 20 minutes before
carving into it. This allows the roast to
relax and hold in its juices.

PIZZA DOUGH
Yield: two 11-inch pizzas
INGREDIENTS
¾ cup + 2 tablespoons warm water
1 ¾ teaspoons dry yeast
1 teaspoon granulated sugar
2 cups all purpose fl our

MAKE THE DOUGH
1.
In a small bowl, dissolve the sugar in
water. Sprinkle the yeast on top of the
water and let stand for 3 minutes.
2. In a medium bowl, mix together the fl our
and salt. Pour the water/yeast mixture
into the fl our and mix to form a ball.
3. Transfer the dough onto a fl oured
working surface and knead the dough
for approximately 7 to 10 minutes or
until it is smooth and elastic.
4. Grease the bottom and sides of a
clean medium size bowl with olive oil,
approximately 1 teaspoon. Place the
dough in the bowl and cover loosely
with plastic wrap. Allow the dough to
rise 40 minutes.
BAKE THE PIZZA
1.
Set the wire rack in the center rack
height position.
2. Turn the FUNCTION dial to PIZZA and
deselect the FROZEN setting.
3. Bake the pizza for the default
TEMPERATURE and TIME. Press the
START/CANCEL button to activate.

For a crispier crust, add an extra

Parma-Zola
Prepare dough as described on this page.
Cut the dough in half and stretch to fi t an

out dough. Spread artichoke puree and top
with four thin slices of Prosciutto di Parma,
thinly sliced sundried tomatoes and dot
with Gorgonzola cheese and lightly toasted

of sugar and ¼ teaspoon cinnamon. Set the

TIME. Remove the cooked crust from the

3. Roast the chicken wings for

STREUSEL CRUMBLE (OPTIONAL)
1.
In a small bowl, mix together the fl our,
sugar, cinnamon, and salt. Cut in the
butter by hand or use a pastry cutter.
Ensure this mixture is crumbly.
2. Cover with plastic wrap and keep
refrigerated until ready to use.
PREPARE THE APPLES
1.
Peel and core the apples. Slice them in
half and then into ¼ inch slices. Toss
them in a bowl with sugar, cinnamon,
corn starch and salt.
ASSEMBLE THE GALETTE
1.
Dust a working surface and rolling pin
with fl our. If necessary, allow the dough
to sit at room temperature for
10 minutes until it is soft enough to roll.
2. Roll the dough into a 16-inch (40 cm)
circle. Slip an 11-inch (28 cm) round
baking pan underneath the dough;
centered. Arrange the apple mixture
onto the center of the rolled pastry (with
the pan underneath). Carefully lift and
fold over the edges towards the center,
allowing it to pleat. The dough is not
intended to reach the center; therefore,
exposing the apples in the middle.
3. Sprinkle the exposed apples with
the reserved streusel topping (optional).
4. Brush the edges of the pastry with cream
or milk and sprinkle with 1 tablespoon of
granulated sugar.
5. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the temperature to
400˚F (205˚C) and the TIME to
20 minutes. Press START/CANCEL
button to activate.
6. Bake the Apple Galette until the
time has elapsed. Turn the heat down
to 350˚F (175˚C) and bake for an
additional 40 minutes or until the crust
is golden.
7. Allow to cool before serving.
Serve wedges of the Apple Galette with a
scoop of French Vanilla Ice Cream.

2 tablespoons powdered sugar

TIME to 5 minutes. Press the
START/CANCEL button to activate.
Toast the hazelnuts until golden.
Allow to cool.
2. Place fl our, powdered sugar, salt,
butter and toasted hazelnuts in a food
processor and pulse until the hazelnuts
resemble breadcrumbs. Press the
mixture into an 11” x 7” x 2”
(28 cm x 19 cm x 6 cm) baking pan.
3. Keep the FUNCTION dial on BAKE.
Set the TEMPERATURE to 350˚F
(175˚C) and the TIME to 15 minutes.
Press the START/CANCEL button to
activate. Bake the crust until set and
takes on a light golden color. Set on
wire rack to cool.
PREPARE THE LEMON CUSTARD
In a small bowl, beat together eggs,

2. Spread a thin layer of the raspberry
preserves onto the cooled crust.
Gently pour the lemon custard over
the preserves.

Bake until the custard is set, trying not
to over bake.

VANILLA CHEESECAKE
Function: BAKE
Temperature: 350˚F (175˚C) for crumb
crust; 325˚F (162˚C) for cheesecake
Cooking Time: 7 minutes for crumb
crust; 55 minutes for the cheesecake
Yield: One 9 inch round cheesecake
INGREDIENTS
1½ cups graham wafer crumbs
3 tablespoons melted butter
3 eggs, separated
24 oz cream cheese, room temperature
1 cup sour cream
¾ cup granulated sugar
2 teaspoons pure vanilla extract
METHOD
1.
Grease the bottom and sides of a
9 inch round spring form pan with
butter. Combine cookie crumbs and
melted butter and press on the bottom
and a third up the sides of the pan.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION
dial to BAKE. Set the TEMPERATURE
to 350˚F (175˚C) and the TIME to
7 minutes. Press the START/CANCEL
button to activate.
3. Remove the cheesecake from the
oven and allow to cool completely.
CREAM CHEESE FILLING
1.
Separate the egg yolks from the
egg whites.
2. Using a food processor or stand mixer
cream the cheese fi rst, and then add the
sugar. Scrape sides of bowl and blades or
beaters and add egg yolks one at a time.
Scrape again to ensure a smooth texture
is achieved without overbeating. Add
vanilla and sour cream. Mix to combine.
3. In a separate bowl, beat the egg whites
until stiff peaks form. Gently fold in
one third the egg whites into the cream
cheese to lighten the mixture. Add the
rest of the egg whites, folding gently
taking care not to defl ate the bubbles.
Turn the mixture into the cooled spring
form pan.
4. Set the wire rack at the bottom rack height
position. Turn the FUNCTION dial to
BAKE. Set the TEMPERATURE to 325˚F
(162˚C) and the TIME to 55 minutes.
Press the START/CANCEL button to
activate. Bake until the cheesecake is set
but still wobbly in the center.
5. Remove the cheesecake from the oven and
allow to completely cool on a wire rack
before refrigerating for a least 6 hours.
6. For a simple topping, combine 1 cup
of each: strawberries, blueberries and
raspberries, ¼ cup granulated sugar and
1 tablespoon lemon juice in a medium
bowl. Toss to coat and let sit 10 minutes.
7. Slice the cheesecake using a knife dipped
in hot water, and top with 3 tablespoons,
or more, of the fresh berries.

• Le four est très chaud durant et
immédiatement après l’usage. Ne laissez
aucun cordon d’alimentation autre que
celui fourni avec four entrer en contact
avec le four.
• Ne déposez aucun objet en carton, en
plastique ou en papier, ou autre matériel
infl ammable sur le four.
• Due à la température élevée du four,
Breville ne recommande pas de placer
le four dans un espace clos. Le fait de
le placer dans un espace fermé comme
une armoire ou le renfoncement d’un
mur peut faire surchauffer l’appareil, en
endommager la surface et décolorer le
mur, dû à la chaleur radiante et la vapeur
se dégageant autour de la porte du four.
• Soyez extrêmement prudent lorsque vous
faites cuire des aliments à forte teneur en

• Suivez attentivement les consignes
d’entretien et de nettoyage décrites à la
page 122. Ne nettoyez pas l’appareil avec
des tampons à récurer métalliques qui, en
se brisant, pourraient laisser tomber des
particules sur les éléments chauffants et
causer des risques de chocs électriques.
• Nettoyez régulièrement le ramasse-
miettes. Pour ce faire, éteignez le four,
débranchez-le et laissez-le refroidir avant
de retirer le plateau.
• Assurez-vous de bien assécher le
ramasse-miettes après le nettoyage et de

• Ne rangez aucun accessoire dans le four

Ce guide de démarrage rapide est conçu pour la première utilisation de l’appareil. Pour des

PROCÉDURE D’AMORÇAGE
(À PHASE UNIQUE)
Afi n d’éliminer les substances recouvrant les
éléments chauffants, il est essentiel de faire
fonctionner le four à vide durant 15 minutes.
Assurez-vous qu’il y a une bonne circulation
d’air autour du four, car de la vapeur pourrait
s’en émaner. Cela est normal et n’altérera
aucunement le bon fonctionnement du four.
1. Placez le four sur une surface plane et
sèche, en laissant un espace de 4’’ de
chaque côté du four. Assurez-vous que
le dessus est dégagé et que le ramassemiettes est bien inséré.
2. Déroulez le cordon d’alimentation et
branchez l’appareil.
3. Le signal sonore se fera entendre et
l’écran ACL s’illuminera.
4. Tournez le cadran de FONCTIONS
vers la droite jusqu’à ce que la fonction
PIZZA apparaisse. Les chiffres
apparaissant sur l’écran ACL indiquent
la température préréglée de ‘220°C’.
Le préréglage FROZEN FOODS sera
aussi affi ché.

