ABOUT CONDENSATION AND STEAM
When food is heated it produc es steam in the same way as a boiling kettle does. The oven is vented to allow some of this steam to escape. However, always stand back fr om the applia nce when ope ning the oven door to allow any b uild up of steam or heat to release.
If the steam comes into contact with a cool surface on the outside of the appliance, e.g. a trim, it will condense and produce water dr oplets. This is quite normal and is not caused by a fault on the appliance.
To prevent discolouration, regularly wipe away condensation and also soilage from surfaces.
COOKWARE
Baking trays, oven dishes etc., should not be place d directly against t he grid covering the fan at th e back of the oven.
Do not use baking trays larger than 30cm x 35cm (12” x 14”) as they wi ll restrict the c irculation of he at and may affect performance.
16
THE COOLING FAN FOR THE CONTROLS
The cooling fan com es on immediat ely when th e grill is switched on and after a sh ort time when the oven is in use.
During the initial per iod the cooling fa n may turn ON and OFF, this is quite normal.
Do not switch off the appliance at its power point before the cooling fan has cooled the appliance down.
CONTROL PANEL INDICATOR NEON
The light indicates whether the grill or oven is switched ON. In the case of t he oven, the neon als o indicates when the set temperature has been reached.

THE FAN OVEN
USES OF THE FAN OVEN
The oven is heated by an element around the fan s ituated behin d the b ack panel. T he fan draws air from t he oven and the element heats the air wh ich is cir culated into the ov en via the v ents in the back pa nel. The advanta ges of fan oven cooking are:
PREHEATING
The fan oven quickly reaches its temperature so it is not usually necessary to preheat the oven. Without preheating however you may need to add an extra 5 – 10 minutes on the recommended cooking times. For recipes needing high t emperat ures e.g. br ead, pas tries, scon es, soufflés etc., best r esults ar e ac hieved if the oven is preheated first. F or best results when cookin g frozen or cooke d chilled ready m eals always prehe at the oven first.
COOKING TEMPERATURES
Fan oven cooking generally requires lower temperatures than conventional cooking. Follow the temperatures recommended in the chart on page 22. As a guide r educe temperatures by 20°C - 25°C for y our own recipes, using a conventional oven.
BATCH BAKING
The fan oven cooks evenly on all shelf levels, especially useful when batch baking.
SELECTING THE FAN OVEN
1) Turn the Function Selector to Fan Oven.
2) Turn the Temperature Control to the required setting.
THINGS TO NOTE
· The oven neon will glow until the oven has reached the desired temperature and then go out. It will turn ON and OFF per iodically during cooking showing that the oven temperature is being maintained.
· The oven fan will operate continually during cooking.
TO FIT THE OVEN SHELVES
The shelves should be fitted with the straight rods uppermost on the frame and the forms towards the back of the oven. If not fitted correctly the anti-tilt and safety stop mechanism will be affected.
25
HINTS AND TIPS
· The top shelf position should be reserved for grilling only.
· Arrange the shelves in the required positions before switching the oven ON. Shelves are numbered from the bottom upwards.
· When cooking more than one dish in the fan oven, place dishes centra lly on different shelves rather than cluster several dishes on one shelf, this will allow the heat to circulate freely for the best cooking results.
· When batch baking one type of food, e.g. Victoria sandwich cakes, those of similar size will be cooked in the same time.
· It is recommended that when baking larger quantities, the shelf positions should be evenly spaced to suit the load being cooked. A slight increase in cooking time may be necessary.
· The use of excessively high temperatures can cause uneven browning. It may be necess ary to reduce temperatures slightly. Refer to the recommendations given in the oven cooking chart, see page 22.

THERMAL GRILLING
USES OF THERMAL GRILLING
Thermal grilling offers an alternative method of cooking food items normally associated with conventional grilling.
The grill element and the oven fan oper ate together, circulating hot air around the food. The need to check and turn food is reduced. Thermal grilling helps to minimise cook ing smells in the kitchen and allows you to grill wi th the ov en d oor close d. With the exception of toast and rare steaks you can thermal grill all the foods you would normally cook under a conventional grill.
