DESCRIPTION:
Will be a Market Forge Model 2 A-Plus 2 electrically pow­ered steam cooker with solid stainless steel cooking compart-
ments. Both compartments have Pressure and Pressureless steam controls, and provide operator selection of either 5 PSI (0.4kg/cm2) pressure steam cooking or free-vented, pressure­less steam cooking.
Cooking compartments have double-door construction. In-
ner door of cast aluminum with stainless steel facing, and removable for cleaning without tools. Door wheel screw is Acme type with replaceable bushing, all threads concealed.
Compartment doors are self-latching, and open automatically
approximately 15° when primary latch is released. Cooking compartments are equipped with lift-out pan supports. Cook-
ing compartments are automatically and independently con­trolled.

PRESSURELESS MODE:
15-Minute timer is set. Steam ow is automatically interrupted when compartment door is opened during cooking cycle. At
end of cooking cycle indicator light turns off and a continuous audible signal sounds.
PRESSURE MODE:
60-Minute timer is set and steam control handle engaged. At end of cooking cycle, steam control handle releases, turning off indicator light, exhausting steam and condensate from cooking compartment and sounding a continuous audible signal.
Polished stainless steel cabinet base is of modular design to
match other Market Forge cooking equipment. Equipped with
6” (152mm) stainless steel legs, adjustable bullet feet, rein­forced die-formed stainless steel marine edged counter top, and stainless steel lift-off front panel.
Boiler is automatically lled with cold water and brought to pressure when water and heat switches are turned on, and automatically drained, under pressure, when switches are turned off. A cold water condenser automatically condenses
all steam exhausted from the boiler and compartments before
releasing it to drain. Unit also includes safety valves, low wa­ter cut-off, water strainer descaler, and manual drain capabil-
ity. Boiler is insulated.

OPERATION WILL BE BY: Electrically operated ASME con­structed UL approved 15 PSI (1kg/cm2) boiler equipped for operation of 2 A-Plus 2 at 0 PSI for pressureless cooking and 5 PSI (0.4kg/cm2) through a pressure reducing valve for pres­sure cooking. Boiler is rated at 48 kW (240V, 480V) or 42 kW (208V) and equipped for operation with:
