1. INFORMACIÓN GENERAL IMPORTANTE
El presente manual hace referencia a los siguientes modelos de la línea Horeca&Food
de Zumex:

• Los datos específicos de su exprimidora Zumex (tensión, frecuencia y otros datos
de interés), se encuentran en la Etiqueta de Identificación que encontrará tanto en
la portada de este manual como en la propia máquina.
• Recuerde que para cualquier consulta técnica, debe ponerse en contacto con su
Distribuidor habitual / Servicio de Asistencia Técnica Oficial, mencionando siempre
el Número de Serie de la Etiqueta de Identificación de la máquina.
• Antes de proceder a la limpieza de la máquina o realizar cualquier mantenimiento
desconéctela siempre de la red.
• Zumex adopta las medidas necesarias para que las máquinas puestas en el mercado
sean recogidas de manera selectiva y tengan una correcta gestión ambiental. Por
favor póngase en contacto con su distribuidor autorizado de Zumex para desechar
correctamente estas máquinas.

3. GARANTÍA
• ALCANCE DE LA GARANTÍA: Esta máquina está
garantizada por un periodo de dos años contra toda reclamación
por fallos de materiales o de construcción que perjudique su
buen funcionamiento, siempre que no haya manipulación en su
interior o en sus mecanismos. Se excluyen de la presente
garantía los conceptos detallados a continuación.
• EXCLUSIONES: Mano de obra, desplazamiento, transporte,
piezas deterioradas por desgaste natural a consecuencia del
uso, así como daños que sean resultado de un mal uso o de su
incorrecta instalación, y averías producidas por causas de
fuerza mayor.
• La manipulación en la Etiqueta de Identificación de la máquina
anula la presente Garantía. Asimismo, dado que sólo el personal
de Servicio de Asistencia Técnica Oficial, está cualificado para
manipular esta máquina, esta garantía quedaría sin efecto en
el caso de que otras personas la manipularan.
4. INSTRUCCIONES DE UTILIZACIÓN
4.1 PREPARACIÓN
Para comenzar a exprimir deberá seguir los siguientes pasos:
1º - Desembale su exprimidora y colóquela sobre una superficie lo más horizontal
posible.
2º - Asegúrese de que la tensión de la red coincida con la indicada en la
etiqueta de identificación de la máquina que encontrará tanto en la portada
de este manual como en la propia máquina.
3º - Modelo Zumex Autoservicio Barra
• Sobre la cesta de alimentación de la máquina encontrará: el suplemento
base y el grifo frontal inox. En el interior de la base de la máquina encontrará
las cubetas de cortezas y la bandeja posavasos con su filtro.
• Para proceder a la instalación, coloque la máquina sobre el suplemento
base, esto es necesario para elevar la máquina y que el grifo funcione
correctamente.
• Enrosque el grifo, detalle Fig. 2
la máquina que, como observará, está dotada de salida frontal en forma de
rosca para fijar a ella el grifo.
• Sitúe las cubetas de cortezas a ambos lados de la máquina debajo de las
caídas de cortezas y la bandeja posavasos con su filtro debajo de la salida de
zumo.

• Para dirigirse a nuestro Servicio Técnico, será
indispensable mencionar el Nº DE SERIE de la Etiqueta
de Identificación.
4º - Modelo Zumex Autoservicio
• Al adquirir una exprimidora Zumex Autoservicio usted recibirá dos bultos.
Desembale ambos bultos, en uno encontrará la exprimidora y en otro el mueble.
• En la cesta de alimentación de la máquina encontrará el grifo frontal inox,
desembálelo y resérvelo para montarlo más adelante.
• Una vez desembalado el mueble retire los tornillos de las escuadras de
sujeción Fig.1
del mueble se encuentran las caídas de cortezas y la bandeja de goteo del
mueble con su filtro.

• Para proceder a la instalación, bloquee con el pedal de freno las ruedas
delanteras del mueble y así evitar que se mueva durante la instalación, detalle

las esquinas interiores de la base de la máquina con los dos tacos de goma
del mueble, de ese modo coincidirán los agujeros de las escuadras de fijación
con los de la máquina. Ahora podrá fijar la máquina con los tornillos antes
reservados. Fije la bandeja de goteo con su filtro al mueble.
• Coloque las caídas de cortezas, Fig. 2.

5º - Modelo Zumex Fresh
• Al adquirir una exprimidora Zumex Fresh usted recibirá dos bultos. Desembale
ambos bultos, en uno encontrará la exprimidora y en otro el mueble.
• Una vez desembalado el mueble retire los tornillos de las escuadras de
sujeción, Fig.1, y resérvelos para más tarde. Prepare los siguientes componentes
que encontrará dentro del cubo de residuos, en el interior del mueble (para
identificación de piezas ver apartado 5 del manual):
Caídas de cortezas: Desembale y reserve para la instalación
Depósito Fresh, bandeja goteo con filtro, tapa bomba, pistón grifo, junta
grifo, palanca mando y placa de enganche: reserve todos estos
elementos para montaje del grupo dispensador.

• Una vez fijada la máquina sobre el mueble, acceda al registro de la parte
trasera del mueble desenroscando el pomo, Fig. 4. Cuando quite la tapa, por
la parte interior, verá una base de conectores, conecte la máquina exprimidora.
Conecte también el cable fotocélulas a su homólogo de la máquina. Cierre el
registro trasero del mueble.
• Monte el dispensador del grupo enfriador siguiendo este orden:
1. Monte el pistón-junta y la palanca en el depósito siguiendo los
movimientos numerados según dibujo adjunto.
2. Coloque el depósito.
3. Ajuste la tapa bomba en el interior del depósito con la flecha
apuntando hacia usted.
4. Fije la placa de enganche metálico asegurando con ella el depósito.
• Regule las fotocélulas en función de la cantidad de zumo que usted requiera
almacenar en el depósito, Fig.5.
• Fije la bandeja antigoteo al mueble y coloque las caídas de cortezas laterales.
6º - Conecte el cable de la máquina a un enchufe normalizado provisto de
toma de tierra.
7º - Asegúrese de que la cubierta esté bien colocada, de lo contrario los
detectores de seguridad de la máquina harán que ésta no se ponga en marcha.

Devuelva el cubo de residuos vacío al interior del mueble.
• Para proceder a la instalación, bloquee con el pedal de freno las ruedas
delanteras del mueble y así evitar que se mueva durante la instalación, detalle

• Sitúe la máquina sobre el mueble, Fig. 3, haciendo coincidir las esquinas
interiores de la base de la máquina con los dos tacos de goma del mueble, e
introduciendo los dos cables ( cable de alimentación y bus fotocélulas) por el
orificio central. Ahora podrá fijar la máquina con los tornillos antes reservados.

4.2 FUNCIONAMIENTO
Funcionamiento en los modelos:
Zumex Autoservicio Barra
Zumex Autoservicio
• Llene el alimentador de naranjas y ponga un vaso o jarra bajo la salida de zumo
• Esta máquina dispone de un selector MAN/AUTO que le permite trabajar de dos
maneras:
Si selecciona MAN pondrá la máquina en marcha cuando accione el grifo
Si selecciona AUTO trabajará con el pulsador ON/OFF
Funcionamiento en el modelo:
Zumex Fresh
• Llene el alimentador de naranjas.
• Accione el pulsador ON (verde). Las fotocélulas detectarán la ausencia de zumo en
el depósito y harán que la máquina se ponga en marcha automáticamente. El exprimido
continuará hasta que la máquina detecte el nivel de zumo seleccionado mediante las
fotocélulas.
• Encienda el grupo enfriador accionando el interruptor que se encuentra a la izquierda
de la salida de zumo del depósito. Puede regular la temperatura del zumo mediante
el regulador situado a la derecha, gírelo en sentido horario para más frío y en contra
del sentido horario para menos frío.
• Accione la palanca del depósito para llenar un vaso o jarra. Tras un servicio el nivel
del depósito bajará y la máquina se pondrá en marcha automáticamente hasta llenar
de nuevo el depósito al nivel deseado. Para interrumpir este proceso automático de
detección de zumo pulse el botón OFF (rojo).
4.3 LIMPIEZA
Para una correcta limpieza deberá seguir los siguientes pasos:

1- Desconecte la máquina de la red.
2- Desmonte la cubierta delantera.
3- Desmonte el portacuchillas (Fig. 6) tirando hacia Vd., desde el asa.
¡Atención! maneje esta pieza con mucho cuidado, ya que podría
cortarse.
4- Saque de sus soportes las cuñas extractoras de cortezas (Fig. 7).
5- Desmonte los tambores de exprimido por parejas, desenroscando
previamente los volantes que los sujetan (Fig. 8).
6- Desmonte los filtros de zumo (Fig.9 y Fig. 10).
7- En los modelos con mueble desmonte las caídas de cortezas y el
depósito en el caso de Zumex Fresh.
• Todas las piezas, EXCEPTO LA CUBIERTA Y LAS PIEZAS DEL DISPENSADOR FRESH,
pueden introducirse en el lavavajillas para su lavado.
• La limpieza de la zona de exprimido, de la cubierta y del depósito de zumo, deberá
hacerla usando una bayeta suave empapada con agua y jabón apto para vajillas.
• Después, aclare con abundante agua limpia para que no queden restos de jabón.
• Una vez terminado el proceso de limpieza, deberá montar todos los elementos en
orden inverso a su desmontaje. Asegúrese de que todas las piezas están correctamente
ensambladas y sujetas.
• Para limpiar el interior del grifo inox, llene la cubeta de agua limpia y accione el grifo,
de esta forma eliminará los restos de zumo y pulpa que puedan encontrarse en la
conducto del grifo. Para una limpieza más profunda desmonte el grifo de la cubeta inox.
• Recuerde que cada extractor (Fig. 7) sólo encaja en un lado, por lo que no son
intercambiables. Cuando los coloque asegúrese de que la pala de la cuña entre hasta
el fondo en la ranura del tambor de exprimido macho.

• Con objeto de evitar la acumulación de cera, es importante limpiar frecuentemente
el alimentador de fruta (Fig. 11).
• En los modelos con mueble asegúrese de limpiar la tolva y el interior del mueble
asegurándose de que no queden cortezas ni restos de pulpa.
RECUERDE:
• No introducir la cubierta delantera ni las piezas
del dipensador fresh en el lavavajillas, para su
limpieza puede utilizar una bayeta suave
empapada en agua con jabón apto para vajillas.
En ningún caso deberá utilizar abrasivos ni ningún
producto anti-cal.
• Para limpiar el interior del grifo, llene la cubeta
con agua limpia y accione el grifo, de esta forma
eliminará los restos de zumo y pulpa que puedan
encontrarse en el conducto del grifo.

CONSEJOS IMPORTANTES DE SEGURIDAD
Cualquier acción para desbloquear la máquina debe realizarse desconectando la misma de la red.
Para evitar accidentes no manipule la máquina para hacerla funcionar sin los detectores de seguridad de la cubierta protectora.
La cubierta actúa sobre los detectores de seguridad. El correcto funcionamiento de los detectores de seguridad
debe ser testado periódicamente, para ello, estando la máquina en marcha, retire la cubierta y compruebe que la
máquina se para. Si al llevar a cabo esta prueba la máquina no se para, avise al Servicio Técnico.
Si el cable de alimentación está dañado, no lo manipule, avise al Servicio Técnico.
Cuando mueva un conjunto de máquina y mueble (Zumex Autoservicio y Zumex Fresh):
Desbloquee las ruedas delanteras del mueble.
Nunca empuje la máquina, empuje el mueble. Nunca tire del mueble hacia usted.

1. GENERAL INFORMATION
This manual describes the general information for the following models of Zumex’s
Horeca & Food line:

• The specific data of your Zumex juicer (voltage, frequency and other important data)
are located on the ID label, found on the first part of the manual and on the unit.
• Contact your Distributor / Official Technical Support Service for any technical
questions you might have, providing the Serial Number shown on the ID Label of the
unit.
• Disconnect the unit before carrying out any cleaning or maintenance procedures.
• Zumex adopts all measures required to collect units that are not in operation,
guaranteeing the correct environmental management practices. Please, contact an
authorized distributor of Zumex to discard these units.
• Zumex Marketing Department will address all comments and suggestions you might

3. WARRANTY
• SCOPE OF THE WARRANTY: The unit has a two-year
warranty against defects and construction problems that could
harm the correct operation, provided that the inner parts or
mechanisms have not been manipulated. The following are
excluded from the warranty.
• EXCLUSIONS: Labor, trips, transport, parts that have become
deteriorated due to natural wear as a consequence of use, as
well as any damage resulting from the incorrect usage or
installation of the unit and faults caused as a result of force
majeure.
• Any incorrect handling of the ID Label will make the Warranty
void. Likewise, the warranty will also be void if other persons
handle the unit, since only the Official Technical Support Service
is qualified and authorized to do so.
• Always provide the SERIAL Nº on the ID Label when
contacting the Technical Support Service.
4. INSTRUCTIONS FOR USE
4.1 PREPARATION
To operate the juicer, follow these steps:
1 - Remove the packaging and place the unit on a flat surface.
2 - Use the correct voltage, as described on the ID label of the unit and on the
first page of the manual.

• On the feeding basket of the machine you will find the following: base
supplement and stainless steel front tap. Inside the base of the machine you
will find the peel containers and glass tray with its filter.
• To install the machine, place it on the base supplement, which is required to
raise the machine and for the correct operation of the tap.
• Screw the tap, as shown in Fig. 2

• Place the peel containers on both sides of the machine under the peels and
the glass tray with its filter under the juice outlet.
4 - Zumex Autoservicio
• When you purchase a Zumex Self-Service machine, you will receive two
packages: Open both packages, which will include the juicer and the base
stand.

