High Temperature Limit Upgrade Instructions
Model PE14D
The intent of these instructions are to upgrade the high temperature limit from a probe style design to a bulb and capillary style design with reset on a model PE14D pasta cooker.

Flat blade screwdriver Phillips screwdriver 11/16” Combination wrench
9/16” Combination wrench 3/8” Combination wrench 5/16” Socket and a ratchet
5/16” Combination wrench Drill with 7/32” & 5/16” drill bits*
*may not be required for all upgrades
The power supply must be disconnected before servicing this appliance.

Drain the appliance before performing the following procedure.
High Temperature Limit Removal
1. Ensure that the power is disconnected and that the tank is drained.
2. Open the door to the appliance to access the element shield.
3. Remove the one screw securing the elem ent shield cover. Keep the screw in a safe place since it will be required later. (See Diagram A)
4. Slide the element shield cover down and remove. (See Diagram A)
5. Disconnect the wire harness from the high temperature limit. (See Diagram B)

6. Remove the high temperature limit from the appliance. (See Diagram B)
Element Shield Cover Subassembly
1. Attach high temperature limit wiring to the new high temperature limit. (See Diagram C)
2. Fold over the flaps on the high temperature limit to cover the wiring conne ction s. (See Diagram C)
3. Attach the high temperature limit to the bracket using two 6-32 screws. (See Diagram C)
4. Attach the high temperature limit subassembly to the new element shield cover using two 10-24 self tapping screws. (See Diagram C)

Installation
1. Apply silicone sealant to the reducer bushing. Install the bushing into the hi-limit coupling. (See Diagram D)
2. Insert the high temperature Limit bulb into the tank through the hi-limit coupling. (See Diagram D)
3. Secure the bulb to the heating element using two bulb clamps, 10-24 screws and wing nuts. The clamp should be located 2 to 3 inches from the front of the tank. (See Diagram D)
4. Insert the fluropolymer seal into the reducer bushing. (See Diagram D)
5. Apply silicone sealant to the high temperature limit bulkhead fitting and install the fitting into the reducer bushing. (See Diagram D)
6. Adjust how much of the capillary is inside the tank until it travels a short, smooth and kink free path inside the tank. Assure that the capillary does NOT come in contact with the element at any point.
7. Tighten the compression screw on the bulkhead fitting until the capillary is secure. (See Diagram D)
8. Fill the cook tank with water and inspect the tank coupling connectio ns to assure that they are leak free.
9. Drain the water from the tank before p ro cee ding.
10. Connect the new high temperature limit wires to the existing wiring inside the entrance box.
11. Install the new element shield cover subassembly and secure using the screw removed during disassembly.
