BREVILLE RECOMMENDS SAFETY FIRST
We at Breville are very safety conscious. We design and manufacture consumer products with the safety of you, our valued customer, foremost in mind. In addition, we ask that you exercise a degree of care when using any electrical appliance and adhere to the following precautions:
IMPORTANT SAFEGUARDS
READ ALL INSTRUCTIONS
Remove and safely discard any packing
materials and promotional labels before using the oven for the fi rst time.
To eliminate a choking hazard for young
children, remove and safely discard the protective cover fi tted to the power plug of this appliance.
Do not place the oven near the edge of a
bench or table during operation. Ensure the surface is level, clean and free of water, fl our, etc.
Always operate the oven on a stable, heat
resistant surface. Do not use on a cloth­covered surface, near curtains or other fl ammable materials.
A fi re may occur if the oven is covered or
touches fl ammable material, including curtains, draperies, walls, and the like, when in operation.
Do not place the oven on or near a hot
gas or electric burner, or where it could touch another heated oven.
Do not let the power cord hang over
the edge of a table or counter, or touch hot surfaces.
To protect against electric shock do not
immerse the oven, power cord or power plug in water or any other liquid.
When operating the oven, keep a
minimum distance of 4” (10cm) of space on both sides of the appliance. This will allow for adequate air circulation and help prevent the possibility of wall discoloration due to radiated heat.
Do not touch hot surfaces. Appliance
surfaces, including the door and outer surface of the oven are hot during and after operation. To prevent burns or personal injury, always use protective
hot pads or insulated oven mitts, or use handles and knobs where available, when inserting, removing or handling items from the oven. Alternatively, allow the oven to cool down before handling.
Extreme caution must be used when
removing pans, dishes and accessories such as the included baking pan, contain hot oil or other hot liquids.
The glass of the oven door has been
specially treated to make it stronger, more durable and safer than ordinary glass, however it is not unbreakable. If struck extremely hard, it may break or weaken, and could at a later time, shatter into many small pieces without apparent cause.
Do not leave the door standing open for
extended periods of time when the oven is turned ON.
The top of the oven is very hot during
and after operation. Do not store any item on top of the oven when in operation. The only exceptions are described on Page 47 - one layer of ceramic plates for warming, and the any accessory provided by Breville for use in the ribbed section on top of the oven. If the ribbed section is used as a warming tray during operation, protective hot pads or insulated oven mitts should be used when removing heated items. Alternatively, allow the oven to cool down before handling.
The oven is very hot during and after
operation. Do not allow electrical power cords other than the one supplied with the oven to come in contact with the oven.
Do not place cardboard, plastic, paper, or
other fl ammable materials in the oven.

Due to the high temperatures of the oven,
Breville does not recommend placing the oven in enclosed areas. Placing the oven in an enclosed area, such as a cabinet or wall recess may cause overheating of the appliance, surface damage and wall discoloration due to radiated heat and steam from around the oven door.
Caution should be exercised when
cooking foods with high oil content such as pine nuts and walnuts. Broiling these foods; cooking them for extended periods of time or at high temperatures may create a fi re risk.
In the event that any foods catch fi re in
the oven, keep the oven door closed. Turn the oven off and unplug from the power outlet. Wait until the fi re goes out before opening the oven door.
Caution should be exercised when using
pans and dishes constructed of materials other than metal. If using ceramic or glass pans or dishes it is important that they are oven safe to prevent cracking.
Caution should be exercised when using
lids in the oven, as pressure build up in a covered pan or dish may cause hot ingredients to expel or the dish to crack.
Oversized foods and metal utensils must
not be inserted in the oven as they may create fi re or risk of electric shock.
Metal utensils such as knives should not
be inserted in the oven to remove food residue from the quartz tube elements. This can damage the elements as well as lead to electrocution.
It is recommended to use only the
accessories supplied with this oven.
The use of any accessory attachments not
recommended by Breville may cause injuries.
Do not use the toast function for
purposes other than toasting foods.
Do not place hands inside the oven
during operation.
Do not use the oven for other than
intended use.
This appliance is for household use only.
Do not use the appliance for anything
other than its intended purpose as described in this booklet. Do not use outdoors. Do not use in moving vehicles or boats.
Do not attempt to operate the oven by
any method other than those described in this booklet.
Do not leave the appliance unattended
when in use.
Do not cover crumb tray or any part of
the oven with metal foil. This will cause overheating of the oven.
Close supervision is necessary when the
appliance is used by or near children.
This appliance is not intended for use
by persons (including children) with reduced physical, sensory or mental capabilities or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety.
To turn the oven ON and OFF, press the
START/CANCEL button on the control panel. The oven is OFF when the button surround illumination is OFF.
To disconnect from the wall outlet, fi rst
turn OFF the oven, and then remove the power plug from the wall outlet.
When the oven is not in use or when left
unattended, disconnect the oven from the wall outlet.
Before attempting to move the oven,
or before assembling or disassembling parts, cleaning or storing, turn OFF the oven, allow to cool, and disconnect from the wall outlet.
Strictly follow the Care and Cleaning
instructions on page 49. Do not clean with metal scouring pads. Pieces can break off the pad and touch electrical parts, creating a risk of electric shock.

