Commercial Machine Installation Set-up-Check List MODELS: BAR-STAR /DIAMANTE/HOTEL V / L / S SERIES
Confirm power requirements are correct and located within 4 feet of machine, check the outlet with a voltage meter prior to delivering the machine.
IMPORTANT: The installation of the metric S/S hose line mated to a non-metric water line will not require an adaptor if you are using a 3/8” water line
Confirm that water is flowing out of the building pipe, then install the water softener and confirm flow from filter is sufficient. A water turnoff valve is mandatory.
Confirm that the water softener levers are in the correct position referring to diagram in carton.
Install the adjustable feet located in the parts box and place the unit in location and level the machine via the legs. An uneven machine will not drain the excess water properly. Install the water line then install the power plug. LEVER MACHINES: Insert the handles and 6 inch chromed extenders onto the machine, the chrome extenders should be tightened with an open end wrench (look at notch at the bottom of the extenders) A loose lever can cause the group to misalign. Occasionally check them.
Hook-up the water line then install power plug. 230V machines do not have plugs attached as codes differ per County/State. Your electrician should advise you which is the correct plug/outlet combination to purchase. Check that the machines wattage and amps match your installed power.
FOR BAR STAR / DIAMANTE MODELS ONLY POWER SWITCH LOCATED ON FRONT PANEL: 0 (12 o’clock position) is the OFF position
Turn the unit into the next position # 1 (2 o’clock) and allow the boiler to fill past the ½ mark. This should take 10 minutes from a dry start (15 minutes w/1/4” pipe) Allow the automatic levelers to raise the water level, do not use the manual boiler fill. Never allow the boiler to go past ¾ from a cold start as water will expand as it warms up. The red light located on the lower left will light up.
Turn the unit to the # 3 position (6 o’clock) and allow the machine to heat-up, this will take approximately 25 minutes. This switch position produces maximum power.
When the pressure gauge(s) located under the water tap on the right side of the machine reads 4 on the pompa & 1 on the Caldaia (boiler), bleed the unit by opening the steam knobs for 30 seconds each, one at a time.
Press the hot water tap/switch or turn knob, allow water to flow into a cup and check the water temperature. Continue to allow water to flow until you hear the water pump operating and view the water level in the sight glass rising.

V Models: If you notice the programmable volumetric coffee lights flashing on & off then turn the unit off completely for 5 seconds and restart, this should reset the machine and the lights will stop flashing. (not applicable on Lever series)
THE FOLLOWING 3 PARAGRAPHS APPLY TO (V) VOLUMETRIC MODELS ONLY
1. BAR STAR models have a hot water tap that is programmed using the program star located in
the first panel grid (on the far left) The stars also program the coffee doses. To Program: Press and hold the star * until it flashes, then press whichever coffee position you want to set. When the desired amount of coffee (or water) has exited stop the flow by pressing the same button again.
2. This will stop the flow of coffee and the machine will set to this dose. Press the buttons firmly
when programming. Allow water to flow from the coffee settings, (no handle) trying all the settings. If satisfied that the machine is operating then continue with the coffee settings below.
3. Cup Symbols on Volumetric units: The 4 symbols on the panel represent, from left to right:
Single (short) shot (using the single coffee handle) Single (long) shot (using the single or double coffee handle) Two single (short) shots (using the double coffee handle) Two single (long) shots (using the double coffee handle)
COFFEE DELIVERY: Fill the coffee basket with fine coffee, experimenting with different grinds may be necessary. Place the correct single or double spout portafilter into the group, turn from left to
right and press the single or double coffee symbol. When the desired pre-set amount has come out the machine will stop the flow automatically.
Lever machine owners: Insert the portafilter handle into the group, making sure it is secure and inserted properly then place a cup or cups under the spouts. Lower the lever and hold down for a second or two then release. The lever will rise up on its own.
S machine owners: Insert the portafilter handle into the group, making sure it is secure and inserted properly then place a cup or cups under the spouts. Lower the side lever and hold down until desired amount of coffee comes out, then raise to close.
HINT: If the coffee is flowing too quickly then the grind is not fine enough. If the coffee is flowing too slowly then the coffee is too fine. A commercial grinder is suggested to obtain the correct coffee grind. Visit www.europeangift.com to review models.
HOT WATER DELIVERY: BAR STAR models are equipped with a programmable switch. M & L models us a knob. S model uses a lever. Refer to factory book to program the rocker switch.
POWER SWITCH MODES: BAR STAR/ DIAMANTE/HOTEL & L & S MODELS Your machine is equipped with a 4-position switch located in the lower front left panel. OFF – Use when transporting the unit 1 - for programing and installation only.

2 - for light use 66% power (Start the unit on # 3 – wait for complete heat up then switch to # 2) 2- Use for night mode. 3 - for heavy use when maximum steam is needed and multiple persons operation.
The # 2 two position is recommended when a single user is operating the machine.
INSTRUCTIONS FOR VOLUMETRIC AND MANUAL UNITS ONLY (NOT LEVER OR S)
Backflush filter. Your group heads should be back-flushed at the end of each day.
This procedure is done by installing the black rubber disc into the bottom of your 2 cup basket
Place a teaspoon of Cafiza or similar product in the empty filter and install the portafilter onto the
group. V Model owners: Tap the star key quickly to activate water flow.
S Model Owners: lower the side lever. Allow the machine to backflush for 20-30 seconds at a time,
tap the star button again to stop the flow of water. Check the handle to see if the descaler has
dissolved. Repeat this procedure with each group
Back-flush instructions for L (LEVER) MODELS:
Perform a back-flush on each group nightly by attaching the handle (with an empty basket inserted)
into the group and tighten. Place a WIDE mouth container, (sufficient to hold 18-20 ozs. of water)
under the group. Lower the lever and allow water to flow into the cup. CAUTION: HOT WATER
will dispense quickly once the lever is lowered, take caution by wearing a long sleeve shirt. Fill the
boiler after each flush.
ALL MODELS:
After backflushing your portafilters and baskets should soak overnight in a solution of Rinza or
similar solution. The steam wands should be kept clean by regularly blowing steam out after each
use and at days end.
The water softener levers should only be touched by a trained technician performing a regeneration.
During normal daily use keep the handles free of used coffee grinds and installed on the groups, this
will allow the handles to maintain the correct temperature.
The top of the machine is naturally designed to stay warm. Place your cups there so they maintain a
warm temperature. OPTIONAL WARMING TRAY; Press the orange button to turn on the top
tray heat.
General Maintenance schedule
