During the warranty period if a customer elects to use a non-original part or modifies an original part purchased from Pitco and/or its Authorized Service and Parts (ASAP) companies, this warranty will be void. In addition, Pitco and its affiliates will not be liable for any claims, damages or expenses incurred by the customer which arises directly or indirectly, in whole or in part, due to the installation of any modified part and/or received from an unauthorized service center.

This appliance, when installed, must be electrically grounded in accordance with local codes, or in the absence of local codes, with the National Electrical Code, ANSI/NFPA 70, or the Canadian Electrical Code, CSA C22.2, as applicable.

The appliance is NOT jet stream approved. DO NOT clean the appliance with a water jet.
DO NOT attempt to move this appliance or transfer hot liquids from one container to another when the unit is at operating temperature or filled with hot liquids. Serious personal injury could result if skin comes in contact with the hot surfaces or liquids.
DO NOT sit or stand on this appliance. The appliance’s top panel, filter pan, filter carriage, pan cover is not a step. Serious injury could result from slipping, falling or contact with hot liquids.
NEVER use the appliance as a step for cleaning or accessing the ventilation hood. Serious injury could result from slips, trips or from contacting hot liquids.
The filter pan should be dry and free of water droplets prior to use. Serious injury could result from hot steam vapors when hot oil/shortening mixes with water.
DO NOT overfill filter pan with hot oil/shortening. Do not leave appliance unattended while draining or refilling with oil/shortening. Over filling the appliance can cause serious injuries and damage the appliance.
The contents of the crumb catch and/or filter pan of any filter system must be emptied into a fireproof container at the end of each day. Some food particles can spontaneously combust if left soaking in certain types of oil or shortening.
Completely shut the appliance down when the oil/shortening is being drained from the appliance. This will prevent the appliance from heating up during the draining and filling process. Serious injury and appliance damage can occur.
This appliance is intended for indoor use only.
DO NOT operate appliance unless all panels and access covers are attached correctly.
It is recommended that this appliance be inspected by a qualified service technician for proper performance and operation on a yearly basis

NOTICE
This manual is provided as a general guide to filter operation and maintenance. For specific
instruction you MUST refer to the KFC Standards Library.

FILTER ASSEMBLY
1) Slide filter pan (8 in drawing 1) into P18K carriage assembly.
2) Slide paper support screen (9 in drawing 2) into filter paperenve­ lope (10 in drawing 2), ensure filter paper hole lines up with hole on paper support screen.
3) Insert the connector coupling (11 in drawing 2) through the hole in the filter paper and the paper support rack. Thread the pick-up tube (6 in drawing 2) onto the connector coupling.
4) Fold the corners of the open end of the filter envelope in and then fold the open end of the envelope over twice. The first fold should be approximately 1 inch from the edge of the envelope. The second fold should be over the edge of the paper support screen.

5) Push the filter paper clip (12 in drawing 2) over the folded end of the filter paper.
6) Place the filter pick-up assembly into the filter pan (8 in drawing 1) and connect pick-up assembly male quick disconnect (6 in drawing 1) into filter machine female quick disconnect (5 in drawing 1).
7) Install the crumb catch basket assembly (7 in drawing 1) as shown.

FILTERING PROCEDURE:
Refer to KFC Standards Library for correct filtration intervals.
WARNING
When working with HOT oil, protective clothing should be used. This should include,
but not be limited to, insulated rubber gloves, eye protection or face mask and long
sleeves.
1) Ensure fryer drain lines are positioned over crumb catch basket in filter machine filter pan.
2) Ensure filter machine shortening return spout is positioned over the fryer tank that the filtered shortening is to be returned to.
3) Ensure filter machine has filter paper installed in it, and is clean enough to filter another tank of shortening and the power cord is plugged in.
4) Turn fryer front panel power switch to the “OFF” position.
5) Slowly open drain valve and start computer polishing timer.
6) Turn filter machine power switch to the “ON” position.
7) While wearing protective gloves and clothing, use the fryer clean out brush to remove remaining debris from
inside fry tank and allow to flush into fryer drain.
8) When polishing timer ends, Close drain valve and allow fry tank to fill with shortening.
9) When filter machine shortening return starts to pump air, allow filter unit to run for additional fifteen seconds before turning filter unit power switch to the “OFF” position.
CLEANING PROCEDURE:
WARNING
It will be easier and safer if the filter assembly has cooled to room temperature before
handling any filter parts.
WARNING
Do not attempt to lift the filter machine off the floor for cleaning. Bodily injury may
occur.
1) Disassemble the filter pan and pick-up assembly as shown in DRA WING 1 & 2 on page 2 of manual.
2) Empty crumb catch basket of all debris.
3) Separate pick-up assembly quick disconnect from filter machine. (Refer to DRA WING 1 & 2 on page 2)
4) Unscrew pick-up tube from paper support screen and put threaded coupling in a safe place so that it does not get thrown away. (Refer to DRAWING 1 & 2 on page 2)
5) Remove pick-up assembly paper clip and slide paper support screen out of filter envelope. Dispose of filter envelope.
6) T ake all removable parts to the pot sink or dish washer for cleaning.

7) Flush out filter pick-up tube to ensure that tube is not choked with hardened shortening or debris, as shown in DRA WING 3.
8) When clean, reassemble filter parts following instructions on page 1, ASSEMBLY DRA WING 3 PROCEDURE using a new filter envelope.
