Victory’s pizza prep tables are designed to meet the NSF 7 41° F holding requirement. The recessed pan
rail system provides an easy-to-clean interior that is self-contained and surrounded on all sides by cooling
coils. The night switch feature allows the operator to shut down the raised pan rail at the end of the day.
The ingredient pans are chilled to a safe, consistent temperature, holding toppings between
35° F - 41° F for optimum food preservation, meeting NSF 7 41° F holding requirement.
