INTRODUCTION
ABOUT THIS MANUAL
This manual must be retained for future reference. This manual contains information necessary for the installation and operation of the HARDT Inferno 2000 rotisserie. To help the reader in the utilization of this manual certain information has been highlighted using the following conventions.
SPECIFIES INFORMATION THAT REFERS TO ACTIONS WHICH MAY HAVE CON­SEQUENCES POTENTIALLY DANGEROUS TO THE OPERATOR AND/OR THE ROTISSERIE.
Specifies information necessary for the proper installation and functioning of the rotisserie.

CUSTOMER SERVICE PROGRAM
We at HARDTEquipment have developed a Customer Service Program (CSP) to ensure fast response time and efficient flow of information. Our authorized service companies are required to attend a yearly training session to ensure they are up-to-date on the latest information.
Here are some of the proactive steps in our CSP:
• Our authorized service companies provide service in the 50 states and Canada. All our service companies stock parts.
• We are committed to a 4-hour service response time for units that are in a "down" situation.
• We are available 24 hours per day, 7 days per week, including holidays.
• We remind you, with a call every 6 months, to have the drive maintenance per­formed.
What to do if a service issue occurs:
• The FIRST call should be to HARDT Customer Service at 800-387-6847 (24 hours per day, 7 days per week, including holidays).
• Customer Service will work with you to diagnose the problem. Should a technician be required, HARDT will dispatch one and give them the specific information required to solve the problem.. This will allow the call to be handled in more effec­tive manner.
Please remember that during the WARRANTYperiod, all service calls MUST be directed to HARDT for approval before contacting the service company.

WARRANTY CONDITIONS
HARDTEQUIPMENTMANUF ACTURING WARRANTS ITS PRODUCTS T O BE FREE FROM DEFECTS IN MA TERIALAND WORKMANSHIP UNDER NORMAL USE AND SERVICE FOR A PERIOD OF TWO YEARS FROM DATE OF ORIGINAL INSTALLATION OR 8 WEEKS AFTER THE ROTISSERIE IS SHIPPED, WHICHEVER COMES FIRST. THIS WARRANTY IS APPLICABLE TO THE INITIAL END-USER AND IS NOT TRANSFERRABLE.
Warranty is conditional on proper installation as per the instructions in the 'INSTALLATION INFORMATION' section of this guide. Should the rotisserie be improp­erly installed and service be required as a result, all charges will be invoiced to the indi­vidual who requested the service. HARDT reserves the right to void the warranty if unauthorized service is performed or if the equipment has not been paid for in full.
Warranty is conditional on proper maintenance and cleaning as per the 'MAINTENANCE' section of this manual. Improper or insufficient maintenance or cleaning will cause premature deterioration of components and the replacement of these will not be covered under warranty. Please read the 'MAINTENANCE' section carefully.
Work performed under warranty must be performed by service representatives autho­rized by HARDT. Should other service companies be used, authorization must be obtained from HARDT prior to the commencement of any service.
During the warranty period, specified parts changed by authorized service companies must be returned to HARDT to determine if they are covered under warranty. A copy of the service sheet explaining the problem and the corrective measure taken must be included with the invoice along with the Return Authorization Number given by HARDT.
Warranty includes labor, material, travel expenses and material freight charges. Labor is limited to straight-time. Overtime charges cover only time and one half in emergencies when the rotisserie is completely non-operational. Travel expenses are limited to 100 miles and 2 hours travel, per call.
WARRANTY DOES NOT INCLUDE:
• Problems arising from improper use or installation, including high or low voltage, high or low gas pressure, improper venting and/or poor maintenance.
• Service calls pertaining to problems with temperature will be limited to those in which the rotisserie has a malfunctioning thermostat or is experiencing insufficient heat prob­lems. Warranty will not include service calls that can be avoided by adjusting the ther­mostat and verifying the temperature in the rotisserie by the thermometer.
• Service calls pertaining to problems with adjustment, cleanliness, drying or alignment of igniters.
• The replacement of either or both burners, the igniter, or the ceramic logs that were damaged as a result of contact with chemicals, liquids or solid objects. Chemicals or liquids of any kind (including water) should NEVER come in contact with the burners, the igniter, or the ceramic logs.
• The replacement of the glass.
(All rotisseries are fully heat tested prior to shipment. Glass break-
age is a result of sharp, abrupt contact. Please exercise caution during operation.)
• The replacement of light bulbs.
• Lost revenue or expenses incurred due to equipment failure.
• Calls made directly to our service companies
(without an authorization number from HARDT).
SPARE PARTS WARRANTY
HARDT Equipment Manufacturing Inc. grants an operation warranty of 3 months on orig­inal HARDT spare parts. In cases of failure within this period, HARDT will supply a replacement part.

The UL or ULC label is the only evidence provided by UL or ULC to identify products manufactured under the respective listing and follow-up service programs. GENERAL DESCRIPTION
BURNER AND IGNITION SYSTEM
The heat generated by the rotisserie comes from two sources located in the top-front and lower-rear sections. The top-front section houses an infrared burner which is the main heat source. The infrared burner provides penetrating heat that cooks deep into the meat thereby shortening the cook cycle. This infrared heat provides radiant energy that heats the product directly without an intervening heat transfer such as air. Since the infrared burner cycles on and off following its set program, the temperature reading is not an active indicator of the cooking process.
The back section houses a gas burner that acts as a secondary heat source. The flame produced aids in the visual presentation and merchandising prowess of this model.
The oven uses an electronic ignition control system to energize the igniter which in turn ignites the gas burner. In addition to sp arking, the igniter acts as a sensor and safety fea­ture shutting off the entire burner system if problems exist.
DRIVE SYSTEM: PLANETARY SKEWER DESIGN
The Inferno 2000 rotisserie is equipped with a planetary movement (dual rotation) skew­er drive system. Each skewer revolves on its own axis as the entire drum rotates. The skewer rotation speed is set so that a different part of the product is exposed to the 2 heat sources during each drum rotation. This system ensures consistency by equalizing the cooking conditions for all the product within the rotisserie.
The skewer system is designed to achieve a load or unload time (for a full load) of less than one (1) minute.
The skewer designed for chicken is a Hardt-designed 'V' skewer. The one-piece skewer passes through the bird cavity and does not require the use of skewer clamps that would normally pierce the chicken. The operator should use latex gloves when loading the skewers into the rotisserie and heat-resistant gloves when removing the skewers from the rotisserie.
The chickens should be held firmly in place on the skewer during the entire cook cycle. The use of string or elasticized trussing loops is required.
The bottom of the cooking cavity of the Inferno 2000 rotisserie has an integral water pan that facilitates cleaning at the end of the day. The cleaning operation is safe as there is no need to remove grease-laden pans. The entire cleaning operation is done within the cavity of the rotisserie.

DELIVERY INFORMATION
PRE-SHIPPING SPECIFICATIONS
The HARDT Inferno 2000 rotisserie is constructed in the form of a stainless steel main structure. All parts of the rotisserie drive, the individual burner systems, and all associ­ated electrical and mechanical hardware are assembled into this structure.
It is also very important to note that the rotisserie crate should be received as “Subject to Verification” (i.e., write it on the waybill when signing for the ship­ment), as you will only be uncrating it after the transport truck has left. This will allow you the opportunity to make a claim against the transport firm should the rotisserie or its components have been damaged in transit.
To connect the rotisserie once it is in position you will require:
1) THE LOCAL GAS COMPANY
(to install gas connections from the main supply)
2) A PLUMBER (if to be permanently connected to an incoming water source)

INSTALLATION INFORMATION
ORDER OF INSTALLATION
Warranty is conditional on proper installation as per the instructions in this section. Should the rotisserie be improperly installed and service be performed, all charges will be invoiced to the individual who requested the service. Please call our Customer Service department if you have any questions whatsoever.
1. Install the ventilation hood.
2. Place the HARDT Inferno 2000 rotisserie in position
(see page 14 for positioning).
3. Connect the gas, electricity, and plumbing to the rotisserie.
VENTING INFORMATION
The Inferno 2000 rotisserie is designed to be used with a hood / canopy type vent.
The HARDT Inferno 2000 rotisserie must vent using the supplied flues as shown on the diagrams in the ‘SPECIFICATIONS’ section. Do not install the hood and make-up air in a way that air is being blown into or pulled out of the rotisserie. Either of these events will greatly affect the rotisserie’s operation. The hood should remove the exhaust gases without disturbing the air within the rotisserie.
Maximum cooking temperature is approx. 700 deg. F
Hood Specification Recommendations
We recommend a Type 1 / Class A grease hood with filters. It is normally equipped with a fire suppression system. Per local authorities and codes, NFPA 96 recommends that all rotisseries that produce grease laden vapors should be vented to a Type 1 / Class A hood. Other equipment that would fall into this category would be fryers and griddles.
The hood should have at least 12" of overhang canopy on sides and front (this may vary as per local code).
We recommend that the grease filters be located at the front of the hood to avoid pulling too much air from the flues.

