TWO-TIERED HEATED MERCHANDISER
ELECTRICAL CONNECTION
The heated merchandiser is available from the factory wired for 120/208 or120/240 volts, single or three phase, (includes neutral), 220-240 volts(All non-CE models and CE model 123), or 380-415 volts. Refer to tables below for proper power connection.

International units are provided upon installation. If 2 CE units are placed side-by-side, a grounding wire needs to be placed between the equipotental bonding lugs of both units, located under the cutting board brackets.

To avoid electrical shock, the unit must be adequately and safely grounded. Refer to local electrical codes for correct grounding procedures.
A separate disconnect switch with proper capacity fuses or breakers must be installed at a convenient location between the unit and the power source.

On models 125 and 127, the 2 outside air heaters are 300 watts, and the other air heaters are 650 watts.
OPERATION
1. Locate the POWER switch under the cutting board, on the operator side of the merchandiser, and turn it to ON.
2. Turn on the LIGHTS and HEAT switches located in the right and left top corners of the operator side of the merchandiser.
3. Allow at least 30 minutes preheat time before placing product into the merchandiser.
4. The lower and upper heat controls are located above the sliding doors of the operator side of the merchandiser. The lower air temperature setting is shown at all times. Use the UP and DOWN buttons to change settings. The temperature range is 140º F to 210º F (60º-99º C). Recommended starting temperature is 190º F (88º C)
To check the actual air temperature, press the button marked, “Press to view Actual Temp.” Also, if the
controls are locked, the controls cannot be changed until the controls are unlocked. See Special Programming Section of the HMR manual.
5. The set of radiant heaters(upper heat) pointed towards the front, or customer side, of the merchandiser are controlled by the controls marked CUSTOMER SIDE. The set of radiant heaters(upper heat) pointed towards the rear, or server side, of the merchandiser are controlled by the controls marked SERVER SIDE. The upper heat setting is shown at all times and can be changed from settings of 1 to 10 by using the UP and DOWN buttons. For models HMR-125 & 127, the recommeded upper heat setting is 4 for both sides. For the model HMR-123, both recommended settings are 5.
When holding whole chicken in plastic dome containers, do not program an upper heat setting above 4 for models HMR-125 & 127, or above 5 for model HMR-123, or damage to the container could result.

The upper heat settings read 1, 2, 3, etc. 1 meaning the heat is on 10% of the time, 10 meaning the heat is on 100% of the time.
OPERATION WITH PRODUCT
1. Use only pre-packaged whole birds.
2. Rotate food from front to back.
3. Product loaded into the bottom section of the merchandiser can be stacked in a double layer, but only a single layer on the top tier, to get the maximum hold time.
4. Be sure to load product into the merchandiser that is still hot. It must be loaded immediately from a holding cabinet or cooking appliance for the product to hold a safe temperature.
5. Keep sliding doors closed as much as possible to get the maximum holding time for the product.
SHUT DOWN AND CLEAN UP
1. Remove all power from the unit by unplugging the unit from the wall receptacle, or by turning off the wall circuit breaker.
2. Allow unit to cool before cleaning.
3. Remove rear doors and open front glass.
Do not use any abrasive objects (such as steel wool) or abrasive cleaners or products containing chlorine, bromine, iodine, or ammonia chemicals on the stainless steel, as these will deteriorate the stainless steel and may cause food particles to stick to surfaces.
Do not spray the unit with water, such as, with a garden hose, or damage to electrical and elec­tronic components could result.
4. Wipe down wire rack with a soft cloth, soap and water.
5. Wipe down bottom supports from inside merchandiser with a soft cloth, soap and water.
The bottom supports can be removed for more thorough cleaning. Do not use abrasive objects! Replace bottom supports with the black surface down.
6. Clean all interior and exterior surfaces with a soft cloth, soap, and water. Do not use abrasive cleaners!
7. Clean around electrical controls and components with a damp cloth.
8. Clean doors and glass with a non-streaking liquid glass cleaner. Do not use abrasive cleaners!
9. Leave sliding doors open until ready to load and use again.
