Cafina c5 – Customised coffee making
The Cafina c5 stands for innovative, well-conceived solutions for making coffee fully automatically, guaranteed coffee quality, machine reliability, service-friendliness and a long trouble-free machine life. Good coffee and satisfied customers are the aim. Cafina, however, is in search of more: perfection in coffee making.
Automatic Coffeequality System
The heart of the new machine is the patented Automatic Coffee­quality System (ACS) that continu­ously supervises all parameters of consequence such as grinding fineness, coffee powder quantity, infusion time and water temperature. The ACS automatically corrects any deviations from the set values and thus guarantees maximum coffee pleasure. Clear displays inform the operator when the dregs drawer is full or the coffee bean hopper is empty.
The automatic convenience of the comprehensive, efficient and time­saving cleaning program rounds off a design that satisfies every wish.
The Cafina c5 has numerous safety and self-supervision features. The ACS monitors every conceivable factor, supervises every possible parameter to protect the machine, maintain hygiene and ensure the long-term quality of the coffee – truly a coffee machine with the highest standard of safety and quality control.
Fully automatic coffee making
To this end, Cafina has packed all the advantages of a fully automatic coffee machine into a smaller space. The new high-quality infusion mecha­nism in conjunction with the patented Variable Pressure System (VPS) enabled Cafina to achieve its goals. The compression during infu­sion is continuously variable from 1 to 150 kp and can be set individually for each beverage. One machine is thus capable of making the full range of coffee beverages from a really strong ristretto to the popular coffee cream or a refreshing jug of coffee.
Sensitive sensing
And that is not all. The VPS sensors measure the compres­sion continuously during the infusion process and detect and signal any deviation in milliseconds. The pressure is then corrected much faster and more precisely than it could ever be achieved manually. The automatic fine adjustment functions for all the different grades of coffee and grinding fineness.

Finely tuned coffee design
The Cafina c5 is the ideal blend of electronics and mechanics to achieve fully automatic control of quality and function. Ideally matched components and software applications with integrated data and energy management provide for smooth, reliable opera­tion which in turn contributes to optimising costs and therefore profitability.
High-precision grinder
The powerful and yet super-quiet grinder is equipped with a heavy­duty grinding wheel that can be reground when necessary. The constancy of the grinding fineness is electronically supervised. An especially developed measuring system ensures that the coffee powder remains accurately dosed even after many thousands of cups.
Piston system with microprocessor control
The new piston system is fast, accurate and gets the maximum out of the coffee powder. Water and coffee powder quantities and the compression (VPS) are programmed individually and perfectly gauged to suit the blend of coffee. The new piston operating principle with synchronous drive and electronic pressure measurement achieves optimum infusion.
Cafina micro-sieve
The ultra-fineness of the micro-sieve means that the coffee beans can be ground finer than ever before and excellent coffee can be infused from an absolute minimum amount of coffee powder.
Pre-infusion
Espresso and ristretto will only be strong if the coffee is pre-infused, i.e. the coffee powder is moistened before the infusion process proper starts. This causes the coffee to swell slightly and release its full aroma.
Bypass
The bypass technique ensures that bitter ingredients are extracted from the coffee when dispensing large portions and the true aroma remains strong and pleasant.
Heating system
The Cafina c5 is equipped with a fully insulated, low-energy hot water and steam system that provides water at a consistently high temperature from the instant the first espresso is poured. When drawing hot water, a special mixer maintains the temperature constant and prevents hissing steam and splashing. Hot water pours almost silently and steam output is smooth and continuously variable.

The outstanding features of the Cafina c5
Te chnology makes the difference. Cafina’s entire know-how and experience of catering and the development and construction of coffee machines has gone into the c5 series of machines. Cafina is familiar with the needs of progres­sive catering managers and while developing tomorrow’s technology, already included what they will be looking for the day after. This philosophy influenced the operator-friendliness of the Cafina c5 generation. An innovative ergonomic control and display panel enables the operator to «communi­cate» with the Cafina c5 and guides him through the many useful functions it provides. A function button is used in conjunction with the buttons for selecting beverages and quantity to switch between the control levels.
The latest chip card technology
Maintaining consistently high coffee quality on this high-tech machine is made easy by a user and mainten­ance-friendly chip card system and the electronic Automatic Coffee­quality System (ACS). Every Cafina c5 is equipped with a chip card interface that performs the internal data management functions. Different chip cards for the operator, manager and service technician provide access to the respective functions.
Decaffeinated coffee
A chute is provided which enables every programmed coffee beverage to be made with a different blend of coffee.
Hot water or steam
Hot water can be dispensed in individual quantities, while the steam output can be continuously regulated.
Refill the coffee bean hoppers
The level of the coffee beans in the hoppers is continuously monitored. If one of them is empty, the corre­sponding hopper, 1 or 2, is indicated on the display. When this appears, refill the hopper, cancel the signal and carry on.
Coffee dregs drawer
The dregs drawer is also monitored and gives advance and final warning that the drawer needs emptying.
Cleaning and switching off
To ensure a high standard of hygiene, the Cafina c5 has an auto­matic pre-configured cleaning program. Operation of the cleaning program is signalled on the display. When it is over, the machine is either switched off or to the energy-saving standby mode.
Just insert your card in the Cafina c5: The user card switches the
machine on and initiates the automatic cleaning program when switching off. The manager card performs the same functions plus special functions needed by the manager. A memory and an engineer card enable the Cafina service techni­cians to service the machine quickly and efficiently.
Controls for navigating through the man/machine interface (MMI)
The manager card gives access to those functions necessary to program the operation of the machine and the beverage settings. The corresponding instructions and information appear on the display: – Start cleaning program – Set water, coffee powder and
milk quantities

– Initiate the cash register system
and set the prices
– Set time and date
Dispensing coffee
‘Select beverage’ appears on the display. Press the button for the desired beverage. The beverage you have selected appears on the display and the coffee is dispensed. A speciality is the ‘double click’ dual function which enables two cups of coffee to be selected at the same time. It is indicated on the display.

Simplicity itself and it’s fast
Once the right coffee blend and degree of roasting have been determined, the rest is a matter of proper grinding, dosing the coffee powder, precisely controlling the water quantity and temperature and the compression for the particular beverage (VPS), making provision for the coffee powder to swell during pre-infusion and accurately timing the pressing of the water through the coffee powder. Cafina has mastered all these functions so that it is only necessary to press a button to obtain every beverage with exactly the same quality every time. Whether a bar, restaurant, self-service canteen or haute cuisine, the machine has to be simple and practical to use and be able to cope with peak periods.
The height of the coffee outlet is adjustable and it can also be tipped to accommodate the various sizes of cups and jugs.
The drip tray is functional and guides the cups into the correct position.

Cafina c5 – Handling natural products
Combined coffee/milk outlet
By combining coffee and milk outlets, a beverage with milk can be dispensed without having to move the cup. This makes it easier to use the machine and shortens dispensing time.
Milk beverages served at the push of a button
The Cafina milk foamer puts that finishing touch at the press of a button on cappuccino, milk coffee or simply hot milk. The milk foam is compact, firm and homogeneous – an absolute joy and really Italian.
Fully automatic cleaning program for coffee and milk systems
Cafina’s famous fully automatic cleaning program cleans coffee and milk systems quickly and thoroughly and then sterilises them for maximum safety. It maintains the highest standards of hygiene as confirmed by an independent expertise (HACCP).
Cafina c5 – the new milk handling generation
Milk is a natural food, it’s healthy and trendy – even in coffee. The Cafina c5 series includes two alternative milk versions: – the integrated solution – a unique

Cold milk storage
For reasons of quality and hygiene, the milk in both versions is kept cool and then heated gently in the especially developed steam heater and outlet unit. This heating system achieves the shortest heating time without diminishing quality.
The integrated solution
The version with integrated cold milk storage unit has a capacity of 1.5 litres and is suitable for small to medium-size catering facilities. The entire system is accommodated in the main Cafina c5 housing.
The external solution
In this case, an ancillary compressor refrigerator of matching c5 design is added. It has capacity for 5 litres of milk which is adequate for large catering facilities.

Ancillaries for higher coffee performance
Second grinder
A second grinder offers a choice of coffee blend and inspires new coffee creations.
Self-service
Large clearly labelled push-buttons for the various beverages and a large display are ideal for use by the public in self-service restaurants. Cafina can also supply a ‘Turbo optimiser’ to increase throughput.
Dregs container
The Cafina c5 is prepared for the connection of an external coffee dregs container where correspond­ing quantities are produced.
Cup heating cabinet
Space for stacking more than 100 cups of different sizes is provided on three shelves. The cups are kept at the ideal temperature for serving hot beverages. The subsequent addition of the cup heating cabinet to an existing machine is simple and requires only little time.
Trolley/stand
With its freshwater tank and waste water level monitor, the trolley makes coffee mobile and indepen­dent. A stand with a fixed connection to the water supply is also available.
Pay systems
Coffee can be paid for using either coins, tokens, credit cards or code keys. An interface is provided for connecting propriety cash register and on-line systems.
Extra large coffee bean hopper
This ancillary is suitable for large caterers with a high coffee requirement.
Corporate identity
The Cafina c5 can be supplied in the appropriate colour to match corpo­rate colours or building interior. The RAL range provides an adequately wide choice.
Side coffee outlet
Provision is made on the side of the Cafina c5 for fitting an outlet for filling thermos flasks.
Coffee and milk in one
The Cafina c5 series of coffee machines includes two types of milk foamer, a compact 1.5-litre version for integration in the machine and a larger high-performance 5-litre version as ancillary unit. Both have cooling units for storing the milk at the ideal temperature and automatic cleaning systems.
