PROLUXE SL1266 SPLIT LID CLAMSHELL
Initial Setup Instructions: Before using the clamshells for the first time, follow the Procedures
below:
Start Up
1. Clean the Grill Platens with mild soap using paper towels. Clean off all soap with clean damp paper towels. Wipe with damp sanitizer towel.
2. When placing the Clamshell in the Grill area ensure you have 2” of clearance between all other equipment and walls.
3. Plug in the Clamshell into a proper 3 prong wall outlet. NOTE: If other pieces of equipment are connected to the same circuit make sure the total load does not exceed maximum capacity of the circuit.
4. Press the power button to turn the Clamshell on.
5. Dispense .5 oz. of Heat-Activated Grill and Toaster Cleaner (Sizzle) onto dry paper towels for the upper lids.
6. Repeat procedure for the bottom surface.
7. Wipe away excess cleaner with damp disposable towels.
8. Rinse towels and repeat until surface is completely clean.
9. Season by applying a thin layer of Release agent to top and bottom surfaces and spreading it evenly with a clean and dry paper towel.
Always keep lids closed when the clamshell is not in use.
Operating Instructions
1. Open a lid.
2. Place quesadilla below open lid, lower the lid.
3. Press the appropriate timer.
o For a Mini Quesadilla OR Chicken Snacker- Press Button #1 (Mini) for a 30 second countdown
(for a Bacon Mini Quesadilla OR Chicken Snacker place protein side of quesadilla down).
o For a Regular Cheese/Jack Quesadilla AND a Chicken Quesadilla- Press Button #2 (Ques) for
a 45 second countdown. Place protein side of quesadilla down. (Do Not flip Quesadilla on grill)
4. After timer goes off, open the lid and remove quesadilla. Close lid to retain heat while not in use.
Best Practice: To ensure that the cheese is melted and elastic focus on the prep quesadillas, cheese must be EVENLY distributed and not clumped in an area.

Safety Notes: Grid surface extremely hot! Do not clean grid surface until it has cooled.
Description
The Proluxe Split Lid clamshell grill heats quesadillas, corn tortillas, and flat bread only. The clamshell grill is electrically powered and produces two heated grill surfaces used to cook quesadillas.
The exterior is constructed of stainless steel for durability and ease of cleaning. The surface of the grids has been treated and polished to prevent sticking.
Setting
For optimum efficiency, the top and bottom will be programmed to 500˚F. To check the temperature of the UPPER PLATENS press the TEMPERATURE button and the ARROW UP button at the same time. To check the temperature of the LOWER PLATENS press the TEMPERATURE button and ARROW DOWN button at the same time.
Daily Cleaning and Seasoning Procedures
1. Press the CLEAN button (surface temperature will reduce to 275°F). The CLEAN LED light will illuminate and CL 275°F will constantly blink. Open both Clamshell lids to reduce the temperature quicker. (You must allow the Clamshell to reduce to 275°before you proceed) This will take approximately 20 minutes. Once the Clamshell reduces to 275°it will beep 3 times and CL 275°F will display solid.
2. Put on elbow length neoprene protective gloves (heat-resistant).
3. Wipe down all exterior surfaces with a warm, damp food handler towel with Kay QSR Multi-Purpose Sink Detergent, then dry.
4. Scrape loose debris from heating surfaces into the grease catcher in the back right corner of the Clamshell.
5. Clean the lower platen first using a grill pad with a grill pad holder. NOTE: Never use a grill screen to clean the Clamshell. Apply .5 oz. of Heat-Activated Grill and Toaster Cleaner (Sizzle) directly to the lower platen.
6. Scrub the lower platen with the grill pad and wipe away soil and cleaner with dry paper towels.
7. Dispense an additional .5 oz. of Heat-Activated Grill and Toaster Cleaner (Sizzle) onto dry paper towels and apply to the upper left and right platens.
8. Scrub with a grill pad and then wipe away soil and cleaner with a dry paper towel.
9. Wipe away soil and cleaner from all surfaces with damp paper towels.
10. Repeat until surfaces are completely clean.
11. Remove and empty the grease catcher drawer and clean it using the Kay QSR Multi-Purpose Sink Detergent. Dry and put the grease catcher back in place.
12. Season the Clamshell by applying a thin layer of Release agent to top and bottom surfaces and spreading it evenly with a clean and dry paper towel.
13. Press the CLEAN button to end the Cleaning cycle. The grill will return to 500°F and will be ready for use.
Note: It is best not to let food cook onto grill, as food builds-up on the grill will increase sticking and smoking. In addition, carbon may build up on the grill surface and reduce the cooking efficiency.

What Is Covered?
Proluxe warrants the SL1266, from manufacturing defects in workmanship and material sold within the Domestic United States.
How Long Does the Coverage Last?
One year warranty for parts and labor.
What Will Proluxe Do?
Proluxe will repair or replace the defective SL1266 on normal warranty one year parts and labor. The heating elements on the upper and lower platen only will be replaced by next day air service under the normal one year warranty. Such repair or replacement will be at the expense of Proluxe.
How to Get Service?
Contact the factory to obtain warranty service. Proluxe must issue a return authorization number and call tag, or find the name and location of a Factory Authorized Service Center nearest to you. Operation Instructions
Please read carefully before attempting to use this appliance.
Step 1. Carefully unpack and clean grill plates with mild soap then sponge clean
with cold water. Step. 2. Place in location where it will be used allowing for clearances per th e
dimensions indicated. WARNING! Allow 2” minimum clearance between adjacent equipment and/or
wall areas.
Do not touch hot surfaces. Step 3. Plug into proper 3 prong wall outlet. If other appliances are connected
to the same circuit make sure the total load does not exceed maximum ampacity of the circuit. Electrical information is as follows:
120V/50/60Hz/1 phase/2200W/18.3 Amps 208V/60Hz/1 phase/2800W/13.5 Amps 220V/60Hz/1 phase/2200W/10.0 Amps
Step 4: Warm-up
on. The display flashes and shows left preset timer during warm-up. Pre­ heat temperature time will be 40-50 minutes. When the set point is reached, the display stops flashing and beeps 3 times.
Step 4: Operation
Energize by turning on the power switch which will illuminate when turned
Simply place product on either side of the grill, close lid and press the
desired pre-set time cycle 10 or 20 seconds. After the time cycle is finished press it again to reset the time cycle.
Cleaning Instructions
NOTE! Always turn off power and allow to cool down before attempting to clean.
Never submerge grill in water or other liquid nor use mineral spirits or other flammable material to clean this appliance.
!Never use ice to cool down grill, warranty will be void!
Clean stainless steel and griddle surfaces with soap and water using a soft, clean cloth periodically as required, but at least once daily. Never use harsh abrasives. Use only non-abrasive scouring pads when required.
Clean Cycle
275°F is the factory default temp for the CLEAN cycle. To change the CLEAN cycle temp, simultaneously
hold down the TEMP and CLEAN buttons for 15 seconds. The current temp setting will display on the
right digital display only. Using the up or down arrows to adjust to the desired temp.
To start a clean cycle, push CLEAN button once so the CLEAN LED light is turned on. All preset LED’s are
turned off, and the temperature set point is changed to the clean set point of 275°F. This also initiates
the cool down to clean set point condition as well the display starts flashing until the clean set point is
reached.
To stop the clean cycle, simply press the CLEAN button once to deactivate the clean cycle. The CLEAN
LED is turned off, the preset LED’s are restored, the temperature set point is changed to the main set
point. Again, the warm-up condition is initiated and the display flashes until the cook set point is
reached.
