Kimchi fermenting tips
Fermenting kimchi inside a kimchi refrigerator
• Use the Ferment mode. Once the fermenting process has nished, the refrigerator will automatically enter the Regular-Cold Preserve mode.
• The fermenting time is pre-programmed for each Ferment mode and cannot be changed.
• The number on the progress indicator represents the remaining days until the end of fermenting.
Fermenting kimchi outdoors
• Once the kimchi juice level rises and the juice starts to bubble, store the kimchi inside the kimchi refrigerator.
• Allowing the kimchi to ferment a little and then storing it at a low temperature will give you tasty kimchi that is rich in probiotics.
• If you ferment kimchi outdoors in typical kimchi-making season (winter), you will know the kimchi is ripe when:
- the kimchi juice level rises, and the juice begins to bubble.
- the kimchi loses its raw vegetable scent and develops a sour taste.
- the juice tastes ripe, but the cabbage does not taste fully ripe. Once you start seeing
these signs, store the kimchi inside the kimchi refrigerator.
NOTE
• The kimchi can be fermented at room temperature. Please be mindful that, when ferment kimchi in room temperature, the fermenting time varies depending on the type of kimchi, the salinity, and the temperature.
• Be careful not to exceed 3 days when fermenting kimchi at room temperature.

About fermenting temperature
• The fermenting period of kimchi varies depending on the amount of salt and the types and ingredients (seasoning).
• The salt concentration is the most important factor in fermenting kimchi. It takes a shorter time to ripen kimchi if the salt concentration level is low and a longer time if the salt concentration level is high.
• The fermenting period is also affected by the types and amounts of seasonings used to add avor to the kimchi and your locale and dietary pattern. Using large amounts of ingredients such as garlic, seafood (oysters, raw shrimp, croaker, hairtail, etc.), onions, dried red pepper powder, cucumbers, and green onions speeds up the fermenting process. However, adding ingredients such as chives, mustard leaves, and ginseng slows the fermenting process.
NOTE
• Activating the Ferment mode initiates the fermenting process for the entire compartment. Before activating the Ferment mode in the desired compartment, remove any other items and only store fresh kimchi that need fermenting.
• The degree of fermenting may vary depending on the type of kimchi, salinity (amount of salt), and time of the year. Taste your kimchi periodically during the fermenting process and if the kimchi is ripe, you can start the Preserve mode.
• Kimchi may not feel cold during the fermenting process. However, when the refrigerator enters the Regular-Cold Preserve mode at the end of the fermenting process, the kimchi will be chilled.
• If you prefer raw kimchi, you may skip the fermenting process and use the Preserve mode right away.

3. Press Lock to lock the main panel.
- Once you complete your selection, the main panel will be locked automatically after one minute, even if you do not press Lock. (The blue LED indicator on the button turns on when the panel is locked.)
CAUTION
• When storing kimchi, always make sure the kimchi refrigerator’s door is fully closed. If a foreign substance builds up in the door crevices, the kimchi will quickly go sour.
• Do not store kimchi in a plastic bag. The kimchi may freeze, or the plastic bag may burst due to the gas generated during the fermentation process. Please use the proper kimchi containers.
NOTE
• To preserve the kimchi longer, activate the desired Preserve mode for the desired compartment, 2 to 3 hours in advance. Make sure the compartment is well-chilled before storing your kimchi. Also, refrain from frequently opening the kimchi refrigerator’s door. Frequently opening the kimchi refrigerator door will cause temperature changes that will affect the kimchi’s avor and cause the kimchi to go sour quickly.
• When storing kimchi, frost or water droplets can form inside the kimchi refrigerator. Frost or water droplets can form due to the frequent opening and closing of the kimchi refrigerator door or the residual heat of the food stored in the refrigerator. The frost and water droplets have the effect of keeping the food moist at all times and are not a cause for concern.
• When storing kimchi, check on the containers after the rst 2 or 3 days to ensure the juices are not spilling over. There must be no juice spilling to store the kimchi for an extended period.
• Stored food items can freeze under the Regular-Cold+ or Low Salt-Cold+ mode, and you must check the items within 12 to 24 hours. If a thin layer of ice has formed on the kimchi, select the Regular-Cold, Regular-Cool, or Low Salt-Cool mode.

Storing kimchi long-term
• Do not put kimchi above the maximum line (A) inside the container (or the handle type locking tabs (B) for the
metallic containers). Overlling the kimchi container will result in gas lling the container and causing the juices to spill over. If kimchi juices spill over, outside air can enter the container and spoil the kimchi.
• Push down on the kimchi to ensure that no air is trapped inside, and the kimchi is completely submerged in the kimchi juice. Exposing the kimchi to air can cause yeast to form and an unpleasant odor to develop. It is also advisable to cover the kimchi using outer cabbage leaves or plastic sheets to protect it from air exposure.

