INSTRUCTIONS FOR THE USER
The kit XC236 has been issued to allow the following interventions on the
XBC-XVC control board:
1. Data storing: it is possible to store the cooking chamber and the core probe temperatures values taken
inside the oven and all the connected appliances (provers, holding cabinets, blast chillers, etc…). This kind
of records, once stored and transfer to a PC; can be printed with the Ovex.NET® 3.0 program.
2. Cooking programs management: the cooking programs can be rolled out from the oven to the USB
memory and vice versa. The cooking programs can be written with the Ovex.NET® 3.0 program, then
stored on the USB memory and rolled out to the oven.
3. Firmware updating: it is possible to update the firmware of the appliances in order to add new
functions.
Warning
Connect and disconnect the bridge to and from the oven only after the appliances have been disconnected from the power supply.
The USB memory can be connected and disconnected at any time but, in case the bridge is operating
(for example for log storing), the data which are being processed may be misregistered.
Inside USB memory is the UNOXDIR folder and all the subfolders necessary for a correct operation.
The Ovex Net 3.0 software is able to issue this kind of files. Refer to the software instructions.
The XC236 properly operates only if the issued USB memory is used: in case different USB memories
are used, the XC236 may not correctly operates.
Use of the bridge
To enter the bridge menu push the “SELEZIONE APPARECCHI” button until the display 5
(SELEZIONE APPARECCHI) shows number 9.
Now it is possible to scroll down the 3 operating modes by pushing the “STEP” button: the display 1 (STEP)
shows the selected mode.

Data storing
The display 1 (STEP) shows number 1.
To activate the data storing (cooking chamber and core probe temperatures of the connected appliances)
connect the USB memory to the bridge connector.
It is possible to set the time interval between the records and select the appliances you need to record
the temperatures values.
To set the time interval between the records push the “SELECT” button: the time icon starts to flash
and the display 2 (time) shows the time interval value; by pushing the “+” and “-“ buttons you can set the time
value. The time is indicated in MINUTES.SECONDS (3.45 means a record every 3 minutes and 45 seconds).
This value can be set between a minimum of 30” and a maximum of 9’59”.

Once the interval time value has been set, push again the “SELECT” button: the chamber and Delta T
temperatures icons start to flash and the display 3 shows the appliance of which the temperatures values
will be recorded (chamber and core probe if any): by pushing the “+” and “-“ buttons you can select
the required appliance; when the message “ALL” is shown, the temperatures values of all the connected
appliances will be recorded.
If no button is pushed, after 4 seconds the icons stop to flash.
To start the recording push the “START/STOP” button: the led indicating the temperatures recording
is running turns on.
By keeping the “START/STOP” button pusher for 2” the recording stops and the led turns off.
Attention!
Do not remove the USB memory while the recording is running otherwise the data so far recorded will
be missed.

Cooking programs management
The display 1 (STEP) shows number 2.
Attention!
To enter the cooking programs management mode it is necessary that all connected equipments (ovens,
holding cabinets, provers, blast chillers, etc.) are turned off but connected to the power supply.

Make sure the USB memory is properly inserted in the bridge connector.
Select the device which you need to store or load a cooking program by pushing the “SELECT” button
until the display 3 shows the required device address. For example: if you need to store a program of
the blast chiller, address 5, push the “SELECT” button until the display 2 shows number 5.
It is possible to roll out cooking program from the oven to the USB memory and vice versa.
Cooking program transfer from the oven’s memory to the usb memory
Press the “P” button for 5 seconds if the operator needs to transfer a user program or push the
“CHEF UNOX” button in the operator needs to transfer a program Chef Unox or an Adaptive Clima
program: on the display 4 appears the name of the first program. (first user’s program or the Chef
Unox first program, it depends on which button has been pushed).
Select the program the user needs to transfer with the buttons “+” e “-“.
Press the button “M” for 5 seconds: the oven will beep for confirmation; the program has been
transfer in the USB memory.
Cooking programs transfer from the usb memory to the oven
With the button “+” slide the cooking programs in the USB memory. The digital control will show
ONLY the cooking programs compatible with the selected equipment, whose address is shown in the
display no. 3. For example: if the display no. 3 shows the no. 6 and at the net-address 6 there is an
holding cabinet, with the button “+”, the user can only browse recipes stored in the memory which
operate with the holding cabinet.
Move to the cooking program the user wants copy.
Hold the button “M” for 5 seconds: the control board will beep for confirmation. If the selected cooking
program is a user type program, the user programs menu will appear. If the selceted program is a Chef
Unox or Adaptive Clima program will show the Chef Unox menu.
Select the position to save the program with the button “+” and “-“: if the position chose exists already
a program will be overwritten.
Hold the button “M” for 5 seconds: the oven will beep for confirmation; the program has been transferd
in the memory of the oven.

Firmware update mode
The display 1 (STEP) must show number 3.
Attention!
To acces the firmware update mode it is neccesary that all the connected appliances (ovens, holding
cabinets, provers, blast chillers) are switched on but not working.
Ensure the USB memory is in the special connector of the bridge.
Hold the “SELECT” button until the display no. 3 show the net-address where the user needs to update
the firmware. For instance if the user needs to update the blast chiller firmware, at the net-adress no. 5,
it is necessary to press the button “SELECT” until the display no. 3 shows the no. 5.

Slide the firmware in the USB memory with the button “+”. The display no. 3 will show just the
firmware compatible with the appliance selected.
Attention!
Reprogramming the display board firmware the oven looses the user and the adaptive clima programs
memorized. It is necessary to save those kind of programs in the USB memory before the reprogramming.
To start the update, hold the button “M” for 5 seconds: the oven will beep for confirmation. The update
process could last up to 7 minutes.
If the display board firmware has been updated, it is necessary to follow also this procedure before to
use the oven:
• Ensure all the connected appliances (ovens, holding cabinets, provers, blast chilers) are switched on but
not working.
• Push the button “SELEZIONE APPARECCHI” and select the appliance no.1
• Hold at the same time the buttons “+” and “-“ for 5 seconds to enter in the hidden menu.
• Push the button “SELEZIONE APPARECCHI” until on the display 2 appears no. 10.
• Pusch the button SELECT until the display no. 3 shows “LMP”.
• Hold at the same time buttons “STEP” and “START/STOP” for 5 seconds: on the display 4 appear “WAIT”
for at most 30 seconds.
• When the message disappears remove and restore the power to the ovens and the connected appliances.

Setting date and time
When necessary use the USB interface Unox as logger, before set the correct date and time. If the USB
interface is disconnected from the power for more than 20 days, it is necessary to re-program date
and time.
To set date and time proceed as follows:
• Ensure all the appliances are connected (ovens, holding cabinets, provers, blast chillers) but not working.
• With the button “SELEZIONE APPARECCHI” select appliance no. 1
• Hold the buttons “+” e “-“ at the same time for 5 seconds to enter in the hidden menu.
• Push the button “SELEZIONE APPARECCHI” until display 2 shows no. 9
• Push the button “SELECT” until display no. 3 shows “YEA”
• On display no. 4 appears the year set
• With buttons “+” e “-“ set the year
• Push the button “SELECT”: on display 3 appears “MON”
• On display 4 appears the month set
• With buttons “+” e “-“ set the month
• Push the button “SELECT”: on display 3 appears “DAY”
• On display 4 appears the day set
• With buttons “+” e “-“ set the day
• Push the buttons “SELECT”: on display 3 appears “HOU”
• On display 4 appears the hour set

Anleitung USB Kit XC236
Mit dem XC236 USB Kit sind folgende Anwendungen möglich:
Protokollierung der Kochprozesse (HCCP) des Ofens und Peripheriegeräten, wie
1.
Schockfroster, Warmhalteschrank, Gärschrank... Dabei werden jeweils die
Kerntemperatur und die Garraumtemperatur auf einem USB Stick gespeichert. Die
Aufzeichnungen können später auf jedem Computer archiviert oder mit dem
Programm OVEX.NET ausgedruckt werden.
2. Kochprogramme vom Ofen auf USB und umgekehrt übertragen
3. Firmware Updates
ACHTUNG:
Die Geräte vor dem Verbinden mit der USB Brücke STROMLOS machen
Der USB Stick kann auch entfernt / eingesteckt werden, wenn Gerät Spannung hat.
Verbinden der USB Brücke
1. Gerät(e) Spannungslos machen
2. Den unteren Teil der Geräterückwand lösen und ½ herunterklappen
3. Mit dem RJ 45 Datenkabel die USB Brücke und die Leistungsplatine des
Gerätes verbinden
4. Das Gerät wieder an die Spannungsversorgung anschließen
Aufrufen der einzelnen Optionen

Rechts die Taste 1-2-3 so oft drücken, bis in der Anzeige die 9 erscheint
-9- ist die Adresse der USB Brücke.
Mit der STEP Taste (links) wählen zwischen:
1 Aufzeichnen der Kochprozesse (HACCP)
2 Speichern /Sichern/ Rücksichern von Programmen
3 Firmware/Software Updates
Kochprozesse aufzeichnen
Datum und Uhrzeit einstellen:
Bevor die USB Brücke das 1. Mal zum aufzeichnen der Kochprozesse verwendet werden
kann, muss das aktuelle Datum und die Uhrzeit einmalig eingegeben werden.
Sollte die USB Brücke länger als 3 Wochen vom Ofen getrennt sein, gehen die Einstellungen
verloren.
Das Gerät muss eingeschaltet sein, darf aber nicht in Betrieb sein.
Mit Taste 1-2-3 das Gerät Nr. 1 auswählen
Tasten + und - gleichzeitig für 5 sec drücken um ins Untermenü zu gelangen
Die Taste 1-2-3 so oft drücken, bis im Display (2) die 9 erscheint
Die Taste „SELECT“ so oft drücken, bis Display (3) „YEA“ anzeigt
Im Display (4) steht die Jahreszahl
Mit den Tasten + oder - die aktuelle Jahreszahl einstellen
Die Taste „SELECT“ drücken, das Display (3) zeigt „MON“ an
Mit den Tasten + oder - den aktuellen Monat einstellen
Die Taste „SELECT“ drücken, das Display (3) zeigt „DAY“ an
Mit den Tasten + oder - den aktuellen Tag einstellen
Die Taste „SELECT“ drücken, das Display (3) zeigt „HOU“ an
Mit den Tasten + oder - die aktuelle Stunde einstellen