• The feeder basket of the machine includes the stainless steel front tap, remove
the package and keep it for assembly at a later stage.
• After removing the packaging of the base stand, remove the screws of the
fixing bracket

• To install these elements, block the front wheels of the base stand with the
brake pedal to avoid it from moving during the installation, details in Fig. 1

Fix the machine with the screws. Fix the drip tray with its filter to the base
stand.

5 - Zumex Fresh Model
• When you purchase a Zumex Fresh machine, you will receive two packages:
Open both packages, which will include the juicer and the base stand.
• After removing the packaging of the base stand, remove the screws of the
fixing bracket, Fig. 1 and keep it for assembly at a later stage. Prepare the
following components that will be inside the waste container, inside the base
stand (see section 5 of the manual to identify the elements):
Peel container: Remove the packaging and reserve for assembly.
Fresh deposit, drip tray with filter, pump cover, tap piston, tap joint,
control lever and fixing plate: reserve these elements for the assembly
of the dispenser group.
Place the empty waste container inside the base stand.

• Assemble the dispenser of the cooling group in this order:
1. Assemble the piston-joint and the lever to the deposit, following
the instructions described in the attached diagram.
2. Place the deposit
3. Adjust the cover of the pump inside the deposit with the arrow
pointing towards you.
4. Attach the metallic fixing plate to fix the deposit.
• Adjust the photocells, in accordance with the quantity of juice you wish to
store in the deposit, Fig. 5.
• Fix the drip tray to the base stand and place the lateral peel containers.
6 - Connect the machine’s cable to a standard socket with a ground connection.
7 - Make sure that the cover is placed correctly; otherwise the safety detectors
of the machine will prevent it from starting.

• To install these elements, block the front wheels of the base stand with the

through the central opening. Fix the machine with the screws.
• After fixing the machine on the base stand, open the back cover of the base
stand by turning the knob counter-clockwise, Fig. 4. When the cover is removed,
you will see the connectors inside. Proceed to connect the juicer. Also connect
the photocell cable to its socket inside the machine. Close the back cover of
the base stand.

4.2 OPERATION
Operation of the models:

Zumex Autoservicio
• Fill in the orange feeder and place a glass or jug under the juice outlet.
• The machine has a MAN/AUTO selector that provides two operation modes:
In the MAN mode, the machine will operate when the tap is used.
In the AUTO mode, the machine will operate with the ON/OFF push-button
Operation of the model:
Zumex Fresh
• Fill in the orange feeder.
• Press the ON (green) push-button. The photocells will detect the absence of juice
in the deposit and the machine will be started automatically. The juicing process will
continue until the photocells detect the juice level selected.
• Start the cooling group by pressing the push-button placed on the left of the juice
outlet of the deposit. You can adjust the temperature of the juice with the regulation
device located at the right; turn it clockwise to increase the cooling level and counterclockwise to reduce it.
• Press the lever of the deposit to fill a glass or jug. After one service, the level of the
deposit will go down and the machine will start automatically until a new deposit is
filled to the desired level. To stop the automatic juice detection process, press the OFF
(red) push-button.
4.3 CLEANING
The following steps must be carried out for the correct cleaning of the unit:
1-Disconnect the machine.
2-Disassemble the front cover.
3-Disassemble the cutter head (Fig. 6) pulling towards you, from the
handle. WARNING this element is very dangerous, handle with
care.
4-Remove the peel extractors from the supports (Fig. 7).
5-Disassemble the pressing units in pairs, previously removing the
security knobs (Fig. 8).
6-Disassemble the container and juice filter (Fig. 9 and Fig. 10).
7- In the models with a base stand, disassemble the peel deposit, and
deposit in the case of Zumex Fresh.
• All items, EXCEPT FOR THE FRONT COVER AND THE FRESH CONTAINER, can be
washed with a dishwasher.
• Clean the juicing area and cover with a soft cloth, dampened with water and soap
suitable for tableware.
• Next, rinse with water to ensure there is no soap.
• After cleaning, assemble all elements in the inverse disassembly order. Make sure
that all parts are correctly adjusted and secured. Check all parts to ensure that they
are correctly assembled and fixed.
• To clean the inside of the stainless steel tap, fill in the container with clean water
and press the tap to remove the remains of juice and pulp inside the tap. To guarantee
a better cleaning process, disassemble the tap from the stainless steel container.

• Remember that each peel ejector (Fig. 8) can only be fitted on each side, since they
can not be fitted on the incorrect side. The wedge paddle must be inserted until it
reaches the end in the male juicing drum opening.

• In order to avoid the accumulation of wax, the fruit feeder must be cleaned frequently
(Fig. 11).
• In the models with a base stand, always clean the hopper and inside of the base
stand, so that there are no peels or pulp remains.
