Recommended Set Points: Channel 2 - Food Doneness 170˚F + Food Texture 290˚F.
Cook time - 40 to 55 minutes. Bacon should be slacked
approximately 10 minutes prior to cooking.
Recommended Process: Preheat the unit to Channel 2. Prepare each of 12 sheet pans with a
quantity of three sheets of bacon. When “load” displays on the LED, load sheet pans into the unit from top to bottom, set time and press START. After 40 minutes of the cook cycle has elapsed, trays 7 and 8 will be fully cooked and should be removed from the unit. Continue to cook the remaining sheet trays of bacon for approximately 10 minutes until product is cooked through.