SMART GRID Function (Demand Response)

When the refrigerator operates in SMART GRID (Demand Response) mode, the Energy Management Refrigerator function can control energy usage or delay the operation of some functions to save money when energy prices or demand are the highest.
NOTE
• You can deactivate the SMART GRID (Demand Response) function at any time using the Peak Demand Off function.
• To use the SMART GRID (Demand Response) function, you need a separate contract with your electric utility company.
In addition, to use the SMART GRID (Demand Response) function, you must register for the service with your electric company. The company must have an EMS (Energy Management System) that supports SEP (Smart Energy prole).
Using the SMART GRID (Demand Response) Function
This feature monitors energy prices and demand information from your utility company and sends notications to the refrigerator to run high energy consuming tasks during offpeak times when electricity costs and demand are lower.
If the refrigerator receives a control signal from the utility company, the refrigerator will display the DAL (L3) ~ TALR (L4) levels on the refrigerator display and control the power consumption according to the level.
[Exception condition] The DAL and TALR control signals from a utility company work as long as product performance is maintained.
If the refrigerator receives the SMART GRID (Demand Response) signal (DAL or TALR), the refrigerator will operate in Delay Appliance Load (Display:L3) or Temporary Appliance Load Reduction (Display:L4) mode.
• Delay Appliance Load (L3): The refrigerator responds to a DAL signal by providing a moderate load reduction for the duration of the delay period. This function controls functions that consume a lot of energy such as adjusting the Cooling system and running the defrost cycle.
- When the refrigerator operates in DAL (L3) mode, “L3” is displayed on the
refrigerator display.
- DAL mode is automatically deactivated after it lasts for the amount of time stipulated
by the DAL signal (max. 4.5 hours) or when the Peak Demand Off (Preserve for the middle compartment) button is pressed.
• Temporary Appliance Load Reduction (L4): The refrigerator responds to a TALR signal by aggressively reducing the load for a short time period. This function reduces energy consumption by stopping the compressor and controlling the functions that consume a lot of energy such as the defrost cycle.
- When the refrigerator operates in TALR (L4) mode, “L4” is displayed on the
refrigerator display.
- TALR (L4) mode is automatically deactivated after it lasts for the received duration
(max. 15 minutes), or when the Peak Demand Off (Preserve for the middle compartment) button is pressed. The mode is immediately deactivated and the refrigerator returns to the normal state when the door is opened or closed, or the dispenser is used.

- After 1 minute, the main panel stops displaying the MAC address and returns to the normal state.
NOTE
• The progress indicators displays "- -" if the MAC address is unknown or if a Wi-Fi connection is not established or lost.
Peak Demand Off
When you want the refrigerator to ignore the SMART GRID (Demand Response) signal from the utility company, you can turn off the Peak Demand function.
When you turn off the Peak Demand function, the refrigerator ignores the SMART GRID (Demand Response) signal and is not controlled by the utility company.
Turning off the Peak Demand function

Getting to know the kimchi

Frequently asked questions

My kimchi froze!
The storage temperature varies depending on the type of kimchi and its salinity. Check the kimchi type. Low-salt kimchi and watery kimchi are prone to freezing. Store such type of kimchi using the Regular-Cool mode.
My kimchi turns sour too quickly.
• Make sure the storage temperature is not too high. Low-salt kimchi can freeze at a low temperature and should be stored in the Regular-Cool mode, even if that will result in the kimchi turning sour too quickly.
• Using an excessive amount of seasoning when making your kimchi can result in the kimchi turning sour quickly.
My kimchi's color changed.
• Color may change if you did not fully drain the excess water from the cabbage after salting. It also may happen if the cabbage did not absorb the seasoning well during the fermenting process.
• If the kimchi appears to have lost its color, it is mainly due to yeast formation. Discard any parts with the yeast and submerge the kimchi in its juice.
A white substance (yeast) has formed on the surface of the kimchi.
• Such formation may happen if the kimchi's surface is exposed to air. When storing the kimchi, cover it with outer cabbage leaves and sprinkle salt on top or cover it with plastic sheets to prevent air exposure.
• Are you taking out the kimchi with wet hands? Exposure to moisture can also cause yeast formation. Wear gloves or dry your hands before handling kimchi. Make sure to press down on the remaining kimchi to ensure that it is fully submerged in its juice.
• If you do not discard the yeast, it will spread and soften the kimchi. Discard the yeast immediately.
• Yeast formation on kimchi can occur in the kimchi over time.
Getting to know the kimchi
My kimchi has turned soft.
• Cabbage that has not been fully drained or fully salted may become soft when exposed to air or pickled for too long. Low-salt kimchi can also soften easily, so we recommend seasoning kimchi adequately. Kimchi can also become soft if too much sugar is used.
• With radish kimchi, pickling it too long draws out too much water from the radish and causes it to go soft. Limit the pickling time to one hour.
• It is important to store kimchi fully submerged in its juice. Be extra careful with low-salt kimchi.
English 63
Untitled-3 63 2020-11-12  4:06:10
Getting to know the kimchi
My kimchi smells strange.
• A smell may develop early in the fermentation stage due to the seasoning (garlic, salted seafood, etc.), but this could go away as the kimchi ferments. Add an adequate amount of garlic, onion, and green onion in your kimchi. An excessive amount of these ingredients may cause an unpleasant odor.
• This may happen if you stored kimchi in the kimchi refrigerator before the fermentation took place.
• If the kimchi was exposed to air too much, yeast formation may occur and cause the strange smell.
• After making the kimchi, protect it from air exposure and keep it slightly seasoned to prevent strange odor.
My kimchi tastes bitter.
• Kimchi may taste bitter before it is ripe, and the taste could go away as it ripens.
• Using low-quality salt or salt with a high magnesium content for pickling the cabbage can result in a bitter taste.
• With young radish kimchi, rinsing the radish after pickling can result in a bitter taste.
The cabbage is not absorbing the seasoning.
Storing the kimchi at a low temperature immediately after making it can prevent the cabbage to absorb seasoning. Make sure to ferment the kimchi before storing.
My watery kimchi’s juice has turned red.
The ingredients such as green sea ngers and mustard leaf may causing the juice to turn red. This is not due to the kimchi container and therefore not a cause for concern.