Einmal die Taste „SELECT“ drücken
Einmal die Taste „P“ drücken, um das Untermenü zu verlassen
Das Datum und die Uhrzeit sind jetzt eingestellt .
Kochprozesse aufzeichen (HACCP)
Die USB Brücke muss mit dem Ofen verbunden sein und der USB Stick muss sich in der
Brücke befinden.
Das Gerät muss eingeschaltet sein, darf aber nicht in Betrieb sein.
Die Taste 1-2-3 so oft drücken, bis das Display die 9 anzeigt
Das Display links zeigt die 1 für Daten aufzeichnen an
1x die Taste „SELECT“ drücken.
Im 2. Display steht jetzt die Zahl 30 (sec), das ist das Intervall, in dem die Daten
aufgezeichnet werden, 30 bedeutet, dass alle 30 sec die Werte für Temperatur und
Kerntemperatur in die Datenbank geschrieben werden. Der Wert kann mit + und verändert werden, die Anzeige 2.30 bedeutet, dass alle 2 min und 30 sec die Daten
aufgezeichnet werden.
1x Taste „SELECT“ drücken, es blinkt das Temperatur und Delta T Zeichen, im
Display 3 erscheint die Gerätenummer (1 für Ofen, 2 für Slave-Ofen, 6 für
Warmhaltegerät) usw.
mit + oder - das Gerät auswählen, das aufgezeichnet werden soll, die Anzeige ALL
bedeutet, das die Daten aller angeschlossenen Geräte erfasst werden
Um die Aufzeichnung zu starten, die Taste „START“ drücken, wenn die rote LED in
der Starttaste leuchtet, läuft die Aufzeichnung.
Um die Aufzeichnung zu beenden, die Taste „START“ erneut drücken.
Die aufgezeichneten Daten sind jetzt auf dem USB Stick und können später im OVEX NET
Programm verwendet werden.
Während der Aufzeichnung den USB Stick nicht entfernen, die Daten gehen sonst verloren.
(Koch)Programme übertragen
Die USB Brücke muss mit dem Ofen verbunden sein und der USB Stick muss sich in der
Brücke befinden.
Das Gerät und evtl. angeschlossene Peripheriegeräte müssen eingeschaltet sein, dürfen
aber nicht in Betrieb sein.
Übertragen von Programmen von USB zum Ofen
Sie können Programme in den Ofen, das Warmhaltegerät und den Schockfroster wie folgt
übertragen
Mit 1-2-3 Taste die Brücke (9), Anzeige rechts auswählen
Mit –STEP- Taste Option „2 rec“ auswählen, mit – SELECT- Taste das Ziel
auswählen, 1 = Ofen, 5 = Schockfroster, 6 = Warmhaltegerät .
Jetzt + oder – das Programm im USB Speicher aussuchen,
für ca. 5 sec M drücken, es folgt ein Quittungston.
Jetzt müssen Sie nur noch mit + oder – einen Programmplatz im Ofen anwählen und
durch 5 sec M drücken speichern. Es folgt ein Quittungston und die Meldung „WAIT“
Das Programm ist jetzt im Gerät gespeichert.
Wenn Sie statt einem „normalen“ Programm ein Sonderprogramm wie „Adaptive
Clima“ speichern möchten:
Mit 1-2-3 Taste die Brücke (9), Anzeige rechts auswählen
Mit –STEP- Taste Option „2 rec“ auswählen, mit – SELECT- Taste das Ziel
auswählen, 1 = Ofen, 5 = Schockfroster, 6 = Warmhaltegerät .
Jetzt + oder – das Programm im USB Speicher aussuchen,
für ca. 5 sec M drücken, es folgt ein Quittungston, jetzt die „Koch“-Taste drücken
und mit + oder - einen freien Platz suchen, (ACM01-ACM20) = Adaptive Clima
5 sec Taste M drücken und Programm speichern. Es folgt ein Quittungston und die
Meldung „WAIT“
(Koch)Programme übertragen (2)
Die USB Brücke muss mit dem Ofen verbunden sein und der USB Stick muss sich in der
Brücke befinden.
Das Gerät und evtl. angeschlossene Peripheriegeräte müssen eingeschaltet sein, dürfen
aber nicht in Betrieb sein.
Übertragen von Programmen von Ofen zum USB Speicher
Der Ordner „Reciepes“ au
bitte vorher in einen anderen Ordner auf dem Stick oder PC verschieben.
Mit 1-2-3 Taste die Brücke (9), Anzeige rechts auswählen
Mit –STEP- Taste Option „2 rec“ auswählen, mit – SELECT- Taste das Gerät
auswählen, 1 = Ofen, 5 = Schockfroster, 6 = Warmhaltegerät .
5 sec“ P“ / oder „Koch“-Taste (nur Adaptive clima Programme) drücken,
dann das Programm das sie übertragen möchten auswählen und 5 sec „M“
drücken.
Das Programm ist jetzt auf dem USB Stick gespeichert und kann mit OVEX.NET
bearbeitet werden (NICHT Adaptive Clima)
f dem USB Stick sollte leer sein, eventuell vorhandene Programme
Firmware Updates
Achtung, Softwareaktualisierungen dürfen nur vom Unox
Werkskundendienst und geschulten Unox Vertragskundendiensten
durchgeführt werden. Für Schäden, die durch nicht autorisierte Personen
verursacht werden, übernimmt Unox keine Haftung!
Stellen Sie sicher, das während des Updatevorgangs auf keinen
Falls die Netzspannung unterbrochen wird, durch einen
Spannungsausfall beim Update und anschließenden Reset werden die
Platinen unbrauchbar. Keine Gewährleistung!
Sämtliche gespeicherten Programme und Einstellungen gehen
beim Update verloren und sollten vorher auf dem USB Stick gesichert
werden, das gilt vor allem für „Adaptive Clima Programme“
Für den Updatevorgang müssen alle Geräte (Ofen, Gärschrank, Schockfroster, usw.
eingeschaltet sein, aber nicht in Betrieb!
Die USB Brücke muss mit dem Ofen verbunden sein und der USB Stick muss sich in der
Brücke befinden, die neue Firmware muss im Verzeichnis „FIRMWARE“ des USB Sticks
befinden.
Mit 1-2-3 Taste die Brücke (9), Anzeige rechts auswählen
Mit „STEP“ – Taste option 03 Fru auswählen.
Mit „select“ –Taste die Netzwerkadresse der Platine auswählen, die aktualisiert
werden soll, 1 für Leistungsplatine master, 10 für Bedienplatine master, 13 für Haube
master usw.
Mit + oder – die Firmware aussuchen, kompatible Firmware wird vom Gerät erkannt
und im rechten Display angezeigt.
5 sec den „M“ knopf drücken, im rechten Display erscheint REPROG, der Vorgang
kann je nach angeschlossener Peripherie bis zu 3 Minuten dauern.
Firmware Updates (2)
Während des Updatevorgangs schaltet das Licht und Display des Gerätes ab,
nach 1 – 3 min startet das Display mit der Anzeige UNOX, nach einigen sec
ist die normale Anzeige wieder vorhanden.
Nach jedem Update muss noch ein RESET durchgeführt werden,
Achtung – Reset bedeutet die Wiederherstellung der
Werkseinstellungen – Nicht ohne genaue Kenntnisse der Parameter
der verbundenen Platinen durchführen!
RESET:
Die + und – Taste für etwa 5 sec gleichzeitig drücken bis sich die Anzeige des
Displays verändert.
Mit 1-2-3 Taste die Bedienplatine (master) anwählen, meistens Adresse 10
Mit „SELECT“ Taste den Parameter LNP auswählen
Taste „ STEP“ und Taste „Start/Stop“ für etwa 5 sec gleichzeitig drücken,
im Display rechts erscheint die Meldung „WAIT“
Der Reset Vorgang kann bis zu 2 Minuten dauern, während dieser Zeit auf keinen
Fall die Stromversorgung zum Ofen unterbrechen!
Nach dem Reset schaltet das Gerät auf die normale Anzeige um und ist wieder
Betriebsbereit.
Sollte nach erfolgtem Reset Fehlermeldungen erscheinen oder einzelne Geräte nicht
funktionieren:

Mit dem Proramm OVEX NET für PC kann man Kochprogramme schreiben und bearbeiteten,
auf dem USB Speicher sichern und in den Ofen übertragen
Die Datei OvexNet3.0_installer.exe befindet sich
auf dem USB Stick, zur Installation doppelklicken
Es öffnet sich ein Fenster, Schaltfläche NEXT
drücken
Hier den Zielordner auswählen
- Install drücken -
Die Installation ist nach einigen Sekunden
abgeschlossen, Sie können das Fenster mit
CLOSE schliessen.
Um die Anwendung zu starten, das Programmsymbol OVEX_Net klicken.

Software instructions Ovex.NET® 3.0
The program for the PC Ovex Net® 3.0 allows to visualize and modify the files the bridge Unox® saves
and copy in the USB memory.
Ovex.NET® 3.0 Installation
The installation file of OvexNet3.0_installer.exe is in the USB memory in the kit.
To install the program it is necessary click twice on file OvexNet3.0_installer.exe.
A window will appear: OvexNet Setup: Installation Options. Push the button Next.

Follows a window with title: OvexNet Setup: Installation Folder. Push the button Install.
When the last window confirm the complete installation, push the button Close.
The program is installed.
To start the program click the menu start of Windows and select all the programs, then Unox S.p.A and
click on software Ovex.NET® 3.0.

Verzeichnisstruktur auf USB Stick erzeugen:
Creation of “UNOX” folders in the usb memory
To work properly, the bridge Unox, needs a USB memory with a main folder named UNOXDIR plus,
other secondary folders. The programs Ovex.NET® 3.0 allows the user to create at the same time all
these folders and enable the USB memory to use with the bridge Unox.
The kit has a USB memory correctly configured; the following procedure is needed just if the memory
has been cancelled or ruined.
• Insert the USB memory in the computer.
• Start the software Ovex.NET® 3.0. Click on File and create “Create directories structure on USB key”
• In the new window select “USB memory” among the disc unit proposal and click on create.
• A message will indicate if the creation is successful.

Visualization and stamp of datas saved in the usb memory
Ovex.NET® 3.0 allows the user to visualize and save the data registration the bridge made in the USB memory .
To visualize the data registration proceed as follows:
• Disconnect the USB memory from the bridge and connect the USB to the PC
• Start the Ovex Net
• In the Ovex Net menu, click on Log and click on Load a log file.

• A window will open, click on open files and select, in the USB memory, the folder UNOXDIR, then
LOG. Here the user finds various folders, one for each day a registration data has been made. The
format is YEAR, MONTH and DAY. For instance, if a registration has been started on May 7th 2010,
there will be a folder named 20100507 (4 digits for the year, 2 digits for the month and 2 digits for the
day). Entering in this directory the user will find various files, each one has as name the hour the registration has been made. The format is HOURS, MINUTES and SECONDS. For instance, if the registration
has been made at 12:15 the file name is 121500 (2 digits for the hour, 2 digits for minutes and 2 digits
for seconds). Click twice on the file the user needs to open.
• At this point appears a table showing the saved data. Click on the “

the bridge UNOX and copy them in the oven memory.
• From the Ovex.NET® 3.0 menu click on Recipes and click on Create new recipe.
• Select a name for the new recipe and select the destination appliance (choose among the oven, blast
chiller, holding cabinet etc..)
•In the new window set the steps with the same rules used in the Chef Touch panel in the Unox ovens.
There are 10 steps available (1 pre-heating and 9 cooking programs) where it is possible to choose:
- a time or a core temperature as a condition for the end of the step,
- a chamber temperature or a Delta T as a parameter to maintain during the whole cooking program,
- the Climalux® as the modality to set the required dry air or humidity
- fans speed
Refer to the oven instruction manual to set the correct cooking parameters.