Regularly clean the crumb tray to discard
crumbs. Ensure to turn OFF the oven, remove the power plug from the wall outlet and allow the oven to cool before pulling the crumb tray out.
Always ensure the crumb tray is
thoroughly dried after cleaning. Ensure to re-insert the crumb tray before operating the oven.
Do not store any materials other than the
supplied accessories in the oven when not in use.
This appliance is equipped with a power
cord having a grounding wire with a grounding plug. The appliance must be grounded using a 3-hole properly grounded outlet. In the event of an electrical short circuit, grounding reduces the risk of electrical shock.
If the power outlet is a standard
2-prong wall outlet, it is your personal responsibility and obligation to have it replaced with a properly grounded 3-prong wall outlet.
Do not, under any circumstances, cut or
remove the third (ground) prong from the power cord or use an adapter.
Consult a qualifi ed electrician if
the grounding instructions are not completely understood, or if doubt exists as to whether the appliance is properly grounded.
The installation of a residual current
device (safety switch) is recommended to provide additional safety protection when using electrical appliances. It is advisable that a safety switch with a rated residual operation current not exceeding 30mA be installed in the electrical circuit supplying the appliance. See your electrician for professional advice.
Regularly inspect the supply cord, plug
and actual appliance for any damage. Do not operate if damaged in anyway or after the appliance malfunctions. Immediately cease use of the appliance and visit www.Breville.com or call Breville Customer Service at 1-866-BREVILLE for examination, repair or adjustment.
Do not cover crumb tray or any part of
the oven with metal foil. This will cause overheating of the oven.

Your Breville appliance comes with
a unique Assist™ Plug, conveniently designed with a fi nger hole in the power plug for easy and safe removal from the wall outlet. For safety reasons it is recommended you plug your Breville appliance directly into its own electrical outlet on a dedicated circuit separate from other appliances. If the electric circuit is overloaded with other appliances, your appliance may not function properly. Use in conjunction with a power strip or extension cord is not recommended.
Remove the power plug from the power
outlet before attempting to move the appliance, when the appliance is not in use and before cleaning and storing.
SHORT CORD INSTRUCTIONS
Your Breville appliance is fi tted with a short power supply cord as a safety precaution to prevent personal injury or property damage resulting from pulling, tripping or becoming entangled with a longer cord. Do not allow children to use or be near this appliance without close adult supervision. If an extension cord is used, (1) the marked electrical rating of the cord set or extension cord should be at least as great as the electrical rating of the appliance, (2) the cord should be arranged so that it will not drape over the countertop or tabletop where it can be pulled on by children or tripped over unintentionally and (3) the extension cord must include a 3-prong grounding plug.

The Breville enamel broil rack may be inserted into Breville enamel baking pan. When assembled together, the broil rack is designed to drain grease and fats away from meats for healthier cooking.
NOTE
When the oven is plugged into a power outlet, the oven alert will sound twice and the LCD screen will illuminate blue for 10 minutes before entering STANDBY mode.

Quick Start Guide
This Quick Start Guide is designed for fi rst time use. For safety and more information, refer to rest of the Instruction Booklet.

PREPARING THE OVEN (A ONE-TIME PROCESS)
In order to remove any protective substances on the heating elements, it is necessary to run the oven empty for 15 minutes. Ensure the area is well ventilated as the oven may emit vapors. These are normal and not detrimental to the performance of the oven.
1. Place the oven on a fl at, dry surface.
Ensure there is 4” (10cm) of clear space on both sides of the appliance, there are no items on top, all packaging items have been removed from inside the oven and the crumb tray has been inserted.
2. Unwind the power cord and insert the
power plug into a power outlet.
3. The oven alert will sound and the LCD
screen will illuminate.
4. Turn the FUNCTION dial until the indicator
reaches the PIZZA function. The fi gure on the LCD screen indicates the preset temperature of ‘425°F’. The preset FROZEN FOODS setting will also be displayed.

6. The LCD screen will indicate a blinking
‘PREHEATING’. Once the oven has reached the set temperature, the temperature alert will sound.

QUICK START GUIDE
OPERATING YOUR BREVILLE MINI SMART OVEN™
The Breville Mini Smart Oven™ features Element IQ™ - a cooking technology that regulates the heating elements to cook food more evenly and quickly. Each of the oven’s functions are preset with our recommended settings, however we suggest experimenting with these depending on the recipe, amount of food and your personal taste. Your customized setting will remain in the memory of the oven until changed or the oven is unplugged from the power outlet.
1. Insert the wire rack into the
recommended rack height position. These are conveniently printed on the right hand side of the oven door. The wire rack should be positioned with the spokes facing upwards.
2. Turn the FUNCTION dial until the
indicator reaches the desired setting.
3. To change the cooking temperature
or time, press the TEMP or TIME button until the LCD screen displays the corresponding temperature or time screen. Press the arrow down button to reduce the temperature/time or press the arrow up button to increase the temperature/time.

Center the food on the wire rack - either placing directly on the wire rack or positioned on the Breville baking pan (see Page 30 of the Instruction Book for recommended cookware types and sizes).
NOTE
Some functions feature a preheating cycle. When the START/CANCEL button is pressed, the LCD screen will indicate a blinking ‘PREHEATING’. Only place food inside the oven once the LCD screen no longer blinks ‘PREHEATING’ and the temperature alert has sounded.

TOAST FUNCTION: Evenly toasts bread so it’s crisp and crunchy on the outside, while soft and moist on the inside.

NOTE
During the toasting cycle, condensation may form on the oven door and steam may be emitted. This is normal - caused by the moisture content of the bread. Freshly baked and frozen breads generally produce more condensation and steam.
BAGEL FUNCTION: Crisps the insides of
your cut bagel while only lightly toasting the outside.

BAKE FUNCTION: Bakes cakes, muffi ns, brownies and pastries evenly throughout. Also is ideal for cooking pre-packaged frozen meals including lasagna and pies.

ROAST FUNCTION: Cooks a variety of meats and poultry that are tender and juicy inside and roasted to perfection outside. Ideal function for roasting potatoes and other hearty vegetables that require longer cooking times.

BROIL FUNCTION: Ideal for open sandwiches, small cuts of meat, poultry, fi sh, sausages and vegetables. Broiling can also be used to brown the tops of casseroles and gratins.

NOTE
There are two Broiling temperature settings: ‘HI’ and ‘LOW’. This determines how quickly the tops of your food brown - depending on the food, quantity and your personal taste.

The cut side of the bagel must always face upwards towards the top heating elements - so the top side becomes crisp while the crust is only lightly toasted.

