CS 10 (7 GN 1/1-65 mm or 10 GN 1/1-40 mm con­tainers) and CS 2 0 (1 4 G N 1/1-65 mm or 20 GN 1/1-40 mm containers) use an easy-to-handle shelf stand that can serve as a trolley . The trolley is not park ed in the ov en but is available for handling the slide racks.

Label the oven junction box. Cover plates on the junction box and other cov er plates may only be opened by a spe­cifically trained technician.
Warning! (fig. 3) Warning for heat and steam. Note that the glass in the oven door can become extre­mely hot and could cause injury if touched. Be careful when opening the oven door. Hot currents of escaping air could result in burns.

Care should be exercised as high temper atures can come into question when taking containers in and out of the slide racks.

The ventilation holes on the underside of the machine should not be blocked as this can cause the machine to overheat.

The oven may not be flushed or cleaned in the
corresponding way exteriorly (i.e. highpressure cleaning)
Water coming into contact with live components re­sults in direct mortal danger. Always exercise care when cleaning, especially around electrical connections.
Use a dampened cloth when cleaning.

All service, maintenance and repairs must be carried out by a purpose trained technician. Only genuine spare parts may be used for replacement. Refer to the Service instructions* and the Spare part catalogue*.

Application area The oven is intended for cooking food and, under no circumstances, may be used in any other way or for any other purpose than described in these operating instructions and in the Cooking Guide or any other cook book.
Using CS 7, CS 10 and CS 20 Combi-ovens you can
roast, grill, braise, bake, boil and heat. Heat transfer takes place through circulating hot air and/or steam.
The water injection feature allows the injection time to be set between a manual, variable time and a fixed time of 30 seconds, which means that you can alw a ys create the perfect level of humidity in the oven. In turn, this means that raw materials will always keep their succulence and weight reduction will be minimal.
The ovens are easy to keep clean and rational to work with and all significant components are manufactured of stainless materials.

Operator information
Before starting work the operator should:
- obtain good knowledge in handling and care.
- localise each warning sign and understand its pur pose.

Cleaning
Refer to the description later in the documentation.
When the equipment is not in use
Follow the instructions below when the oven is not used for long periods.
Press the "On/Off" button.
Switch off the "Main power switch" (Not ON the oven).
Clean the oven inside and out, as w ell as its removab le parts. See Cleaning.
Switch of the water supply
Open the door so that air can circulate and in doing so prevent mould and bad odours developing in the closed space.

le Chef Starting the oven
The steam generator's water automatically empties at set interv als.
A change of water never takes place while a program is in progress, but when the water in the steam generator has fallen below 50°C.
Menu and Gourmet Starting the oven
Before Start and the day's use.
NOTE! The water in the steam generator can be extremely hot if emptied directly after using the oven.
Empty the steam generator by opening the drain valve.
Close the valve
after approx. 0.5 min. when emptying has taken place.
Press "On/Off"

Low temperature cooking is a cooking mode using an oven temperature between 50 - 99 °C.
The actual oven temperature must show a value at least 10°C under the set value before starting.

Gourmet and le Chef Cooking combinations
Cooking combinations offer up to five possibili­ties to successively link different cooking modes.
Choose the cooking mode and make a setting.
Steps for cooking combinations
To delete cooking combinations: Press "Stop" for 1.5 seconds.
The LEDs and displays are dimmed.

Press "Step 2".
The settings are now saved as step 1. The set values for step 1 are dimmed in the displays. LED 1 goes from flashing to lit. LED 2 flashes.
Choose cooking mode for step 2.
If no further steps are wished in the cooking combination: Press "Start". If further steps are wished in the cooking combination: Press "Step 3"
The last settings are now saved as step 2. The set values for step 2 are dimmed in the displays. LED 1 is lit and LED 2 goes from flashing to lit. LED 3 flashes.
Choose cooking mode for step 3, etc. up to 5 steps if required and/or with Hold as the last step.
Checking or changing the mode and/or set values can be carried out in the different steps
before starting. Press the actual step and make any changes as previously described.

Hold Gourmet and le Chef
The last set oven temperature and core temperature in Hold flash for 5 seconds.
Press "Start" to select the pre-set values.

Hold is a heat-keeping method that can be used as an individual program, but is usuall y used as the last step in a cooking combination, commonly known as Cook and Hold. See method Cooking combinations.
NOTE! Hold shall ALWAYS be set last in any cooking combination.

There are numerous descaling agents available on the market. Follow the instructions on the pac kaging carefully and observe prescribed safety recommendations. Measure the descaling agent for the steam generator's total "Water le vel".
NO TE!
Half the amount of water is already in the steam generator. Accordingly, a concentr ated mixture should be made using less water (see table).
Concentrated descaling agent can also be poured directly in the filling pipe. Then fill with water up to the steam generator's "Total water level".

Remove the plug from the filling pipe. Fill with descaling agent + water.

Descaling Menu and Gourmet
Descaling should be carried out when the LED in the symbol "Descaling" is on or at appropriate, regular intervals.
Empty the steam generator by opening
the drain valve. When the water level in the steam generator has fallen below the safety level the time display flashes FILL.
NOTE.
The water in the steam generator can be very hot if emptied directly after using the oven.
Close the valve after approx.
0.5 min. when emptying has taken place.

Cleaning
Cleaning the inside
• After light use, for example, heating or proving the inside of the oven can be wiped using a damp cloth.
NOTE!
Do not use wire wool or abrasive cleaning agents on the stainless steel surfaces . Do not use cleaning agents containing chlorine. Chlorine and chloride compounds that come into contact with stainless steel can result in corrosion.
Cleaning agents
The oven should always be cleaned after use. There are cleaning agents available on the market for cleaning ov ens and/or grills used in large kitchens. Follow the manufacturer's instructions carefully and observe prescribed safety recommendations.
Cleaning the casing
• Clean the equipment's external stainless steel surfaces using warm water, combine with a neutral detergent/cleaning agent and a soft brush or sponge if necessary.
• Panels and knobs are wiped with a damp cloth.
The oven should be cleaned daily after use. The oven door should be closed. The oven v entilation should be closed.
Press "Clean" for 1.5 seconds. The LED lights. Steam is injected for 5 minutes.
When the buzzer sounds: Open the door.
The buzzer stops .
Apply a cleaning agent on the oven walls.
Close the door.
Automatic cleaning starts. The oven display counts down 2 min. during the period the cleaning agent is acting. Steam injection is then started for 10 minutes.
When the buzzer sounds cleaning is finished.
Press "Stop"
The LED goes out.
Rinse the inside of the ove n after the automatic cleaning procedure.
