IMPORTANT SAFEGUARDS FOR ALL ELECTRICAL APPLIANCES
Unwind the cord fully before use.
To protect against electric shock do not immerse
the cord, power plug or body of the appliance in water or any other liquid.
Do not let the cord hang over the edge of a table or
counter, touch hot surfaces or become knotted.
This appliance is not intended for use by young
children or infirm persons without supervision.
Young children should be supervised to ensure that
they do not play with the appliance.
Regular inspection of the appliance is recommended.
Do not use the appliance if the power supply cord, plug or appliance becomes damaged in any way. Return the entire appliance to the nearest authorized Breville service centre for examination and/or repair.
Any maintenance, other than cleaning, should be
performed at an authorised Breville Service Centre.
This appliance is for household use only. Do not
use this appliance for anything other than its intended use. Do not use in moving vehicles or boats. Do not use outdoors.
The installation of a residual current device (safety
switch) is recommended to provide additional safety protection when using electrical appliances. It is advisable that a safety switch with a rated residual operating current not exceeding 30mA be installed in the electrical circuit supplying the appliance. See your electrician for professional advice.

Introduction to yoghurt making
Yoghurt is the best known of a group of cultured fermented milk products and it is made when pasteurised milk and starter culture bacteria are combined and allowed to incubate at the correct temperature for several hours. The starter culture bacteria convert most of the lactose in whole milk into lactic acid creating the soft creamy curd and a distinctive taste of yoghurt.
Yoghurt making recipes in this book use pasteurised milks containing lactose such as full-cream, skim and goat’s milk. Starter culture bacteria can be either a commercial natural yoghurt (containing the live culture bacteria Lactobacillus bulgaricus, acidophilus or casei), yoghurt made in your Yoghurt Creations, a powdered starter culture available from supermarkets or a bacterial yoghurt starter available from health food stores. Adding full-cream, skim or goat’s milk powder to the recipes will give a thicker, firmer setting yoghurt. Recipes are also included for making soy yoghurt.
Preparation of the yoghurt ingredients and utensils is important. Ensure all utensils are clean and ingredients are fresh. Use Australian metric measuring cups and spoons to measure the ingredients and a sterilised kitchen thermometer to check the temperature of the milk.
Your Breville Yoghurt Creations makes fresh healthy yoghurt that can be eaten in its pure natural state or mixed with other sweet or savoury ingredients to enhance the flavour. Yoghurt made in your Breville Yoghurt Creations can also be used to make cultured milk products such as soft cheeses or incorporated in a variety of sweet and savoury recipes.

Using your Breville Yoghurt Creations
Before first use
Remove any packaging material and promotional labels. Remove the Yoghurt Creations outer lid, yoghurt container lid, yoghurt container, yoghurt bowl and spoon, and wash in warm, soapy water, rinse under hot water and dry thoroughly with a clean tea towel. Wipe the Yoghurt Creations housing with a damp cloth and dry thoroughly. Ensure that all parts are completely dry before assembling (refer to cleaning instructions).
To disassemble the Breville Yogurt Creations
Step 1
Before disassembling, ensure the Setting Dial is in the OFF position, the power is switched off at the power outlet, the power plug is removed from the power outlet and the appliance is cool.
Step 2
Remove the Yoghurt Creations outer lid from the top of the housing. Remove the yoghurt container and container lid from inside the housing. Use the handle on top of the yoghurt container lid to rotate the lid clockwise or anti-clockwise until it unlocks from the yoghurt container.
To operate the Breville Yoghurt Creations
Step 1
Before assembling the Yoghurt Creations for use, ensure the setting dial is in the OFF position, the power is switched off at the power outlet and the power plug is removed from the power outlet.
Step 2
Prepare yoghurt mixture following desired recipe instructions. Refer to yoghurt recipes on Page 14 and 15.
Step 3
Pour the yoghurt mixture into the yoghurt container. Lock the container lid onto the yoghurt container by turning the lid clockwise or anti-clockwise.
Step 4
Insert the yoghurt container into the housing. Place the outer lid onto the housing.
Do not operate theBreville Yoghurt Creations without the yoghurtcontainer,containing ingredients and with lid attached,inserted into thehousing.

Step 5
Switch the Yoghurt Creations on by turning the Setting Dial to the required time setting between 1 and 10.
The corresponding incubation time selected with each setting is shown in the chart below.

Avoid moving the Yoghurt Creations during the incubation time. To avoid the yoghurt curdling, do not stir yoghurt during or at the end of incubation. Stir only after refrigeration.

Using your Breville Yoghurt Creations
Step 6
At the end of the selected incubation time, remove the lids and check that the yoghurt has slightly thickened and set. If the yoghurt requires more thickening, replace the lids and turn the Setting Dial to select additional incubation time. When the yoghurt has thickened sufficiently, turn the Setting Dial to the ‘OFF’ position, switch the power off at the outlet and unplug the power cord. Remove the yoghurt container and lid from the housing. Place the yoghurt into the refrigerator overnight to achieve a firmly set yoghurt.
Some separation of the liquid whey may occur. Pour off and discard before using the yoghurt.
