3.2 OPERATION
a) Continuous operation
- Respect the safety instructions in § 3.1.
- Hold the Mixer - Whisk by the motor unit handle
- Press the switch 1 (green button B) and the double switch 2
(green button N) simultaneously.
- Release the B and N switches. The Mixer - Whisk remains in
continuous operation.
b) Stopping:
- Press the switch 2 (red button M).
- Select low speed and start (see § 3.2).
- If the speed is too low, increase it progressively.
- Move the whisk slowly from the centre to the edges of the
container (beaten egg whites, mayonnaise, etc.).
3.4 FITTING THE MIXER AND WHISK EQUIPMENT
Note: To remove the equipment, turn in an anticlockwise direction (white arrows in diagram 3.4 / Arrows on the outside of
the mixer tube).
- Angle the mixer slightly and start to stir whilst keeping the
blade off the bottom. The products will be sucked up by the
whirlpool and pulverised.
- Then, allow the Mixer to rest at the bottom so that the job can
be finished without fatigue.
- Remove the Mixer from the pot after it has come to a complete
stop.
3.3 FITTING THE WHISKS
- Respect the safety instructions in § 3.1.
- Align the bayonet of each whisk with the groove of the reduction
box spindles and push in fully.
Each of the whisk rings should be flush with the reduction box.
- Remove by pulling each whisk.

- Respect the safety instructions in § 3.1.
- Insert the nose S of the motor unit and align the 2 lugs R with
the 2 cavities F in the machine.
- Lock the two assemblies together by turning the motor unit
by 1/4 turn in a clockwise direction .
(see black arrows in diagram 3.4 or arrows marked on the
machine).
c) Selecting the speed (BERMIXER only):
- Turn the speed variation knob C, graduated from 0 to 9:
. in a clockwise direction (viewed from above) to increase
the speed,
. in an anticlockwise direction (to reduce it.
- Max. mixer blade speed (position 9): approximately 10.000
rpm under load, depending on the consistency of the product,
or 17.000 rpm when empty.
- Max. whisk speed (position 9): approximately 1.400 rpm,
depending on load.

3.5 USE OF THE MIXER
- Respect the safety instructions in § 3.1.
- Plunge the Mixer into the pot, making sure that is immersed
to 2/3 at MAXIMUM of its length.
- Select the highest speed (BERMIXER only) by turning the speed
knob in a clockwise direction and start up (see § 3.2a).

3.6 USE OF THE WHISK
- Respect the safety instructions in § 3.1.
- Hold the machine by its handle with one hand for light
preparations (egg whites) and with both hands for thicker
preparations (e.g. purées).
3.7 BASIC RECIPES
a) With the Mixer
- All stews, cream and fish soups .
- Brandades, brunoises, cream of spinach, panandas.
b) With the whisk
• Mashed potatoes
- Drain the potatoes when boiling and fully cooked
Remarks: For up to 6 kg of mashed potatoes, the whisk may be
used directly: for larger quantities, up to 20 kg or if the potatoes
are a little hard after cooking, mix roughly with the mixer at high
speed then use the whisk.
- Select medium speed (4 --> 6).
- Pulverise potatoes from the centre outwards to the edges of
the container.
- Season then add the hot milk at HIGH speed and mix until a
smooth creamy mixture is obtained.
• Mayonnaise (for 5 litres):
- Start at medium speed.
- Progressively increase the speed, depending on the quantity.
• Beaten egg whites (up to 60 eggs):
- Beat the eggs slowly at low speed
- Finish by progressively increasing to high speed to ensure
the volume and stiffness of the egg whites.
• Others:
- Creams: pastry, butter, chantilly, genoese, meringue, flans,
choux pastry, soufflés, etc.