FONCTIONNEMENT DE VOTRE
MINI SMART OVENMC DE BREVILLE
Le Mini Smart OvenMC de Breville est muni
d’un Élément IQ
exclusive qui régularise les éléments
chauffants afi n d’obtenir une cuisson
uniforme et plus rapide. Chaque fonction
est préréglée selon nos recommandations.
Cependant, nous vous suggérons d’en faire
l’essai selon la recette utilisée, la quantité
d’ingrédients et vos goûts personnels.
Vos réglages personnalisés resteront en
mémoire dans le four jusqu’à ce qu’ils soient
changés ou que le four soit débranché.
1. Insérez la grille à la position
recommandée. Ces positions sont
imprimées sur la droite de la porte du
four. La grille doit être placée avec les
rayons vers le haut.
2. Tournez le cadran de FONCTIONS
jusqu’à la fonction désirée.
3. Pour changer la température ou le
temps de cuisson, enfoncez le bouton
TEMP ou TIME jusqu’à ce que l’écran
ACL affi che la température ou le temps
correspondant. Pressez la fl èche vers
le bas pour réduire la température/
temps ou vers le haut pour augmenter la
température/temps.

FONCTION BAKE (Cuire): Pour cuire
uniformément les gâteaux, muffi ns,
brownies et pâtisseries. Cette fonction est
idéale pour les mets cuisinés congelés,
incluant les lasagnes et les tartes.

PRÉPARATION INITIALE DU FOUR
1. Retirez et disposez de tout matériel
d’emballage, étiquettes promotionnelles
ou collants à l’intérieur et l’extérieur
du four.
2. Retirez la grille et le plateau de cuisson
de l’emballage en mousse polyuréthane.
Lavez-les à l’eau chaude savonneuse
avec une éponge douce, rincez et
asséchez bien. Insérez le ramassemiettes dans le four.
3. Essuyez l’intérieur du four avec
une éponge humide et asséchez
correctement.
4. Placez le four sur une surface plane et
sèche. Assurez-vous qu’il y a un espace
d’au moins 4” (10 cm) de chaque côté de
l’appareil et ne laissez rien sur le dessus
du four.
NOTE
Due à la température élevée du four,
Breville ne recommande pas de placer
le four dans un espace clos. Le fait de
le placer dans un espace fermé comme
une armoire ou le renfoncement
d’un mur peut faire surchauffer
l’appareil, en endommager la surface
et décolorer le mur, dû à la chaleur
radiante et la vapeur se dégageant
autour de la porte du four.
NOTE
Assurez-vous que l’endroit est bien
aéré, car le four peut émettre de la
vapeur. Cependant, cela est normal et
ne nuit pas à la performance du four.

Il est normal que les phénomènes suivants
se produisent durant la cuisson:
• Il est normal que, durant la cuisson à
BROIL (Dorer), les éléments inférieurs
s’éteignent pendant que les éléments
supérieurs chauffent à pleine puissance.
• Il est normal que les éléments soient plus
brillants aux extrémités qu’au centre.
• Il est normal que les éléments chauffent
même s’ils ne sont pas illuminés.
Cette technologie permet de cuire les
aliments uniformément et plus rapidement,
en réduisant de façon signifi cative le
temps de cuisson. Il se peut que vous ayez
à modifi er la température et le temps de
cuisson préréglés, ou la température et le
temps de cuisson suggérés sur l’emballage
des aliments, dépendamment de la recette,
de la quantité d’aliments ou de vos goûts
personnels.
Nous vous conseillons de faire quelques
essais sur la température et le temps
de cuisson afi n d’obtenir les résultats
escomptés.
La température et le temps de cuisson
peuvent être ajustés avant ou pendant le
cycle de cuisson.
Le fait de presser le bouton TEMP ou TIME
changera l’affi chage sur l’écran ACL.
a) Pour modifi er la température de cuisson,
pressez le bouton TEMP jusqu’à ce que
la température apparaisse à l’écran ACL.
• Pressez la fl èche vers le bas pour réduire
la température, ou celle vers le haut
pour l’augmenter. Une simple pression
du bouton vers le haut ou vers le bas
augmentera ou diminuera le temps ou
la température. Pour ajuster rapidement
le temps ou la température, pressez
et tenez enfoncée la fl èche du haut ou
celle du bas. Le temps et la température
s’ajusteront rapidement, tant que vous
tiendrez le bouton enfoncé.

