What is espresso?
The term espresso is used to describe more than just a drink.
It’s a Roast of Beans

It’s a Roast of Beans
Espresso refers to coffee beans that have been specifically roasted for use in espresso machines. Before roasting, all coffee beans are green. During the roasting process, the beans progress from light to dark in color, depending on the length of time and temperature of the roasting process.
At 400°F, the chemistry of the beans change and true roasting begins. As the heat reaches 450-500°F, acidity is lost and the beans acquire more body and a heavier texture. At higher temperatures, the natural oils rise to the surface of the beans. “Espresso” roast beans are typically roasted to near black and are shiny with oil.
As espresso becomes more and more popular, the number of independent roasters increases. With this change comes an expansion in the variety of espresso roasts being produced.

It’s a Brewing Method
Espresso refers to a method of “brewing” the ground espresso beans. Unlike standard coffee, espresso is brewed one cup at a time. The dark roasted, finely ground fresh espresso beans are firmly packed or “tamped” into a brewing chamber. Hot water (185°F) is forced through the brewing chamber under pressure (130psi). Perfectly executed, this process takes approximately 12-20 seconds for a single “shot” (1-ounce) of espresso and 16-24 seconds for a “double” shot (2 ounces).
It’s a Beverage
Espresso is a beverage. When properly brewed, espresso beans yield a thick, highly aromatic liquid capped with a golden-brown dense froth or “crema.” A single shot is approximately 1 ounce of espresso and a double shot yields approximately 2 ounces of espresso.
Once a shot of espresso is “extracted,” it can be served alone in a warmed demitasse cup, mixed with steamed milk, foamed milk, iced milk, hot water, and/or a variety of flavored syrups to make any combination of delicious beverages.
As espresso increases in popularity, so do the combination of espresso-based beverages.

Make it a Double Shot
Adding the term “double shot” when ordering an espresso-based beverage simply means
more espresso
. Typically the same size cup is used. For example, a double
latte is 2oz of Espresso and Steamed Milk.
Make it a Tall
Adding the term “tall” simply means remains the same. For example, a single tall latte is 1oz of espresso and steamed milk in a large cup.

Flavored espresso drinks
Flavored espresso drinks are extremely popular. Following are some favorites. One ounce of syrup is added the cup prior to mixing the drink.
Vanilla Latte
Latte flavored with vanilla syrup.
Mocha
Latte flavored with chocolate syrup.
Almond Mocha
Caffé Latte flavored with equal portions chocolate and almond syrup
Iced Drinks
Iced drinks are also very popular. In many locations over 50% of the espresso drinks sold are Iced Mocha’s or Iced Lattes. Cold milk and espresso are poured over a cup of ice.

Espresso Terminology
Acorto From the Italian “accorta,” meaning clever
Americano A regular shot of espresso mixed with hot water
Barista Highly trained espresso machine operator; espresso bartender.
The skill of the barista is the ultimate determinant of how well an espresso or espresso drink is made
Blend A mixture of two or more individual varieties of coffee
Breve Caffe Latte made with half and half rather than milk
Cappuccino Espresso layered with steamed and foamed milk
Crema The caramel colored foam that appears on top of a shot of
espresso during the extraction. The crema will dissipate as the shot rests after brewing. The crema helps retain the aromatics and flavors of the espresso within the cup - the presence of crema indicates an acceptable extraction.
The caramel-colored crema layers the top of the espresso shot , coats the side of the cup almost like syrup and lingers as the drink is sipped.
A dark brown crema with a white dot or black hole in the middle is a sign the espresso has been over-extracted and will taste harsh and bitter.
A light-colored crema indicates an under-extracted espresso that will taste weak.

Cupping Evaluating brewed coffee by taste, smell and appearance,
similar to wine tasting
Demitasse A small (1/2 size) cup used for serving espresso. Demitasse is
French for 'half cup'.
Dose The amount of ground espresso used in the brewing process.
Espresso Comes from the Latin word “Expresere,” which means, “to press
out.” A brewing method that extracts the heart of the coffee bean. See: What is Espresso.
Extraction The espresso brewing process. The hot water is forced under
pressure through the ground coffee and “pulls out” the flavor and essence.
Latte/ “Caffe Latte”
Macchiato Espresso shot “marked” with a small amount of foamed milk
Mocha Latte with chocolate syrup added
Shot A serving of espresso, typically 1oz. A double shot is typically

Tamping Packing the espresso grounds into the filter
Espresso mixed with steamed milk

Coffee that has been exposed to oxygen for too long becomes flat and has a cardboard taste.

The Model 1500s/1000i
Pouring a steaming hot latte or cappuccino starts with the push of a button. Acorto super-automatic espresso machines will grind fresh whole beans, brew the espresso, steam and froth fresh milk and deliver a perfect freshly brewed espresso beverage in less than 60 seconds.
In 1990, Acorto introduced the first fully automated espresso machine in Seattle, Washington. The innovative machine earned Acorto several patents and broke new ground by incorporating the grinding and brewing of fresh espresso, the steaming and frothing of milk, and the “on board” refrigeration of milk, all in one machine.
Acorto super-automatic espresso machines are used in a wide variety of locations ranging from corporate cafeterias, universities, hospitals; to casual dining and fine dining restaurants; to convenience stores, hotels, supermarkets; to cruise ships, ski resorts and airports.
Because the Acorto is completely automatic, computer-controlled and easy to clean, minimal training is needed to run and maintain the machine. Our customers are able to offer freshly brewed, premium quality espresso drinks around the clock.

The Sub-assembly Components
CPU
The Central Processing Unit (CPU) acts as the “brain” of the Model 1500s/1000i and controls all functions within the machine.
Milk Pump Assembly
The milk pump assembly provides all milk delivery operations.
Cooling Module
The cooling module assembly maintains the desired temperature inside the refer unit.
Fresh Water Bin
The fresh water bin is used for fresh water when the unit is soft-plumbed.
Drain Water Bin
The Drain Water Bin is used to catch waste water when the unit is soft-plumbed.
Brewgroup assembly
The brewgroup assembly is where all espresso brewing functions take place.

Water Pump & Motor Assembly
The water pump & motor assembly are responsible for providing water at 140 psi.
Grinder
The grinder is responsible for grinding and delivering the espresso beans to the brew­chamber.
Component Tree
The component tree is where various components such as the motor capacitors, valves and flowmeter are located.
Steam Tank Assembly
The steam tank assembly is where all steam is produced and the brew water is brought to the desired temperature.

#1 - LCD DISPLAY
Displays drink selection and machine status messages.
#2 – ON / OFF
Pressing the
ON / OFF
button will either place the machine in the ON or OFF mode. In the ON mode, the LCD will display “Please Wait” or “Select Drink”. “Machine Off” will be displayed in the OFF mode.
#3 - STOP
If the machine is pouring a coffee drink, milk, hot water, or performing a milk clean, pressing the
STOP
button will stop that operation. The message "Stopping" will be
displayed on the top line of the LCD display and the Stop LED will be lit. Pressing
STOP
when an option has been selected, but no drink is in progress, will reset the
option to its default state. The LCD display will return to “Select Drink”.
#4 - HOT MILK
When the
HOT MILK
button is pressed once, "Steamed Milk" or “Foamed Milk” depending on program setting is displayed on the bottom line of the LCD display and steamed or foamed milk is poured from the delivery nozzle. Pressing the button a second time or the

STOP
button stops the pouring of milk.

#5 - HOT WATER
When the
HOT WATER
button is pressed once, hot water is poured from the water delivery nozzle. Pressing this button or the “Stop” button a second time stops the pouring of hot water.

NOTE
Hot water cannot be poured simultaneously with coffee and/or milk drinks.
When coffee or milk is poured, hot water dispensing is inhibited.
#6 - DOUBLE
Pressing the
(OPTIONS)
DOUBLE
button before a coffee drink (espresso, latté, or cappuccino) will produce a “Double Shot”. The message "Double" will be displayed on the top line of the LCD display and the
DOUBLE
button LED is lit. The default mode for
this option is OFF.
#7 - TALL (OPTIONS)
Pressing the
TALL
button before a milk drink (latté or cappuccino) causes the unit to fill a larger cup. The message "Tall" is displayed on the top line of the LCD display and the
TALL
button LED is lit. This option does not have any effect on the espresso
selection. The default mode for this option is OFF.
Example: Pressing “Double, Tall, Caffe Latté”, will produce a Tall latté with two shots of espresso.

When the line of the LCD display, the

start button is pressed, "Espresso" is displayed on the bottom

#11 – CLEAN – (ON/OFF)
Pressing the
CLEAN
button until the message “Shutdown Clean” appears will start a “Shutdown Clean” cycle. When a “Shutdown” clean is in process “Shutdown Clean” will be displayed on the top line of the LCD display. Once a “Shutdown” clean is started, it cannot be stopped.

button will start a milk clean cycle. When a “milk clean”
is in process “Milk Clean” will be displayed on the top line of the LCD display.

Soft-plumbed or hard-plumbed configuration
The model 1500s/1000i has the capability of being plumbed directly to a buildings water supply and/or drain system or configured as a “self-contained” unit using the on-board fresh water and drain bins. It’s possible to use a combination of these features when installing a model 1500s/1000i.

The model 1500s/1000i have a built-in refrigeration system capable of accommodating one gallon of milk using off the shelf containers.

Cleaning Cycles
While the Acorto Super automatic espresso machines are capable of producing great espresso drinks at the touch of a button, it is important to perform the daily cleaning routines to insure consistent drink quality and optimal machine performance.
These Cleaning routines are:
Milk System Cleaning Cycle
Shutdown Cleaning Cycle (Brew-group Cleaning)
Automatic cleaning cycle
Cleaning Cycle Timers (reminders):
Beginning with software version 5.1 the model 1000i has built-in “required cleaning cycle” timers. These timers monitor the amount of time that has elapsed since the last time a “Milk” or “Shutdown” clean cycle has been performed.
If 24 hours has passed since a milk or espresso cycle has been run, the message(s) “Run Milk Clean” and/or “Run Brewer Clean” are posted on the display. These messages will flash on the display for 2 hours while still allowing normal operation of the unit. After the 2-hour grace period has elapsed, the machine will “lock” into one of the cleaning cycles and no machine function will work until all cleaning cycles have been performed.
