Infuse with LEVO

LEVO is designed for activating and infusing a range of botanical ingredients, so you can enjoy their flavor, nutrition, and wellness benefits in your everyday life.

High-end restaurants, global food companies, and independent chefs alike use infusion techniques to enhance food and experiment with flavors.

Skincare, beauty, and other wellness brands also use infusion to incorporate healing herbs into your routine. Unfortunately, most of these infused products are mass produced and can be over processed.

LEVO simplifies the process of home infusion, so it’s easy to incorporate fresh or dried herbs, fruits, seeds, and more into virtually any recipe you'd like (sans preservatives, solvents, or additives).

Rules for the Road

Low & Slow

When in doubt, infuse at lower temperatures. This will ensure all the wholesome goodness (flavors, aromas, nutrition) of your ingredients remain intact.

Coarse Grind

We recommend coarsely ground herbs, as opposed to finely ground, to prevent unwanted particles in your infusions and final creations.

Moisture is Not Your Friend

The moister the herb, the shorter the shelf life of your infusion. Consider using the DRY or ACTIVATE cycle before infusing to keep your infusion fresher, for longer (and always store finished infusions in a cool, dark place).

Less Refined is Better

When it comes to fats in your oil or butter, the more refined, the higher the smoke point and more neutral the taste. The less refined, the smoke point is lower and the taste is more flavorful. Plus, there is more added “good stuff” (like healthy fats, antioxidants, and vitamins).

Refinement is the process of separating different elements of a substance and distilling or processing it, so it no longer contains all of its original ingredients.

Example: White flour is refined, whole wheat flour is unrefined.

Dry with LEVO

Cooking with fresh herbs like basil, rosemary, or lavender? Consider using the DRY CYCLE to keep your infusion fresher, longer.

Drying your herbs before infusing them preserves flavor and removes moisture, increasing the shelf life of your final infusion.

Take care to use this setting only with botanicals and never with oil or butter in your reservoir.

We recommend drying your herbs at 115°F/46°C for 3 hours.

Activate with LEVO

With certain botanical ingredients, properties of the plant can be activated with exposure to higher heat before

infusing. This changes the molecular structure and elevates natural potency.

Take care to use this setting with botanicals only (and never with oil or butter in your reservoir), or you'll compromise your special ingredients.

This process transforms the construction of the molecule.

Knowing this, you can control the potency of your infusions or create different effects using the ACTIVATE cycle.

Getting Started

1.Plug the power cord into an electrical outlet.

2.Press and hold the POWER button to turn the machine on.

3.Open the lid by pressing down on it gently to release the latch.

4.Press and hold the RELEASE button to remove the reservoir along with all removable parts inside.

5.Rinse all removable parts with warm, soapy water and dry before placing back into your LEVO (see full cleaning instructions on page 15).

6.Make sure the silicone nozzle is securely

re-attached to the reservoir spout. Hold down the RELEASE button while lowering the reservoir back into place, directing the nozzle through the dispense opening. Let go of the

RELEASE button when the reservoir is securely in place.

6.Press the *blinking* CYCLE button to select INFUSE. If you plan to DRY or ACTIVATE before infusing, skip to page 13! LEVO will automatically suggest a default time and

temperature for the INFUSE cycle. You can adjust the time (up to 10 hours) and temperature (up to 200°F/93°C) settings, as needed, by pressing the + and - buttons. Once you’re happy with your settings, press START. Use our handy Time & Temperature Calculator on our website or mobile app for recommendations on suggested infusion settings.

7.LEVO will automatically engage the safety lock when the infusion cycle starts. If needed, you can unlock the lid at anytime during the cycle by pressing the LOCK button and pressing down on the lid to open, pausing your infusion. Closing the lid and pressing START will continue your infusion.

8.Your LEVO will display WARMING UP as it preheats to your desired temperature and then alert you with a sound when the preset temperature has been reached. During the cycle, the display will show the REMAINING TIME and

CURRENT TEMPERATURE.

9.Your LEVO will alert you with a sound when the timer is up and your infusion is complete. The display will read INFUSION COMPLETE. Note that you can change time and temperature or manually end your cycle at any time.

10.Now, you’re ready to dispense your infusion!

Place your container of choice on the mirrored surface under the dispenser and press and hold the DISPENSE button to drain. Allow the infusion to cool for 5–10 minutes before handling.

11.Turn off and clean your LEVO after each use.

The reservoir nozzle is held in place by a pinch valve; the release button opens the valve allowing you to remove your reservoir with ease.

NOTE: You must fully dispense your batch before removing the reservoir for cleaning!

Dry & Activate Instructions

1.Press POWER to turn on.

2.Open the lid by pressing down on it gently to release the latch and double check that the reservoir is properly nested inside your LEVO (See GETTING STARTED Step 6).

3.Remove your Herb Pod and place the Pod Protector inside, flat against the bottom of your pod (you can leave your Pod Protector in while infusing, too). Then add your ingredients, and take care to not pack too tightly. With the silicone cap securely in place, add your packed Herb Pod back to the reservoir, lining up the magnetic strip with PLACE POD HERE text.

4.Press the *blinking* CYCLE button to select

DRY or ACTIVATE.

