We would like to thank you and congratulations for choosing to purchased a BakerTop™ line appliance , we hope this is just the beginning of a fruitful and long-lasting partnership. As you well know the BakerTop™ range of ovens and all the appliances complementary accessories design for it (holding cabinet, hood, special trays and grids), were especially created to carry out any cooking process from the beginning to the end, regardless of its level of complexity.
The innovative BakerTouch digital control allows you to control, with just one control board, all the UNOX equipment connect to the oven.

Caution
Please carefully read this instruction manual as it provides important information regarding safe installation, operation and maintenance of the prover XL405. Keep it in a safe place for future reference.
Safety regulations
Incorrect installation, assistance, maintenance, cleaning procedures or any modifications made to the appliance, may damages property or result in injury of even fatal accidents. Carefully read the instruction manual before to use the appliance.
General safety regulations
The appliance is inteded for professional use and it must be used by qualified personnel. Any other use is not consistent with the intended use and therefore dangerous. The appliance must be used only for purpose it was expressly intended. Any other use is to be considered improper.
The prover XL405 has been designed for rising food. The prover XL405 can work just if connect it with the BakerTop™oven models XBC405, XBC605, XBC805, XBC615G e XBC815G.
The appliance is not intended to be used by individuals with reduced mental, physical and sensory capacities (children included), or without any expertise and know-how, unless they are informed about how to use the equipment or they operate under the supervision of who is responsible for their. Children should be watched to make sure they do not play with the equipment.

Use: Safety regulations
Before using the appliance for the first time, make sure there are no instruction manuals, plastic bags or any other object inside the prover cavity.
The maximum allowable weight for each tray is 5 kg. Do not overload the trays or you could damage the trays later supports and the trays themselves.
Before to use the appliance make sure the cooking chamber doens’t have any soap trace. Remove any remaining soap with a damp cloth using appropriate tools of protection for hands, mouth and eyes and rinse thoroughly - Risk of corrosion!
The “BakerTouch” control board works by touching the silk-screen with fingers ; any other object can cause damages and/or malfunction, plus the warranty is no longer valid.
Use the prover at a room temperature between +5 °C and +35 °C.
When the containers are full of liquid and are filled with liquid during fermentation, is not allowed to use shelves too high, the user needs to see inside the box - danger of burn!
In case of pans extraction containing hot liquids pay particular attention to possible leakage of the liquid. Pay particular attention to the handling of foods containers during and after the food rise: the temperatures can be high and cause burns.
Use thermal protective clothing to touch objects inside the hot cooking chamber– burning danger! Slowly and carefully open the holding cabinet door: danger of burning for hot surface or release of high temperature vapors.
Do not store flammable or combustible products near the appliance - fire hazard! Avoid salting the food in the prover cavity. If the user needs to salt the food insiede the cooking chamber, provide the cleaning of the prover shortly (see paragraph “Care Inspection and cleaning”).

Installation, Inspection, maintenance and repair
Danger high voltage! Installation, maintenance and repair must be carried out by qualified and properly trained personnel. Before carrying out any work on the appliance, the electrical supply to the appliance must be disconnected. The user needs to contact a UNOX service point also to change the power cable. If the appliance is placed on support structure on wheels, make sure any movement will not damage the electrical cables, water pipes, drain pipes, etc. Avoid placing the unit near heat sources. If the user moves the appliance, it is necessary the electrical cables, water pipes and exhaust ducts are disconnected while moving and connect them later. To ensure the appliance remains in perfect condition, maintenance work should be carried out at least once a year, by a partner organization as recommended by the Assistance Service.
Care, Inspection and cleaning
Before each maintainance or cleaning it necessary to unplug the electrical power and wait for the appliancce to cool down. It is recommended a daily cleaning of the cooking chamber to maintain adequate levels of hygiene and
prevent to ruin the stainless steel of the cooking chamber.
Prover chamber cleaning
To clean the chamber of the prover proceed as follows:
- turn on the prover
- set the temperature at 40°C and the steam at 100% for 10 minutes
- disconnect the prover from the power supply and let it cool down
- clean it with a sponge and neutral detergent
To avoid corrosion in the cooking chamber, the prover must be cleaned every day, even if used only with moist heat (steam). Do not clean the appliance with a high pressure cleaner, with jets of hot water or steam at high pressure. The daily cleaning of the gasket of the cooking chamber with a non – abrasive soap extend the appliance life. Do not use acid products and/or abrasive tools.
External cleaning
For the external clearing of the prover do not use water jet or pressure steam. Use wet cloths and specific products for steel cleaning. Do not use acids products and / or ammonia.
Indications to use the prover

