Installation
Delivery and Location
DELIVERY AND INSPECTION
All Blodgett proofers are shipped in containers to prevent damage. Upon delivery of your new proofĆ er:
D Inspect the shipping container for external damĆ
age. Any evidence of damage should be noted on the delivery receipt which must be signed by the driver.
D Uncrate the proofer and check for internal damĆ
age. Carriers will accept claims for concealed damage if notified within fifteen days of delivery and the shipping container is retained for inĆ spection.
The Blodgett Oven Company cannot assume responsibility for loss or damage suffered in transit. The carrier assumed full responsibility for delivery in good order when the shipment was accepted. We are, however, prepared to assist you if filing a claim is necessary.
PROOFER LOCATION
The well planned and proper placement of your proofer will result in long term operator conveĆ nience and satisfactory performance.
D Place the proofer in an area which is accessible
for proper operation and servicing.
D DO NOT place the proofer on a curb base or
seal to a wall. Either condition will damage the unit.
D The unit must be installed on a level floor.

Proofer Assembly
PACKAGING
Before beginning assembly of the proofer, verify that all the components necessary for the correct configuration have been received. In addition to the proofer other accessories may be required.
The low profile casters are packaged inside the proofer cavity.
CASTER ASSEMBLY
NOTE: Install the locking casters on the front of
the proofer. Install the nonĆlocking casters on the back of the proofer.
1. Carefully tip the proofer on it's side.
2. Align the low profile casters with the bolt holes in the corners on the bottom of the proofer.
3. Secure the casters to the proofer with the bolts provided.
STACKING WITH XR8ĆG RACK OVEN
The XBPĆ16 proofer is designed to fit under the Blodgett XR8ĆG Rotating Rack Oven.
1. Secure the low profile casters to the proofer as described.
2. Place the oven section on top of the proofer section.
3. Remove the side panels from the proofer.
4. Align the two bolt holes of the proofer section with the two threaded holes in the bottom of the oven section.
5. Insert a bolt from the bottom up through each of the two holes and tighten securely.
6. Reinstall the side panels on the proofer.

THE INSTALLATION INSTRUCTIONS CONĆ TAINED HEREIN ARE FOR THE USE OF QUALIĆ FIED INSTALLATION AND SERVICE PERSONNEL ONLY. INSTALLATION OR SERVICE BY OTHER THAN QUALIFIED PERSONNEL MAY RESULT IN DAMAGE TO THE PROOFER AND/OR INJURY TO THE OPERATOR.
Qualified installation personnel are individuals, a firm, a corporation, or a company which either in person or through a representative are engaged in, and responsible for:
D the installation of electrical wiring from the elecĆ
tric meter, main control box or service outlet to the electric appliance.
Qualified installation personnel must be experiĆ enced in such work, familiar with all precautions required, and have complied with all requirements of state or local authorities having jurisdiction.
U.S. and Canadian installations
All proofers, when installed, must be electrically grounded in accordance with local codes, or in the absence of local codes, with the National Electrical
Code, ANSI/NFPA 70-Latest Edition and/or CanaĆ dian National Electric Code C22.2 as applicable.
General export installations
Installation must conform with Local and National installation standards. Local installation codes and/or requirements may vary. If you have any questions regarding the proper installation and/or operation of your Blodgett proofer, please contact your local distributor. If you do not have a local disĆ tributor, please call the Blodgett Oven Company at 0011Ć802Ć860Ć3700.

Specifications and Initial Startup
SPECIFICATIONS
This appliance is rated ETL approved for operation on 115VAC, 60 Hz, single phase, grounded cirĆ cuits. Before making any connection to this apĆ pliance, check the rating plate attached to left side of the unit.
NOTE: Be sure that the proofer is connected to
the proper electrical supply.
The supply cord is connected at the rear of the proofer.
Wiring diagrams are located on the inside of the control compartment, as well as the rear of the proofer.
WARNING!!
Always disconnect the power supply to the appliance before servicing the unit.

INITIAL STARTUP
Each proofer, and its component parts, have been thoroughly tested and inspected prior to shipĆ ment. However, it is often necessary to further test or adjust the proofer as part of a normal and propĆ er installation. These adjustments are the responĆ sibility of the installer, or dealer. Since these adjustĆ ments are not considered defects in material or workmanship, they are not covered by the Original Equipment Warranty. They include, but are not limited to:
D calibration of the thermostat D adjustment of the doors D leveling D tightening of fasteners.
No installation should be considered complete without proper inspection, and if necessary, adĆ justment by qualified installation or service perĆ sonnel.
The following is a checkĆlist to be completed by qualified personnel prior to turning on the appliance for the first time.
j Verify that the proofer has been properly
installed with the preceding installation inĆ structions. If so, proceed to the operation inĆ structions. Allow the proofer to operate for about two (2) hours prior to using for the first time.

CONTROL OPERATION
Proofer Start Up
1. Turn the POWER SWITCH (1) to the ON position. The display reads PrH as the the unit preheats to the last programmed proof temperature.
Proofer Operation
NOTE: After pressing the Mode Key, parameters
must be set within 5 seconds.

numbers more quickly.
1. Press the MODE KEY (4) to select time. The time LED above the display lights. Use the up and down ARROW KEYS (3) to select the deĆ sired proof time in minutes.
2. Press the MODE KEY (4) to select temperaĆ ture. The temp LED below the display lights. Use the up and down ARROW KEYS (3) to seĆ lect the desired proof temperature.
3. Press the MODE KEY (4) to select relative huĆ midity. The RH LED below the display lights. Use the up and down ARROW KEYS (3) to seĆ lect the desired humidity level (1Ć5).
4. The display reads RDY when the unit has reached the proof temperature. Press the START/STOP KEY (5) for two seconds to beĆ gin the proof cycle. The temp LED lights when the heater is on. The RH LED lights when the water valve opens.
5. At the end of the proof cycle, an alarm sounds and the display reads END. Press the START/ STOP KEY (5) to silence the alarm.
Proofer Shut Down
1. Turn the POWER SWITCH (1) to the OFF position.

Cleaning and Preventative Maintenance
CLEANING THE PROOFER
Stainless steel proofers may be kept clean and in good condition with a light oil. Saturate a cloth, and wipe the proofer when it is cold. Dry the unit with a clean cloth. On the stainless front or interiĆ ors, heat tint and heavy discoloration or deposits of baked on splatter may be removed with a good nonĆtoxic industrial stainless steel cleaner. Apply cleaners when the proofer is cold, and always rub with the grain of the metal.
Clean residue from the interior of the unit with a small brush.
WARNING!!
Disconnect the unit from power supply before servicing or cleaning.