UNE NOTE SUR LA POSITION

Les résultats d’une bonne cuisson
dépendent grandement de la distance entre
la grille et les éléments chauffants. Nous
vous recommandons fortement de suivre
les indications apparaissant sur la droite de
la porte du four concernant la position de
la grille pour chaque fonction. Il est à noter
que ces directives sont à titre informatif
seulement. Certains aliments peuvent
nécessiter une position de grille différente,
selon la recette, la quantité et la grosseur
des aliments ou vos goûts personnels.

VEILLE (STANDBY)
Quand le four est branché, le signal sonore se
fait entendre à deux reprises et l’écran ACL
s’illumine pendant 10 minutes avant d’entrer
en mode veille. L’écran ACL s’éteindra alors
et le mot ‘STANDBY’ apparaîtra.
Pour désactiver le mode veille, pressez le
bouton START/CANCEL ou tournez le
cadran de fonctions ou pressez n’importe
quel bouton. L’écran ACL s’illuminera à
nouveau. Enfoncez le bouton
START/CANCEL pour réactiver le four.
Le four est activé (préchauffage et cuisson)
quand le contour du bouton START/CANCEL
est illuminé en rouge et que l’écran ACL est
illuminé en orange. Le four est éteint lorsque
le bouton START/CANCEL est enfoncé une
deuxième fois, que le contour du bouton n’est
plus illuminé en rouge et que l’écran ACL est
illuminé en bleu.

exemple, si le four est déjà chaud après
un cycle de grillage, le temps requis
pour le second cycle sera moins long.

NOTE
Durant le cycle de grillage, de la
condensation peut apparaître sur la
porte du four et de la vapeur peut
émaner du dessus de la porte. Cela est
normal. La condensation et la vapeur
sont causées par l’humidité contenue
dans le pain, particulièrement le pain
frais et le pain congelé qui produisent
plus de condensation et de vapeur.

8. Si le cycle de grillage est termine, et que
vous préférez votre rôtie un peu plus
grillée, pressez le bouton A BIT MORE

pour un grillage additionnel de
30 secondes. Si le cycle n’est pas
terminé, du temps supplémentaire de
grillage sera ajouté au temps actuel
restant. Si le cycle de grillage est
terminé, le fait de presser le bouton
A BIT MORE

amorcera le cycle de
grillage et le compte à rebours du
temps de grillage préréglé. Chaque
sélection subséquente du bouton
A BIT MORE

ajoutera du temps
additionnel au temps de grillage, et ce,
jusqu’à un maximum de 10 minutes.
NOTE
Par mesure de sécurité, le temps de
grillage continuel est limité à 10 minutes,
incluant le temps écoulé durant le cycle.
Si le four ne vous permet pas d’ajouter du
temps supplémentaire, c’est que le temps
continu maximal a été atteint. Laissez le
four refroidir avant de reprendre le cycle.
IMPORTANT
Le boîtier, incluant la porte du four, est
très chaud durant et immédiatement
après l’usage. Servez-vous toujours
de poignées isolantes ou de gants de
cuisne pour déposer les aliments dans
le four, les retirer ou les manipuler.
Vous pouvez mettre fi n au cycle de grillage
en tout temps en enfonçant le bouton
START/CANCEL. Le four est éteint quand
le contour du bouton START/CANCEL n’est
plus illuminé en rouge.

s’allument par intermittence pour conserver

La fonction BAGEL grille le dessus de votre
bagel coupé pendant que le dessous est
légèrement grillé. Cette fonction est idéale
pour griller les tranches épaisses de pain
gourmet qui requièrent plus de grillage d’un
côté que de l’autre.
NOTE
Si vous aimez les bagels coupés
croustillants de chaque côté, il est
préférable d’utiliser la fonction
TOAST (Griller).
1.
Insérez la grille dans la position centrale
en plaçant les rayons vers le haut.
2. Séparez les bagels en deux.
3. Si vous grillez 1-2 moitiés de bagel,
placez-les au centre de la grille. Pour 3-4
moitiés, placez-les à égale distance entre
elles sur deux rangées.
NOTE
Le côté coupé des bagels doit faire face
aux éléments chauffants supérieurs,
pour que l’intérieur soit croustillant et
la croûte légèrement grillée.
