THE SEC0ND OVEN
The secondoven is the smaller of the two ovens. It is heated by elements inthetop andbottom of the oven. It isdesigned for cooking smaller quantitiesof food. It gives especiallygood results if used tocook fruitcakes, sweet or savoury flans or quiche. The second oven is also ideal for use as a warming compartment to warmdishes and keep food hot. Use the lowest setting on the secondoven temperature control.
USING THE SECOND OVEN
•
Turnthe second oven/grill temperature control to the required setting.
THINGS TO NOTE
•
The oven light will illuminate.
•
The indicator neonwill glow.It may turn ONandOFF during use to show that the setting is being maintained.
•
The cooling fan for the controls may operate after a time.
Do not place dishes, tins and trays directly onthe oven base asitbecomes very hot anddamage will occur.
TO FIT THE SECOND OVEN SHELF
The shelf should be fitted with the straight rods uppermost on the frame and the forms towardsthe back of the oven. To remove a shelf slide the shelf towards you untilthe shelf stop is reached. Tilt shelf up at the front so thatthe stops clear the side supports. Lift shelf clear. Toinstalla shelf, reverse the above steps. Each shelfposition has an upper and lower support wire, ensurethe shelf is placedbetween these two support wires.
14
HINTS ANDTIPS
•
Arrange the shelves in the required positions beforeswitching the oven on. Shelf positions arecounted from the bottomupwards.
•
There should always be at least 2.5cm (1”)between the top of the food and the element. Thisgives best cooking results and allows roomfor riseinyeast mixtures, Yorkshirepuddings, etc. Whencooking cakes, pastry, scones, bread, etc., placethe tinsor baking trays centrally onthe shelf.
•
Ensure that food isplaced centrally on the shelfand there is sufficient room aroundthe bakingtray/dish to allow for maximum circulation.
•
Stand dishes on a suitably sized baking tray on the shelf to prevent spillageonto the oven base and tohelp reduce cleaning.
•
The material and finish of the baking tray anddishes used affect base browning.Enamelware, dark, heavy or non-stick utensils increase basebrowning. Shiny aluminiumorpolished steel trays reflect the heat away and give less base browning.
•
Because of the smaller cooking space, lower temperatures and shorter cooking times are sometimes required.
•
Do not
place dishes directly onto theoven baseas
it becomes very hot and damage mayoccur.
•
For economy leave the door open for the shortestpossible time, particularlywhen placing food intoa pre-heated oven.
Do not place cookware and cooking pots with rough basese.g. castironon the ovendooras damage to the glass may occur.
15
SECOND OVEN COOKING CHART
The oven temperatures are intended asa guide only. Itmay be necessary increase or decreasethe temperatures by afurther 10°C to suit individual preferences and requirements.
Note: Shelf positions are counted from the bottom upwards.
16
THE MAIN OVEN
The fan oven is particularly suitable for cooking largerquantities of food. The advantages of fan oven cooking are:
PREHEATING
The fan oven quickly reaches its temperature, so it isnot usually necessary to preheat theoven.Without preheating however, you may need toadd an extra 5 –10 minutes onthe recommended cooking times. For recipes needing high temperatures, e.g. bread, pastries, scones, soufflés etc., best results are achievedif the oven is preheatedfirst. For best results whencooking frozen or cooked chilled readymeals always preheat the ovenfirst.
COOKING TEMPERATURES
Fan oven cooking generally requires lower temperatures than conventional cooking. Followthe temperatures recommended in the cooking chart. Asa guide reduce temperatures by about 20°C– 25°C for your own recipes, using a conventional oven.
BATCH BAKING
The fanoven cooks evenly on all shelf levels, especiallyuseful whenbatch baking.
USING THE MAIN OVEN
•
Turnthe main oven function selector to fan oven.
•
Turn the main oven temperature control to the required setting.
THINGS TO NOTE
•
The oven light will illuminate.
•
The indicator neon will glow. It may turn ON andOFF during use to show that the setting is being maintained.
•
The cooling fan for the controls may operate after a time.
17
TO FIT THE MAIN OVENSHELVES
The shelves shouldbe fitted with the straight rods uppermost on the frame and the forms towardsthe back of the oven. To removea shelf slide the shelftowards you until the shelf stop is reached. Tilt shelf up at the front so that the stops clear the sidesupports. Lift shelf clear. To install a shelf, reverse the above steps. Each shelf position has an upper andlower support wire, ensure the shelf is placedbetweenthese two support wires.
HINTS AND TIPS
•
Arrange the shelves in the required positions before switching the oven on. Shelf positions arenumbered from the bottom upwards.
•
Whencooking more than one dish in the oven, place dishes centrallyon differentshelves ratherthan cluster several dishes on one shelf, thiswillallow the heat to circulate freely for the bestcooking results.
