IMPORTANT SAFEGUARDS
When using ele ctrical appliances, basic safety precautions should always be followed, including the following:
1. READ ALL INSTRUCTIONS.
2. Do not touch hot surface; use handles or knobs.
3. To protect against electric shock, do not immerse control panel assembly, cord, plug or deep fryer in water or other liquid.
4. This appliance is not for use by children. Close supervision is necessary when any appliance is used near children.

6. Always attach breakaway cord to appliance first, then plug into wall outlet. To disconnect, turn the switch, off then remove plug from wall outlet.

IMPORTANT SAFETY TIPS
1. Always keep lid clo sed while deep fryer i s cooking food. Use basket handle and basket release switch to raise and lower basket. Always raise Basket out of hot oil to allow food to drain for 10-20 seconds before opening lid.
2. BEWARE OF STEAM WHEN OPENING LID.
3. Wet food should be dried first with paper towels. Remove loose ice from frozen f oods. Close the lid before fo od is lowered into the oil and while fr ying. Beware of oil splatter ing when food is put into the oil.
4. Keep appliance at least 4 inches (10 cm) away from wall s or other objects during operation. Do not place any objects on top of appliance while it is operating.
5. Be sure oil con tainer is filled to at lea st the minimum oil level. Do not fill above the maximum. Do not operate ap pliance without oil
or with an insu fficient amount of oil. Never pour oil into heated oil container.
6. Do not operate t his appliance if the lid an d the oil container are not completely dry.
7. Keep this fryer out of reach of children w hile in use and away from edges of counter tops where it could be pulled off or pushed over by children.

Breakaway Co rd and Polarized P lug
This appliance features a breakaway cord and polarized plug (one blade is wider than the other). The breakaway cord is designed to quickly disconne ct from the appliance when a pulling force is applied. Note: The breakaway cord can fit into the appliance in only on e direction. Please refer to printing on plug that states “This Si de Up”. To reduce the risk of electric shock, a polarized plug is provid ed. This plug is intended to fit into a polarized outle t only. If the plug doe s not fit into the outlet, rever se the plug. If it still does not fit, contact a qualified electrician. Do not attempt to modify the plug in any way.

EXTENSION CORD USE
An extension co rd or longer detachable c ord is not recommended fo r use with deep -fat fryers.
ELECTRIC POWER
If the electric al circuit is overloaded with other appliances, your appliance may not operate. It should be oper ated on an electrical circuit that is free from other appliances. If you are not sure of the reason for overloa ding or cannot find a sepa rate circuit, contact a qualified electrician.
HOW TO USE YOUR CUISINART

