Do not use water on grease fires. Never pick up a flaming pm_. Turn the controls
off. Smother a flaming pan on a surtace
unit by covering the pan completely with
a well-fitting lid, cookie sheet or flat tray: Use a multi-purpose dry chemical or
ti)am-type fire extinguisher. Flaming grease outside a pan can be put
out by covering it with baking soda oi; if available, by using a multi-purpose dry
chemical or flmm-type fire extinguisher. Flame in the oven can be smothered completely by closing the oven door and
turning the oven off or by using a multi- purpose dry chemical or ti_am-Upe fire
extinguisher.
DO NOT STORE OR USE COMBUSTIBLE MATERIALS, GASOLINE OR OTHER FLAMMABLE VAPORS AND LIQUIDS IN
THE VICINITY OF THIS OR ANY OTHER
APPLIANCE.
Do not let cooMng grease or other flmmnable materials accumulate in or near the range. Clema drip trays mid liners after every use.
If you smell gas, the installer has not done a
proper job of checking tot leaks. You can have a small leak and therefi_re a taint gas smell if the connections are not completely fight.
Finding a gas leak is NOT a do-it-yourself procedure. Some leaks can only be timnd
with the burner control in the ON position and fin" wmr protection it must be done bv
a qualified selwice technician. Never use an open flame to locate a leak.
If by some chmlce a burner goes out and gas escapes, open a window or a door to let the room air out. Do not attempt to use the appliance tmtil the gas has had time to dissipate. Follow the instructions in "What to do if You Smell Gas" on page 2.
Do not use almninmn foil to line any part of the oven or cooktop. Using a loft liner could
result in a fire hazard or the obstluction of the flow of combustion and ventilation air. Foil is an excellent heat insulator and heat
will be trapped tmderneath it. This trapped heat can upset the cooking performance and can damage the finish of the oven or the cooktop.
SURFA (;1,2COOKING
Do not heat unopened food containers;
a build-up of pressure may cause the COlltailler to b/llNt.
Set the burner control so that the flmne heats only the bottom of the pml and does
not extend bevond the bottom of the pan. Excessive flame is hazardous. The high BTU burnei_ can easily melt cookware handles.
Hold the hmadle of the pan, using a dry pot holder, to prevent movement of the utensil
when stirring or tm'ning tood.
Always heat fat slowly, and watch as it heats.
Always use the LITE position when igniting the surface burners and make sure the
burnei_ have ignited.
Never leave the surface burners unattended at high flame settings. Boilovers cause
smoking and greasy spillovers that may catch on fire. If the burner flames are smothered
by a severe boilover which afl'ects the ignitor,
unburned gas will escape into the room.
Do not let pot holders come near open flames when rifting cookware. Do not use
a towel or other bulky cloth in place of a pot holder.
To minimize the possibility of burns, ignition of flammable materials and spillage, turn
cookware handles toward the side or back of the range without extending over ac!jacent
b/IYIleI3.
Never block the vents (air opmtings) of the rmage. They provide the air inlet and outlet
that are necessai T fl)r the range to operate properly with correct combustion. Air
openings are located at the top and bottom
of the oven door, in the fl'ont portion of the drip tray and at the bottom of the backguard.

IMPORTANT SAFETY INSTRUCTIONS
Always turn the surface burners to OFF
before removing cookwaJ'e.
Carefully watch foods being fried at a high flame setting.
Foods for frying should be as dry as possible. Frost on fl'ozen foods or n_oisture
on fl'esh fl_ods can cause hot fat to bubble
up and over the sides of the pail
Use the least possible amount of fat for effective shallow or deep fat frying, Filling
the pan too full of fat can cause sl)illovers when tood is added.
Use a deep fat thermometer whenever possible to i)revent overheating tat bevond
the sn/oking point,
Never try to move a pml of hot fat, especially a deep tat fl'yer. Wait until the tat is cool.
When using glass cookwaace, inake sure it is designed tor toi>ot=range cooking.
If a combination of oils or fats will be used in frying, stir together befln'e heating or
as tats melt slowly.
Do not leave may items on the cooktop. The hot air fl'om the vent may ignite
flanlnlable itelns and will increase l)ressure in closed containers, which inav cause theln to burst.
Use proper pma size--avoid pans that are
unstable or easily tipped. Select cookware
having fiat bottoms large enough to l)rol)erly contain tood and awfid boilovers and
sl)illovers and large enough to cover burner grate. This will both save cleaning time and l)revent hazardous aCCtli/ltllations of too(l, since heavy spattering or spillovers left on the range can ignite. Use pans with handles that can be easily grasped and renmin cool.
Keep all plastics away from the top burners.
Do not leave plastic items on the cooktop-- thev may inelt if left too close to the vent.
To avoid the possibility of a burn, alwax:s be
certain that the controls fl)r all burners are at the OFF position and all grates are cool
befl_re atteml)ting to remove them.
When flaming foods under the hood, turn
the fan on.
Grease is flammable. I,et hot grease cool
befl)re attenq)ting to handle it. Avoid letting grease deposits collect in the grill or the griddle drip trays. (_lean these areas after
each rise.
For proper lighting mad performance of the cooktop burners, keep the burner ports
clean. It may be necessary to clean these when there is a boilover or when the burner
does not light, even though the electronic ignitors click.
After clemfing, it is important to make sure the cap and burner port are properly aligned with the burner base. Incorrect alignlnelat will produce poor burner l)erlorn/ance. Never operate the burner without all burner parts in place.
Clean the cooktop with caution. Avoid steatn burns; do not use a wet sponge or cloth to clean the cooktop while it is hot. Solne cleaners produce noxious flunes if applied
to a hot surthce. Follow iualmfi_cturer's directions.
Do not use the grill for cooking excessively fatty meats or products which promote flare-up.
If rmlge is located near a window, do not hang long curtains that could blow over the
surtace burners and create a fire hazard.
Be sure all the range mad/or cooktop
controls are turned off and the appliance is cool befl_re using any type of aerosol cleaner
or cooking spray on or around the appliance. The chemical that produces the sl)raying action could, in the i)resence of heat, ignite OI" Catlse inetal parts to corrode.

Occasionally grease drippings ignite. These drippings will create minor puffs of flame fin"

a spray bottle filled with water to lightly spray the flare-up,
If the flame becomes excessive, remove the ti)od fl'om the grill. I,ower the heat setting.
Replace the tood when the flare-up subsides.
The two-piece cast stainless steel grill grates are reversible. Place the side with the two grooved

For best results, the grate should be seasoned betore the first use. Seasoning will insure a stick-resistant cooking sm'thce. If the grill has not been used for a period of time, it should
be reseasolled.
To season the grill grate:
1 Clean the grate thoroughly with hot, soapy
water to FeIl/OVe }lily IllaIlllf_lCtllI'iIlg oils, etc.
2 Rinse with a mixture of 2 cups water and
1/2 cup white vinegar. Dry thoroughly.
3 Using a heavy cloth, _ub vegetable oil over
tile entire surtace of the rack. Do not use corn oil, as it can get sticky.
4 Place grate into the grill housing. Turn the
burner on to a medimn setting. Turn the burner off when the oil begins to smoke. Allow grates to cool.
5 Repeat steps 3 and 4.
The grill is now ready tot use.
One side of the grates (side A) is ridged and should be used tor foods where wm want the
tat to ttm off, such as steak or hamburger patties. The ridges are sloped so the tht runs
toward the fl'ont of the grill, into a drain hole and down to a drip tray below.
SideA
Tile other side of the grate (side B) is designed fin" delicate ti)ods that need more support while cooking, such as fish.
Food cooked on this side achieves the same flavor as food cooked on an outdoor grill. The

