NOTICES
There are three different types of notices that you should be familiar with; a NOTICE, CAUTION, and WARNING. A NOTICE is a special note used to call attention to a particularly important point. CAUTION is used to point out a procedure or operation which may cause equipment damage. The WARNING notice is the most important of the three because it warns of an operation that may cause personal injury. Please familiarize yourself with your new cooker before operating it and heed the notices throughout this manual. The WARNINGS are listed below and on the following pages for your review prior to operating the cooker.

WARNING
The cooker must be electrically grounded in accordance with local codes. If local codes do not apply, follow the requirements of National Code ANSI/NFPA 70-1990.

Be sure the heating elements are COMPLETELY covered with water before turning the cooker on.

The cooker must be disconnected from the facility power supply before servicing or cleaning the cooker.

Chapter 3: Service, Maintenance, And Adjustments
This chapter provides the qualified technician with the troubleshooting and replacement procedures necessary to service the counter top cooker. If your cooker does not perform properly after performing maintenance, contact your authorized service center. For repair, maintenance, or an explanation of any procedure, contact your dealer, local service company, the factory representative in your area, or the factory.
WARNING
The power supply must be disconnected before servicing or cleaning the cooker.
3.1 THERMOSTAT CALIBRATION
The Pasta Perfect cooker is equipped with a thermostat that controls the heating element when the FUNCTION SELECT switch is in the SIMMER position. This thermostat should be set at approximately 195°F. To change the thermostat setting, use the following procedure:
a. Place an accurate mercury thermometer in the center of the cooking tank with the bulb
approximately 3" below the surface of the water. Allow enough time for the thermometer to stabilize.
b. Using a flat tip screwdriver, turn the shaft on the thermostat clockwise to decrease the
temperature setting; turn the shaft counterclockwise to increase the temperature setting. The thermostat is located on the lower right front wall of the tank. The shaft should not need to be turned more than 1/4 turn to adjust the temperature setting.
CAUTION
DO NOT turn the adjusting shaft more than two (2) turns in either direction.
3.2 CHECKING AND REPLACING FUSES
A general purpose ohmmeter or continuity checker is needed to check the heating element fuses. It is recommended that a qualified technician check the fuses. Use the following procedures to check and replace fuses:

NEVER remove fuses from the cooker until the cooker is unplugged from the facility power supply.
a. To check and replace heating element fuses:
1. Unplug the cooker from facility power source.
2. Remove screw to fuse access door on back panel of the cooker.
3. The heating element fuses are mounted in a fuse holder located behind the rear access panel.
4. Remove each fuse by gently pulling the fuse straight out of the holder using a fuse puller.
5. Use an ohmmeter set on "x 1" ohms (resistance) setting to check the fuses for continuity. For a GOOD fuse, the meter reading should be approximately zero "0" ohms. If the reading is significantly above zero ohms, replace the fuse.
6. Replace each fuse by pushing the fuse straight into the fuseholder until it locks in place.
7. Lower fuse access door.
8. Replace screw and tighten.
9. Plug the cooker into the facility power source.

3.3 REPLACEMENT PROCEDURES
These procedures are provided as a guide to removal and replacement of various cooker components. If a test is required to verify component operation after installation, the test will be referenced.
WARNING
To prevent burns, always ensure the cooker is completely SHUT DOWN and COOLED down before performing any work.
WARNING
The power supply must be disconnected before servicing or cleaning the cooker.
3.3.1 Thermostat Replacement
a. Disconnect the cooker from the facility power source.
b. Open the door.
c. Drain the water from the tank.
d. Remove the front panel.
e. Disconnect the 9-pin connector.
f. Disconnect two thermostat wires from the terminal block.
g. Unscrew thermostat from tank.
h. Remove the thermostat.
i. Place sealant on the new thermostat.
j. Install new thermostat in the tank.
k. Reconnect thermostat wires to the terminal block.
l. Reconnect the 9-pin connector.

m. Reinstall the front panel.
n. Close drain.
o. Close the door.
p. Reconnect the cooker to the facility power source.
3.3.2 Limit Control Replacement
The limit control includes a temperature sensor inside the tank, a control unit inside the cooker cabinet, and connecting capillary tubing.
CAUTION
The limit control capillary tubing is very delicate. Be VERY CAREFUL when working with the capillary tubing. The limit control is no longer usable if the tubing is kinked or broken.
a. Disconnect the cooker from the facility power source.
b. Drain the water from the cooker and remove the element rack assembly.
c. The limit control probe (heat sensor) is clamped to the heating element inside the tank.
Unscrew and remove the two screws in the probe clamp.
d. Remove the probe from the clamp and straighten the capillary tubing.
e. Unscrew the small hex nut inside the cabinet at the front of the tank for the limit control.
f. Unscrew the large connector nut from the tank and pull the probe and capillary tubes
through the opening.
g. Remove the two mounting screws from the limit control bracket and remove the limit
control unit, located behind the front panel.
h. Install a new limit control unit by connecting the wires.
i. Place the limit control unit in the limit control bracket.
j. Install and tighten the two mounting screws.
k. Insert the probe and capillary tubes through the opening in the tank.

l. Reinstall the front panel.
NOTE
Use approved pipe joint compound on the large fitting before install­ing to prevent water leakage. DO NOT use joint compound on the small nut.
m. Install the large connector nut on the tank and tighten.
n. Carefully reshape the capillary tubes.
o. Place the probe in the clamp.
p. Rescrew the two screws into the probe clamp.
q. Screw the small hex nut inside the cabinet at the front of the tank for the limit control.
r. Replace the element rack assembly.
s. Reconnect the cooker to the facility power source.
3.3.3 Heater Element Replacement
a. Disconnect the cooker from the facility power source.
b. Open the door.
c. Drain the water from the tank.
d. Remove front panel.
e. Remove the wires from the heater element.
f. Remove the element support bar.
g. Remove the limit control bulb clamp.
h. Remove two (2) nuts holding the heating elements in place.
i. Remove the heating element.
j. Place sealant on the new heating element.
k. Install the new heating element in the tank.