COOL TOUCH
DEEP FRYER
1. This appliance is designed for household use only. It is not intended for commercial use.
2. Before the deep fryer is used for the first time, remove all packaging materials and follow cleaning instructions in this book.
3. Push lid release button to open lid.
4. Lift handle on frying basket up until it locks into place and remove from oil container.
5. Pour approximately 3⁄4 gallon (3 L) of good quality vegetable, corn, canola, soybean, or peanut oil into reservoir until it reaches between the “Min” and “Max” marks inside container. DO NOT OVER-OR UNDER-FILL.
6. Close lid on deep fryer.
7. Attach breakaway cord to the back of the appliance, then plug into outlet.
8. Turn On the Cuisinart
TM
Cool Touch Deep Fryer by pushing the black
rocker switch up.
9. Set the temperature control knob to the desired temperature. The oil “Ready” light will turn green once the oil has reached the desired temperature.
10. When the “Ready” light illuminates, open lid and place basket with handle locked in the upward position, into the basket resting area. Place food into the basket and close the lid. Lower basket into oil by sliding the basket release switch on the basket handle. Note: Do not exceed max fill line on frying basket.
11. Set timer (0 to 30 minutes) to cooking time specified, depending on the recipe. Timer will ring when food is ready. WARNING: The timer does not switch appliance off.
NOTE: The timer will not buzz if set for 3 minutes or less. For
recipes that call for a cooking time of 3 minutes or less, turn the mechanical timer to 5 minutes then return it to the required time and the timer will buzz.
12. Lift handle to raise the basket and look through viewing window to see if the food has reached the desired golden colour. If the food is done, leave basket in locked position and allow oil to drain 10 to 20 seconds.
13. Open lid, remove basket, and place cooked food onto absorbent paper towels. CAUTION: Beware of hot steam when opening lid. NOTE: To preserve oil quality, do not add salt or spices to the food until after it has been removed from the fryer.
14. When cooking is finished, shut down fryer by switching power off.
15. Unplug the breakaway cord from the wall outlet before detaching from the appliance.
CLEANING INSTRUCTIONS
1. Always unplug appliance, detach the breakaway cord and let the oil cool down to room temperature before cleaning.
2. Open the lid and remove it by pulling it upward.
3. Lift basket handle up until it locks into place and remove basket from fryer.
4. Frying basket should be hand washed before first use and should be seasoned in oil before going into the dishwasher for the first time.
5. Remove control panel/heating element by pinching ridged outer area of the basket rest and lifting upward.
6. The control panel should never be immersed in water or other liquids. Clean the outer surface of the heating element with a damp cloth containing mild soap solution or plain water.
7. Carefully remove oil container from housing and pour used oil into suitable container. WARNING: Use care – under edge of oil container is sharp.
8. The lid and oil container are dishwasher-safe. Dry all parts thoroughly after cleaning.
9. The remaining housing should be washed by hand with warm soapy water. DO NOT SUBMERGE IN WATER.
10. Ensure that both the lid and the oil container are completely dry after washing and before use.
11. After cleaning, reassemble oil container, control panel/ heating element, basket and lid into deep fryer housing. The control panel/ heating element must be attached properly to the front of the housing or appliance will not operate.
12. TIP: For ease in cleaning, wipe control panel with damp microfiber cloth. Microfiber cloths are available in most kitchenware stores.
SAFETY FEATURES
The CuisinartTM Cool Touch Deep Fryer is equipped with the following features to ensure safety:
• Safety Interlock – The control panel/heating element must be properly attached to the front of the body or deep fryer will not operate.
• Breakaway Cord – The cord is designed to quickly disconnect from the appliance when a pulling force is applied.
• Thermostat Overload Protection – Your Cuisinart
TM
Cool Touch Deep Fryer is equipped with a thermostat overload protection. If the unit heats up beyond the recommended temperature level, the deep fryer will automatically turn off. To reset, unplug the unit from the wall outlet and allow it to cool down. Remove the control panel and heating element from the unit. CAUTION: Heating element is extremely hot. Allow it to cool thoroughly before removing it. You will find a reset button on the back of the control panel to the right of the heating rod. Using a toothpick or another long, thin object, push the reset button and properly place the control panel back into position. NOTE: The unit will not work if the control panel is not properly mounted. Plug the unit back in, turn on and continue use. If the unit still does not operate, repeat the steps above or call our Service Centre for assistance.

FRYING FROZEN FOODS
•Due totheirextremelylowtemperature,frozenfoodsinevitably lower
the temperature of the oil. For best results, do not overload the basket with frozen foods.
•Follow theinstructionsonthefrozenfoodpackage forcookingtime
and temperature.
•Frozenfoods arefrequentlycoveredwithacoatingofice crystals,
which should be removed before frying. Lower the basket very slowly into the oil in order to ensure that oil does not boil over.
FILTERING AND CHANGING THE OIL

the oil has cooled before cleaning or storing.

TIPS FOR FRYING BREADS
Heat oil to 375°F (190°C) unless recipe specifies otherwise. A cube of bread should brown in approximately 60 seconds. Correct temperature is extremely important. If the temperature is too high, breads will brown before the insides have cooked; if it is too low, the bread will absorb the fat and become soggy and greasy.
Cook only as much as will float easily in the oil. Too much added to the Cuisinart
TM
Cool Touch Deep Fryer will cause the temperature to drop,
and the food will be difficult to turn. Turn bread when it rises to the top of the oil, taking care not to pierce it.
Lift cooked breads from the fryer; allow them to drain for a moment, then place on paper towels to drain.change it. Also, the smoking point (temperature when oil will burn) of the oil lowers with each use.
RECIPES
Applesauce Spice Doughnuts
Makes about 15 doughnuts
12⁄3 cups (400 ml) all-purpose flour ½ tablespoon (7 ml) baking powder ¼ teaspoon (1 ml) salt ½ teaspoon (2 ml) cinnamon 1 pinch ground allspice 1 pinch freshly ground nutmeg

cup (75 ml) plus 1 tablespoon (15 ml) granulated sugar 1 tablespoon (15 ml) unsalted butter, melted ½ cup (125 ml) applesauce 1 large egg oil for frying all-purpose flour for dusting cinnamon sugar or powdered sugar for dusting
Place the flour, baking powder, salt, and spices in a medium bowl and stir with a whisk to blend; reserve. Place the sugar and melted butter in a large bowl. Using an electric mixer on low speed, beat to blend. Add the applesauce and egg; beat until smooth. Add the flour mixture in two additions and blend on medium speed until mixed. Cover dough and chill for at least 1 hour.
Place dough on a generously floured surface and dust with flour. Roll out to ½-inch (1.25 cm) thickness. Cut dough with a floured doughnut cutter and place doughnuts on a waxed paper lined baking sheet that has been lightly floured. Reroll scraps and repeat.

overcrowd. Fry on each side, about 1½ to 2 minutes, turning with a slotted spoon or wire skimmer. Remove and drain on layered paper towels. Pat gently to remove any excess oil, and sprinkle with desired amount of sugar.
Hush Puppies
Makes about 10 to 20
1½ cups (375 ml) cornmeal ½ teaspoon (2 ml) salt ¼ teaspoon (1 ml) baking soda ¼ cup (50 ml) finely chopped white or green onion ¼ cup (50 ml) buttermilk

Heat oil in CuisinartTM Deep Fryer until it reaches 375°F (190°C). While the oil is heating, make the Hush Puppy batter. Let batter rest, covered, for about 1 hour in the refrigerator before using.
Combine cornmeal, salt, and baking soda in a medium bowl. Stir in onion. Add buttermilk and water – stir just to moisten the dry ingredients. Roll into balls about 1 to 2 tablespoons (15 to 30 ml) in size. Working in batches of 5, carefully drop into the hot oil and fry until golden brown, turning once with a slotted spoon or wire skimmer. Remove from oil. Drain on layers of paper towels. Serve immediately.
Spicy Buffalo Wings
Makes 12 pieces
6 chicken wings ¼ cup (50 ml) unsalted butter, melted 2 to 4 tablespoons (30 to 60 ml) “Louisiana style” hot sauce
(such as Frank’s Louisiana Red Hot!
®
) ½ tablespoon (7 ml) cider vinegar blue cheese dressing (recipe follows) and celery sticks, carrot sticks
Cut wing tips from wings and discard or reserve for making chicken stock. Split each wing at the joint and cut through so there are 2 pieces from each wing. Rinse and dry completely. In a large bowl, combine the melted butter, hot sauce and cider vinegar and stir until completely blended.
Heat oil until it is 375°F (190°C). Working with batches of about 5 or 6, carefully place wings into the Cuisinart
TM
Deep Fryer and cook until browned and crispy, about 12 to 12 15 minutes. Remove wings; drain briefly on layered paper towels. Then stir hot, crispy wings into the hot sauce mixture. Repeat with remaining wings. Serve hot with cold vegetable sticks and blue cheese dressing.

200°F (95°C). Place a wire cooling rack on a jelly roll pan in the oven. As wings are cooked, transfer them to the preheated oven to keep them warm. Repeat with remaining wings until all wings have been cooked. When all wings are cooked, add to bowl of sauce and toss to coat completely.
Blue Cheese Dressing
½ cup (125 ml) mayonnaise ½ cup (125 ml) sour cream ½ cup (125 ml) crumbled blue cheese 1 teaspoon (5 ml) finely chopped garlic ¼ cup (50 ml) finely chopped parsley (optional) 1 to 2 tablespoons (15 to 30 ml) finely chopped onion 1 tablespoon (15 ml) fresh lemon juice
Place all ingredie nts in a bowl and stir well to blend. Cover and refrigerate for at least 30 minutes before s erving, allowing flavors to blend.
Fried Calamari
Makes about 2 to 4 servings
1 pound (500 g) cleaned calamari 1 cup (250 ml) all-purpose flour 1 tablespoon (15 ml) finely chopped parsley ½ teaspoon (5 ml) granulated garlic ½ teaspoon (5 ml) each, kosher salt and freshly ground pepper marinara sauce for dipping fresh lemon wedges for garnish
Rinse and drain the calamari; place on thick layers of paper towels, pressing and blotting them completely dry with another layer of paper towels on top. Cut the bodies into 13 ½-inch (1.25 cm) rings, and cut tentacles in halves or quarters if large. Heat oil to 375°F (190°C) in the Cuisinart
TM
Deep Fryer. Preheat the oven to 500°F
(260°C). Line a cookie sheet with a triple thickness of paper towels.
Place the flour, parsl ey, granulated garl ic, salt, and pepper in a large, resealable food storage bag. Working with abou t a quarter of the calamari at a time, drop calamari into the bag, seal and shake. Squeeze the side s of the bag to completely co at the calamari. Take care that the pi eces are individually coated and not stuck together. Remove calamari f rom the bag and place them on a baking sheet lined with waxed paper. Repeat until all of the c alamari have been coated evenly with the flour mixture.
Gently add the calamari to the hot oil, abo ut ½ to ¾ cup (125 to 375 ml) at a time, t rying to let all of the p ieces drop in separately. Do not crowd. The calamar i will be pale golden and just cooked in about 40 to 60 seconds. Do not overcook, as they will become tough. Lift the calamari out, using a slotted spoon or metal skimmer, and drain in a single layer on pr epared cookie sheet. Rep eat with the remaining calamari. When all the calamari have been fried, pat them all dr y with the paper towels an d then remove. Reheat them in the preheated oven
for several minutes. Sprinkle lightly with salt, garnish with lemon wedges, and se rve with warm marinara sa uce for dipping.
Herbed Beer Batter Onion Rings
Makes 2 to 4 servings
1 cup (250 ml) lager or ale 1 cup (250 ml) all-purpose flour ¼ cup (50 ml) chopped fresh parsley ½ tablespoon (7 ml) fresh thyme 1 teaspoon (5 ml) finely chopped fresh garlic ½ teaspoon (2 ml) kosher salt 1 medium white onion oil for frying flour for dusting
In a medium bowl, whisk the beer into the flo ur until smooth. Stir in the parsley, thyme, and garlic. Let batter stand 3 0 minutes. Stir in salt.
Remove and discard onion skin, stem, and root ends. Cut onion crosswise into ½- inch (1.25 cm) thick slices. Separate sl ices into rings. Toss lightly with flour.

Deep Fryer until reaches 375°F (190°C). Working with about 2 to 4 rings at a time, dip each ring into batter, and allow excess to drip off. Carefully lower coa ted onion rings into deep frye r, one at a time. Fry until golden, turning as needed, about 1 to 2 mi nutes. Lift out with tongs and place on layered paper towels to drain. Sprin kle with kosher salt while h ot and repeat with remaining batches. Serve.

Better than Fast Food French Fries
Makes about 3 to 4 servings
1 russet potato kosher salt and freshly ground pepper to taste vegetable or peanut oil for frying
Heat oil in Cuisinart™ Deep Fryer to 325°F (165°C).
Cut potato into uniform French fry cut uniform sticks, (about 6 x 6 mm). As you cut, place the potatoes in a bowl of ice water to keep them from turning brown.
Drain and dry the potato strips completely and thoroughly. If they are wet at all the oil will spatter and spit. Fry the potatoes in small batches. Cook for about 3 minutes, remove and drain on layers of paper towels.
Increase the oil temperature to 375°F (190°C). In small batches again, fry the potatoes for a second time, this time about 4 minutes, until golden and crispy. Drain on fresh layers of paper towels. Season to taste and serve immediately.
Crispy Chicken Fingers with Honey
Mustard Sauce
Makes 2 to 3 ser vings
2 tablespoons (30 ml) kosher salt 2 tablespoons(30 ml) brown sugar 1 cup (250 ml) boiling water 12 ice cubes 2 skinless, boneless chicken breast halves 1 cup (250 ml) all-purpose flour
½ teaspoon (2 ml) kosher salt ¼ teaspoon (1 ml) freshly ground pepper ¼ teaspoon (1 ml) paprika ¼ teaspoon (1 ml) granulated garlic powder ¾ cup buttermilk or milk
Honey Mustard Sauce
½ cup (125 ml) honey ¼ cup (50 ml) Dijon mustard (regular or grainy)
Combine salt, sugar and boiling water in a large heat-proof bowl. Stir until sugar and salt are completely dissolved. Add ice. Cut chicken into ½ x 2- inch (1.25 x 5 cm) strips. Combine the flour with the salt, pepper, paprika, and granulated garlic. Blend honey and mustard to make honey mustard sauce.
When ready to cook, drain chicken and pat completely dry. Heat oil to 375°F (190°C). Mix flour and all seasonings in a shallow bowl. Dip the drained and dried chicken strips in milk and roll in flour to coat well. Place strips on a plate. Carefully place the chicken strips in the hot oil in batches. Cook, tur ning once, for about 3 to 4 minutes per side. Drain on layers of paper towels and serve with honey mustard sauce.
