TILTING DIRECT STEAM 2/3 JACKETED
KETTLE MODULE IN CABINET BASE
■ VDMT40 36" wide, 40 gallons (152 liters) capacity.
■ VDMT60 42" wide, 60 gallons (228 liters) capacity.
STANDARD FEATURES
■ Stainless steel front, doors, sides and legs with rear feet
anged.
■ One-piece stainless steel spring assist cover.
■ Steam control and dual temperature faucet and 6" swing
faucet mounted on cabinet table top.
■ Direct connected steam kettle. All welded, type 304 stainless
steel kettle. Kettle is 2/3 jacketed and the bottom is hemispheric design. (Type 316 stainless steel liner - 40 gallons
only.) Operates at 35 psi (2.4 kg/cm2), includes safety pop-off
valve and steam control. 2" tangent draw-off valve, perforated
strainer.
■ Swing drain and removable strainer under draw-off valve.
■ Hydraulic power tilt locks into any position set by operator.
Kettle tilts 90° to empty into the stainless steel food receiving
pan support.
■ One year limited parts and labor warranty.

SPECIFICATIONS:
Direct steam tilting kettle mounted in a module cabinet base,
Vulcan-Hart Model No. (VDMT40) (VDMT60). Stainless steel
front, doors, sides and legs with rear feet anged. One-piece
stainless steel spring assist cover. Steam control and dual
temperature faucet mounted on cabinet table top. Direct connected steam kettle. All welded, type 304 stainless steel kettle.
Kettle is 2/3 jacketed and the bottom is hemispheric design.
(Type 316 stainless steel liner - 40 gallons only.) Operates 35
psi (2.4 kg/cm2), includes safety pop-off valve and steam
control. 2" tangent draw-off valve, perforated strainer. Swing

SERVICE CONNECTIONS:
Electrical Connection: 1/2" conduit connection to controls.
Unless otherwise specied, Field Wire Connection to be 120 volts,
60 Hz, 1 phase with grounding wire.
Drain: 15/8" O.D. tubing to open oor drain. No solid connection.
Steam Supply: 3/4" IPS for incoming steam at 5-50 PSI
(35-345 kPa).
Cold Water: 3/8" O.D. tubing to faucet (optional).
Hot Water: 3/8" O.D. tubing to faucet (optional).
NOTE:
• Dimensionswhichlocatetheaboveconnectionshaveatolerance
of + or - 3" (+ or - 75 mm).
• Installation of backow preventers, vacuum breakers and other
specic code requirements is the responsibility of the owner and
installer. It is the responsibility of the owner and installer to comply
with local codes.
DIRECT STEAM DATA:
Steam supply to the kettle must:
1. Maintain a steady 13 psi ow under operating conditions.
2. Have a minimum ow rate of dry steam per hour (see chart).
3. Be adequately trapped to provide dry steam (see ball oat trap).
