A flat tip optimizes surface contact for measurement on flat
sushi, and samples that cannot penetrated.
Open Junction Reference
The open junction design uses a solid gel interface between
the sample and internal reference cell. This interface prevents
silver from exiting the junction, but also makes it impermeable to clogging, resulting in
a fast response and stable reading. Due to this design, the meter can be used for smaller
sample sizes as there is no junction to submerge.

Preliminary Examination
Remove the m eter from th e packing mat erial and examin e it carefully t o make sure that
no damage has o ccurred durin g shipment. If not iceable damag e is evident, con tact your
local Hanna In struments O ffice.

Note: Save all p acking material u ntil you are sure that t he instrument fun ctions
correctl y. All defective item s must be returned i n the original pa ckaging with the
supplied accessories.
Meter Overview
Preparation:
The pH elec trode is s hipped wi th a protec tive cap c ontainin g storage s olutio n. Before
using the meter, remove the protective cap and condition the elec trode by soaking t he
tip (bot tom 1 cm (0.4”)) in pH 7.01 buffe r soluti on for sev eral minut es. Then f ollow the
calibration procedure.
• Do not b e alarmed if white c rystals appe ar around the cap. Th is is normal with pH
electr odes and they dis solve when rin sed with wate r.
• Turn the m eter on by press ing ON/OFF but ton.
• Remov e the protec tive cap and pl ace the flat t ip of the elec trode full y on the sample
to be tested.
NEVER IMMER SE THE ELECTROD E OVER THE MAXIM UM IMMERSION LEV EL.
• For best results, recalibrate periodically.
• Af ter use, rinse the el ectrode with wa ter and store it with a f ew drops of storage
solutio n in the protect ive cap.
• Reat tach the prote ctive cap af ter each use.

Intended use
Sushi rice n eeds to be k ept warm (about 32 °C) fo r best res ults whe n rolling su shi.
However, th is can create f ood safet y risks caus ing health dep artments t o crack down on
practic es around the handli ng of sushi rice, whic h is often held fo r up to several hour s
in the temperature "danger zone".
In the sushi p rocess, pH monit oring is considere d to be essentia l and a number of our
custome rs are required t o maintain a record o f hold times and pH le vels.
Most munic ipalitie s require t hat sushi r ice is mainta ined belo w a pH of 4.6. The
procedur es around this standa rd can vary from a full H azard Analysis Critical Control
Points (HA CCP) plan for sush i to health depar tment test ing. Fortunat ely, the pH can be
controll ed with rice vin egar, a tradition al ingredient use d in sushi rice.