With the exceptio n of toast and rare steaks you can thermal grill all the foods you would normally cook under a conventional grill.
SELECTING THERMAL GRILLING
The lower part of the oven can be used to cook accompaniments at the same time, e.g. tomatoes and mushrooms with a mixed grill or breakfast.
Dishes prepared in adv ance such as sh epherd's pie, lasagne and au gratin's can be heated through and browned on the top using the thermal grilling function.
1) Turn the Function Selector to Thermal Grill.
2) Turn the oven Temperature Control to the required setting. (A temperature of between 140°C and 220°C is suitab le for thermal grilling) . Use the grilling chart on page 25 as a guide.
THINGS TO NOTE
· The oven/grill indicator neon will glow until the oven has reached the desired temperature and then go OFF. It will turn ON and OFF showing that the oven temperature is being maintained.
· The cooling fan for the controls will operate immediately in conjunction with the thermal grilling function.
· Thermal grilling helps to minim ise cook ing s mells in the kitchen and is carried out with the oven door closed and the grill pan handle removed.
· The telescopic runner position should be reserved for toasting and cooking rare steaks using the conventional grill function. See page
18.
29
HINTS AND TIPS
· Prepare foods in the same way as for conventional gril ling. Brush lean meats and f ish lightly with a little oil or butter to keep them moist during cooking.
· Most food should be placed on the grill p an grid in the 'high' position in the grill pan to allow maximum circulation of air around the food.
· Ensure that ready prepared or cooked chilled dishes e.g. shepherds pie, moussaka, lasagne, etc., are piping hot throughout before serving.
· A temperature range of 140°C - 220°C and shelf positions 3 and 4 ar e sui table f or most foods . B e prepared to make suitable adjustments during cooking to suit individual requ irements. I f thermal grilling on more than one level, it may be necessary to interchange the food on the s helves during cooking.
COOKING TIMES
Cooking is more gentle, therefore food generally takes a little longer to cook when thermal grilling compared with conventional grilling. One of the advantages is that lar ger loads can be cooked at t he same time.
A general guide to cooking times is given b elow but these times may vary slightly depending on the thickness and quantity of food being cooked.
THERMAL GRILLING CHART
· Accompaniments such as tomatoes and mushrooms may be placed below the grid when grilling meats, or in a separate dish on a lower shelf.
· Foods will cook more quickly th e closer they are to the grill element and the higher the temperatures selected. Be prepared to adjust temperatures and shelf positions during cooking if necessary.
· Turn food over during cooking as necessary.

DEFROSTING
USES OF DEFROST FEATURE
This function enables you to defrost most foods faster than some conventi onal methods as the oven fan circulates air around the food. It is particularly suitable for delicate frozen foods which are to be served cold e.g. cream filled gateaux, cakes covered with icings or frostings, cheesecakes, biscuits, scones, etc.
It is preferable to thaw fish, m eat and poultry slowly in the fridge. However, this process can be accelerated by using the defrost function.
SELECTING DEFROST
Small or thin fish fillets, frozen peeled prawns, cubed or minced meat, liver, thin chops, steaks etc., can be thawed in 1 – 2 hours.
A 1kg/2¼lb oven ready chicken will be thawed in approximately 5 hours. Remove the g iblets as soon as possible during the thawing process.
Joints of meat up to 2kg/4½lb in weight can be thawed using the defrost function.
ALL JOINTS OF MEAT AND POULTRY MUST BE THAWED THOROUGHLY BEFORE COOKING.
ALWAYS COOK THOROUGHLY IMMEDIATELY AFTER THAWING.
1) Turn the Function Selector to Fan Oven. Do Not select a temperature setting.
THINGS TO NOTE
· The indicator neon should remain unlit.
· When defrost is selected, the oven indicated
neon may occasionally come O N. It will stay O N until the oven reaches room temperature and then go OFF.
It may turn ON and OFF periodically during
defrosting to maintain steady room temperature inside the oven.
· Care must always be taken when ha ndling foods in the home. Always follow the basic rules of food hygiene to prevent bacteria growth and cross contamination when defrosting, preparing, cooking, cooling and freezing foods.
31
HINTS AND TIPS
· Place the frozen food in a single layer where possible and turn it over half way through the defrosting process.
· The actual speed of defrosting is influenced by room temperature. On w arm day s defrost ing will be faster than on cooler days.
· DO NOT leave food at room temperatur e once it is defrosted. Cook raw food i mmedi ately or stor e cooked food in the fridge, once it has cooled.
32
HELPFUL HINTS WHEN BUYING AND PREPARING FOOD
Care must be taken when handling foods in the home. Always fol low the basic rules of food hyg iene to prevent bacterial and microbial growth and cross contamination when preparing, reheating, cooking, cooling, defrosting and freezing foods:-
1. Always ensure food you purchase is of good quality and in prim e con dition. S hop at a r eliabl e source and buy the ‘freshest ’ looking package – avoid shop-worn labels or produce covered in dust.
2. Avoid buying chilled or frozen products if you cannot store them stra ight away. The use of an insulated container when shopping is advisable.
3. Buy and consume foods prior t o the ‘Sell by’ or ‘Best Before’ date.
4. When you arrive h ome, place p erishabl e foods in the refrigerator or freezer immediately. Ensure they are well covered to prevent them drying out and to prevent any pos sible cross cont amination with bacteria from raw to cooked foods.
10. Cook meat thorough ly – use a meat therm ometer if preferred, which penetrates the joint to check that the centre temperature has reached the required temperature (see table below).
MEAT TEMPERATURES
Beef
Pork Well Done – 80°C
Lamb Medium – 70°C
11. If not eaten straight away after cooking, food should be cooled as quickly as possible (within one hour) and then refrigerated or frozen as required. (Do not put hot fo od int o a Refri gerator or Freezer).
12. In the kitchen keep work tops, chopping boards and utensils clean with hot soapy water between preparation stages. Ideally, keep one chopping board for raw meat and another for other foods. Keep your dish cloths and tea towels clean.
Rare – 60°C Medium – 70°C Well Done – 80°C
Well Done – 80°C
5. Follow the cooking instructions on packets of prepared and cooked chilled foods, but be prepared to adjust cooking times and temperatures to suit your particular oven. For example, the fan oven generally requires 2025°C lower temperature than conventional ovens.
6. Always ensure that cooked chilled foods are thoroughly re-heated until they are piping hot throughout.
7. It is preferable to defrost frozen foods slowly in the refrigerator. Alternatively, a micr owave oven or the Defrost function on your oven may be used.
8. Always cook defrosted foods immediately after thawing. Thawed food should never be refrozen.
9. Joints of meat and poultry should be thoroughly defrosted before cooking.
33
CARE AND CLEANING
BEFORE CLEANING THE APPLIANCE ALWAYS ALLOW THE COOLING FAN TO COOL THE APPLIANCE DOWN BEFORE SWITCHING OFF THE ELECTRICITY SUPPLY.
CLEANING MATERIALS
Before using any cleaning materials on your appliance, check th at they are suitable and that the ir use is recommended by the manufacturer.
Cleaners that contain b leach shou ld NOT be us ed as they may dull the surfac e finishes. Harsh abr asives should also be avoided.
CLEANING THE OUTSIDE OF THE APPLIANCE
DO NOT use abrasive cleaning materials e.g. Hob
Brite, Brillo pads or scourers on painted or printed finishes as damage may occur. Regu larly wipe over the control panel and oven door using a soft cloth and hot water to which a little washing up l iquid has been added.
CLEANING INSIDE THE OVEN/GRILL
The Stayclean surface ins ide the O ven shou ld not be cleaned manually. See pag e 29 'Care of Stayclean Surfaces'.
