WARNING: When properly cared for, your new appliance has been designed to be safe and reliable. Read all instructions carefullybefore use. These precautions will reduce the risk of burns, electric shock, fire, and injury to persons. When using kitchen appliances, basic safety precautions must be followed, including those in the following pages.
General notes
The manufacturer cannot be held liable for damage causedbynon-adherencetothe instructions.
Check device for visible damage afterunpacking it. Don't plug in device in the event of transport damage.
This appliance is not intended for operationwith an external time switchorexternal remote control.
Adults and children must neveroperate the appliance without supervision if they are eitherphysicallyor mentally incapable or if they lackthe necessary knowledge and experience to operate the appliance correctly and safely. Don't let children play with the appliance or packaging material.
Fire Safety
Always have aworking smoke detector near the kitchen.
WARNING: Risk of fire: If the VL 040/041 downdraft ventilators are installed next to agas appliance, an air baffle (LS 041000)mustbeused.This prevents the flame from being drawn into the fan. Thus, afilter soaked in grease cannot be ignited by the gas flame.
WARNING: TO REDUCE THE RISK OF AGREASE FIRE:
a) Never leave surface units unattended at high
settings. Boilovers cause smoking and greasy spillovers that may ignite. Heat oils slowly on low or mediumsettings.
b) Always turn hood ON when cooking at high heat
or when flambeing food (i.e. Crepes Suzette, Cherries Jubilee, Peppercorn Beef Flambé).
c) Clean ventilatingfans frequently. Grease should
not be allowed to accumulateonfan or filter.
d) Use proper pan size. Always use cookware
appropriatefor the size of the surface element.
CAUTION: Do not flambé under the extractor hood or work with anaked flame. When switched on, the extractor hood draws flames into the filter.
CAUTION: For general ventilatinguse only. Do not use to exhaust hazardous or explosive materials and vapors. Do not operate any fan with adamaged cord or plug. Discard fan or return to an authorized service facility for examination and/or repair.
Do not run cord under carpeting. Do not cover cord with throw rugs, runners, or similar coverings. Do not route cord under furniture or appliances. Arrange cord away from traffic area and where it will not be tripped over.
In the event that personal clothing or hair catches fire, drop and roll immediately to extinguishflames.
Smother flames from food fires other than grease fires with baking soda. Never use water on cooking fires.

Whenever possible, do not operate the ventilation system during acooktop fire. However, do not reach throughfire to turn it off.

When children become old enough to use the appliance, it is the legal responsibility of the parents or legal guardians to ensure that they are instructed in safe practicesbyqualified persons.
Do not allow anyone to climb, stand, lean, sit, or hang on any part of an appliance, especially adoor, warming drawer, or storage drawer. This can damage the appliance, and the unit may tip over, potentially causing severe injury.
Do not allow children to use this appliance unless closelysupervised by an adult. Children and pets should not be left alone or unattended in the area where the appliance is in use. They should never be allowed to play in its vicinity, whether or not the appliance is in use.

Cleaning Safety

CAUTION: Grease left on filters can remelt and move into the vent.
WARNING: Mortal danger, risk of poisoning:
through back-suctioned combustion gases. Never operate appliance in exhaust air mode simultaneously with afire-powered appliance that relies on ambient air if sufficient air supply has not been provided for.
Fire-powered appliances that rely on ambient air (e.g. gas, oil, wood or coal-powered heaters, flow heaters, water heaters) draw on combustion air from the room where they're installed and direct the exhaust fumes throughanexhaust system (e.g. chimney),out of the building.
WARNING: Risk of electrical shock: Don't use a high-pressure cleaner or steam cleaner.
CAUTION: Damage to appliance: Do not remove control knobs for cleaning.
Proper Installation and Maintenance
Have the installer show you the location of the circuit breaker or fuse. Mark it for easy reference.
This appliance must be properly installed and grounded by aqualified technician. Connect only to
In combination with an activated range hood, ambient air is drawn from the kitchenand neighboring rooms— insufficient supply air may cause low pressure. Poisonous gases from the chimney or exhaust shaft may be suctionedback into the living space.
That's why sufficient supply air must always be
provided for.
An air supply /exhaust wall duct alone doesn't
ensure adherencetothe limit value.
Safe operation is only possibleifthe low pressure in the room where the stove is installed does not exceed 4Pa(0.04mbar). This can be achieved if the air requiredfor combustionisable to flow in through uncloseable openings such as in doors, windows, in combination with an air supply /exhaust wall duct or through other technical measures.
In any case, consult the master chimney sweep responsible, who can assess the entire ventilation network of the building and suggest asuitable ventilation method.
WARNING: Risk of electrical shock: through damaged connection cable.Don't bend or pinch connection cable during installation.
Causes of damage
CAUTION: Risk of corrosion damage. Always turn on
appliance when cooking to avoid formation of condensation.Condensation can cause corrosion damage.
WARNING: Risk of burns, injury: through damaged connection cable.Damaged connection cable must be replaced by an licensed specialist (electrician).
WARNING: Danger of injury: by sharp edges during installation. Alwayswear protective glovesduring installation of the appliance.
Safe use

