High Temperature Limit Upgrade Instructions
Model CPE14
The intent of these instructions are to upgrade the high temperature limit from a probe style design to a bulb and capillary style design with reset on a model CPE14 pasta cooker.

*may not be required for all upgrades
The power supply must be disconnected before servicing this appliance.

Drain the appliance before performing the following procedure.
High Temperature Limit Removal
1. Ensure that the power is disconnecte d and that the tank is drained.
2. Remove the two screws securing the bezel to the front of the appliance. Keep the two screws in a safe place since they will be required later. (See Diagram A)
3. Tilt the bezel down and disconnect the wire pl ug connected to the controller. (See Diagram A)
4. Remove the Bezel from the appliance. Keep the bezel in a safe place for reinstallation later.

5. Disconnect the wire harness from the high temperature limit, temperature probe and circuit breaker. (See Diagram B)
6. Disconnect the remaining connection on the wire harness and remove the harness from the appliance.
7. Remove the high temperature limit from the appliance . (See Diagram B)

Front Entrance Box Modification
1. Inspect the front entrance box to see if it has the hole pattern required to install the new high temperature limit. Proceed to the following steps only if the front entrance box does NOT include the hole pattern shown. (See Diagram C)
2. Drill two 7/32” holes and one 5/16” hole in the front entrance box in the outlined locations. (See Diagram D) Diagram D is shown actual size
and therefore can be used as a template for locating hole centers.
3. Remove all burrs and sharp edges from the drilled h oles. Remove any metal shavings created from the drilling operation.

High Temperature Limit Subassembly
1. Attach high temperature limit wiring to the new high temperature limit. (See Diagram E)
2. Fold over the flaps on the high temperature limit to cover the wiring connections. (See Diagram E)
3. Attach the high temperature limit to the bracket using two 6-32 screws. (See Diagram E)
Installation
1. Apply silicone sealant to the reducer bushing. Install the bushing into the hi-limit coupling. (See Diagram F)

2. Insert the high temperature Limit bulb into the tank through the hi-limit coupling. (See Diagram F)
3. Secure the bulb to the heating element using two bulb clamps, 10-24 screws and wing nuts. The clamp should be located 2 to 3 inches from the front of the tank. (See Diagram F)
4. Insert the Teflon seal into the reducer bushing. (See Diagram F)
5. Apply silicone sealant to the high temperature limit bulkhead fitting and install the fitting into the reducer bushing. (See Diagram F)
6. Adjust how much of the capillary is inside the tank until it travels a short, smooth and kink free path inside the tank. Assure that the capillary does NOT come in contact with the element at any point.
7. Tighten the compression screw on the bulkhead fitting until the capillary is secure. (See Diagram F)

8. Fill the cook tank with water and inspect the tank coupling connections to assure that they are leak free.
9. Drain the water from the tank before p ro cee ding.
10. Attach the high temperature limit subassembly to the front entrance box using two 10-24 self tapping screws. (See Diagram G)
11. Connect the DVI jumper to the connector with orange and violet/white wires on the new front entrance box wiring. (See Diagram H)
12. Connect the new front entrance box wiring to the components in the front entrance box as shown. (See Diagram H)
13. Connect the new front entrance box wiring to the controller located on the bezel.
14. Reinstall the bezel and secure using the two screws removed during disassembly.
15. Replace the schematic label located inside the door with the new schematic label.
16. Startup the appliance per the procedure shown in its installation and operation manual. Assure that the appliance is operating properly.