The vitreous enamel oven base can be cleaned using normal oven cleaners or aerosol oven cleaner s with care. Ensure that the m anufacturers i nstructions are followed and that all parts are well rinsed afterwards.
Aerosol cleaners must no t be used on Stayclean surfaces and must not come into contact with elements or the door seal as this may cause damage.
REMOVING AND REPLACING WIREWORK SIDE RUNNERS
Remove all shelves and furniture from the oven. Always ensure the telescopic runners are pushed back into place in the oven cavity. Hold the b otto m o f the wirework runners an d draw the runners towards the centre of the oven. Unhook from the top and remove.
DO NOT ATTEMPT TO REMOVE ANY OF THE CONTROL KNOBS FROM THE PANEL AS THIS MAY CAUSE DAMAGE AND IS A SAFETY HAZARD.
Under no circumstances should the door assembly be detached from the product for cleaning. Please refer to the cleaning instructions.
BRACKET
CAVITY CENTRE
The wirework telescopic runners should not be placed in a dishwasher. Dr y carefully after washing in hot water to which washing up liquid has been added. If heavily soiled mild abrasives may be used.
To replace the runners, hook the wirework side runner into the cavity, slide back and press into place. Ensure the wirework runners are firmly in position before replacing the oven shelves.
34
CLEANING THE GRILL AND OVEN FURNITURE
All removable par ts, except the grill pan handle c an be washed in the dishwasher.
The grill pan, gril l pan grid and ov en shelves may be cleaned using a soap impregnated steel wool pad. Soaking first in hot soapy water will make cleaning easier.
CARE OF STAYCLEAN SURFACES
Stayclean surfaces destr oy splashes of food and fats when the oven temperature is raised to around 220°C.
COOKING TO REDUCE SOILAGE
1. Cook at the recommend ed temperatur es. Higher temperatures during roasting will increase soilage. Try cooking at lower temperatures for an increased length of time, y ou will save energy and often the joint is more tender.
2. Use minimal, if any , extra o il or fat w hen roas ting meat, potatoes only require brushing with fat before cooking. Extra fat in the oven during roasting will increase splashing and soilage.
3. It is not necessary to add water to a meat tin when roasting. The water a nd the fat juices fr om the joint create excessive splattering during cooking even at norma l temperatures as well as causing condensation.
It is a good idea to ru n the oven for an hour or two per week to ensure continued good performance from the Stayclean finish.
HINTS AND TIPS
· Manual cleaning of Stayclean surface IS NOT recommended. Damage will occur if soap impregnated steel wool pads, aerosol cleaners and any other abrasives are used.
· Slight discolouration and polishing of the stayclean surface may occur in time. This does not affect the Stayclean properties in nay way.
· Follow the recommendations to keep oven soilage to a minimum.
4. Covering joints during cooking will also prevent splashing onto the interior surfaces. Removing the covering for the las t 20-30 minutes wi ll allow extra browning if requ ir ed . S om e l ar ge joints and turkeys especially benefit by this method of cooking, allowing th e joint to c ook through before the outside is over-browned.
CLEANING THE DOOR GLASS
To prevent damaging or weakening the door glass panels avoid the use of the following:
· Household detergents and bleaches
· Impregnated pads unsuitable for non-
stick saucepans
· Brillo/Ajax pads or steel wool pads
· Chemical oven pads or aerosols
· Rust removers
· Bath/Sink stain removers
35

DO NOT try to clean the foil which is inside the door. The foil is there to help keep the door cool, if it is damaged it will not work. Ensure that all parts are well rinsed and thoroughly dried b efore attempting to r eplace the outer door.
TO REPLACE THE OUTER GLASS
TO CLEAN THE INNER GLASS DOOR PANELS
Clean the inner glass door p anels using a soft cloth and hot water to which a little washing up l iquid has been added. If the inn er panel is h eavily soiled , Hob Brite may be used. Do not use abrasive cleaning materials on the door glass . Ens ure t hat all p arts are well rinsed and thorou ghly dried befor e attempting to replace the glass.