POSITIONING OF THE ROTISSERIE
FAILURE TO CONFORM TO MINIMUM CLEARANCES CAN CAUSE PROPERTY DAMAGE, INJURY OR DEATH.
Failure to conform to minimum clearances may result in service not being able to be performed!
Do not locate the rotisserie in an area where the right (control) side is next to fryers, broilers or any other appliance that emits grease, smoke, humidity, flour, etc.
As the venturi for the burner is behind the control panel, precautions should be taken to prevent the above-mentioned particles from entering the burner and causing it to malfunction.
Once the hood installation has been completed the rotisserie can be placed in position. The rotisserie should be positioned on a level surface. To allow for sufficient cooling the required minimum clearances to combustible and non-combustible surfaces are:

INSTALLATION OF GAS SUPPLY
IN THE USA: Installation must conform to local codes, or in the absence of local codes,
with the NATIONAL FUEL GAS CODE, ANSI Z223.1.
IN CANADA: Installation for Natural gas must be in accordance with current code
CAN/CGA B149.1. Propane gas installation must be in accordance with current code
CAN/CGA B149.2 and/or local codes. For NATURAL GAS, a minimum inlet pressure of 7” W.C. is required. For PROPANE GAS, a minimum inlet pressure of 11” W.C. is required.
UNITS WITH CASTERS
As an option the unit may be ordered with casters. When supplied with this option it is required that the rotisserie be equipped with ‘Quick Disconnect’ gas / water installation hardware. In this case connect the rotisserie to the gas/ water supply using the instruc­tions supplied in the ‘Quick Disconnect’ kit.
When using the ‘Quick Disconnect’ hardware, the rotisserie must be equipped with a connector that complies with the Standard for Connectors for Movable Gas Appliances, ANSI Z21.69 or Connectors for Movable Gas Appliances, CAN/CGA-6.16
The ‘Quick Disconnect’ kit, which may be purchased from HARDT , must comply with the Standard for Quick Disconnect Devices for Use with Gas Fuel, CAN1-6.9 or the National Electrical Code ANSI/NFPA 70.
A RESTRAINING DEVICE MUST BE INSTALLED SUCH THAT THE ROTISSERIE MOVEMENT IS LIMITED WITHOUT RELYING ON THE CONNECTOR AND THE QUICK DISCONNECT DEVICE OR ITS ASSOCIATED PIPING. THE RESTRAINING CABLE FOR THE DORMONT KIT ATTACHES AT THE POINT SHOWN IN THE DIA­GRAM ON PAGE 11.
All gas installations must be performed by a licensed professional. Check local ordi­nances for applicable regulations.
INSTALLATION OF WATER SUPPLY
When a direct connection to a permanent water supply is desired, the water source should be connected to the copper pipe on the rotisserie. A valve (not supplied) should be installed between the copper pipe on the rotisserie and the water supply.
When installing a permanent water supply, make sure that the main valve is installed in an easily accessible location, preferably at the front of the rotisserie.
For a manual supply of water, either by hose or by bucket, the copper pipe must be plugged.
In either case, it is recommended to use hot water as it reduces warm-up time and facil­itates cleaning.
Local ordinances may require a backflow prevention device. Consult the authority having jurisdiction to determine what regulations are in force for appliances of this type.