Depending on the food being broiled, it may be necessary to turn food over half way through the cooking time to achieve even cooking and browning.

homemade or commercially prepared cookies and ready-to-bake croissants, scones, biscuits and mini tarts or pies.

For instance, during the toasting phase, A BIT MORE™ adds up to 30 seconds to the TOAST cycle, while during the ROAST cycle, A BIT MORE™ adds 10 minutes.
If the cooking cycle has fi nished, A BIT MORE ™ acts as a start button which will both start the cooking cycle and add time. If the cooking cycle is still running, A BIT MORE™ will simply add more time. This is especially useful when nearing the end of a cooking cycle and the food needs just that little bit more time.
NOTE
A BIT MORE™ can be pressed when the oven is cold (i.e. not immediately after a cooking cycle) and the oven will commence cooking, however, the BAKE, ROAST, COOKIE, PIZZA functions will not utilize the usual ‘preheating’ phase when operated this way. If the oven is cold, the best performance is achieved by using the START/CANCEL button. A BIT MORE™ is best utilized either during the cooking cycle or immediately after.
REHEAT FUNCTION: Ideal for reheating
leftovers without browning the top. The Reheat function is a more gentle mode of cooking, better suited to thorough reheating without over cooking.

A BIT MORE™: Allows you to conveniently and quickly add time to a cooking cycle. A BIT MORE™ can be used both during the cooking cycle or immediately after the cooking cycle has fi nished. During the cooking cycle, it will add a small amount of time proportional to the setting in use.

1. Remove and safely discard any packing
material, promotional labels and tape from both the inside and the outside of the oven.
2. Remove the crumb tray, wire rack and
baking pan from the oven and remove any packaging material. Wash them in warm soapy water with a soft sponge, rinse and dry thoroughly. Insert the crumb tray into the oven.
3. Wipe the interior of the oven with a soft
damp sponge. Dry thoroughly.
4. Place the oven on a fl at, dry surface.
Ensure there is a minimum distance of 4” (10cm) of space on both sides of the appliance. Ensure there are no items on top of the oven.

It is normal to notice the following occur during the cooking cycle:
It is normal that during the broil
function, the bottom set of elements turn off while the top set is heating at full power.
It is normal that the ends of each heating
element will glow more brightly than the middle of the element.
It is normal that the elements are
heating even if they are not lighting up.
This cooking technology allows foods to cook more evenly and quickly, signifi cantly reducing cooking times. The oven’s preset cooking temperatures and times, as well as the cooking temperature and time directions on pre-packaged foods, may need to be changed depending on the recipe, the amount of food and your personal taste.
We recommend experimenting with the temperature and time settings to produce the desired results.
The cooking temperature and time can be adjusted before or during the cooking cycle.
Pressing the TEMP or TIME buttons changes the display on the LCD screen.
a) To change the cooking temperature,
press the TEMP button until the LCD screen displays the temperature screen.
Press the down arrow to reduce the
temperature, or press the up arrow to increase the temperature. A single push of the up or down button will adjust the time or temperature in single increments. To adjust the time or temperature rapidly, push and hold either the up or down arrow. The time or temperature will begin to adjust rapidly for as long as the button is pressed.
The cooking temperature can be
adjusted in 10°F increments, from 120°F to a maximum of 450°F (or in the Celsius mode, 5°C increments, from 50°C to a maximum 230°C).
b) To change the cooking time, press the
TIME button until the LCD screen displays the time screen.
Press the down arrow to reduce the
cooking time, or press the up arrow to increase the cooking time.

The cooking time can be adjusted in
5 second increments, up to 10 minutes when in TOAST and BAGEL setting. In all other settings, the cooking time can be adjusted in 1 minute increments up to 1 hour, and in 5 minute increments between 1 and 2 hours.
A NOTE ON RACK HEIGHT POSITIONS
Cooking results are signifi cantly affected by the position of the wire rack as this determines how close the food is to the heating elements. We highly recommend following the rack height position for each function as printed on the right hand side of the oven door. However, these are a guide only. Certain foods may require a different rack height position depending on the recipe, the amount and size of the food and your personal taste.

When using metal foil to cover accessories, pans, and dishes, it is recommended that the wire rack be in the middle or bottom rack height position. This is to minimize the risk of the metal foil coming into contact with the top heating elements.
For optimum cooking results:
The wire rack should always be inserted
into the rack height position with the spokes facing upwards.
A NOTE ON STANDBY MODE
When the oven is plugged into a power outlet, the oven alert will sound twice and the LCD screen will illuminate blue for 10 minutes before entering STANDBY mode. When in STANDBY mode, the LCD screen will cease to illuminate, however three dash marks will be visible.
To re-activate the oven out of STANDBY mode, press the START/CANCEL button on the control panel, turn the function dial or press any button. The LCD screen will re-illuminate. Press the START/CANCEL button to activate the oven.
The oven is ON (preheating and cooking) when the oven alert sounds, the START/CANCEL button surround is illuminated red and the LCD is illuminated orange. The oven is OFF when the START/CANCEL button is pressed a second time, the button surround no longer illuminates red and the LCD is illuminated blue.

The temperature reading on the oven is preset to Fahrenheit. Pressing the

If cooking a frozen pizza, ensure to remove all packaging, including cardboard, plastic, paper, or other fl ammable materials before placing the pizza in the oven.
Breville recommends using a dark colored, non-stick pizza pan when cooking a pizza. Light colored pans refl ect heat and may not effectively crisp the pizza crust.

For a crisper crust, pizzas can be cooked directly on the wire rack. However care should be taken as melted cheese and other ingredients may build-up on the heating elements and create a potential fi re risk. Avoid touching the quartz heating elements.

Use extreme caution when cleaning the quartz heating elements. Allow the oven to cool completely, then gently rub a soft, damp sponge or cloth along the length of the heating element. Caution should be exercised when using
pans and dishes constructed of materials other than metal. If using ceramic or glass pans or dishes it is important that they are oven safe to prevent cracking.
Citric acid, found in foods such a orange,
lemon and lime juice, may damage the porcelain enamel fi nish of the baking pan. When cooking foods with high citric acid content, we strongly recommend lining the enamel surface with foil or baking paper to extend the life of these accessories.
Caution should be exercised when using
metal foil to cover accessories, pans, and dishes. Be sure that the metal foil is fi tted securely as close contact with the oven’s heating elements can cause overheating and risk of fi re.
When using metal foil to cover
accessories, pans, and dishes, it is recommended that the wire rack be in the middle or bottom rack height position. This is to minimize the risk of the metal foil coming into contact with the top heating elements.
Caution should be exercised when using
lids in the oven, as pressure build up in a covered pan or dish may cause hot ingredients to expel or the dish to crack.

Some large pizzas may brown unevenly in compact
ovens. Open the oven door half way through the cooking time and turn the pizza 90 degrees for more even browning.
The pizza crust does not crisp

Breville recommends using a dark colored, non-stick
pizza pan when cooking a pizza. Light colored pans refl ect heat and may not effectively crisp the pizza crust. Oven accessories are available at breville.com
For a crisper crust, pizzas can be cooked directly
on the wire rack. However care should be taken as melted cheese and other ingredients may build-up on the heating elements and create a potential fi re risk.
The FROZEN FOODS button is only selectable
during the TOAST, BAGEL, BAKE, PIZZA and COOKIE functions.
This is normal. The door gap allows steam from high
moisture foods such as frozen bread to be released.

This is normal. The condensation created from high
moisture content foods will run down the inside of the door and can drip onto the counter.
To ensure the measurements are standardized, the
oven temperatures have been calibrated in the TOAST position (center of the middle rack with no tray in place). Re-check the temperature in this position, ensuring not to open the oven door for 10 minutes as heat will escape each time the door is opened.
The LCD screen will display ‘E01’ when there is a
non-resettable issue with the appliance. Should this occur, immediately remove the power cord from the wall outlet and call the Breville Customer Service Center (1-866-BREVILLE).
The LCD screen will display ‘E02’ when there is a

METHOD
1.
In a small bowl, combine olive oil, salt, cayenne (optional), dried basil, garlic powder and paprika. Set aside.
2. Using scissors, cut around the outer
edge of one pita, dividing the pita into two rounds. Expose the inside of the pita. Dip a pastry brush into the seasoned oil and brush evenly on the inside of the pita. Cut into 8 triangles and arrange them oiled side up in a single layer onto a cookie sheet.
3. Position the wire rack in the middle rack
height position. Turn the FUNCTION dial to TOAST. Select DARKNESS #3 and SLICES to #3. Press the START/CANCEL button to activate. Repeat the process for the remaining pita.

¼ cup cooked spinach, excess water removed
1 cup cooked bite-sized broccoli fl orets 1 red bell pepper 1 garlic clove, crushed ¼ cup freshly grated Parmesan cheese ¾ cup mayonnaise ¾ cup shredded mozzarella
METHOD
Roasting the Red Pepper
1. Slice the red bell pepper in 4 pieces.
Remove the seeds and the stem. Flatten each piece and place skin side up onto the Breville enamel baking pan.
2. Set the wire rack in the top rack height
position. Turn the FUNCTION dial to BROIL, set TEMPERATURE to HI and set the TIMER to 12 minutes. Press the START/CANCEL button to activate.
3. Broil the pepper until the skin is blackened.
4. Remove the pepper from the oven. As it
cools, the skin will loosen from the fl esh.
5. When cool enough to handle, peel away
the skin. Chop the pepper into small dice.
The Dip
1. In a medium sized bowl, fold together all
the ingredients.
2. Turn the dip into a 4-cup (1 liter)
capacity baking dish, or divide the dip into two 2-cup (500 ml) baking dishes.
3. Position the wire rack at the bottom rack
height position. Turn the FUNCTION dial to BAKE. Set the TEMPERATURE to 350˚F (175˚C) and the TIME to 25 minutes. Press the START/CANCEL button to activate.

BAKE THE POTATOES

Set the wire rack at the bottom rack height position. Prick potatoes all over with a fork. Place the potatoes on the wire rack.

Set the TEMPERATURE to 450˚F (230˚C) and the TIME to 1 hour. Press START/CANCEL button to activate. Bake until a sharp knife inserted in the center comes out easily.
CRISPING THE BACON
1.
In a single layer, line the bacon rashers on the bottom of the Breville roasting tray.
2. Keep the FUNCTION dial on BAKE. Set
the TEMPERATURE to 400˚F (205˚C) and the TIME for 8 minutes. Press the START/CANCEL button to activate.
3. Cook the bacon until crispy. Crumble
and set aside.
ASSEMBLING THE TWICE BAKED POTATOES
1.
Slice ¼ inch off the top of one potato. Using a teaspoon, scoop out the fl esh into a medium sized bowl. Repeat with remaining potatoes. Save the skins as you will be re-fi lling them.
2. Add the butter, sour cream, buttermilk,
salt, chives and all but 1 tablespoon of the crumbled bacon. Fold in the shredded cheese, reserving 2 tablespoons. Scoop the fi lling into each “boat.” Top with remaining bacon and shredded cheese.
3. Place the potatoes onto the baking tray.
4. Position the wire rack at the bottom rack

METHOD
PREPARE THE MARINADE
1.
In a medium sized bowl, combine plum sauce, hoisin sauce, soy sauce, oyster sauce, honey, ginger, garlic, sesame oil, cider vinegar, orange rind, hot pepper sauce (optional). Refrigerate until ready to use.
2. Bring a large pot of water to a boil.
Prepare the ribs by trimming visible fat.
3. Remove the white membrane from the
underside of the rack by pulling it from one side and tearing it off. Removing the membrane allows the marinade to penetrate through the meat.
4. Once the water begins to boil, gently
place the ribs into the boiling water. Turn the heat to medium/low and boil the ribs for 25-30 minutes. This process will draw out the fat.
5. Remove the ribs from the water using
a set of tongs, and rinse under cool running water. Cut the ribs into single or double-bones.
6. Reserve ½ cup of the marinade for
basting. Place the ribs into the remaining marinade and toss to coat. Refrigerate and marinate from 4 to 24 hours.
7. Remove the ribs from the bowl and
discard marinade. Place the ribs on the Breville broil tray with the baking pan underneath.
8. Set the wire rack at the bottom rack
height position. Turn the FUNCTION dial to BAKE. Set the TEMPERATURE to 350˚F (175˚C) and the TIME to 30 minutes. Press the START/CANCEL button to activate.
9. Ten minutes before the ribs are done,
baste with remaining marinade.

3. Spoon the glaze on top of the salmon.
Sprinkle with sliced leek and dot with butter. Season with salt and pepper.

FILLING
1 cup hot water 4oz dried porcini 6 ounces thinly sliced pancetta 3 tablespoons olive oil, divided 6 ounces crimini mushrooms, sliced ½ tablespoon fi nely chopped

fresh sage 2 shallots, fi nely diced ¼ cup chopped fresh parsley 1 ½ cups fresh crust-less breadcrumbs (not dry)
PREPARE THE STUFFING
1.
Soak porcini mushrooms in hot water for 30 minutes to soften. Squeeze the porcini mushrooms, chop and set aside. Strain the liquid through a paper fi lter (a coffee fi lter). Set aside.
2. Heat 1 tablespoon olive oil in a medium
sized skillet. Fry the pancetta until crispy (approximately 2 minutes). Drain on paper towels and chop. Set aside.
3. In the same skillet add 1 tablespoon
olive oil and sauté the crimini mushrooms and shallots until lightly browned and liquid has evaporated. Add fresh herbs. Set aside.
4. In a medium sized bowl, combine
the porcini, pancetta, crimini and breadcrumbs. Set aside.

PREPARE THE TURKEY
1.
Butterfl y the turkey breast and cover with plastic wrap. Pound the turkey breast until about ½ inch (1.25 cm) thick. Remove plastic wrap and lightly season with salt and pepper. Spread the fi lling leaving a 1 inch border (2.50 cm). Starting at the long end, roll up the turkey breast. Tie roll with butcher’s twine every 1 inch (2.50 cm) to secure the roll.
2. Place the turkey breast roast onto the
Breville broil rack with the baking tray underneath. Rub the exterior of the roast with 1 tablespoon olive oil. Season the roast lightly with salt and pepper.
3. Set the wire rack at the bottom rack
height position. Turn the FUNCTION dial to ROAST. Set the TEMPERATURE to 375˚F (190˚C) and the TIME to 45 minutes (approximately). Press START/CANCEL button to activate.
4. Roast the turkey until a thermometer
inserted into the thickest part of the roast registers 155˚F (68˚C).
5. Remove the turkey breast roast from the
oven and tent with foil.
MAKE THE SAUCE
1.
In a saucepan, melt the butter and add the fl our. Cook for 1 minute.
2. Combine white wine, chicken stock and
reserved porcini liquid and pour the contents into the saucepan whisking constantly to avoid lumps. If lumps occur strain the sauce using a fi ne mesh sieve. Cook for 5 minutes uncovered on medium to low heat or until thickened and reduced by one third.
3. Season the sauce with salt and pepper if
necessary.
CARVING THE ROAST
1.
Cut and remove the strings. Slice the roast into ½ inch thick rounds and arrange on a platter. Pour the sauce over the sliced roast.
2. To reach the desired doneness of a
roast, it is best to remove the roast from the toaster oven when the internal temperature is 10˚F (6˚C) below the desired temperature reading. The roast will continue cooking. The term is called “carry-over cooking.” The internal temperature will continue to rise and cook the interior part of the meat. It is also extremely important to allow the roast to rest at least 20 minutes before carving into it. This allows the roast to relax and hold in its juices.

INGREDIENTS

MAKE THE DOUGH

In a small bowl, dissolve the sugar in water. Sprinkle the yeast on top of the water and let stand for 3 minutes.
2. In a medium bowl, mix together the fl our

3. Transfer the dough onto a fl oured
working surface and knead the dough for approximately 7 to 10 minutes or until it is smooth and elastic.
4. Grease the bottom and sides of a
clean medium size bowl with olive oil, approximately 1 teaspoon. Place the dough in the bowl and cover loosely with plastic wrap. Allow the dough to rise 40 minutes.
BAKE THE PIZZA
1.
Set the wire rack in the center rack height position.
2. Turn the FUNCTION dial to PIZZA and
deselect the FROZEN setting.
3. Bake the pizza for the default

Arrange the wings in a single layer onto the Breville broil rack with the baking pan underneath.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION dial to ROAST. Set the TEMPERATURE to 450˚F (230˚C) and the TIME for 20 minutes.
3. Roast the chicken wings for
20 minutes or until crispy. Turn the wings once using a set of tongs. Reset the timer for another 20 minutes and crisp the other side of the wings (ensure wings are no longer pink inside).
4. In a medium sized bowl mix together the
spicy sauce. Add the crispy wings and toss to coat.
For a variation, toss the wings with your favorite barbecue sauce instead of the spicy sauce.
APPLE GALETTE WITH STREUSEL CRUMBLE

together and form a ball. Use cold water if you require more liquid to bring the dough to a ball.

refrigerated until ready to use.
PREPARE THE APPLES

Peel and core the apples. Slice them in half and then into ¼ inch slices. Toss them in a bowl with sugar, cinnamon, corn starch and salt.
ASSEMBLE THE GALETTE

Dust a working surface and rolling pin with fl our. If necessary, allow the dough to sit at room temperature for 10 minutes until it is soft enough to roll.
2. Roll the dough into a 16-inch (40 cm)
circle. Slip an 11-inch (28 cm) round baking pan underneath the dough; centered. Arrange the apple mixture onto the center of the rolled pastry (with the pan underneath). Carefully lift and fold over the edges towards the center, allowing it to pleat. The dough is not intended to reach the center; therefore, exposing the apples in the middle.
3. Sprinkle the exposed apples with
the reserved streusel topping (optional).
4. Brush the edges of the pastry with cream
or milk and sprinkle with 1 tablespoon of granulated sugar.
5. Set the wire rack at the bottom rack
height position. Turn the FUNCTION dial to BAKE. Set the temperature to 400˚F (205˚C) and the TIME to 20 minutes. Press START/CANCEL button to activate.