The installation of a UNOX product must be done by an Authorized UNOX service point. The date of installation and the appliance model type must be documented with an instalaltion document/invoice issued by the seller/UNOX authorized service point, worth the decay of the warranty;
The UNOX warranty covers all malfunctions which can clearly be traced back to defects resulting from errors in the manufacturing process. Defects and damage caused by transportation or incorrect product storage, maintenance or operation, by the application of installation procedures not specified by Unox and by environmental factors (e.g. the use of dirty and aggressive water, bad quality gas or unsuitable voltage levels) are not covered. The warranty does not cover any damage resulting from the application of excess voltage, or from tampering by unauthorized or unskilled individuals. The warranty rights will also be diminished in the event of damage or malfunctioning resulting from the build-up of lime scale inside the appliance. Furthermore, the warranty does not cover exhaustible parts, namely: gaskets, light bulbs, glass panels, decorative parts and consumable components after the appliance has been used. Warranty rights will also be invalidated in the event of damage arising as a result of incorrect installation, or installation which has not been carried out by an Authorized Assistance Centre.

Operation in conjunction with digital control panel
The prover XL405 is not equipe with a digital control panel so it is necessary to have a BakerTop™ oven to controll it. (connect the prover to the oven with the cable RJ45). The system also works in standalone mode, however, whether connected to the oven can use a range of useful data and the osmosis system.
The “BakerTouch” control board works by touching the slik-screen printed glass (Use only your finger and no other objects such as knives, forks etc). This way the user can set the appliance functions and/ or the required settings. This type of technology allows the quick and easy cleaning of the digital control panel and also ensures maximum reliability by avoiding any type of mechanical movement.

Power up/ Power down
When the prover is connected to the power supply, the control panel automatically turns on. After 15 minutes if none of the buttons have been pressed and if none of the devices connected to the electronic control panel (ovens, provers, blast chiller) are operating, it will enter the standby mode: only the led
will remain lit.
To reactivate the electronic control panel, simply press the
button.
To activate standby mode, press and hold the
button pusher for 6 seconds while the control is on;
to reactivate the panel, press the
button again.
Prover selection
The selection of the appliance (prover) to control is made with the
button with the BakerTouch
panel until on the display 6 appear no. 6.

Parameters setting
Each cycle of maintenance can be compose from 1 step. The user can set the following parameters: time, temperature, humidity. To move from one parameter to another use the button

Time setting
The time is shown trough 2 displays in hours and minutes and it is set with
buttons. When the display panel shows “INF” (INFINITE) the prover will work continuously until it is manually stopped by the user.

Manual entry of water
It is possible to manually enter water in the prover chamber by pushing the
button: each time the user push that button the water will enter for 5 minutes. In this way the prover generates a considerable amount of useful steam for rising of bakery products, bread and similar.
Start / interruption of the holding process

To stop the holding program touch the
button. When a holding program is finished the oven connected to prover will beep for 15 seconds and the display flashes for 45 seconds.
During the 45 seconds the led lights
stay on. If in that time the button “+” is pressed the time increases and the prover start automatically with the pre-setting parameters related to the rising program.
If the user push the button
and the led lights turn off and all the parameters are resets; if the
user doesn’t press any button, after 45 seconds, the led
switches off automatically and all operating
parameters are reset.

Oven-User Communication
The digital control panel of the BakerTop™ ovens is design to report possible error messages of the oven and the connected accessories.
Warning messages (attention):
When a malfunction is detected which allows the appliance to continue operating, it works in a limited manner, a WARNING message is displayed. The device continues to run and the WARNING message remains on the display until the button
is pressed.

Alarm messages:
When a condition arises which prevents the appliance from operating at all, an ALARM signal is displayed and the appliance must be switched to its STOP status. The device stops operating and the ALARM! message appears on the oven display until the problem is resolved. If the device is operating when the ALARM status occurs, it will shut down and the alert corresponding to the detected problem will be displayed. To resolve a problem of this type, contact an Authorized Assistance Centre. Once the problem has been resolved, the appliance can be reactivated by pressing the «START/STOP» button.
If any other devices/accessories are connected to the oven, these will continue to operate normally unless the alarm corresponds to a specific device that prevents its continued operation.

Every time the oven is started electrically, and every time the control P.C.B. exits STANDBY mode, the control P.C.B. is scanned (which appear on the display, if present) for ALARM / WARNING conditions of the oven and all other accessories connected .

Maintanance in the event of a malfunction:
In the event of a malfunction, deactivate the appliance:
- disconnect the appliance from the electricity supply, placed on top of the appliance.
- Contact a Technical Assistance Centre with specially trained personnel.
The components that require maintenance are accessible by opening the box on the back of the prover.
Before calling the Customer Assistance Service:
