Biscuit Pastry
Ingredients:
• 125g Butter
• 125g Sugar
• 1 Packet Vanilla sugar
• 1 Pinch Salt
• 1 Egg
• 1 Egg white
• 250g Plain Flour
• 1 Tsp Baking powder
• Grated rind of half a lemon
➩ Beat the butter until foamy.
➩ Add the sugar, vanilla sugar, lemon
rind and the egg.
➩ Mix the flour, baking powder and
salt, then blend it into the mixture
with a mixing spoon.
➩ Allow the mixture to stand for 10 mi-
nutes.
➩ Pass the pastry through the meat grin-
der with the biscuit pastry attachment.
➩ Lay the biscuits on a baking tray co-
vered with baking paper.
➩ Bake the biscuits in a pre-heated oven
at 180° C for ca. 10 – 15 minutes, until
golden-brown.
Note: The dough is sufficient for se-
veral baking trays of bread rolls.
Bread rolls
• 300 grams of flour (or wholemeal
flour)
• 2 heaped teaspoons of baking powder
• 200 grams of linseed
• 1 egg
• 500 grams of cottage cheese
• 1 teaspoon of salt
• Cumin, onions, bacon, etc. to taste
➩ Knead all the ingredients together
well and form small balls (between table-tennis and tennis ball size) from
the dough.
➩ Place the bread rolls onto a baking
tray covered with baking paper.
➩ Bake for approx. 30 minutes at 180° C.
Note: The dough is sufficient for se-
veral baking trays of bread rolls.
Meringue
Ingredients:
• 1 egg white
• Salt
• 45 g sugar
➩ Pour the well cooled egg white into a
grease-free bowl. There must be no
yolk in the egg, otherwise the meringue will not become stiff.
➩ Beat the egg white at slow mixer
speed so that not too many large
bubbles are created in the mix.
Season with a small pinch of salt.
➩ Gradually add half the sugar when
the egg white starts to stiffen.
➩ Then beat at the highest mixer speed.
➩ Add the remaining sugar so that the
meringue mix takes on the necessary
stiffness.
➩ Fill a decorating bag with large nozz-
le with the meringue mix and make
rosettes, tongues or other forms on a
baking tray covered with baking paper.
➩ Preheat the automatic grill and oven
to 100° C (hot air oven).
➩ Bake the meringue on the middle
shelf at ca. 100° with circulating air for
ca. 2 hours.
