PASTA SOUFFLÉ WITH SALMON
INGREDIENTS:
• 1 horseradish root
• 2 dl sour cream
• 300 g potatoes
• Fresh dill
• 400 g salmon, skinless
and boneless
• 400 g fresh young
cucumbers
• Salt
• Pepper
• 3 eggs
METHOD:
1. Cook the pasta in the cast iron pot. Drain and drizzle with olive oil.
2. Peel, cube, and boil the potatoes. Peel the horseradish, grate it and add to the sour cream. Wash the cucumbers. Remove the seeds at the centre and cut into tiny cubes, leaving the peel on.
3. Combine and mix the boiled potatoes, cubes of salmon, horseradish with sour cream, cucumbers, eggs, fresh dill, salt and pepper. Add the mixture to the pasta and pour into greased cast iron pot.
4. Cook covered in pre-heated oven at 180 °C for 15 minutes. Remove the lid and bake for 15 more minutes. Let the dish rest with the lid off for five minutes. Invert the soufflé onto a wooden board and cut into 4 pieces.

CHEF’S TIP
For the perfect flavour, serve with lettuce (and perhaps other leafy greens) and yoghurt. Trout or smoked tofu can be substituted for the salmon.
