CONVECTION BAKE
Heat isradiated from theU- shaped bake burnersin the bottom ofthe oven cavity.The heated air iscirculated by one motorizedfan in therear ofthe oven providinga moreeven heat distribution. Multiplerack useis possible forthe largest bakingjob. Whenroasting, cool airis quickly replaced—searing meatson theoutside and retaining more juicesand naturalflavor on theinside withless shrinkage. Thiseven circulationof air equalizesthe temperature throughoutthe ovencavity and eliminates thehot andcold spots foundin conventional ovens.
BROIL (Infrared Broil)
The broilburner at the topof the oven heats themetal screen untilit glows. Heat radiates fromthe GourmetGlo™ infrared broilerlocated atthe top ofthe ovencavity. The distancebetween thefoods and thebroil elements determinesbroiling speed.For “fast” broiling, foodmay beas close as2 inches(5 cm) to the broilelement oron the toprack. “Fast”broiling is best formeats whererare to mediumdoneness is desired. Usethis settingfor broiling smalland average cutsof meat.
CONVECTION BROIL (Infrared Convection Broil)

Convection Dehydration
This ovenis designed notonly tocook, butalso to dehydrate fruitsand vegetables.
1. Preparethe foodas recommended.
2. Arrangethe foodon drying racks(not includedwith
the oven;contact alocal store handlingspeciality cooking utensils).
3. Setthe temperaturecontrol to 200°F(93.3°C) and
turn onthe convectionfan switch.
Convection Defrost
1. Placethe frozenfood on abaking sheet.
2. Setthe temperaturecontrol to “OFF”.
3. Setthe oventemperature control knobto “OFF”
and turnon the convectionfan switch.

Forbest results,it is extremelyimportant thatyou preheatyour ovento thedesired cookingtemperature before placingfood itemsin theoven to begincooking. Inmany cooking modes,partial power fromthe broiler is usedto bringthe ovento thepreheat temperature.Therefore,placing food itemsin theoven duringthe preheat modeis notrecommended.