•
When batch baking one type of food,e.g. Victoriasandwich cakes, those of similar size will becooked in the same time.
•
It is recommended that when baking largerquantities the shelf positions should be evenlyspaced to suit the load being cooked.A slight increase incooking time may be necessary.
14
1
•
Do not
placebaking trays directly on the ovenbase as it interferes with the oven air circulationand can leadto base burning; use the lower shelf position.
Do not place cookware and cooking pots with rough bases e.g. castiron on the ovendoor as damage to the glass may occur.

TURBO GRILL
Turbo grilling offersan alternative method ofcooking food items normally associatedwithconventionalgrilling.
Turbo grilling helps to minimise cookingsmells in the kitchen and allows you to grill with the oven doorclosed. With the exception of toast andrare steaksyou canTurbo grillall thefoods you would normallycook under a conventionalgrill.
The lower part of the oven can be used to cookaccompaniments at the same time, e.g.tomatoesandmushrooms witha mixed grill or breakfast.
Dishes prepared in advance such as shepherd's pie, lasagne and au gratins can be heated through andbrowned on the top using the Turbo grilling function.
COOKING TIMES
Cooking is more gentle, therefore food generally takes a little longer to cook when Turbo grilling comparedwith conventional grilling. One of the advantages isthat larger quantities can be cooked at the same time.
USING TURBO GRILL
Always Turbo grill with the oven door closedand with the grill pan handle removed.
•
Turnthe main oven function selector to turbogrill.
•
Turn the main oven temperature control to the required setting. A temperature of between 140°C and 220°C is suitable for Turbo grilling.
THINGS TO NOTE

CONVENTIONAL OVEN
Thisform of cooking givesyou the opportunity to cookwithout the fan in operation. It isparticularly suitablefor dishes which require extrabasebrowning suchaspies, quiches and flans. Gratin's, lasagne and hotpots which requireextra top browning alsocook wellinthe conventional oven. For best results cook on one level.
USING CONVENTIONALOVEN
•
Turn the mainoven function selectorto Conventional Oven.
•
Turn the main oven temperature control to the required setting.
THINGS TO NOTE
•
The oven light will illuminate.
•
The indicator neonwill glow.It may turn ONandOFF during use to show that the setting is being maintained.
•
The cooling fan for the controls may operate after a time.
Do not place dishes, tins or trays directly onthe ovenbase asdamage may occur.
HINTS AND TIPS
•
Single level cooking gives best results. If you require more than one level of cooking use themain fanoven.
•
The middle shelf allows for the best heat distribution. To increase base browning simplylower the shelf position. To increase top browningraise, the shelf position.
•
There should always be at least 2.5cm (1”)between the top of the food and the grillelement. This gives best cooking results and allows roomfor rise in yeast mixtures, Yorkshire puddings etc. When cookingcakes, pastry, scones bread etc., place the tins or baking trays centrally on the shelf.
25
•
Ensure that food isplaced centrally on the shelfand there is sufficient room around the bakingtrayor dish to allow for maximum circulation.
•
Stand dishes on a suitably sized baking tray on the shelf to prevent spillageonto the oven base and tohelp reduce cleaning.
•
The material and finish of the baking tray anddishes used affect base browning. Enamelware, dark, heavy or non-stick utensils increase basebrowning. Shiny aluminiumor polished steel trays reflect the heat away andgive less basebrowning.
•
Do not
placebaking trays directly on the ovenbase asit interferes with the oven air circulationand can leadto base burning; use the lower shelfposition.
•
For economy leave the door open for the shortestpossible time, particularly when placing food into apre-heated oven.
Do not place cookware and cooking pots withrough bases e.g. cast iron on the oven door as damageto the glass may occur.
26
BOTTOM HEAT FUNCTION
This functioncan be used to finish off dishes that mayrequire extra base heator where base browningandcrispness are required by pizzas or pies.Somepizzas should be cookeddirectly on the ovenshelf. To prevent soiling the oven base, place a bakingtrayin one of the lower positions.
USING BOTTOM HEAT
•
Towards the end of the cook time, turn the mainoven function selector to Bottom Heat.
•
Turn the main oven temperature control to the required setting.
Do not place dishes, tins and trays directly onthe oven base asitbecomes very hot anddamage will occur.
NOTE:
This functionshould not be used for the entire cooking time. It is intended as a support function only.
27
DEFROST
This function defrosts most foods faster than moreconventional methods. It is particularly suitable for delicate frozenfoods which are to be served cold e.g. cream filled gateaux, cakes covered with icings orfrostings, cheesecakes, biscuits, scones, etc.
USING DEFROST
•
Turn the main oven function selector to the Defrost setting.
