Surface Cooking Tips
• The simmer lineon thecontrol panelis the
beginning ofthe variable simmersetting and produces ahigh simmersetting. Turnthe knob slowly towards“OFF” andthe flame willadjust toa lower simmersetting.
• Use low ormedium flameheights when cookingin
cookware thatare poorconductors of heat,such as glass, ceramic,and castiron. Reduce theflame height untilit covers approximately1/3 ofthe cookware diameter.This willensure moreeven heating withinthe cookwareand reduce the likelihood ofburning or scorchingthe food.
• Reduce the flameif itis extended beyondthe
bottom ofthe cookware.A flame thatextends along thesides of thecookware ispotentially dangerous, heatsthe cookwarehandle and kitchen instead ofthe food, andwastes energy.
• Reduce the flameheight tothe minimum level
necessary toperform the desiredcooking process. Remember thatfood cooksjust as quicklyat a gentle boilas it doesat arolling boil.Maintaining a higherboil than isnecessary causesa lossin food flavor andnutrients.

Cookware
Each cookhas his orher ownpreference forthe particular cookingvessels thatare most appropriate for thetype of cookingbeing done.Any andall cookware, includingViking cookware,is suitable for use. Thisis a matterof personalchoice. Aswith any cookware, yoursshould bein good conditionand free from excessivedents onthe bottom toprovide maximum performanceand convenience.
Note: Whenusing big potsand/or high flames,it is recommended touse thefront burners. Thereis more room inthe frontand potential cleanupat rear of appliance dueto staining ordiscoloration willbe minimized.
Cookware Safety
• Use panswith flat bottomsand handlesthat are
easily graspedand staycool. Avoid usingunstable, warped, easilytipped orloose-handled pans. Pans with heavyhandles (especiallysmall pans) couldbe unstable andtip easily.Pans thatare heavyto move whenfilled with foodmay alsobe hazardous.
• Be surecookware is largeenough toproperly
contain foodand avoid boilovers. Pansize is particularly importantin deepfat frying. Panshould accommodate thevolume offood that isto be added aswell as thebubble actionof fat.
• To minimizeburns, ignitionof flammablematerials
and spillagedue to unintentionalcontact withthe cookware, DONOT extendhandles over adjacent burners. ALWAYSturn pan handlestoward theside or backof the appliance,not outinto theroom where theyare easilyhit or reachedby children.
