DESCRIPTION:
Will be a Market Forge Model 2 A-Plus 2, gas red steam cooker with solid stainless steel cooking compartments. Both compartments will have pressure and convection steam con­trols, and will provide operater selection of either 5 PSI (3
kg/cm2) pressure steam cooking or free-vented, convection
steam cooking.
Cooking compartments will have double-door construction. Inner door will be of cast aluminum with stainless steel fac­ing, and will be removable for cleaning without tools. Door wheel screw will be Acme type with replaceable bushing and all threads concealed. Compartment door latches will be equipped with control switch which shuts off steam when
doors are opened during convection cooking. Compartment doors will be self-latching, and will open automatically ap­proximately 15o when primary latch is released. Each cooking
compartment will be equipped with lift-out pan supports, and steam inlet pipe which directs steam across the surface of
foods.

with 6” (152mm) stainless steel legs adjustable bullet feet, rein­forced die formed stainless steel marine edge counter-top, and stainless steel lift-off front panel.
Generator will automatically ll with cold water and be brought to pressure when water and heat switches are turned on, and automatically drain under pressure when switches are turned off. A cold water condenser will automatically condense all steam exhaust from generator and compartment into water
before releasing it to drain. Unit also includes safety valves, low water cut-off, water strainer, cathodic protector, and man­ual drain capability. For ease of serviceability, boiler controls
are conveniently located in a slide out “works-in-a-drawer”
style enclosure.
