General Information:
1. Always clean equipment thoroughly before first use. (See general cleaning instructions).

5. Legs are shipped unassembled. Legs must be screwed into base of unit.
General Operation Instructions:
1. All foodservice equipment should be operated by trained personnel.
2. Do not allow your customers to come in cont act with any surface labeled CAUTION HOT.
3. Where applicable: Never pour cold water into dry heated unit s.
4. Never hold food below 150°F (66°C).

2. SAFETY INFORMATION
APW W yott Holding Drawers are designed, built and sold for commercial use and should be operated by
trained personnel only . Clearly post all CAUTIONS, W ARNINGS and OPERA TING INSTRUCTIONS near
each unit to insure proper operation and to reduce the chance of personal injury and/or equipment damage.
Always disconnect power before servicing the Holding Drawer . Surfaces will remain hot af ter power has
been turned of f. Allow unit to cool before cleaning or servicing. Never clean the Holding Drawer by
immersing it in water . The Holding Drawer is not protected against water jet s; DO NOT CLEAN HOLDING
DRA WER WITH A W A TER JET . Always clean equipment before first use.

Do not modify the power supply cord plug. If it does not fit into the outlet, have
the proper outlet inst alled by a qualified electrician
Do not use an extension cord with this appliance.
Check with a qualified electrician if you are unsure as to whether the appliance
is properly grounded.
Digit al Controller Operation:
With unit p lugged in and the r ocker s witch i n t he ON position, the d igit al controller w ill come on. When the
controller i s on, the m inimum set point value i s p reset t o 100°F and the m aximum set point is 300°F . T o obt ain
the desired set point, push t he key and release. .
Press t he or key t o y our desired setting. Af ter s etting desired temperature, release o r k ey
and press t he key . The c ontroller d isplay should r eturn t o t he measured temp range of the unit.

4. OPERATION
1. Set thermost at control to 190°F and preheat each drawer for 30 minutes.
2. Place food product directly in st ainless steel drawer p ans or use any combination of full or fractional
p ans up to 6 (152 mm) deep.
3. Set front vent to desired position for maint aining food product moisture.
4. Perforated p ans may be used with damp towel or small amount of hot water in the drawer p a n t o prevent
food dry out.
CAUTION:
5. If too much moisture accumulates around drawer front or vent, reduce temperature setting or move
vent to dry position.
Use no more than 1 quart (1 liter) for wet operation.