of the appliance unless specifically recommended in the manuals. Improper installation, service or maintenance can cause injury or property damage. Refer to this manual for guidance. All other servicing should be done by aqualified technician.

WARNING: Risk of injury, damage: through objects set down on the appliance. Never place objects on the appliance.
WARNING: Risk of short circuit: The cable insulation of electrical appliances can melt. Never place connection cable on the hot cooking zones.
WARNING: Risk of fire: Overly greasy filters pose a risk of catching fire! Never deep-fry or grill next to the appliance without paying careful attention. Clean grease filters regularly.

All fans achieve maximum air output without ducts or filters attached.
Use the accessories only as indicated. The manufacturer assumes no liability for incorrect usage of the accessories.
Operating mode
You can use this appliance in exhaust air or circulating air mode.
Exhaust air mode
The inducted air is cleaned by the grease filter and ventedout of the building through apipe system.
The exhaust must not be ventedthrough a
chimney or shaftthat is simultaneously used to ventilate rooms with fire-powered appliances installed.
Shouldthe exhaust be vented through asmokeor
exhaust chimney that is not in operation, the masterchimney sweep responsiblemust give his approval.
If the exhaust is vented through the outside wall, a
telescopicwallconduit shouldbeused.
Operation
Thoroughly clean the appliance and accessoriesprior to initial use.
Note: VL 040 can only be operated in combination with VL 041. All operating indications apply to both downdraft ventilators. That is: If you set the control knob to level1,both downdraft ventilators are set to level1.
Switching on
Turn the control knob right to the desired position (0-4).
Circulating air mode
The inducted air is cleaned by the grease filters and an activated carbon filter and then fed back to the kitchen.
Note: In order to suppress odors in circulating air mode, you must install an activated carbon filter. You will find the various possibilities for running the device in circulating air mode in the manual or ask your specialist dealer. You can obtain the necessary accessories at aspecialist store, through customer service or at the online shop. You will find the accessory numbers at the end of the instruction manual.
Switching off
Turn the control knob leftto the 0position.
Care and cleaning

Cleaning appliance
Note: The appliance surface and control elements
can be scratched easily. You can order appropriate cleaning agents or care productsfor your device using the hotline or the online shop. Bear in mind the warrantyconditionsinthe enclosed service booklet and the following cleaning information:
Clean the surfaces with asoft, damp cloth and
dishwashing liquid or amild window cleaner. Moisten dried-on grime with adamp cloth. Don't scratch!
Only clean stainless steel surfaces in the
direction of the polish lines.
Don't use stainless steel cleaner for control
elements.
Insertingand removing metal greasefilters
1 Remove ventilation grille. 2 Turnboth retaining wires upward and removethe
grease filter from the appliance.
The filter is inserted in reverse order.
Cleaning metal greasefilters
The metal grease filters used collectthe greasy content of the cooking fumes. With normal use (1 to 2 hours aday), clean the metal grease filters about every three months.
Notes
Don't use any harsh, acidic or causticcleaning
agents.
You can clean the metal grease filters in the
dishwasher or by hand.
In the dishwasher:
Note: Should you wash them in the dishwasher, slight
discolorations may occur. This does not impair the functionality of the metal grease filter.
Do not wash very dirty metal grease filters
together with dishes.
Place the metal grease filters loosely in the
dishwasher. They mustnot become stuck.