5.LEVO will automatically suggest a default time and temperature for the selected cycle. You can adjust the time and temperature setting as needed by pressing the + and - buttons (see below for min and max settings). Press START.

Dry cycle can be adjusted up to 175° F/80° C and 10 hours.

The Activate cycle can be adjusted up to 275°F/135°C and 2 hours.

Take careful precaution to only use the DRY/ACTIVATE cycles for treating your botanicals – free of any oil, butter or liquids.

Cleaning & Storage

1.After dispensing your infusion, hold down the RELEASE button near the top lip of the reservoir and lift the reservoir out by placing finger under the lip and pulling straight up. (Make sure you’re not mid-cycle).

2.Place the reservoir and attached silicone nozzle

on the top rack of your dishwasher or set aside to hand wash. For the most thorough clean, you can unscrew the nozzle and place it into the utensils basket in your dishwasher.

3.Place the magnetic stirrer and Herb Pod into the utensils basket in your dishwasher, or set aside to hand wash.

4.After each use, wipe away any spillage from the oil tray beneath the dispenser or residue on the bottom of the top lid with diluted vinegar or your

multi-purpose cleaner of choice. The silicone lid seal is removable and also dishwasher safe.

5.For a complete clean, use a cotton swab after every

few infusions to remove residue from inside the dispensing hole, where your oil is released.

Helpful Tips

LEVO loves to be a feature on your countertop alongside other appliances, but can be easily stored.

Before storing for an extended period, be sure that the

reservoir is freshly clean and dry, the top is closed, and the cord is wrapped around the cord keeper.

Take care to tuck the end of the plug in neatly,

so it does not unravel. If dust collects on the surface, wipe away with diluted vinegar or your multipurpose cleaner of choice.

Important Safeguards

When using electrical appliances, always follow basic safety precautions, including the following: Only use this appliance for its intended use.

PLEASE SAVE THESE INSTRUCTIONS

1.Read all instructions and inspect device and all parts before operating. If any damage is found, do not use and contact LEVO support to arrange for examination, repair, or electrical or mechanical adjustment by an authorized service representative.

2.We always recommend cleaning LEVO components before using, even for the first use.

3.Do not touch hot surfaces. LEVO automatically locks the lid when the heat is on.

4.To protect against risk of electrical shock, do not immerse the device in liquid or handle with wet hands. Do not fill the reservoir past the maximum fill line.

5.Take care to make sure no liquids are in the reservoir when using the DRY or ACTIVATE cycles.

6.Adult supervision is always required, especially during unpacking, assembly, operation and cleaning of device.

7.Unplug power supply if there are any abnormalities while in use.

8.Power off and unplug your LEVO infuser when not in use.

9.Avoid contact with moving parts.

10.Allow the machine to cool before removing the reservoir for cleaning. Clean hot surfaces with caution. A wet sponge or cloth used on hot surfaces can cause steam burns. Some cleaners can produce noxious fumes if applied to hot surfaces. We recommend placing the cool reservoir components in the top rack of the dishwasher.

11.Do not impact or hit any components when cleaning or otherwise disassembling.

12.Keep the power cable away from high temperatures and moisture to avoid aging and damage.

13.Never operate the appliance with a damaged cord or plug, after the appliance malfunctions, or after it is dropped or damaged in any manner.

14.Do not let cord hang over edge of table or counter.

15.Do not place on or near a hot gas or electric burner or in a heated oven.

16.Do not move an appliance containing hot liquids.

17.Do not permanently mount to any surface.

18.The use of attachments not recommended or sold by the manufacturer may cause fire, electric

shock, or injury.

19.The use of infusing solvents (grain alcohol and ethanol) is not recommended by the manufacturer and may cause fire, electric shock, or injury.

20.For household use only. Do not use outdoors.

Troubleshooting

If you have any issues with your machine, check to see whether these troubleshooting instructions solve the issue. If the problem persists, contact us via our website for customer support.

Symptom: My LEVO doesn’t turn on.

Ensure that the power cord is plugged into a wall outlet. In some cases, a household circuit may become overloaded from the use of electrical appliances, causing the outlet to stop supplying power. Try a different outlet that you're sure works, then press and hold the Power button for 3 seconds to turn on the unit.

Symptom: The reservoir was accidentally overfilled and liquid seeped under the reservoir.

No worries! LEVO’s heating mechanism and electronics are protected. Immediately power off and unplug the device. Then, while pressing the RELEASE button, lift the reservoir up and out of the device and set aside. Use diluted vinegar or your multipurpose cleaner of choice to wipe away liquid from the inside of the device and run the reservoir (plus stirrer and pod) through a normal cleaning cycle in your dishwasher before putting back in place. Don’t be alarmed if a small amount of residue causes a mild burning smell the next time the unit is used!

Symptom: I smell burned butter or oil.

It's likely that you spilled some liquid onto the heat plate. This requires additional clean up below the reservoir. Fully dispense any remaining oil or butter before pressing RELEASE to remove the reservoir and set aside. Taking care to wait until unit is cooled, wipe the heat plate with the multi-purpose cleaner of your choice and allow to dry completely before re-placing your reservoir back inside.
