saFety preCautions
To ensure safe operation, read the following statements and understand
their meaning. This manual contains safety precautions which are
explained below. Please read carefully.
WARNING
Warning is used to indicate the presence of a hazard that can cause severe
personal injury, death, or substantial property damage if the warning is
ignored.
CAUTION
Caution is used to indicate the presence of a hazard that will or can cause
minor personal injury or property damage if the caution is ignored.
NOTE
Note is used to notify people of installation, operation, or maintenance
information that is important but not hazard-related.
For Your Safety!
These precautions should be followed at all times. Failure to follow
these precautions could result in injury to yourself and others.
To reduce risk of injury or damage to the unit:
Check unit before each use to insure the equipment is clean.
Check for broken, blade/wire and if found, replace the blade/wire
assembly.

CUTTING BOW ASSEMBLY. Rotates on the pivot pin and holds
the cutting wire.

Intended for cutting cheese and other soft food products.

Carefully remove packaging materials from the unit. When no longer needed,
dispose of all packaging, materials in an environmentally responsible manner.

WARNING
Sharp Blade/Wire Hazard.
Blade/Wires are sharp and can cause cuts. To avoid
injury from sharp blades/wires, handle with caution.
Prior to rst use, it is important to clean the unit. Wash new unit with warm
soapy water and rinse thoroughly to remove the thin protective oil lm.
1. Place the unit on a clean, at work surface.
2. Before each use, check that the unit is clean and the cutting wire (E) is
in good condition. If loose or broken, the cutting wire must be replaced.
See Figure 1.
3. Prepare the food product to be processed.
4. Lift the cutting bow assembly (A) and place the food product on base
assembly (C) and against the front plate (D).
5. Using a slow, consistent movement draw the cutting wire (E) through the
food product.
6. Repeat this process until you have prepared enough food product for
your daily needs.
7. Clean and lubricate your machine immediately after each use. See the
CLEANING section of this manual for more information.

replaCing Cutting Wire assembly
Wash new cutting wire with warm, soapy water and rinse thoroughly to
remove the thin protective oil lm.
1. Loosen the wing nuts (H) holding the eye bolt (F) and the “l” bolt (G). It is
not necessary to remove the bolts or wing nuts to replace the cutting wire
(E). See Figure 1.
2. Remove and discard the old cutting wire (E).
3. Place the loops of the new cutting wire (E) onto the eye bolt (F) and the
“l” bolt (G).
4. Tighten the wing nuts (H) and the cutting wire (E).

To maintain the appearance and increase the service life, clean your daily.
NOTE:
Food acids will make blades dull and corrode the metal.
Always clean this food preparation machine immediately
after every use.
1. Remove the thumb screws (I) and front plate (D) from the base
assembly (C).
2. Wipe, rinse or spray off the base assembly (C), cutting bow assembly (A)
and front plate (D) thoroughly with HOT water.
3. Do not put this machine in a dishwasher or dish machine with soaps,
detergents, or other alkaline chemicals that can harm the machine.
4. After cleaning, let the machine air dry.
5. Install the front plate (D) and securing with the thumb screws (I).