PREPARE THE CRUST
1.
Toast the hazelnuts by placing them in a single layer on the Breville enamel baking pan. Set the wire rack at the bottom rack height position. Turn the FUNCTION dial to BAKE. Set the TEMPERATUE to 350˚F (175˚C) and the TIME to 5 minutes. Press the START/CANCEL button to activate. Toast the hazelnuts until golden. Allow to cool.
2. Place fl our, powdered sugar, salt,
butter and toasted hazelnuts in a food processor and pulse until the hazelnuts resemble breadcrumbs. Press the mixture into an 11” x 7” x 2” (28 cm x 19 cm x 6 cm) baking pan.
3. Keep the FUNCTION dial on BAKE.
Set the TEMPERATURE to 350˚F (175˚C) and the TIME to 15 minutes. Press the START/CANCEL button to activate. Bake the crust until set and takes on a light golden color. Set on wire rack to cool.
PREPARE THE LEMON CUSTARD
In a small bowl, beat together eggs,

sugar, lemon juice and lemon zest. Then add fl our and baking powder.
2. Spread a thin layer of the raspberry
preserves onto the cooled crust. Gently pour the lemon custard over the preserves.
3. Keep the FUNCTION dial on BAKE. Set
the TEMPERATURE to 350˚F (175˚C) and the TIME to 25 minutes. Press the START/CANCEL button to activate. Bake until the custard is set, trying not to over bake.
4. Allow to cool before cutting into
squares. Dust with powdered sugar.

VANILLA CHEESECAKE
Function: BAKE Temperature: 350˚F (175˚C) for crumb crust; 325˚F (162˚C) for cheesecake Cooking Time: 7 minutes for crumb crust; 55 minutes for the cheesecake Yield: One 9 inch round cheesecake
INGREDIENTS
1½ cups graham wafer crumbs 3 tablespoons melted butter 3 eggs, separated 24 oz cream cheese, room temperature 1 cup sour cream ¾ cup granulated sugar 2 teaspoons pure vanilla extract
METHOD
1.
Grease the bottom and sides of a 9 inch round spring form pan with butter. Combine cookie crumbs and melted butter and press on the bottom and a third up the sides of the pan.
2. Set the wire rack at the bottom rack
height position. Turn the FUNCTION dial to BAKE. Set the TEMPERATURE to 350˚F (175˚C) and the TIME to 7 minutes. Press the START/CANCEL button to activate.
3. Remove the cheesecake from the
oven and allow to cool completely.
CREAM CHEESE FILLING
1.
Separate the egg yolks from the egg whites.
2. Using a food processor or stand mixer
cream the cheese fi rst, and then add the sugar. Scrape sides of bowl and blades or beaters and add egg yolks one at a time. Scrape again to ensure a smooth texture is achieved without overbeating. Add vanilla and sour cream. Mix to combine.
3. In a separate bowl, beat the egg whites
until stiff peaks form. Gently fold in one third the egg whites into the cream cheese to lighten the mixture. Add the rest of the egg whites, folding gently taking care not to defl ate the bubbles. Turn the mixture into the cooled spring form pan.
4. Set the wire rack at the bottom rack height
position. Turn the FUNCTION dial to BAKE. Set the TEMPERATURE to 325˚F (162˚C) and the TIME to 55 minutes. Press the START/CANCEL button to activate. Bake until the cheesecake is set but still wobbly in the center.
5. Remove the cheesecake from the oven and
allow to completely cool on a wire rack before refrigerating for a least 6 hours.
6. For a simple topping, combine 1 cup
of each: strawberries, blueberries and raspberries, ¼ cup granulated sugar and 1 tablespoon lemon juice in a medium bowl. Toss to coat and let sit 10 minutes.
7. Slice the cheesecake using a knife dipped
in hot water, and top with 3 tablespoons, or more, of the fresh berries.

Des risques d’incendie peuvent survenir

Ne touchez pas aux surfaces chaudes
de l’appareil, y compris la porte et le boîtier qui sont très chauds durant et après l’utilisation. Afi n de prévenir les risques de brûlures ou blessures corporelles, servez-vous toujours de poignées isolantes ou de gants de cuisine et utilisez les poignées ou boutons du four pour y manipuler les aliments dans ou hors du four. Vous pouvez également laisser refroidir le four au préalable.
Soyez extrêmement prudent lorsque vous

La vitre de la porte du four a été
spécialement traitée pour la rendre plus résistante, durable et sécuritaire qu’une vitre ordinaire. Cependant, elle n’est pas incassable. Si elle reçoit un coup dur, elle pourrait se briser ou s’affaiblir, et éventuellement briser en éclats sans cause apparente.
Ne laissez pas la porte du four ouverte
pour une période de temps prolongée quand le four fonctionne.
Le dessus du four devient extrêmement
chaud durant et après l’utilisation. N’y déposez aucun objet, sauf les accessoires décrits à la page 121 - des plats en céramique placés en une seule rangée pour être réchauffés ou tout autre accessoire fourni par Breville qui peuvent être déposés sur la section nervurée du dessus du four. Si vous utilisez cette section, servez-vous de poignées isolantes ou de gants de cuisine pour manipuler les plats chauds. Ou laissez refroidir le four au préalable.