THINGS TO NOTE
•
The oven fan and internal oven light will operate.
HINTS AND TIPS
•
Place the frozen food in a single layer where possible and turn it overhalf way through thedefrosting process.
•
The actual speedof defrosting is influencedbyroom temperature. On warm days defrosting willbe faster than on cooler days.
•
Itis preferable to thaw fish, meat and poultryslowlyin the fridge. However, this process can beaccelerated by using the defrost function. Small orthinfish fillets, frozen peeled prawns, cubed orminced meat, liver, thin chops, steaksetc., can bethawed in 1 – 2 hours.
•
A 1kg/2¼lboven ready chicken will be thawed inapproximately 5 hours. Removethe giblets as soon as possible during the thawing process.
•
Joints ofmeat upto 2kg/4½lb inweight can bethawed using the defrost function.
•
Alljoints of meat and poultry must be thawedthoroughly before cooking.
•
Always cook thoroughly immediately after thawing.
•
DO NOT
leavefood at room temperature once it is defrosted. Cook raw food immediately orstorecooked food in the fridge, once it has cooled.
•
Care must always be taken when handling foods inthe home. Always follow the basic rules of foodhygiene to prevent bacterial growth and cross contamination when defrosting, preparing, cooking cooling and freezing foods.
28
CARE AND CLEANING
Before cleaning always allow the appliance to cool down.
CLEANING MATERIALS
Before using any cleaning materials on your appliance, check that they are suitable and that their use isrecommended by the manufacturer. Cleaners that contain bleach shouldmay dull the surface finishes. Harsh abrasives should also be avoided.
CLEANING THEOUTSIDE OFTHEAPPLIANCE
Do not useabrasivecleaning materials e.g. abrasivecream cleaners, wire wool padsor scourers on painted orprinted finishes as damage may occur.Regularly wipe over thecontrol panel, controlknobs, handles, doors and appliance sides using a soft cloth and hot soapy water. To prevent streaking, finish with a softcloth.StainlessSteelcream cleaners areabrasiveand shouldbeavoided as they may dull the surfacefinish. Any spillage on the stainless steel finishmust be wiped offimmediately.
Do not attempt to remove any of the control knobsfrom the appliance as this may cause damage and isa safety hazard. Under no circumstances shouldthe doorassembly be detachedfrom the product forcleaning.
CLEANING THE CONTROLKNOBS ANDHANDLES
It is strongly recommendedthat only hot soapy water is used for cleaning the control knobs and door handles. ANY OTHER CLEANING MATERIALS WILL DULL THE SURFACE FINISH.
REMOVING AND REPLACING THE WIREWORK RUNNERS
The wirework runners in thegrill andoven can be removed forcleaning.
Remove all shelves andfurniture from the oven.
1.Hold the wirework at thebottom, unclipfrom the
2.cavity sideand gently pull towards the centre of the oven. Unhookthe runner at the top and remove from

CLEANING THE SHELVES,WIREWORKRUNNERS AND GRILL/OVEN FURNITURE
All removable parts, except the grill pan handle, can bewashed inthe dishwasher. The grill pan, grill pan grid, oven shelves and wireworkrunners maybe cleaned usinga soapimpregnatedsteel wool pad. Soaking first in hot soapy water will make cleaning easier.
CLEANING INSIDE THE OVEN(S)
The sides and back of the grill/second oven and mainoven compartments arecoated witha special Stayclean coating. They should not be cleanedmanually. The vitreous enamel main ovenbase andgrill/top ovencompartment base can be cleaned using normal ovencleaners with care. Ensurethat the manufacturers instructions are followed and that all parts are well rinsed afterwards.
Aerosolcleaners must not come into contact with elements, door seal oranypaintedfinishes as this may cause damage.
HINTS AND TIPS
Aerosolcleaners must not be used on Stayclean surfaces.
Stayclean surfaces destroy splashesof food and fats when the oven temperature is raised to around 220°C.
It is a good idea to run the oven for an hour or twoper week to ensurecontinued good performance from the Stayclean finish.
Slight discolouration and polishing of the Staycleansurfaces may occur intime. This
DOES NOT
affect the
Stayclean properties in any way. Use minimal,if any, extra oil or fat when roastingmeat,
potatoes only require brushingwith fat before cooking. Extra fat in the oven during roasting willincrease splashing andsoilage.
It is NOT necessary to addwater to a meat tin whenroasting. The water and the fat juices from the jointcreate excessive splattering during cooking – even at normal temperatures, as well as causing condensation.
Covering joints during cooking will alsoprevent splashing ontothe interior surfaces. Removing the covering for the last 20-30minutes willallow extra browning if required. Some large joints and turkeys especially benefit by this method ofcooking, allowingthe joint to cook through before the outside isover-browned.