INSTALLATION OF DRAIN
(If not pre-installed)
There are two holes in the rotisserie's water pan. One is for the drain and the other is for the overflow. The drain hole is the one located in the center of the rotisserie's water pan.
Underneath the rotisserie place the two rubber washers onto the flat portion of the drain elbow and line up the drain elbow with the center hole of the rotisserie's water pan.
Inside the rotisserie, insert the strainer into the center hole of the water pan and tighten the strainer into the drain elbow.
Attach the drain valve in the location most accessible to the employees.
When installing a rotisserie equipped with casters, make sure that the drain is not hard plumbed into the floor so as to allow the unit to remain mobile for servicing.
Please consult the authority having jurisdiction to determine what regu-
lations are in force regarding the disposal of grease-laden water.
INSTALLATION OF OVERFLOW (If not pre-installed)
The overflow is located in the front of the rotisserie's water pan. Underneath the rotisserie, place two rubber washers onto the flat portion of the overflow
drain elbow and line it up with the front hole of the rotisserie's water pan. Inside the rotisserie insert the overflow strainer (the one with the 1½" brass tube sticking
up) into the front hole of the water pan and tighten it into the overflow drain elbow . (If the overflow is connected to the drain pipe it must only join this pipe after the valve so that the overflow is free-flowing.)
Please consult the authority having jurisdiction to determine what regulations are in force regarding the disposal of grease laden water.

PLACEMENT OF GRATE SECTIONS & LOGS
The grates and ceramic logs should be installed as shown above. The grate sections should be leaning against the back inside wall of the unit. The ceramic logs should be placed vertically, using the locating groove to position them on the grates.
Do not use more than 4 ceramic logs at one time within the unit.

OPERATION
ALWAYS TURN ON THE VENTILATION SYSTEM BEFORE STARTING THE ROTIS­SERIE. IT IS REQUIRED TO REMOVE COMBUSTION BY-PRODUCTS AND GREASE-LADEN AIR.
PRIOR TO STARTING THE ROTISSERIE
1. Close the drain valve and fill the drip pan, preferably with hot water. The water in the rotisserie will serve to diffuse the drippings and facilitate cleanup.
2. Turn the ventilation system on.
3. Activate the rotisserie controls by pulling the RED ON/OFF switch on the control panel.
Should the rotisserie not light on the first try, allow a five (5) minute period before trying to relight. During this time, verify that the gas valves are open.
If at any time during the process described below an error is made, pressing the CLEAR button on the control panel will begin the process again.
PREHEATING
1. Press the PREHEAT button on the control panel. Both burners (the infrared burner on top and the tubular burner at the back) will ignite. The unit will warm to the pre­set temperature. Once preheated, the display will read READY and a buzzer will sound.
2. Press the ALARM CANCEL button to turn the buzzer off. The unit will maintain the preheat temperature by cycling the infrared burner on and off.
OPERATION
1. When ready, load the desired amount of skewers into the rotisserie. Use the green MANUAL ADVANCE button to turn the drive when loading the rotisserie. The drive should always be turning when skewers are not being loaded.
2. Press the button for the appropriate cooking program on the control panel. The pro­gram will be activated and TIME LEFT will be shown on the display.
3. When the cooking cycle finishes, "CHK INTRNL TEMP!" and "SHOULD BE 183

will alternately flash on the display and a buzzer will sound.
4. If the desired internal temperature of the product has not been reached, 5 minutes of additional cooking can be added by pressing the ADD 5 MIN. button on the con­trol panel. This can be done a maximum of 3 times.
5. If the desired internal temperature has been reached press the CANCEL ALARM button. Press the CLR button; the display will read "PRESS PREHEAT" and the unit will be ready to begin another load. The burners will be extinguished.
CROSS CONTAMINATION IS VERY DANGEROUS. DO NOT LOAD FRESH PRODUCT INTO THE ROTISSERIE UNTIL THE COOKING CYCLE IS COMPLETE AND ALL THE COOKED PRODUCT HAS BEEN REMOVED FROM THE ROTISSERIE.

