DESCRIPTION:
Market Forge Model _____________ steam cooker with
solid stainless steel cooking compartments. Top compart­ment shall have both pressure and pressureless steam
controls, and will provide operator selection of either 5
PSI (0.4kg/cm2) pressure steam cooking or free-vented, pressureless steam cooking. Center and/or bottom com-
partment will operate as a pressure steam cooker at 5
PSI (0.4kg/cm2).

Polished stainless steel cabinet base will be of modular
design to match other Market Forge cooking equipment
and enclose the boiler. Base with stainless steel frame will be equipped with 6” (152mm) stainless steel legs and
adjustable bullet feet, reinforced die-formed stainless steel marine edged counter top, and stainless steel lift-off front panel.

Cooking compartments shall have double-door construc-
tion. Inner door shall be of cast aluminum with stainless steel facing, and shall be removable for cleaning with­out tools. Door wheel screw shall be Acme type with
replaceable bushing and all threads concealed. Upper
compartment door latch shall be equipped with control switch which shuts off steam when door is opened during
pressureless cooking. Compartment doors shall be self­latching, and shall open automatically approximately 15°
when primary latch is released. Upper cooking compart­ment shall be equipped with lift-out pan supports. Center
and/or bottom compartments shall include lift-out four­track shelf uprights and one pull-out shelves. Cooking compartments shall be automatically and independently controlled.

UPPER COMPARTMENT - PRESSURELESS MODE:
15-minute timer is set. Steam ow will automatically be interrupted when compartment door is opened during cooking cycle. At end of cooking cycle, indicator light will turn off and continuous signal will sound.
UPPER COMPARTMENT - PRESSURE MODE:
60-minute timer is set and steam control handle engaged. At end of cooking cycle, steam control handle shall re­lease, turning off indicator light, exhausting steam and condensate from cooking compartment and sounding a continuous audible signal.
CENTER AND/OR BOTTOM COMPARTMENT:
Operates only as a pressure cooker in the same manner as described for the upper compartment in the pressure mode.

Boiler will automatically ll with cold water and brought to pressure when water and heat switches are turned on, and automatically drained under pressure when switches are turned off. A cold water condenser shall automatically
condense all steam exhausted from boiler and compart­ment before releasing it to drain. Unit also includes safety valves, low water cut-off, water strainer, cathodic protec­tor. Generator also includes an access for Total Concept delimer/descaler, and PM Plus (a corrosion inhibitor). A manual drain valve is also provided. For ease of service­ability, boiler controls are conveniently located in a slide
out “works-in-a-drawer” style enclosure.

cm2) nickel plated boiler rated at 300,000 BTU and
equipped for operation at 0 PSI for pressureless cook­ing and 5 PSI (0.35kg/cm2) through a pressure reducing valve for pressure cooking.
Will be equipped for: Natural Gas: 300,000 BTU Manifold and pilot gas pressure will be 4” (102mm) for Natural Gas and 10” (254mm) for Propane Gas. Incom­ing gas pressure must not exceed 14” (357mm) W.C.

mum of 50 PSI (3.5 kg/cm2) and a minimum of 25 PSI (1.8 kg/cm2) water pressure. CAUTION: FILTER SYSTEM INSTALLATION INSTRUCTIONS MUST BE ADHERED TO WHEN CONNECTING A FILTER TO THIS LINE.

The only available space to supply utilities to the boiler
is 6” (152mm) height between the oor and the cabinet
base.
CAUTION: Before connecting water to this unit, have water supply analyzed to make sure hardness is no greater than 2.0 grains and pH level is within the range of 7.0-8.5. Water which fails to meet these standards should be treated by installation of a water conditioner.