Seasoning the griddle
Using the
griddle
Before using the griddle for the first time, it must be seasoned.
If the griddle has not been used for a period of time, it should be reseasoned.
To season the griddle:
1 Clean the griddle thoroughly with hot, soapy
water to remove any protective coating.
2 Rinse with a mixture of ] quart water and
1 cup white vinegar. Dry thoroughly.
:3 Pore" 1 teaspoon vegetable oil into the center
of the griddle. Do not use corn oil as it can get stick}'. Rub the oil over the entire sm'thce
of the griddle using a heavv cloth.
Before starting to cook on the griddle, be sm'e the drip tray and liners are in place. Select the cooking temperature and preheat
for 15 minutes.
NOTE: X,_q_enthe griddle is properly seasoned, it can be used without any additional shortening.
Howexe_; shortening can be used for flaxor.
4 Turn the control knob to a medimn setting
(350°F.). Turn the heat off when the oil
begins to smoke. Allow the griddle to cool.
Repeat step 3. Be sm'e to cover the entire
surthce with the oil.
6 Repeat step 4. Allow the griddle to cool.
_]I)e the entire surtace of the griddle using a heavy cloth. Apply a very thin layer of
vegetable oil. The griddle is now ready to use.
NOTE: The griddle will take approximately
45 seconds to ignite. Unlike the sm'tace bm'ners, which use electric igniters, the griddle uses a glow bar fl)r ignition. It takes approximately
45 seconds fin" the glow bar to reach
temperatm'e. Gas is only supplied to the griddle
once the glow bar reaches temperature.

Preheating
Use the proper baking pan. The type of finish on the pan determines the amount of
browning that will occur.
Dark, rough or dull pans absorb heat resulting in a browner, crisper crust. Use this tyi)e fl)r pies.
For even cooking and proper browning, there must be enough room fl)r air circulation in the oven. Baking results will be better if baking pans are centered as much as possible rather than being placed to the fl'ont or to the back
of the oven.
Pans should not touch each other or the walls of the oven. _dlow 1- to 1½" space between
pans, between pans and the oven door, and the back or sides of the oven.
Preheat the oven if the recipe calls fi)r it. To preheat, set the oven at the correct temperature--selecting a higher temperature does not shorten preheat time.
Shiny; bright and smooth pans reflect heat, resulting in a lighter, more delicate
browning. Cakes and cookies require this tyi)e of pan or sheet.
Glass baking dishes also absorb heat. When baking in glass baking dishes, the temperature may need to be reduced bv 25°E
If vou use two racks, stagger the pans so one
is not directly above the other. Check the tood
on the bottom rack sooner than the minimmn time. The tood on the lower rack may cook
slightly taster than the tood on the ui)per rack.
Preheating is necessary for good results when
hakim,,_ cakes, cookies, pastr} and breads.
Aluminum
Never entirely cover a rack with almninmn foil. This will distm'b the heat circulation and result
in poor baking. A smaller sheet of foil may be used to catch a spillover by placing it on a
lower rack several inches below the food.
24
Page 25

What is
convection cooking?
In a convection oven, a tan circulates the heated air evenly, over and around the tood.
During convection cooking, both the broil element and the bake element are energized
along with the convection tan. As a result, toods are evenly browned at lower
temperatures and in less time.
Preheating is not necessary lot toods with a bake time over 15 minutes.
Food is heated thster in a convection oven. X4'hen using the convection featm'e, manv tyl)es of food can be cooked at lower
temperatures than those suggested fi)r regular ovens.
Good fi)r large quantities of baked fi)ods.
Good results with cookies, biscuits, brownies, crealn pulik, sweet rolls, angel tood cake and
bread.
Ideal fin" baked fi_ods cooked on two or three shelves, Because heated air is circulated
evenly throughout the oven, fi)ods can be baked with excellent results on two or three
racks at the same time. Multi-rack baking may increase cook times slightly tin" some foods,
but the overall result is time saved. Multi-rack baking provides ve_T good results with
cookies, biscuits and other quickbreads.
Recipe books olten give times and temperatures tot cooking in traditional
thermal ovens. Convection ovens make it possible to reduce the temperature by 25°F.
Check fl_ods tot doneness at the minimum suggested cooking time.
Some package instructions ti)r trozen casseroles or main dishes have been
developed using commercial convection ovens. For best results in this oven, preheat the oven and use the temperature on the package.

To get rid of burned-on food, place the grates in a covered container or plastic bag. Add l/4 cup ammonia and let them soak
ti)r 30 minutes. Wash, rinse well and dry:
Tile grates may also be cleaned in a dishwasher.
Mtbougb they are durable, the grates will
gradually lose their shine, regardless of tile best care you can give them. This is due to
their continual expost|re to high temperatures.