INSERTION / REMOVAL OF SKEWERS
CROSS CONTAMINATION IS VERY DANGEROUS. DO NOT LOAD FRESH PRODUCT INTO THE ROTISSERIE UNTIL THE COOKING CYCLE IS COMPLETE AND ALLTHE COOKED PRODUCT HAS BEEN REMOVED FROM THE ROTISSERIE.
When the rotisserie has reached its operating temperature the skewers can be loaded. Opening the doors will cause the burners to shut off and the drive to stop rotating. The
Manual Switch (Green button, located on the front of the control panel) actuates the drive mechanism without igniting the burners. Press and hold this switch until the desired socket on the drive drum is easily accessible at the front of the rotisserie.
The above sketch illustrates the insertion of the loaded skewers into the drive sockets.
A) The pointed end (1) of the skewer is inserted into the hole (3) in the support plate at
the left side of the rotisserie.
B) The hexagonal end (2) is then raised and inserted into the drive socket slot (4) in the
right hand drive drum.
C) The hexagonal end (2) must be slid into the socket as far to the right as possible to
make certain that the shoulder on the pointed end is inside the face of the support plate. This prevents the skewer from slipping out of the drive drum socket.
D) Once the hex end has been fully inserted into the socket, the skewer (basket) must
be slid to the left to make certain that the shoulder on the pointed end is inside the face of the support plate. This prevents it from slipping out of the drive drum socket.
To prevent unnecessary loss of heat that will increase cooking time, the doors should not be opened until the end of the cooking cycle. The end of the cooking cycle is indicated by the sound of the buzzer and "CHK INTRNL TEMP!" and "SHOULD BE 183
O
F" on the controller display.

NEVER PLACE THE SKEWERS (OR BASKETS) INTO THE ROTISSERIE WITH THE GROOVE IN THE SKEWER’S POINTED END RESTING ON THE SUPPORT PLATE. THE GROOVE IS ONLY FOR HANGING THE SKEWER ON THE OPTIONAL WALL MOUNTED SKEWER RACK.

To remove the skewers, open the doors to stop the skewer rotation and shut off the burners. Use the Green DRIVE ADVANCE button to activate the drive motor alone and bring the desired skewer to the front where it is readily accessible. Reverse the insertion process by raising the pointed end slightly so that the shoulder is level with the hole in the support plate and push the skewer to the left until the hexagonal end is free from the drive socket. Remove the skewer. If the rotisserie will not be used, it should be cleaned as described in the “DAILY CLEANING” section.
We recommend leaving the doors OPEN after cleaning the rotisserie at the end of the cooking day. If the doors remains closed, as the rotisserie cools, humidity will condense around the igniter causing the rotisserie to go into ‘Safety Lockout’ when started the next morning.
In the event of a prolonged power failure, the rotisserie must be shut off by pushing in the Main ON/OFF switch (Red Button).

MAINTENANCE
Your HARDT rotisserie was built using only the highest quality products. All bushings, as well as the complete drivetrain, are permanently lubricated and do not require any greas­ing or oiling. The most important maintenance is the daily cleaning as described in the sections below.
DISCONNECT POWER SUPPLY TO THE ROTISSERIE BEFORE SERVICING. THE ROTISSERIE’S INTERNAL LIGHTS MUST BE OFF PRIOR TO CLEANING OR POSSIBLE INJURY MAY RESULT.
DAILY CLEANING
CLEANING THROUGHOUT THE DAY:
To maximize the rotisserie's merchandising power it is highly recommended to clean the rotisserie glass with a wet cloth at the end of each cooking cycle. This procedure keeps the glass clean without scratching it. Depending on the volume of product cooked, replenishing or changing the water during the day may be required.
CLEANING AT THE END OF THE DAY:
OPEN THE DOORS AND ALLOW THE ROTISSERIE TO COOL DOWN UNTIL IT IS SAFE TO TOUCH.
NEVER SPRAY CHEMICALS OR LIQUIDS OF ANY KIND (INCLUDING WATER) IN THE DIRECTION OF THE BURNERS, THE IGNITERS OR THE CERAMIC LOGS. SHOULD ANYLIQUIDS COME IN CONT ACT WITH THE BURNER WHILE IT IS STILL HOT, THE CERAMICS IN THE BURNER MIGHT CRACK AND THE BURNER WILL HAVE TO BE REPLACED. IF CHEMICALS COME IN CONTACT WITH THE IGNIT­ERS, THE IGNITERS WILL CORRODE, THE ROTISSERIE WILL MALFUNCTION, AND THE IGNITERS WILL HAVE TO BE REPLACED. TO AVOID DAMAGE, WHEN CLEANING THE DRIVE PLATE OR APPLYING CLEANING PRODUCT, FIRST DO THE BOTTOM HALF OF THE DRIVE PLATE, THEN ROTATE THE DRIVE 180OBY PUSHING THE GREEN BUTTON AND DO THE OTHER HALF.
Spray an approved oven cleaner on the interior of the warm rotisserie. Allow it to work and then rinse clean.
Spray the area in and around each drive socket.
After the grease melts, use the small bristle brush to remove any buildup from around and inside the sockets. In doing this simple operation you will eliminate the blockage of the sockets due to the accumulation of dry, hard carbon.
The glass on both the doors as well as the glass protecting the oven’s interior lights should be cleaned daily as the buildup of burnt carbon is very difficult to remove from tempered glass.
AVOID USING SCOURING PADS OR CLEANERS WITH GRIT ON THE GLASS AS IT IS EASILY SCRATCHED.
The igniters should be inspected at this time to ensure that they are free of carbon and grease buildup. If they are dirty, use a dry paper towel to wipe them clean.

