DESCRIPTION: Shall be a Market Forge direct connected steam cooker with stainless steel cooking compartments. Top compart­ment shall have both Pressure and Pressureless Steam controls, and shall provide operator selection of either 5 PSI (.35kg/cm2) pressure steam cooking or free-vented, pressureless steam cooking. Center and/or bottom com­partment shall operate as a pressure steam cooker at 5 PSI (.35kg/cm2).
Cooking compartments shall have double-door con-struc-
tion. Inner door shall be of cast aluminum with stainless steel facing, and shall be removable for cleaning with­out the use of tools. Door wheel screw shall be Acme type with replaceable bushing and all threads concealed.
Compartment doors shall be self-latching, and shall open automatically approximately 15° when primary latch is re­leased. Upper cooking compartment shall be equipped with lift-out pan supports. Center and/or bottom com-part­ment shall include lift-out four-track shelf uprights and one pullout shelf.

UPPER COMPARTMENT - PRESSURELESS MODE:
15-Minute timer is set. Steam ow shall automatically be interrupted when compartment door is opened during
cooking cycle. At end of cooking cycle indicator light shall turn off and continuous signal shall sound.
UPPER COMPARTMENT - PRESSURE MODE:
60-Minute timer is set and steam control handle engaged. At end of cooking cycle, steam control handle shall re­lease, turning off indicator light, exhausting steam and condensate from cooking compartment and sounding a continuous audible signal.
CENTER AND/OR BOTTOM COMPARTMENT:
Operates only as a pressure cooker in the same man­ner as described for the upper compartment in the pres-
sure mode. Polished stainless steel cabinet base will be
of modular design to match other Market Forge cooking
equipment and enclose the boiler. Base with stainless steel frame will be equipped with 6” (152mm) stainless
steel legs and adjustable bullet feet, reinforced die-formed stainless steel marine edged counter top, and stainless steel lift-off front panel.

OPERATION WILL BE BY:
Direct connected steam at an incoming pressure between
a minimum of 20 PSI (1.4 kg/cm2) and a maximum of 50 PSI (3.5 kg/cm2) with a ow rate of 200 lbs. 90kg per hour. Equipped for operation of A-PLUS at either 0 PSI (pressureless mode) or 5 PSI (.35 kg/cm2) through sepa­rate pressure reducing valves (pressure mode).
Plumbing controls include a cold water condenser and ball oat trap. Cold water condenser will automatically
condense steam before releasing it to drain.

Steam supply - 1/2” (13mm) NPT Incoming steam pressure must not be less than 20 PSI (1.4kg/cm2) nor exceed 50 PSI (3.5kg/cm2).
NOTE: STEAM SUPPLY MUST BE FOOD GRADE QUALITY.
CW Cold Water - 3/8” (10mm) NPT for cold water
to condenser. Cold water lines shall have a
maximum of 50 PSI (3.5kg/cm2) water pres­sure and a minimum of 25 PSI (1.8kg/cm2).
D Drain - Pipe full 2” (50mm) I.P.S. to ush oor
drain capable of receiving water owing at a

Electrical Connection - 120 Volt AC, 60 Hz, 1/2” (13mm) conduit connection or equiva-
lent. Use wire suitable for at least 90°C. Amp draw for 120 volt boiler controls is 2
amps. Automatic controls on compartments require 2 amps per compartment.

It is our policy to build equipment which is design certied by U.L., A.S.M.E., N.S.F. and C.S.A. However, a continuing program of product improvement
makes it necessary to submit new models to the agencies as they are developed and consequently not all models bear the appropriate agency labels at all times.
NOTES: Allow 12” (305mm) spacing on left and 6” (152mm) spacing on right if height of adjoining wall or equipment exceeds 29” (737mm). Matching spacer cabinets, either 12” (305mm) or 6” (152mm) wide, are
available and should be specied.

The only available space to supply utilities to the boiler
is 6” (152mm) height between the oor and the cabinet
base.
CAUTION: Before connecting water to this unit, have water supply analyzed to make sure hardness is no greater than 2.0 grains and pH level is within the range of 7.0-8.5. Water which fails to meet these standards should be treated by installation of a water conditioner.
