Care and Maintenance
To obtain the hi ghest accurac y for measureme nts it is import ant to follow the se tips:
• Calibrat ion is only as good a s the buff er being used. T he pH buffe r values change o ver time once t he sachets are op ened. Fresh bu ffer shoul d be used for each c alibration.
• Rinse the p robe in purifie d water afte r use in pH buff ers and betwe en measuremen ts of samples .
• When the me ter is not in use it is imp ortant to add sev eral drops of stora ge solution to the prot ective cap to ke ep the probe hydra ted. If storage s olution is not avai lable, pH 4.01 or pH 7.01 buffer can b e used.
• For improv ed accuracy it is r ecommended t o calibrate in tw o buffers .
• It is import ant to calibrat e and measure s amples at the s ame temperat ure. A dramatic change in te mperature betw een buffer sol utions and samples t o be tested will give inaccurate readings.
• If fouled, c lean the electro de by soak ing in clean ing solut ion for 20 minutes, th en rinse the t ip and soak in stor age solution at le ast 30 minutes be fore use. Recalib rate after e ach cleaning.
The meter features a low battery indicator. When the battery is running low, the tag will blink on screen. When the battery has been depleted, “Erb” will appear on screen and the meter will turn off.
Place meter in calibration mode. Press and hold ON/OFF until “CLr” is displayed. The meter will now be at default calibration. No tags will be shown in measurement mode until calibration is performed.

Flat Glass Tip
A flat tip optimizes surface contact for measurement on flat sushi, and samples that cannot penetrated.
Open Junction Reference
The open junction design uses a solid gel interface between the sample and internal reference cell. This interface prevents silver from exiting the junction, but also makes it impermeable to clogging, resulting in a fast response and stable reading. Due to this design, the meter can be used for smaller sample sizes as there is no junction to submerge.

pH Sensit ive Glass
If pH 4.01 buffer solution is used as the first point
the value of the buffer is recognized and displayed with the blinking stability indicator.
If pH 7.01 buffer solution is used as the first point the buffer is recognized
with the blinking stability indicator. When the reading is stable, the
stability indicator will disappear and pH 7.01 will be calibrated.
If pH 7.01 is the only calibration point,
finish one-point procedure at right.
If using pH 4.01 as a second point,
continue two-point procedure at right.

Meter will exit to measurement mode and the calibration tag will be displayed.
Two- Point
Use pH 4.01 to perform a twopoint calibration. The value is automatically recognized and displayed with the blinking stability indicator.
When the reading is stable, the stability indicator will disappear. “Sto” will be displayed when the calibration is saved.
Meter will exit to measurement mode and the calibration tags will be displayed.

Meter Overview
Preparation:
The pH elec trode is s hipped wi th a protec tive cap c ontainin g storage s olutio n. Before using the meter, remove the protective cap and condition the elec trode by soaking t he tip (bot tom 1 cm (0.4”)) in pH 7.01 buffe r soluti on for sev eral minut es. Then f ollow the calibration procedure.
• Do not b e alarmed if white c rystals appe ar around the cap. Th is is normal with pH electr odes and they dis solve when rin sed with wate r.
• Turn the m eter on by press ing ON/OFF but ton.
• Remov e the protec tive cap and pl ace the flat t ip of the elec trode full y on the sample to be tested.
NEVER IMMER SE THE ELECTROD E OVER THE MAXIM UM IMMERSION LEV EL.
• For best results, recalibrate periodically.
• Af ter use, rinse the el ectrode with wa ter and store it with a f ew drops of storage solutio n in the protect ive cap.
• Reat tach the prote ctive cap af ter each use.
DO NOT USE DIST ILLED OR DEIONIZED WATER F OR STORAGE PUR POSES.

Sushi rice n eeds to be k ept warm (about 32 °C) fo r best res ults whe n rolling su shi. However, th is can create f ood safet y risks caus ing health dep artments t o crack down on practic es around the handli ng of sushi rice, whic h is often held fo r up to several hour s in the temperature "danger zone". In the sushi p rocess, pH monit oring is considere d to be essentia l and a number of our custome rs are required t o maintain a record o f hold times and pH le vels. Most munic ipalitie s require t hat sushi r ice is mainta ined belo w a pH of 4.6. The procedur es around this standa rd can vary from a full H azard Analysis Critical Control Points (HA CCP) plan for sush i to health depar tment test ing. Fortunat ely, the pH can be controll ed with rice vin egar, a tradition al ingredient use d in sushi rice.
