COMBI OVENS
DAILY CLEANING PROCEDURES
STEP 1 – Place the oven
in cool down mode. Let
the oven cool to below
140°F (60°C).
STEP 2 – Fill the spray bottle with a mild oven detergent. We
recom mend the following cleaners: Greasecutter Plus by Ecolab,
EZ Clean by Cello, or Advance Oven Cleaner by Diversey-Lever. DO
NOT USE ABRASIVE CLEANERS OR CHLORIDES ON YOUR
VULCAN COMBI OVEN. Be sure to read and follow the MSDS
or safety instructions on the bottle of your oven cleaner.
STEP 3 – Spray the oven interior with oven
cleaner. Turn the nozzle to adjust the spray
pattern.
STEP 4 – Close the door. Place the
oven in steam mode for 10 minutes.

STEP 5 – When nished steaming,
open the door and rinse the interior
with the attached spray hose. Wipe
down door gasket with clean towel.
STEP 6 – Leave the door open overnight
to vent the oven. If the oven will not be
used for an extended period of time,
place the oven in hot air mode to dry.