Le four est très chaud durant et
immédiatement après l’usage. Ne laissez aucun cordon d’alimentation autre que celui fourni avec four entrer en contact avec le four.
Ne déposez aucun objet en carton, en
plastique ou en papier, ou autre matériel infl ammable sur le four.
Due à la température élevée du four,
Breville ne recommande pas de placer le four dans un espace clos. Le fait de le placer dans un espace fermé comme une armoire ou le renfoncement d’un mur peut faire surchauffer l’appareil, en endommager la surface et décolorer le mur, dû à la chaleur radiante et la vapeur se dégageant autour de la porte du four.
Soyez extrêmement prudent lorsque vous
faites cuire des aliments à forte teneur en huile. Un risque de feu peut survenir si vous faites griller ces aliments ou les faites cuire pour une période prolongée ou à température élevée.
Si des aliments prennent feu dans le four,
gardez la porte du four fermée. Éteignez­le et débranchez-le. Attendez que le feu s’éteigne avant de rouvrir la porte du four.
Soyez extrêmement prudent lorsque
vous utilisez des casseroles ou des plats qui ne sont pas métallisés, comme la céramique ou le verre. Assurez-vous qu’ils résistent à la chaleur pour éviter qu’ils ne craquellent.
Soyez très prudent lorsque vous couvrez
un plat ou une casserole dans le four, car la pression accumulée sous le couvercle peut faire jaillir les ingrédients ou craqueler le plat.
Ne mettez pas d’aliments trop gros ou
d’ustensiles métallisés dans le four, car ils peuvent causer des risques d’incendie ou d’électrocution.
N’utilisez pas d’ustensiles métallisés
comme des couteaux pour nettoyer la nourriture accumulée sur les éléments au quartz, car ceux-ci pourraient en être endommagés et causer une électrocution.

Suivez attentivement les consignes
d’entretien et de nettoyage décrites à la page 122. Ne nettoyez pas l’appareil avec des tampons à récurer métalliques qui, en se brisant, pourraient laisser tomber des particules sur les éléments chauffants et causer des risques de chocs électriques.
Nettoyez régulièrement le ramasse-
miettes. Pour ce faire, éteignez le four, débranchez-le et laissez-le refroidir avant de retirer le plateau.
Assurez-vous de bien assécher le
ramasse-miettes après le nettoyage et de l’insérer dans le four avant l’utilisation.
Ne rangez aucun accessoire dans le four
autre que ceux fournis avec l’appareil, quand ce dernier n’est pas en usage.
Cet appareil est doté d’un cordon
d’alimentation et d’une fi che à la terre. Il doit être branché dans une prise murale à trois ouvertures reliée à la terre. Les risques de chocs électriques seront ainsi réduits en cas de court-circuit.
Si la prise murale est standard à deux
ouvertures, il est de votre responsabilité et obligation de la remplacer par une prise murale à trois ouvertures reliée à la terre.

Ce guide de démarrage rapide est conçu pour la première utilisation de l’appareil. Pour des informations additionnelles, veuillez consulter l’ensemble du livret d’instructions.
PROCÉDURE D’AMORÇAGE (À PHASE UNIQUE)
Afi n d’éliminer les substances recouvrant les éléments chauffants, il est essentiel de faire fonctionner le four à vide durant 15 minutes. Assurez-vous qu’il y a une bonne circulation d’air autour du four, car de la vapeur pourrait s’en émaner. Cela est normal et n’altérera aucunement le bon fonctionnement du four.
1. Placez le four sur une surface plane et
sèche, en laissant un espace de 4’’ de chaque côté du four. Assurez-vous que le dessus est dégagé et que le ramasse­miettes est bien inséré.
2. Déroulez le cordon d’alimentation et
branchez l’appareil.
3. Le signal sonore se fera entendre et
l’écran ACL s’illuminera.
4. Tournez le cadran de FONCTIONS
vers la droite jusqu’à ce que la fonction PIZZA apparaisse. Les chiffres apparaissant sur l’écran ACL indiquent la température préréglée de ‘220°C’. Le préréglage FROZEN FOODS sera aussi affi ché.

Le Mini Smart OvenMC de Breville est muni d’un Élément IQ exclusive qui régularise les éléments chauffants afi n d’obtenir une cuisson uniforme et plus rapide. Chaque fonction est préréglée selon nos recommandations. Cependant, nous vous suggérons d’en faire l’essai selon la recette utilisée, la quantité d’ingrédients et vos goûts personnels. Vos réglages personnalisés resteront en mémoire dans le four jusqu’à ce qu’ils soient changés ou que le four soit débranché.
1. Insérez la grille à la position
recommandée. Ces positions sont imprimées sur la droite de la porte du four. La grille doit être placée avec les rayons vers le haut.
2. Tournez le cadran de FONCTIONS

PRÉPARATION INITIALE DU FOUR
1. Retirez et disposez de tout matériel
d’emballage, étiquettes promotionnelles ou collants à l’intérieur et l’extérieur du four.
2. Retirez la grille et le plateau de cuisson
de l’emballage en mousse polyuréthane. Lavez-les à l’eau chaude savonneuse avec une éponge douce, rincez et asséchez bien. Insérez le ramasse­miettes dans le four.
3. Essuyez l’intérieur du four avec
une éponge humide et asséchez correctement.
4. Placez le four sur une surface plane et
sèche. Assurez-vous qu’il y a un espace d’au moins 4” (10 cm) de chaque côté de l’appareil et ne laissez rien sur le dessus du four.
NOTE
Due à la température élevée du four, Breville ne recommande pas de placer le four dans un espace clos. Le fait de le placer dans un espace fermé comme une armoire ou le renfoncement d’un mur peut faire surchauffer l’appareil, en endommager la surface et décolorer le mur, dû à la chaleur radiante et la vapeur se dégageant autour de la porte du four.
NOTE
Assurez-vous que l’endroit est bien aéré, car le four peut émettre de la vapeur. Cependant, cela est normal et ne nuit pas à la performance du four.