After cleaning at the end of the day, always leave the doors open overnight to allow the humidity to escape as it will condense around the igniters causing start­ing problems the next morning.
If parts returned are found to have not been adequately maintained, they will NOT be covered by our warranty plan. Warranty does not cover damage caused by the above or any other misuse.
MONTHLY CLEANING
Once a month, when the oven is cool, remove the ceramic logs and their support. Verify that the rear burner is clean and that its holes are not blocked. If any of the burner holes are blocked, use a thin metal rod (such as a coat hanger) to clear them.
Verify that the cleaning of the inside of the drive sockets is being properly done. Clean if necessary. Black carbon buildup around the exterior of the sockets is the first sign of improper or insufficient cleaning.
Clean the secondary air tray located at the back interior part of the rotisserie beneath the burner. Use a vacuum or brush to remove any particles or carbon accumulation.
Remove and clean the grease trays located beneath the water pan. The trays slide out from either side of the unit and are in 2 parts.
6-MONTH CLEANING
Hardt recommends that a drive maintenance be performed as a preventative measure every six months. Hardt will contact your store with a reminder phone call to ensure that your rotisserie receives the best possible attention.

Maintenance other than that described in this manual should be performed by your HARDT authorized service representative. This should not be necessary if the cleaning procedures are correctly followed.

TROUBLESHOOTING
PROBLEM
Rotisserie does not operate when Main ON/OFF switch (Red button) is pulled, nothing appears on the controller display.
SOLUTION
A) Check the circuit breaker on the unit and on the circuit supplying the rotisserie area. B) If OK, call our Customer Service department.
PROBLEM
Main ON/OFF switch (Red button) is pulled, drive drum rotates but after 11 seconds the alarm buzzer sounds. Rotisserie has gone into SAFETY LOCKOUT. The causes of this are: lack of gas, humidity on the igniters, dirty igniters or incorrect gap clearance settings on the igniters.
SOLUTION
A) Verify that the morning startup PREHEAT procedure is being followed correctly. B) If the rotisserie goes into safety lockout, turn the rotisserie “OFF” by pushing in the
Main ON/OFF Switch. Open the doors of the rotisserie for 1 minute to allow the excess gas to escape. Check that the main gas supply valve is open. To check the main gas supply valve, try another gas powered appliance connected to the same line. Pull the Main ON/OFF Switch to turn the rotisserie on, press PREHEAT on the control panel.
C) If the rotisserie again goes into safety lockout, turn the rotisserie “OFF” by pushing
in the Main ON/OFF Switch. Open the doors of the rotisserie for 1 minute to allow the excess gas to escape. If the doors have been closed all night, humidity may have condensed around the igniters. Get a paper towel and gently clean the igniters. This procedure will clean and de-humidify the ignition. Turn the rotisserie “ON” by pulling the Main ON/OFF Switch.
D) If the rotisserie again goes into safety lockout, turn the rotisserie “OFF” by pushing
in the Main ON/OFF Switch. Open the doors of the rotisserie for 1 minute to allow the excess gas to escape. Check the gap at the tip of the rear igniter (back lower right corner). The gap should be between 1/8" and 3/16” in size as shown below. Verify that the igniter and the area of the burner that is near the igniter are clean.