Cette technologie permet de cuire les aliments uniformément et plus rapidement, en réduisant de façon signifi cative le temps de cuisson. Il se peut que vous ayez à modifi er la température et le temps de cuisson préréglés, ou la température et le temps de cuisson suggérés sur l’emballage des aliments, dépendamment de la recette, de la quantité d’aliments ou de vos goûts personnels.
Nous vous conseillons de faire quelques essais sur la température et le temps de cuisson afi n d’obtenir les résultats escomptés.
La température et le temps de cuisson peuvent être ajustés avant ou pendant le cycle de cuisson.
Le fait de presser le bouton TEMP ou TIME changera l’affi chage sur l’écran ACL.
a) Pour modifi er la température de cuisson,
pressez le bouton TEMP jusqu’à ce que la température apparaisse à l’écran ACL.

la température, ou celle vers le haut pour l’augmenter. Une simple pression du bouton vers le haut ou vers le bas augmentera ou diminuera le temps ou la température. Le temps et la température s’ajusteront rapidement, tant que vous tiendrez le bouton enfoncé.

Quand le four est branché, le signal sonore se fait entendre à deux reprises et l’écran ACL s’illumine pendant 10 minutes avant d’entrer en mode veille. L’écran ACL s’éteindra alors et le mot ‘STANDBY’ apparaîtra.
Pour désactiver le mode veille, pressez le bouton START/CANCEL ou tournez le cadran de fonctions ou pressez n’importe quel bouton. L’écran ACL s’illuminera à nouveau. Enfoncez le bouton START/CANCEL pour réactiver le four.
Le four est activé (préchauffage et cuisson) quand le contour du bouton START/CANCEL est illuminé en rouge et que l’écran ACL est illuminé en orange. Le four est éteint lorsque le bouton START/CANCEL est enfoncé une deuxième fois, que le contour du bouton n’est plus illuminé en rouge et que l’écran ACL est illuminé en bleu.

ajoutera du temps additionnel au temps de grillage, et ce, jusqu’à un maximum de 10 minutes.
NOTE
Par mesure de sécurité, le temps de grillage continuel est limité à 10 minutes, incluant le temps écoulé durant le cycle. Si le four ne vous permet pas d’ajouter du temps supplémentaire, c’est que le temps continu maximal a été atteint. Laissez le four refroidir avant de reprendre le cycle.
IMPORTANT
Le boîtier, incluant la porte du four, est très chaud durant et immédiatement après l’usage. Servez-vous toujours de poignées isolantes ou de gants de cuisne pour déposer les aliments dans le four, les retirer ou les manipuler.
Vous pouvez mettre fi n au cycle de grillage en tout temps en enfonçant le bouton START/CANCEL. Le four est éteint quand le contour du bouton START/CANCEL n’est plus illuminé en rouge.

La température et le temps par défaut illustrés dans cette section peuvent varier de ceux affi chés sur votre four.

La fonction BAGEL grille le dessus de votre bagel coupé pendant que le dessous est légèrement grillé. Cette fonction est idéale pour griller les tranches épaisses de pain gourmet qui requièrent plus de grillage d’un côté que de l’autre.
NOTE
Si vous aimez les bagels coupés croustillants de chaque côté, il est préférable d’utiliser la fonction TOAST (Griller).

Insérez la grille dans la position centrale en plaçant les rayons vers le haut.
2. Séparez les bagels en deux.
3. Si vous grillez 1-2 moitiés de bagel,
placez-les au centre de la grille. Pour 3-4 moitiés, placez-les à égale distance entre elles sur deux rangées.
NOTE
Le côté coupé des bagels doit faire face aux éléments chauffants supérieurs, pour que l’intérieur soit croustillant et la croûte légèrement grillée.

6. Le degré de coloration et le nombre de
tranches de bagel peuvent être ajustés avant ou durant le cycle de cuisson.
a) Pour modifi er le degré de coloration,
pressez le bouton DARKNESS jusqu’à ce que l’écran ACL affi che en clignotant ‘DARKNESS’ (Coloration).
b) Pressez la fl èche vers le bas pour réduire
le réglage de coloration, ou celle vers le haut pour l’augmenter.

Les réglages de coloration s’échelonnent de ‘1’ (très pâle) à ‘7’ (très foncé).

Lorsque vous utilisez la fonction BAGEL pour la première fois, nous vous recommandons le préréglage ‘4’ afi n que vous puissiez ajuster la coloration à votre goût, en fonction de la sorte de bagel et de sa fraîcheur.
c) Pour modifi er le nombre de moitiés de
bagel, pressez le bouton SLICES jusqu’à ce que l’écran ACL affi che en clignotant ‘SLICES’ (Tranches). Pressez la fl èche vers le bas pour réduire le nombre de moitiés de bagels, ou celle vers le haut pour l’augmenter. Le nombre de moitiés de bagels varie de ‘1’ à ‘4’.

Le four mémorisera votre sélection de coloration de BAGEL et le nombre de tranches jusqu’à ce que vous la changiez ou que vous débranchiez le four. Lorsque le four sera rebranché, la fonction BAGEL retournera automatiquement au réglage de coloration par défaut ‘4’ et au nombre de moitiés de bagel préréglé ‘2’.

Pour activer ce réglage, pressez le bouton START/CANCEL. Le contour s’illuminera en rouge, le signal sonore se fera entendre et l’écran ACL s’illuminera en orange.
8. Le temps de cuisson apparaîtra et le
compte à rebours débutera. Le temps peut être ajusté durant le cycle de cuisson du bagel en pressant le bouton A BIT MORE

ajuste automatiquement les éléments chauffants pour obtenir des résultats optimaux. Il est normal que les éléments inférieurs s’éteignent pendant que ceux du haut chauffent à pleine puissance. Ceci permet d’obtenir un bagel coupé à l’intérieur croustillant et à la croute légèrement grillée.

ajuste automatique­ment le temps de grillage en fonction de la chaleur ambiante du four. Par exemple, si le four est déjà chaud après un cycle de grillage, le temps requis pour le second cycle de grillage sera moins long.
